A Study in Packing of Changran-Jeotgal -2. Shelf-life a Plastic Pouch racking of Changran-Jeotgal- (창란젓갈의 포장에 관한 연구 -2. 파우치 포장 젓갈의 품질유지기한-)

  • Quality variation of plastic pouch packing of Changran-Jeotgal produced by improved process and conventional process were investigated during storage at 10, 20 and $30^{\circ}C$, respectively. The kind of plastic pouch used in this study were polyethylene/nylon/linear low density polyethylene (PE/Ny), polyethylene terephthalatefpolyethyleneflinear low density polyethylene (PET) and low density polyethylene (PE). In the higher storage temperature, the faster increase of$ CO_2$, concentration and volume of pouch packing in all kinds of pouch. However, the highest value of pH, L-value, volatile basic nitrogen (VBN) and viable cell counts were shown in PE, the next was PET and PE/Ny, Overall, Changran-Jeotgal produced by improved process showed a little change of physical and chemical characteristics than conventional process. From above results, relationship between quality parameters were predicted pH, L-value, VBN and sensory score were highly correlated, therefore, these parameters is expected to uses as shelf-life indicated elements in cease of plastic pouch packaging.

Storage Trial of Preliminary Processed Peach (복숭아 일차가공품(一次加工品)의 저장성(貯藏性)에 관한 연구(硏究))

  • To enable off-season peach canning, peaches were halved and processed into solid packs. Following variables were compared in relation to storage stability of solid packs. First as pretreatment-dipping in citric and ascorbic solution after lye peeling; second as pasturization in pouch and hot fill process; third as packaging method-2 ply(PET/PE) and 3 ply(PET/Al/PE) plastic film pouch and metal container; fourth as storage condition $-20^{\circ}C\;and\;-5^{\circ}C$. After 25 weeks storage test, all peaches in different packs were processed into canned peaches just like commercial products, and then quality was organoleptically evaluated from the viewpoint of processing and storage variable of solid packs. The results are follows; 1. Ascorbic acid dipping in 3 ply pouch and citric acid dipping in 2 ply pouch had better quality retention effect than any other pretreatments in respective packing. 2. Pasteurization method gave great effect on the color and texture of the solid pack during storage, but not on the quality of the final canned peach. 3. Can and 3 ply packing were better than 2 ply pouch in storage of solid pack and quality of final canned peach. 4. The $5^{\circ}C$ storage gave better quality than $20^{\circ}C$.

Manufacture of Squid-Jeotgal by the Improved Process (개선된 제조기법에 의한 오징어젓갈 제조)

  • New manufacturing process was applied to manufacture the low salted Squid-Jeotgal to improve the quality variation salty taste and shelf-life. It's optimum salting and sugaring process was made by the addition of $17\%$ NaCl for 3 hr and $15\%$ corn syrup for 4 hr with 10 rpm agitation. Quality variations of Squid-Jeotgal produced by the improved and the conventional process were packed by jar, polyethylene lerephthalatefpolyethyleneilinear low density polyethylene (PET) and low density polyethylene (PE). And then quality variations of them were investigated at storage temperature of 10, 20, and $30^{\circ}C.$ Decreasing rate of pH, increasing rates of VBN and viable cell counts of Squid-Jeotgal produced by the improved process were slower than those of the conventional process at all storage temperature. Sensory evaluation indicated that the production of Squid-Jeotgal by the improved process extended the shelf-life about 10-20 days.

Validity Periods of Sterilization Products: Focus on Packing Materials and Storage Environments (멸균물품의 유효기간에 관한 연구: 포장재와 보관환경을 중심으로)

  • Purpose: The aim of this study was to provide a scientific basis for shelf life and re-establish the shelf life in a hospital environment by investigating the validity periods of various packaging materials. Methods: We selected six departments to store sterilized items, prepared 482 sterilized items, and stored them for 12 months. Each sample was tested using a microbiological culture in the laboratory every two weeks. When the result was positive, the sample was considered contaminated. The temperature and relative humidity were measured using an automatic control system to investigate the storage environment during the study period. Results: Except for two samples, which were positive in the 22nd and 28th weeks, 480 samples were negative. The temperature and relative humidity of the sample storage area were measured every week. The annual average temperature was 23.6±1.6℃, and the mean relative humidity was 35.1±15.2%. The cabinets used in this study were the two-open and four-closed types. Conclusion: This study confirmed the validity of the expiration date in a hospital environment. Based on the results, the nonwoven fabric remained sterile for more than nine months. No case of contamination of the paper-plastic pouch packaging was observed, owing to the microbial culture for two months.
