명태(Gadus chalcogrammus) 친어 사료내 명태유 첨가가 수정란과 자어 품질에 미치는 효과 (Effects of the Dietary Inclusion of Pollock Oil on the Quality of Eggs and Larvae of Walleye Pollock Gadus chalcogrammus)

  • This study investigated the effects of inclusion of pollock oil (PO) in the diet of broodstock on the egg and larval quality of Walleye Pollock Gadus chalcogrammus. The experimental diet comprised of semi-moist pellets prepared either with or without PO (control; Con). The fish assigned to each diet were fed to visual satiation (two meals per day) for 12 weeks. Eggs spawned from both groups of fish were sampled during the spawning season (three months) and the egg and larval quality was determined. Total egg volume, fertilization, and hatchability of eggs from the PO group were higher than those of the Con group. Fatty acid composition of fertilized eggs was not affected by the experimental diet. Oleic acid, eicosapentaenoic acid, and docosahexaenoic acid content in larvae of the PO group was higher than that in larvae of the Con group. These results demonstrate the beneficial effects of including PO in the broodstock diet of Walleye Pollock, specifically on the quality of the eggs (total egg volume, fertilization, and hatchability) and larvae (fatty acid composition).

Characterization of Acid-soluble Collagen from Alaska Pollock Surimi Processing By-products (Refiner Discharge)

  • The study was carried out to examine on the refiner discharge from Alaska pollock as a collagen resource by characterizing biochemical and functional properties of collagen. The refiner discharge from Alaska pollock surimi manufacturing was a good resource for collagen extraction according to the results of total protein, heavy metal, volatile basic nitrogen, collagen content, amino acid composition, and thermal denaturation temperature (TDT). TDT of acid soluble collagen from refiner discharge showed $20.7^{\circ}C$, which was similar to that of collagen from Alaska pollock muscle and was higher than that of collagen from Alaska pollock skin. TDT of acid-soluble collagen from refiner discharge was, however, lower than those of skin collagens from warm fish and land animal. Acid-soluble collagen from refiner discharge of Alaska pollock could be used as a functional ingredient for food and industrial applications according to the results of water and oil absorption capacities, and emulsion properties. In addition, if the thermal stability of the acid-soluble collagens is improved, collagen from refiner discharge from Alaska pollock could be more effectively used.

넙치 종묘생산을 위한 Rotifer와 Artemia nauplius의 영양강화효과 (Efficiency of Enriched Rotifer and Artemia nauplius for the Seedling Production of Flounder, Paralichthys olivaceus)

  • 해산 어류나 갑각류의 유생 사육시 초기 동물 먹이 생물인 rotifer, Brachionus plicatilis를 oil의 종류와 함량을 서로 다르게 첨가한 유지효모로 배양한 결과와, 이 rotifer와 Artemia nauplius에 위에 각 유지효모와 다른 여러 영양강화제로 영양강화한 후 넙치 자어에 공급하여 자어의 성장과 생존을 비교해 본 결과, 다음과 같이 요약할 수 있다. 1. 12종의 유지효모로 rotifer를 배양했을 때 오징어 간유 $15\%$가 첨가된 유지효모의 경우가 가장 좋았다. 2. 오징어 간유 $15\%$의 유지효모로 rotifer를 배양했을 때, rotifer.의 최대성장이 Chlorella ellipsoidea의 경우와 비슷하였고 (140 inds./ml) 나머지 유지효모는 현저히 낮았다. 3. 그러나 오징어 간유 $15\%$의 유지효모로 배양된 rotifer를 넙치 자어에 공급했을 때 자어의 성장과 생존율은 Chlorella의 경우보다 좋았다. 4. 또 영양강화제로 영양강화된 rotifer와 오징어 간유 $15\%$ 유지효모로 배양된 것을 넙치 자어에 공급하여 자어의 성장과 생존율을 비교했을 때도 오징어 간유 $15\%$의 유지효모가 가장 좋았다. 5. 오징어 간유$5\%,\;15\%,\;25\%$ 첨가된 유지효모로 영양강화된 Artemia nauplius를 넙치 자어에 공급했을 때 intact nauplius의 경우보다 자어의 높은 성장과 생존율을 나타냈고, 그 중에서 $25\%$ 함량의 유지효모가 가장 좋았다. 6. Artemia nauplius에 대한 유지효모의 적정 영양강화 시간과 농도는 각각 6시간과, 1.5g/g cyst였으며, 유지효모(오징어 간유 $5\%,\;15\%,\;25\%$)와 여러 영양강화제를 비교했을 때도 오징어 간유 $25\%$의 경우가 자어의 가장 높은 성장과 생존율을 나타냈다.

동결건조 어류 알 농축물의 식품기능성 및 생리활성 (Food Functionality and Bioactivity of Vacuum Freeze-dried Fish Roe Concentrates)

  • The purpose of this study was to evaluate the food functional properties and in vitro bioactivity of vacuum freeze-dried fish roe concentrates (FRCs) prepared from Alaska pollock Theragra chalcogramma (AP), bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST). All three species showed better buffering capacity on the alkaline side (pH 10-12) than on the acidic side. The water-holding capacities of the FRCs were 3.5, 8.5 and 4.2 g/g protein for AP, BH and ST, respectively, and were significantly higher than that of commercial egg white. The protein solubilities of the FRCs were 42.5% (AP), 50.0% (BH) and 13.9% (ST). The foaming capacities of the FRCs were not significantly different among the species (128.0% for AP, 128.3% for BH, and 143.3% for ST; P>0.05), and their foam stability was maintained at 53.0-74.2% for 60 minutes. The oil-in-water emulsifying activity indexes of AP and BH (19.5 and 20.2 ㎡/g protein, respectively) were significantly superior to that of ST (P<0.05). The 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis-3-ethylbenzothia-zoline-6-sulfonic acid radical-scavenging activities (IC50, mg/mL) of the FRCs were in the ranges of 1.05-3.26 and 0.13-0.18 mg/mL, respectively, and the angiotensin I converting enzyme inhibitory activity was in the range of 0.97-1.89 mg/mL.
