The physicochemical properties of sweet potato (SP) starches reclaimed from an SP-processing sludge without freezing (RC/NF) and with freezing (RC/FR) were investigated. Lab-isolated (LI) SP starch, as a control, were prepared from raw SP. RC/NF and RC/FR SP starches were recovered from SP-processing sludges by the repeated sieving and washing procedure. The total starch contents and amylopectin branch-chain distributions did not differ for three SP starches. Relative to LI and RC/NF SP starches (possessing similar physicochemical characteristics), the apparent amylose and phosphorus contents, swelling factor, and pasting viscosity were reduced for RC/FR SP starch. However, the freezing treatment altered X-ray diffraction pattern (at $5.5^{\circ}$, $11-12^{\circ}$, and $24^{\circ}$$2{\theta}$) of RC/FR SP starch, which likely increased its gelatinization peak and completion temperatures. Its amorphous region in total diffractogram was reduced, resulting in the enhanced relative crystallinity. Overall results suggested SP starches recovered from an SP-processing sludge would have the potential to replace commercial SP starch products.
Ferulic acid (3-methoxy, 4-hydroxy cinnamic acid) is a flavoid component possessing antioxidant property. The compound is currently under development as a new drug candidate for the treatment of the dementia. The objective of this preformulation study was to determine the physicochemical properties of ferulic acid. The n-octanol to water partition coefficients of ferulic acid were 0.375 and 0.489 at the pHs of 3 and 10, respectively. Accelerated stability study for ferulic acid indicated that the t 90 value for the drug was estimated to be 459 days at $25^{\circ}C$. Ferulic acid was also found to be unstable under the relative humidity of more than 76%, probably because of the hygroscopic nature of the drug. In order to study compatibility of ferulic acid with typical excipients, potential change in differential scanning calorimetry spectrum was studied in 1: 1 binary mixtures of ferulic acid and typical pharmaceutical excipients (e.g., Aerosil, Avicel, CMC, Eudragit, lactose, PEG, PVP, starch and talc). Avicel, CMC, PVP and starch were found to be incompatible with ferulic acid, indicating the addition of these excipients may complicate the manufacturing of the formulation for the drug. Particle size distribution of ferulic acid powder was in the size range of 10-190 $\mu$m with the mean particle size of 61 $\mu$m. The flowability of ferulic acid was apparently inadequate, indicating the granulation may be necessary for the processing of the drug to solid dosage forms. Two polymorphic forms were obtained by recrystallization from various solvents used in formulation. New polymorphic form of ferulic acid, Form II, was obtained by recrystallization from 1,4-dioxane. The equilibrium solubility for Form I was approximately twice of that for Form II. The dissolution rate of Form II was higher than that of Form I in the early phase (<6 min). Therefore, these physicochemical information has to be taken in the consideration for the formulation of ferulic acid.

Ecotoxicity assessments of 90 selected effluents of 22 industry types from 2002 to 2004 in Korea were evaluated by a toxic battery of bioassay test using fish Oryzias latipes, invertebrate Daphnia magna, algae Selenastrum capricornutum and bacteria Vibrio fischeri with the physicochemical measurement items and permit concentrations on the present Water Quality Conservation Act in Korea. Total toxic unit (${\Sigma}TU$) of 8 industry types of 22 industry types by the toxic battery appeared in order of the value site as follows; Pigment Dye Manufacturing (${\Sigma}TU$ 217.1) > Textile and Dye (${\Sigma}TU$ 39.3) > Semiconductor Electronic Manufacturing (Small) (${\Sigma}TU$ 25.6) > Wastewater and Sewage Treatment Plants (${\Sigma}TU$ 25.4) > Coating (${\Sigma}TU$ 23.8) > Leather Skin Manufacturing (${\Sigma}TU$ 18.0) > Synthetic Resin Manufacturing (${\Sigma}TU$ 15.6) > Assemble Metal Manufacturing (${\Sigma}TU$ 10.7). Our results demonstrate that ecotoxicity assessment, by bioassay test, is effective and practical for industrial wastewater management for 90 selected effluents with the limitation of the physicochemical permit. Among 90 effluents, 9 samples failed physicochemical permit limitation and 81 passed it. In result of ecotoxicity assessment of 90 effluents by the toxic battery, 76 effluents exhibited ecotoxicity and the others did not. The physicochemical measurement items and permit concentrations on the present Water Quality Conservation Act in Korea were low related to the ecotoxicity value by the toxic battery and appeared limited for water quality management to water-ecosystem and environment-friendly management of water.
The effects of dietary fiber extracted from pumpkin (pumpkin fiber) on physicochemical properties, textural properties, and sensory characteristics of chicken frankfurters were investigated. Chicken frankfurter was supplemented with pumpkin fiber at levels of 0, 1, 2, 3, and 4%. Adding different levels of pumpkin fiber affected the proximate composition of the chicken frankfurters (p<0.05), except for protein content. In addition of different levels of pumpkin fiber influenced the physicochemical and textural properties of the chicken frankfurters (p<0.05). The yellowness, viscosity, and hardness were higher in chicken frankfurters samples containing pumpkin fiber than those in the control (p<0.05). The results showed that chicken frankfurter samples with higher pumpkin fiber levels had lower lightness values (p<0.05), as well as less cooking loss, emulsion stability, and lower color scores (p<0.05) compared to those control without pumpkin fiber treatment. The chicken frankfurters with 2% and 3% pumpkin fiber had higher overall acceptability than that of the control (p<0.05). The results show that adding pumpkin fiber produced acceptable chicken frankfurters and improved their quality characteristics.
Effects of 7.5% potassium sorbate and/or 1% ascorbic acid dip on shelf-life of physicochemical quality of chicken parts stored at $4^{\circ}C$ was investigated. There was no remarkable difference in the physicochemical changes between 1% ascorbic acid dipped chicken pairs and untreated chicken parts. 1% ascorbic acid dip retarded lipid oxidation slightly. 7.5% potassium sorbate dip reduced dip loss, inhibited the decrease of water holding capacity and retarded lipid oxidation and protein deterioration. Compared with 7.5% potassium sorbate dip alone, dual treatment of 7.5% potassium sorbate and 1% ascorbic acid showed no significant difference in the physicochemical quality such an pH, drip loss, water holding capacity, shear force value and volatile basic nitrogen cotents while lipid oxidation was retarded more effectively. Reduction in relative contents of linoleic acid in dual treated chicken was significantly retarded.
Volatile fatty acids (VFAs) production from marine brown algae, Saccharina japonica, was investigated in anaerobic dark fermentation. In order to evaluate the VFAs productivity, various experimental parameters (i.e., physicochemical pre-treatment, microorganism inoculation ratio, substrate concentration, and pH) were evaluated. According to the physicochemical pre-treatment methods, the maximum concentrations of VFAs were obtained in the order of sulfuric acid, subcritical water and subcritical water with lipid-extraction. Also, we investigated the operating parameters such as microorganism inoculation ratio (MV/M = 10 to 30), the substrate concentration (18.0 to 72.0 g/L) and pH (6.0 to 7.0) in sulfuric acid pre-treatment method. When the substrate concentrations were 18.0, 36.0, 54.0 and 72.0 g/L at $35^{\circ}C$, microorganism inoculation ratio 15, pH 7.0 for 372 hours, the maximum concentrations of VFAs were respectively 9.8, 13.9, 18.6 and 22.3 g/L. The change in VFAs concentrations was detected that acetic- and propionic acids increased according to increasing pH, while the butyric acid increased with decreasing pH. The VFAs obtained from concentration and separation process may be used as basic chemistry materials and bio-fuel, and they will expect to produce alternative energy of fossil fuel.
Physicochemical properties of waxy maize flours prepared by hydrothermal and enzymatic treatments were evaluated. Waxy maize flours were hydrothermally treated using heat-moisture treatment (HMT) and annealing (ANN) and enzymatically treated using commercial enzymes (cellulase, proteinase, and pectinase). The HMT-modified waxy maize flours had low water absorption index (WAI), melting enthalpy, viscosity, and crystallinity. However, ANN-modified and enzymatically modified waxy maize flours had high WAI, melting enthalpy, and viscosity. X-ray diffraction analysis of ANN-modified and enzymatically modified waxy maize flours revealed a typical A-type pattern and displayed sharper crystalline peaks than those observed for the control groups (native waxy maize flours). In contrast, the crystallinity of HMT-modified waxy maize flours were decreased by hydrothermal treatment.

The effects of heat treatments on the physicochemical properties and in vitro biological activities of quinoa (Chenopodium quinoa Willd.) were investigated. Quinoa grains were subjected to two different heat treatment methods: boiling and steaming plus roasting (steaming/roasting). Compared with raw quinoa, boiled quinoa samples had slightly lower crude protein, crude fat, crude ash, and starch contents. However, steaming/roasting treatment did not cause significant differences in proximate composition. Heat treatments reduced total phenolic and flavonoid contents in quinoa extracts, and higher reduction was detected upon boiling treatment. Heat treatments also reduced lightness and increased yellowness of quinoa samples. Heat treatments increased water absorption index but decreased water solubility index. In vitro starch hydrolysis increased substantially after both heat treatments, and slightly higher values were observed in the boiled quinoa samples. 1,1-Diphenyl-2-picrylhydrazyl free radical scavenging activity and nitrite scavenging activity were reduced by heat treatments, and the boiled quinoa sample showed the lowest activity likely due to loss of activities in cooking water.

This experiment was carried out to evaluate the effect of residual food compost application on plant growth and physicochemical properties of soil when residual food compost made from the composting process as part of organic waste recycling was applied in soil as variable rate. The treatments were composed non-fertilizer treatment, control treatment applied with pig compost $20Mg(D.W.)ha^{-1}$, and residual food compost treatments each of applied with 20, 40, 60, $80Mg(D.W.)ha^{-1}$ and were randomized complete block design with three replication. Soil pH after experiment was more increased as more increase application of residual food compost. Other chemical properties of soil including EC were also showed the similar results. The plant growth in treatments applied much of residual food compost at the early growth stage was very damaged and these results were proved at the first growth measurement. Production of the red pepper especially reduced in treatments taken growth demage at the early stage and that of $20Mgha^{-1}$ treatment almost same as control treatment. Bulk density was reduced but porosity was increased according to increase of residual food compost application. Considering the reduction of red pepper production and the demage of growth at the early stage by plenty of salt and water soluble application volume of residual food compost was not permitted over of $30Mgha^{-1}$. Additively, to settle the application volume of residual food compost and to evaluate the plant growth and changes of physicochemical properties of soil, the results taken from continual applying is concluded more important than single application.

This study was conducted to investigate the cause of microbiological contaminants in aseptic chocolate milk and evaluate the effect of a physicochemical treatment on the growth inhibition of isolated bacterial strains. The bacterium isolated from aseptic chocolate milk was identified as Bacillus lentus and was named B. lentus M1. In the heat and pH treatment, the growth of B. lentus was inhibited at 110$^{\circ}C$ for >15 min and at pH's <5 and >10. An electrolyzed water treatment against B. lentus M1, revealed 5 mm growth past the inhibition zone. The effect of ozone gas on B. lentus M1 growth was evaluated using viable cell counts. When the initial number of B. lentus M1 was $10^2$ and $10^3$ CFU, the bacteria were completely suppressed by ozone gas treatment for 10 and 30 min, respectively. In a microwave treatment, B. lentus M1 was sterilized following microwave treatment for 1 min. As the result of ${\gamma}$-irradiation against B. lentus M1, numbers decreased as the ${\gamma}$-irradiation dosage increased. These results show the growth inhibition effects against contaminants in aseptic chocolate milk using physicochemical treatments.
