돈육 후지를 머리고기로 대체한 햄버거 패티의 품질 특성 (Quality Characteristics of Replacing Pork Hind Leg with Pork Head Meat for Hamburger Patties)

  • 본 연구는 돈육 후지 부위를 영양학적으로 우수한 머리고기로 대체한 햄버거 패티의 품질 특성을 파악하여, 경제적이면서 고품질의 햄버거 패티를 개발하고자 연구를 실시하였다. 수분 함량, 명도, 적색도, 황색도, 가열수율 및 보수력은 머리고기 첨가량이 증가함에 따라 감소하는 추세를 나타냈으나, 지방 함량 및 회분 함량은 대조구와 머리고기를 첨가한 처리구간에 유의적인 차이를 보이지 않았다. 또한 머리고기 첨가량이 증가함에 따라 단백질 함량, pH, 직경감소율, 두께감소율 및 전단력은 증가하는 경향을 나타내었다. 관능적 특성도 색 및 풍미에서 대조구와 비교하여 15%까지 머리고기를 첨가한 처리구(T1, T2, T3)에서는 유의적인 차이가 인정되지 않았으며, 전체적인 기호도에서는 대조구와 비교하여 머리고기를 10%까지 첨가한 처리구에서 유의차가 나타나지 않았다. 따라서, 활용도가 낮은 돈육 부산물 중 머리고기를 활용하여 햄버거 패티를 제조할 시 머리고기의 첨가량이 10% 이하로 첨가하는 것이 햄버거 패티의 품질 및 관능적으로 우수한 식육제품을 제조할 수 있을 것으로 보여진다.

  • 본 연구는 친수성 콜로이드의 첨가가 저지방 육제품에 품질에 미치는 영 향을 검토하였다. 생육, 가열육 및 배가열육 patty의 수분함량은 대구조가 낮은 반면 지방함 량은 높았다. 생육 및 재가육의 면도(L값)는 sodium alginate 첨가구가 다른 patty들에 비해 현저하게 낮았고, 황색도(b값)는 대조구가 현저하게 낮았다. 가열육 patty의 수율 및 최종수 율은 친수성 콜로이드 첨가구가 대조구보다 현저하게 높았다. 가열육 patty의 지방 보유율 은 대조구가 91.3%로서 친수성 콜로이드 첨가구보다 낮았으며, 재가열육patty의 자방 보유 율은 모든 patty가 89.7~93.1%사이였다. 가열육 및 재가열육 patty의 경도는 xanthan gum 첨가구가 현저히 낮았으며, 저작성은 대조구, CMC, sodium alginate 및 xanthan gum 순으 로 높았다. 보수력의 경우 친수성 콜로이드를 첨가한 가열육 및 재가열육 patty가 대구조보 다 현저하게 높았다. 관능검사 결과 향, 조직감 및 전체적인 기호성은 patty들 사이에 현저 한 차이가 없었으나, 다습성은 xanthan gum, sodium alginate, CMC 및 대조구 순으로 우수 하였다. 전체적인 결과 지방율 20%첨가한 대조구보다 지방 10% 및 물 10%에 친수성 콜로 이드를 각각 1%씩 물 10%에 친수선 콜로이드를 각각 1%씩 첨가한 patty가 조직적.관능 적 특성이 우수하였다.

사료의 영양소 수준과 성별이 도체 및 육질특성에 미치는 영향 (Interaction between Nutrient Density Diets and Sex on Carcass and Quality Characteristics in Finishing Pigs)

  • The present study was undertaken to investigate the effects of nutrient density diets and sex on carcass and pork quality characteristics in finishing pigs. A total of 96 pigs(58.04 $\pm$ 6.85 kg) were divided into 2 groups(gilts and barrows), each sex group was assigned to 3 nutrient density(high : 18.5%, middle : 16.0% and low: 14.0% CP, respectively) and raised up to 1l0kg live weight. Each treatment had four replicates with three or five pigs per replicate. The treatments comprised the feeding regimes of 1) the low density diet for 60 days, 2) the middle nutrient density diet for the 30 days followed by a low nutrient density diet for the remaining 30 days and 3) the high nutrient density diet for the 30 days followed by a middle nutrient density diet for the remaining 30 days. Pigs were conventionally slaughtered, and then chilled overnight. Carcass characteristics and grades were determined on those carcasses, and pork loin muscle was removed from each left side at 5th to 13th rib for quality evaluation were evaluated. There were no differences in the carcass weight between sex and nutrient density. Dressing percent of L-L(gilts) treatment was significantly higher than that of other treatments(P< 0.05). Barrows showed a thicker back fat thickness than gilts. There were no difference in intramuscular fat, subcutaneous fat and springiness between sex and nutrient density. Intermuscular fat of barrows groups was significantly higher than the gilts groups(P < 0.05). In the meat quality characteristics, there were no difference in general composition, meat and fat color between sex and nutrient density. pH of L-L(gilts) treatment was significantly higher than that of other treatments(P < 0.05). Cooking loss and shear force value of H-M(barrows) treatment were significantly higher than those of other treatments(P< 0.05). Purge loss of barrows groups was significantly higher than the gilts groups(P < 0.05). Myoglobin content of H-M treatment was significantly lower than L-L and M-L treatments(P< 0.05). Texture of H-M treatment was higher than L-L and M-L treatments. The content of myristic, palmitic, palmitoleic and oleic acid were significantly higher in the barrows groups(P< 0.05). However, stearic, linoleic and arachidonic acid were significantly higher in the gilts(P < 0.05). Amino acid content of L-L treatment was significantly higher than M-L and H-M treatments(P < 0.05). In conclusion, carcass and pork quality characteristics were affected by sex and nutrient density.

감귤 부산물 첨가 사료를 장기간 급여한 교잡종 돼지고기의 성분 특성 (Effect of Feeding Dietary Tangerine Byproduct for a Long Time on Chemical Compositions of Loin for Crossbred Pig)

  • The purpose of this research was to study the chemical compositions of pork for crossbred pig (female, 198 days old $102{\sim}118kg$) that were fed with tangerine byproduct from pregnancy through the whole rearing period. The samples for this study consisted of the pork from give the number of control pigs not fed with tangerine byproduct($T_0$), and the pork from give the number of study pigs fed with 8% tangerine byproduct during the whole breeding period, from the early pregnancy through the young, growing and finishing periods ($T_1$). Backfat thickness of the crossbred pigs was significantly decreased by feeding tangerine byproduct (p<0.05). The proximate composition, minerals, total amino acid, saturated fatty acid vs. unsaturated fatty acid and vitamin $B_2$ contents of loins were not significantly different among $T_0\;and\;T_1$, (p>0.05). Although those differences were not significant statistically, the tangerine byproduct tended to increase the amount of vitamin $B_1$, and decrease the crude fat and cholesterol contents.

돈육으로 제조한 정제단백질과 Oligopeptide의 영양평가 : 소화율, 생물가, 단백질 실이용률 (Purified Protein and Oligopeptide Mixture Preparation from Pork Meat and Evaluation of their Nutritive Value: True Digestibility, Biological Value, and Net Protein Utilization)

  • In this study a purified protein was prepared from pork meat. The product consisted of 0.5% moisture, 3.0% ash, 5.5% ether extract and 88.7% crude protein. Also, a meat oligopeptide mixture was prepared from a pepsin digest of the protein preparation. The two preparations were colorless and odorless powders with low fat contents. The nutritive values of the pork meat protein and oligopeptide mixture were estimated by two methods, one using biological value(BV) and the other employing net protein utilization(NPU) by the nitrogen balance method. The meat oligopeptide mixture showed an excellent nutritive value by both methods. The true digestibilites of both the pork meat protein and the oligopeptide mixture were more than 98%. The above results indicate that the oligopeptide mixture is an excellent material as a dietary nitrogen source for many purposes.

Development of Optimal Breeding Pigs Using DNA Marker Information

  • The aim of the study was to investigate pig reference families, generated from Korean native pigs (KNP) that were crossed with Yorkshire (YS) breeds, which were used to evaluate genetic markers to select breeding animals with superior pork quality. A set of five candidate genes (PRKAG3, MC4R, CAST, ESR, and PRLR ) was analyzed for association with pork quality traits. PRKAG3 (I199V) SNP genotypes were significantly associated with muscle moisture, protein, and fat contents. The MC4R D298N polymorphism was significantly associated with meat tenderness and color traits. The CAST polymorphism was significantly associated with muscle moisture and crude protein traits. These three genes have been associated with pork quality traits in other pig populations, and some of our results are consistent with earlier studies. In addition, two reproductive candidate genes (ESR and PRLR ) did not have significant associations. These results suggest that further study is warranted to investigate and develop more DNA markers associated with pork quality in our KNP-crossed pig families.

Effect of FTO Expression and Polymorphism on Fat Deposition in Suzhong Pigs

  • Fat mass and obesity associated gene (FTO) plays an important role in appetite control and energy consumption in human and mice. In order to examine FTO expression influence on fat deposition in Suzhong pigs, FTO mRNA expression was detected in 16 tissues by RT-PCR, FTO protein expression was detected in 5 tissues by western blot, and association of FTO polymorphism with meat quality traits was analyzed in Suzhong populations with 714 records. RT-PCR results revealed that FTO mRNA was expressed in all sixteen tissues with significant differences (p<0.05), expression in backfat was significantly higher than that of any other tissue (p<0.05), and expression in longissimus dorsi muscle had the second highest significance level (p<0.05). Western blot results demonstrated that FTO protein was highly expressed in backfat and longissimus dorsi muscle. Furthermore, FTO mRNA and protein expression in tissues of high-fat pigs was significantly higher than that of low-fat pigs (p<0.05), suggesting FTO expression had advantageous effects on fat deposition. FTO polymorphism results evidenced that at A227G locus, G allele seemed to have advantageous effects on fat deposition, indicating it could be a significant candidate gene for improving pork quality in Suzhong pigs.

Effects of wheat supplementation levels on growth performance, blood profiles, nutrient digestibility, and pork quality in growing-finishing pigs

  • Objective: This study was conducted to evaluate various wheat supplementation levels on growth performance, blood profiles, nutrient digestibility, and pork quality in growing-finishing pigs. Methods: A total of 120 growing pigs ($[Yorkshire{\times}Landrace]{\times}Duroc$), with an average $27.75{\pm}1.319kg$ body weight, were used in growth trial. Pigs were allotted into each treatment by body weight and sex in 4 replicates with 6 pigs per pen in a randomized complete block design. Fourphase feeding programs were used in this experiment. The treatments included the following: i) corn-soybean meal (SBM) - based diet (CON), ii) corn-SBM - based diet+15% of wheat (W15), iii) corn-SBM - based diet+30% of wheat (W30), iv) corn-SBM - based diet+45% of wheat (W45), and 5) corn-SBM-based diet+60% of wheat (W60). Results: There was no significant difference in growth performance among the dietary treatments. However, the gain-to-feed (G:F) ratio tended to increase (quadratic, p<0.08) when the pigs were fed a higher wheat diet during the finishing period. The digestibility of crude ash and fat tended to decrease as the wheat supplementation level increased (p<0.08). The proximate analysis of the longissimus muscle was not affected by the dietary level of wheat. The crude ash content in pork was decreased linearly as the wheat supplementation level increased (p = 0.05). There was no significant difference in the pH level, shear force, water holding capacity, and cooking loss of the pork. In pork and fat, $L^{\star}$, $a^{\star}$, and $b^{\star}$ values were not significantly different among dietary treatments. Conclusion: Wheat can be supplemented up to 60% in a growing-finishing pig without detrimental effects on growth and pork quality. The G:F ratio tended to improve in the finishing period by wheat inclusion.

돈육의 사후 24시간 pH 수준에 따른 육질 특성 (Comparison of Pork Quality by Different Postmortem pH24 Values)

  • 도축 후 돈육의 육질평가에 있어 중요한 요인인 사후 24시간 pH를 측정하여 pH가 5.31-5.50, 5.51-5.70, $\geq$5.71에 따른 육질을 조사한 결과, 사후 pH가 더 낮을수록 단백질 함량이 높고, 지방 함량이 낮았다(P$<$0.05). 사후 24시간 pH가 높을수록 보수력은 증가하였으며, 가열감량과 육즙감량은 유의적으로(P$<$0.05) 감소하였다. 육의 경도, 탄력성, 씹힘성과 지방경도 역시 사후 24시간 pH가 높을수록 유의적인 증가를 보였다(P$<$0.05). 육색특성 중 CIE L*값은 사후 24시간 pH가 낮을수록 유의적으로 높았으며, a*와 b*값, chroma 값은 최종 pH가 5.71 이상의 돈육에서 유의적으로 낮게 나타났다(P$<$0.05). Hue 값은 pH 5.31-5.70 범위에서 가장 높았으며, $\Delta$E 값도 pH 5.31-5.50에서 가장 높았다. 관능적 특성의 분석결과, 다즙성과 연도는 최종 pH가 높을수록 향상되었으나, 향미는 최종 pH 범위에 따른 차이가 인정되지 않았다. 따라서 본 연구결과, 도축 후 24시간 돈육의 pH 범위에 따라 육질의 차이를 보이기 때문에 사후 적정 pH를 유지할 수 있도록 도축전 관리, 도축방법, 도축 후 냉각 온도관리 등을 개선하는 것이 고품질 돈육생산에 있어 중요한 것으로 사료된다.

해동시킨 재래흑돼지육과 개량종 돼지육의 냉장저장중 품질비교 (Comparison of Quality Characteristics of Korean Native Black Pork and Modern Genotype Pork during Refrigerated Storage after Thawing)

  • 본 연구는 해동후 냉장시킨 재래흑돼지육과 개량종 돼지육의 육질을 비교함으로서 재래흑돼지육에 대한 기초자료를 제시하고자 실시하였다. 생시체중이 65.3 kg인 재래흑돼지 거세돈 5두와 114.3 kg인 개량종 돼지 거세돈($Landrace{\times}Yorkshire{\times}Duroc$) 5두의 등심(M. longissimus)을 $-80^{\circ}C$에서 1개월 동안 냉동하고 해동한 후 $2{\pm}0.3^{\circ}C$에서 7일 동안 저장하였다. 도체중과 지육율은 재래흑돼지가 개량종 돼지보다 낮았다(p<0.05). 일반성분에서 수분 함량은 재래흑돼지육이 개량종 돼지육보다 낮았지만(p<0.05), 조지방 함량은 높았다(p<0.05). pH는 재래흑돼지육이 저장 5일까지 높았으며(p<0.05), 드립감량은 재래흑돼지육이 저장기간 동안 낮았다(p<0.05). TBARS는 재래흑돼지육이 저장 5일부터 유의적으로 높았다(p<0.05). 표면육색은 저장기간 동안 $L^*,\;h^0$ 값에서 재래흑돼지육이 낮았으며(p<0.05), $a^*,\;b^*,\;C^*$ 값에서는 높았다(p<0.05). 지방산 조성은 myristic acid, gamma-linolenic acid, linolenic acid, cis-5,8,11,14,17-eicosapentaenoic acid에서 재래흑돼지육이 개량종 돼지육보다 낮았으며(p<0.05), 신선육과 가열육의 관능적 기호도는 재래흑돼지육이 높았다(p<0.05). 따라서 재래흑돼지육은 개량종 돼지육보다 수분 및 일부 불포화지방산 함량이 낮고 저장중 지방산화가 촉진되었지만, 조지방 함량이 높고 보수력, 관능적 기호도 및 색택이 우수하였다.
