This study was carried out to analyze the quality change of salted mackeral treated with extracts of edible plan(Diospyros kaki, Teucerium veronicoides and Zanthoxylum schinifolium) during storage for develope of preparation methods and high quality of mackerel. The Hunter's color values of salted mackerel was not changed during strange. L, a and b value of salted mackerel teated with Korean herbal extracts was lower changed than those of control(mackerel not treated extracts of edible plants). Adhesiveness, and viscosity of salted mackerel was higher at $4^{\circ}C$ during storage than those at $25^{\circ}C$, and was higher in groups treated extects of edible plants at early storage than those in control group. Hardness was low in the salted mackerel treated extracts of edible plane and control group during storage. The salted mackerel treated Z. schinifolium extracts was the highest scores in sensory evaluation among groups.

Recent amendment on the Food Sanitation Act in Korea mandated the Minister of Food & Drug Safety to secure the scientific basis for management and reevaluation of standards and specifications of foods. Especially because the current food safety control is limited within the scope of 'Farm to Market' covering from production to retail in Korea, safety control at the plane of true 'Farm to Fork' scope is urgently needed and should include 'total diet' of population instead of individual food items. Therefore, 'Total Diet Study (TDS)' which provides 'closer-to-real' estimates of exposure to hazardous materials through analysis on table-ready (cooked) samples of foods would be the solution to more comprehensive food safety management, as suggested by World Health Organization and Food and Agriculture Organization of the United Nations. Although the protection of diets from hazards must be considered as one of the most essential public health functions of any country, we may need to revisit the value of foods which has been too much underrated by the meaningless amount of some hazardous materials in Korea. Considering the primary value of foods lies on sustaining life, growth, development, and health promotion of human being, food safety control should be handled not only by the presence or absence of hazardous materials but also by maximizing the value of foods via balancing with the preservation of beneficial components in foods embracing total diet. In this regard, this article aims to provide an overview on TDS by describing procedures involved except chemical analysis which is beyond our scope. Also, details on the ongoing TDS in Korea are provided as an example. Although TDS itself might not be of keen interest for most readers, it is the main user of the safety reference values resulted from toxicological research in the public health perspective.
This Study was conducted to predict temperature profile of Jangjorim (boiled beef in soy sauce) food during retorting using the commercial NISA (Numerical Integrated Elements for System Analysis) program. NISA program is a good tool to simulate the temperature profile of a specific material based upon the finite element method. The cold point of Jangjorim food located not at the geometrical center but at 26.9 mm backward in y plane because specific heat of soy sauce was 20% higher than that of boiled beef. The effects of heat transfer coefficients on heat transfer during retorting process of Jangjorim were analyzed by response surface methodology (RSM). Independent variables were thermal conductivity of soy sauce, thermal conductivity of boiled beef, and convection heat transfer coefficient and dependent variables were temperature error and lethality error. Thermal conductivity of soy sauce was the most significant contributor among those (P<0.01).
Supplementary feeding strategies were evaluated from pre-calving throughout lactation on 24 dual-purpose Mpwapwa breed cows in their second or greater lactation, weighing 246-455 kg. The Mpwapwa breed is an established breed of 4 Bos indicus breeds and 8% of Bos taurus. The cows were penned and stall-fed individually. Eight weeks before calving to eight weeks after calving, the cows were divided into two groups and offered hay ad libitum with either 2 kg DM (L) or 4 kg DM/day (H) concentrates. Nine weeks after calving half of the cows on L-level continued with 2 kg DM/day (L-L) while the remainder received 4 kg DM concentrate daily (L-H). Half of the cows on H-group continued with 4 kg DM/day (H-H) while the remainder received 2 kg DM/day (H-L). The concentrate mixture comprised of sunflower seed cake (33%) and maize bran (67%). The cows consumed all the concentrate offered. Hay DM intake was similar (6.8 kg/day) and tended to decrease the last two weeks before calving increased again after calving. Live weight change and body condition score were similar across treatments before calving but differed after calving (p<0.05). Heavier cows with higher condition score pre-calving had a higher body weight loss and regained weight later. After treatment reallocation, live weight change and condition differed between treatments (p<0.05). Calves were allowed to suckle milk from one quarter. The amount of milk suckled and calf weight gains were not significantly different between treatments. The cows were removed from the experiment when the milk yield was below 4 kg per day. Cows on treatment H produced 6.2 kg and on treatment L 5.0 kg saleable milk/day (p<0.05) during the first 8 weeks post partum. During the period 9-18 weeks post partum the saleable daily milk on H-H, L-H, H-L and L-L were 5.2, 4.8, 4.7 and 4.3 kg, respectively (p>0.05).

Six Holstein heifer calves weaned at 45 days-of-age were randomly allocated into high daily gain (1.1 kg/d, HDG) and low daily gain (0.56 kg/d, LDG) groups, and were slaughtered at 170 kg of live weight. Energy intake level in the feeding period was 2.4 $\times$ maintenance in 105 days for HDG and 1.4 $\times$ maintenance in 216 days for LDG calves. Total length of the small intestine was identical between groups, but both weights of the pancreas and of the small intestinal mucosa were greater (p < 0.01) for HDG calves. Alpha-amylase, lipase, proteinase, and trypsin activities of the whole pancreas were higher (p < 0.05) in HDG calves. Disaccharidase activity of the whole small intestinal mucosa was also higher (p < 0.10) for HDG than for LDG calves. However, the enzymatic activities, expressed as per gram or per protein of the pancreas and the small intestinal mucosa, were not affected (p > 0.10) by the plane of nutrition. These results suggest that the digestive enzyme activity in the small intestine varies primarily with the weight of tissues synthesizing the enzyme.
The present research was undertaken to monitor the effects of restricted and ad. libitum feeding during last trimester of pregnancy on the performance of crossbred dairy cows and their calves. For this purpose two groups of crossbred cows having eight animals in each group were put into two plane of nutrition during their last three months of pregnancy. Dietary energy level in one group was calculated as per Ministry of Agriculture, Fisheries and Food, (MAFF, UK) and the cows on other group received ad. libitum feeding (concentrate level similar to MAFF, recommendation+ad. libitum roughage). After calving, the cows of both groups were given same diet (ad. libitum) to study the effect of feeding during pregnancy on subsequent lactation performance of the cows. It was observed that during pre-calving period cows on ad. libitum feeding gained significantly (p<0.05) more body weight than that of cows on restricted feeding ($38.50{\pm}6.04$ vs $21.37{\pm}8.04kg/cow$). There was no significant differences between the birth weight of calves of restricted ($21.31{\pm}2.18kg$) and ad. libitum ($20.31{\pm}3.27kg$) groups. Dietary energy intake of ad. libitum group ($50.22{\pm}4.24$ MJ ME/d/cow) was significantly higher (p<0.01) than that of restricted group ($39.76{\pm}1.03$ MJ ME/d/cow). During lactation period cows that were on restricted feeding produced little more milk (3.06 lit/cow/day), than that of the cows on ad. libitum feeding (2.84 lit/cow/day). Although growth rate of the calves of restricted group upto one month ($0.23{\pm}0.09kg/calf/d$) was significantly (p<0.01) higher than that of ad. libitum group ($0.17{\pm}0.08kg/calf/d$) but after four months the growth rate of the calves of two groups become nearly similar ($0.35{\pm}0.02$ vs $0.37{\pm}0.03kg/calf/d$) and difference between them was non-significant. During lactation period cows of restricted group gained little weight but cows of ad. libitum group lost significantly (p<0.05) more weight. Per day metabolizable energy intake in both group during lactation period was nearly similar (67.54 vs 69.58 MJ ME). It is concluded that ad. libitum feeding during last trimester of pregnancy is neither economic for getting maximum milk yield nor for calf growth rate and MAFF, recommended level of dietary energy during that period could be applied on our pregnant crossbred dairy cows.
Twenty eight 3-4 month old castrated Black Bengal kids (Capra hircus) were used to determine the effects of source and level of dietary copper (Cu) concentration on their performance and nutrient utilization. Cu was supplemented (0, 10, 20 and 30 mg/kg diet DM) as copper sulfate ($CuSO_4$, $5H_2O$) or copper proteinate (Cu-P). Kids were fed a basal diet containing maize (19.5%), soybean (17.0%), deoiled rice bran (56.5%), molasses (4.0%), di-calcium phosphate and salt (1.0% each) and mineral and vitamin mixture (0.5% each) supplements at 3.5% of body weight to meet NRC (1981) requirements for protein, energy, macro minerals and micro minerals, excluding Cu. The basal diet contained 5.7 mg Cu/kg, 122.5 mg Fe/kg, 110 mg Zn/kg, 0.26 mg Mo/kg and 0.32% S. $CuSO_4$ or Cu-P was added to the basal diet at the rate of 10, 20 and 30 mg/kg. Kids were housed in a well ventilated shed with facilities for individual feeding in aluminum plated metabolic cages. Blood samples were collected from the jugular vein on d 0, 30, 60 and 90 to determine hemoglobin (Hb), packed cell volume (PCV), total erythrocyte count (TEC), total leukocyte count (TLC) and serum enzymes (alkaline phosphatase, alanine transferase and aspertate transferase). A metabolism trial of 6 days duration was conducted after 90 days of experimental feeding. Statistical analysis revealed that source and level of Cu supplementation improved live weight gain (p<0.04) and average daily gain (p<0.01). No significant contribution of source and level of Cu to alter serum serum enzymes was evident. Goats fed Cu-P tended to have higher Hb, PCV and TEC than with $CuSO_4$ supplementation. Cu-P increased digestibility of ether extract (EE, p<0.02) and crude fiber (p<0.05) and showed an increasing trend (p<0.09) for digested crude protein (CP) and crude fiber (CF). Supplemental dose of Cu linearly improved (p<0.02) digestibilities of dry matter (DM), organic matter (OM), EE and nitrogen free extract (NFE). Though the absorption of nitrogen (N) was not affected (p>0.10) by both source and dose of Cu, N retention was affected (p<0.04) and there was a significant $Source{\times}Dose$ interaction (p<0.05). Final body weight (BW) was not influenced (p>0.10) by the source of Cu but increasing dose of Cu increased (p<0.04) the BW of kids. TDN intake (g/kg $W^{0.75}$) was higher (p<0.05) with the increased dose of Cu and there was a significant $Source{\times}Dose$ interaction. It was concluded that supplementation of Cu from different sources and varying dose level in a concentrate based diet may improve performance, nutrient utilization and plane of nutrition in castrated Black Bengal kids. The effects on performance and nutrient utilization are more pronounced with Cu-P than $CuSO_4$ supplementation. Higher dose of Cu showed better result than lower dose.
The study was undertaken to see the effect of elevated feeding during pre-partum or pre- as well as post-partum period on the productive and reproductive performance of crossbred cows. The experiment lasted for 60 d pre-partum to 120 d post-partum. Eighteen dry pregnant crossbred cows divided into three equal groups were fed either as per NRC feeding standard (C) or 20% above NRC during 60 d pre-partum ($T_1$) or fed 20% above NRC during both 60 d pre-partum to 120 d post-partum ($T_2$) period. During prepartum period body weight gain was significantly ($p{\leq}0.05$) higher in $T_1$ and $T_2$ groups than that of control group. The animals fed at higher plane of nutrition ($T_1$ and $T_2$) took significantly lesser time for complete relaxation of pelvic muscles, act of calving and for expulsion of placenta than that of control group. Moreover, such cows delivered 2 to 3 kg heavier calves as compared to normal fed dams. During post-partum period, the average daily milk yield was significantly higher in $T_2$ group than that in $T_1$ and control groups. The peak yield was significantly higher in $T_2$ group, it took longer time to reach peak production but it was more persistent in this group as compared to $T_1$ and control groups. Average milk fat, solids-not-fat (SNF) and total solids were significantly higher in $T_1$ and $T_2$ groups as compared to control group. Body weight losses incurred during early lactation were not even compensated by end of 4th month of lactation in C and $T_1$ groups whereas the animals in $T_2$ group gained 2.0 kg. The 1st post-partum estrus and conception rate were better in high fed groups ($T_1$ and $T_2$) than that of control group. The returns over feed cost of milk production were higher in $T_2$ group followed by $T_1$ and control groups indicating the advantage of elevated feeding during pre- and post-partum periods.
Plants play important roles in human life not only as suppliers of oxygen but also as a fundamental resource to sustain the human race on this earthly plane. Information in the biomedical literature has indicated that many natural herbs have been investigated for their efficacy against lethal irradiation. Pharmacological studies by various groups of investigators have shown that natural herbs possess significant radioprotective activity. In view of the immense medicinal importance of natural product based radioprotective agents, this review aims at compiling all currently available information on radioprotective agents from medicinal plants and herbs, especially the evaluation methods and mechanisms of action. In this review we particularly emphasize on ethnomedicinal uses, botany, phytochemistry, mechanisms of action and toxicology. We also describe modern techniques for evaluating herbal samples as radioprotective agents. The usage of herbal remedies for combating lethal irradiation is a green anti-irradiation approach for the betterment of human beings without high cost, side effects and toxicity.
The purpose of this study was to offer basic data for developing effective program for promotion elderly people's oral condition, and oral health behavior upon the appearance of denture. This study was performed by utilizing health questionnaire survey and oral examination survey for first year(2010) law data of the 5th korea national health and nutrition examination survey. The research subjects were 1419 people who were aged over 65 and completed the oral examination and oral questionnaire survey. In the general characteristics, the need of denture was indicated highly in the male elderly. Factors of having relationship with a need of denture in oral health condition were indicated to be chewing difficulty(p<0.001) and dental caries(p<0.0001). The case of not using oral hygiene device was high in a need of denture(p<0.001). Also, a case of not dental treatment was indicated to be high in a need of denture(p<0.001). Through these related findings, the elderly's oral condition and oral health behavior were indicated to have high relationship with a need of denture. There is a need of securing basic data for promoting the elderly's oral health in the future and of seeking a plane for application in order to improve the elderly's health in the aging society. Therefore there is a need of securing and seeking elderly's health program which is considered the aging society's characteristics to improve the elderly's health promotion.
