The study of the Composition and Physico-chemcal Characteristics of MSW in urban and gangwon area (수도권 및 강원지역 도시고형폐기물의 조성과 물리·화학적 특성연구)

  • In this study, the composition and physico-chemical characteristics of municipal solid waste (MWS) which was treated in four different area were investigated. It is necessary to measure the characteristics of MSW to build a waste treatment and Refuse Derived Fuel (RDF) facility, the data-base and total managing of the landfill. It was found that the average density of solid wastes is in the range of $78.15-199.8kg/m^3$. This MSW was composed of 8.87% of food wastes, 38.8% of papers, 34.12% of plastics & vinyls, 7.16% of textiles, 0.96% of wood, 1.3% of rubber & leathers and others, respectively. Most of MSW are composed of food, paper and plastic waste and more than 94% was combustible waste. For three components, moisture is 17.38%, combustible component is 69.03% and ash is 6.24%. The chemical element has the high order of carbon, oxygen, hydrogen on the dry basis of wastes. And the low heating value of the MSW which is measured by calorimeter is calculated as 2973.8 kcal/kg and high heating value of the MSW is calculated as 5209.94 kcal/kg.

Changes in Physico-chemical Properties of Potato Starch by Microwave Heating Methods (마이크로파 가열방법에 따른 감자전분의 이화학적 특성변화)

  • The purpose of this study was to investigate the physico-chemical properties of potato starch heated with microwave. Two types of potato starches are prepared; in group A raw potato starch was heated with microwave and in group B potato starch was isolated from potato heated with microwave. Both groups were exposed to the microwave energy in a 560 W, 2,450 MHz oven for 60, 120, 180 and 300 seconds. As the microwave heating time took longer, free lipid decreased and bound lipid increased in both groups. The shape of starch granules, birefrigence and X-ray diffraction pattern were not changed much by microwave heating in both groups. Water binding capacity increased, but amylose content, swelling power and solubility decreased as the microwave heating time took longer. It was also found that the extent of decreases in swelling power and solubility were different between group A and group B.

Physico-Chemical Properties of Viscous Substance Extracted from Chungkook-jang (청국장 점질물의 이화학적 특성)

  • The physico-chemical properties of viscous substances extracted from chungkook-jang were investigated. The crude protein content of the viscous substance was approximately 61% and 32% of the crude protein content was amino type nitrogen. The contents of glutamic acid in amino acids and potassium in minerals of viscous substances were more higher than those of raw soybean and chungkook-jang. The viscosity of 5% viscous substance solution was higher than that of 15% sucrose solution. The transmittance of viscous substance solutions from Bacillus natto and Bacillus subtilis was lowest at pH 5.0, the absorbances were lowest at pH 5.5 and pH 4.0, respectively. The fibrinolytic activity of viscous substances by B. natto and B. subtilis was 0.438 and 0.163 unit/mg protein, respectively. Though viscous substances were heated for 5 min and 30 min at $100^{\circ}C$, 90% of and 45% the fibrinolytic activity was remained, respectively.

  • This study was conducted to investigate the effect of municipal sludge application on the change of physico-chemical properties and contents of heavy metals in soils. The application of the sludge resulted in increasing the content of total nitrogen, available phosphate,exchangeable K, Ca, Mg, and the soil porosity and permeability but soil hardness was reduce. It is clear that application of municipal sewage sludge would not due to increase in the heavy metals content in soil because of the lower concentration of heavy metal in the sludge. Totally it is evident that municipal sewage sludge application should play an important role in improving soil physico-chemical properties.

Comparison of Physico-Chemical, Sensory and Nutritional Characteristics for Water Extract from Bull's Bones of Different Breed (소 품종에 따른 뼈 용출액의 이화학적, 관능적 및 영양적 특성 비교)

  • The physico-chemical, sensory and nutritional properties of water extract from bull's bones of Hanwoo, Holstein, and imported breed were investigated to provide scientific information for consumers. The turbidity, viscosity, lightness(L value) and sensory scores were highest for water extract from Hanwoo's bones among three breeds(p<0.05). Total nitrogen and calcium contents, and calories were higher for water extract from the bones of Hanwoo and Holstein than the imported one(p<0.05), but no differences in the water extract were observed between Hanwoo and Holstein. In amino acid compositions, the percentages of methionine were the highest for water extract from Hanwoo's bones. These results indicated that the water extract from the bones of Hanwoo had the most acceptable quality among three breeds.

  • This study was conducted to determine the effect of L. casei KCTC 3109 on physico-chemical characteristics and TBARS values of fermented pork meat. Each pork meat were allotted to two treatments ; Control (0%), $T_1$ (supplemented with L. casei KCTC 3109 10%). The pH tenderness and water holding capacity (WHC) of $T_1$ were higher than those of control (p<0.05), cooking loss of control was higher than $T_1$. Water content, crude Int and ash were not significantly different crude protein was higher in $T_1$ compared with control (p<0.05). $L^*,\;a^*$ and $b^*$ values of control were higher than those of $T_1$ (p<0.05). TBARS values was higher in $T_1$(0.02 MA mg/1,000 g) than control (0.19 MA mg/1,000g) (P<0.05).

Physico-chemical Properties of Boxthorn(Lycii fructus) Hot Water Extracts by Roasting Conditions (볶음 조건에 따른 구기자 열수 추출물의 이화학적 특성)

  • The physico-chemical properties of hot-water extracts of dried and roasted Boxthorn(Lycii fructus) were investigated. The proximate composition of dried Boxthorn was 17.5% moisture, 5.4% ash, 14.7% lipid, 18.9% protein, 11.8% fiber and 31.7% carbohydrate. As the roasting temperature and time increased, water soluble solids, turbidity, titrable acidity and redness of the hot water extracts were increased, while the free sugar content was reduced. The linoleic acid of roasted Boxthorn decreased and palmitic acid increased at higher roasting temperature. The sensory properties of sweet odor, burnt odor, sour taste, burnt taste and tannic taste of the hot water extract were scored higher and sweet and roasted taste were lower as the roasting temperature and time increased.

  • The seeds of Torreya nucifera, which were shown to contain high level of oil, were characterized to evaluate their possible utilization as oil source. Oil was extracted by compression from the seeds and its physico-chemical properties and, total fatty acid composition were determined. The results are summarized as follows: 1. Proximate components of the seeds were shown to be: moisture, 12.3% ; crude protein, 9.46%; crude fat, 54.29 %; fiber, 5.28 %; ash, 2.13%. 2. Physico-chemical characteristics of the seed oil were determined as follows: specific gravity 0.92, refractive index 1.470, iodine value 127, saponification value 182.2, acid value 9.5, ester value 172.7. 3. The major fatty acids of the total lipids were linoleic (46.77%), oleic (31.68%) and palmitic acid (6.92%).

The Effect of Superheated Steam Cooking Condition on Physico-Chemical and Sensory Characteristics of Chicken Breast Fillets (과열증기 처리조건에 따른 닭 가슴살의 물리·화학적 및 관능 특성)

  • This study attempted to investigate the optimum cooking conditions of chicken breast fillets employing the superheated steam (SHS). The effects of SHS cooking conditions on the physico-chemical and sensory properties of chicken breast fillets were studied. Chicken breast fillets for SHS cooking were treated in six different combinations of steam temperature ($330^{\circ}C$ or $350^{\circ}C$) and cooking time (6, 8 and 10 min). As a result, when the chicken breast fillets were cooked for 8min at $330^{\circ}C$ and 6 min at $350^{\circ}C$ steam, the internal temperature of the chicken breast fillets reached $75{\sim}76^{\circ}C$. At that cooking condition, the chicken breast fillets demonstrated lower cooking loss, higher moisture content, lower hardness and fracturability, and higher springiness; further, they had more acceptable sensory properties compared to the other SHS conditions and conventional electric oven cooking (control). These results suggest that the application of SHS technology to chicken breast fillet products can reduce the cooking time and cooking loss; moreover, it can produce highly preferred chicken products compared to conventional electric oven cooking.

Changes of Physico-chemical Characteristics of Pyunyuk Depending on Cooking Time during Processing (돼지머리편육 제조시 삶는 시간 조건에 따른 제품의 이화학적 특성 변화)

  • Physico-chemical qualities of pyunyuk depending on the cooking time were evaluated to produce high quality and to reduce labor and processing time. Pork headmeat divided into two parts was cooked for 1~4hrs, trimmed and pressed with 110kg/$\textrm{cm}^2$(gauge pressure) for 3.5hrs at 1$0^{\circ}C$. The contents of general nutrients, yield, texture, color, fatty acid composition, gel structure, and sensory evaluation were observed. Deboning time was very dependent on cooking time. Optimum cooking time observed in this study was 2~2.5hrs for efficiency of deboning and yield. Excess cooking time resulted in low yield and working efficiency. Yield variation depending on the cooking time was 14.3~26.0% and it was reduced by increasing the cooking time. The content of moisture was 53.5~54.8% which was not significantly different by cooking time. The content of crude fat was 14.2~26.0% which was decreased by increasing the cooking time. The contents of crude protein(21.1~26.3%) and mineral(1.4~2.7%) were increased by increasing the cooking time. The color of pyunyuk was significantly different by cooking time(p<0.05). In the texture, hardness and chewiness of the pyunyuk cooked for 2hrs were significantly higher than others processed in this study(p<0.05). However cohesiveness and springiness were not different among pyunyuks. With sensory evaluation, hardness was similar among the pyunyuks cooked over 2hrs. The pyunyuk cooked for 1hr showed higher value in juiciness than the pyunyuk cooked for 3~4hrs(p<0.05). The % of saturated fatty acids was decreased by increasing the cooking time, and gel structure of pyunyuk cooked for 2hrs was the most compact among treaments. In conclusion, 2hrs was proper as a cooking time concerned with working efficiency and physico-chemical quality of pyunpyk.
