This study was performed to determine the effects of the pretreatment and cold-vacuum drying methods on the physicochemical properties and antioxidant activities of dried peaches. Moisture content was significantly lower with 0.3% NaCl treatment with cold-vacuum drying. The pH, brix and acid ratio (SS/TA) were the lowest with 1.0% soluble Ca treatment, while soluble solid and SS/TA were significantly higher with 0.1% vitamin C treatment compared to those with other treatments. The ${\delta}E$ and browning degree was lower in the pretreated sample compared to the untreated sample. Cutting strength of dried peaches was highest in the pretreated samples, and it was the highest with 1.0% soluble Ca treatment. Total sugar content with 0.1% vitamin C and 1.0% soluble Ca treatment was significantly higher than that with 0.3% NaCl treatment. The free sugar content was lower with 0.3% NaCl treatment but it was higher with 0.1% vitamin C and 1.0% soluble Ca treatment. The sensory evaluation result was highest with 0.1% vitamin C treatment. Phenolic compounds and antioxidant ability were the highest with the 0.1% vitamin C and 0.1% soluble Ca treatment; all the dried peaches showed relatively high antioxidant activities. These results suggest that pretreatment can affect the quality of dried peaches, showing that cold-vacuum drying can be applied for the production of high quality dried peach products.
The aim of this study were to elucidate effects of fluoridated bleaching agents and post-treatment fluoride application on the color and microhardness of enamel surface. Twenty freshly extracted human adult molar were each sectioned into halves, the specimens divided and treated according to four experimental groups: 1, untreated controls: 2, treatment with 10% carbamide peroxide (CP) bleaching agent; 3, treatment with 10% CP containing 0.11% fluoride; 4, treatment with 10% CP followed by a 0.9% sodium fluoride gel application. Group 2-4 were compared with the baseline data. treated 8 h per day for 14 days then immersed in distilled water for 2 weeks. Changes in enamel color and microhardness were evaluated on Days 7 and 14. All the bleached enamel specimens revealed increased whiteness and overall color value. Groups 2 and 4 showed significantly decreased enamel microhardness compared to their baseline. The specimens treated with fluoridated bleaching agents showed relatively less reduction in enamel microhardness than those treated with nonfluoridated agents during the bleaching treatment. The addition of fluoride did not impede the tooth whitening. The fluoridated bleaching agents reduced the microhardness loss of enamel.
Observations of dark matter dominated dwarf and low surface brightness disk galaxies favor density profiles with a flat-density core, while cold dark matter (CDM) N-body simulations form halos with central cusps, instead. This apparent discrepancy has motivated a re-examination of the microscopic nature of the dark matter in order to explain the observed halo profiles, including the suggestion that CDM has a non-gravitational self-interaction. We study the formation and evolution of self-interacting dark matter (SIDM) halos. We find analytical, fully cosmological similarity solutions for their dynamics, which take proper account of the collisional interaction of SIDM particles, based on a fluid approximation derived from the Boltzmann equation. The SIDM particles scatter each other elastically, which results in an effective thermal conductivity that heats the halo core and flattens its density profile. These similarity solutions are relevant to galactic and cluster halo formation in the CDM model. We assume that the local density maximum which serves as the progenitor of the halo has an initial mass profile ${\delta}M / M {\propto} M^{-{\epsilon}$, as in the familiar secondary infall model. If $\epsilon$ = 1/6, SIDM halos will evolve self-similarly, with a cold, supersonic infall which is terminated by a strong accretion shock. Different solutions arise for different values of the dimensionless collisionality parameter, $Q {\equiv}{\sigma}p_br_s$, where $\sigma$ is the SIDM particle scattering cross section per unit mass, $p_b$ is the cosmic mean density, and $r_s$ is the shock radius. For all these solutions, a flat-density, isothermal core is present which grows in size as a fixed fraction of $r_s$. We find two different regimes for these solutions: 1) for $Q < Q_{th}({\simeq} 7.35{\times} 10^{-4}$), the core density decreases and core size increases as Q increases; 2) for $Q > Q_{th}$, the core density increases and core size decreases as Q increases. Our similarity solutions are in good agreement with previous results of N-body simulation of SIDM halos, which correspond to the low-Q regime, for which SIDM halo profiles match the observed galactic rotation curves if $Q {\~} [8.4 {\times}10^{-4} - 4.9 {\times} 10^{-2}]Q_{th}$, or ${\sigma}{\~} [0.56 - 5.6] cm^2g{-1}$. These similarity solutions also show that, as $Q {\to}{\infty}$, the central density acquires a singular profile, in agreement with some earlier simulation results which approximated the effects of SIDM collisionality by considering an ordinary fluid without conductivity, i.e. the limit of mean free path ${\lambda}_{mfp}{\to} 0$. The intermediate regime where $Q {\~} [18.6 - 231]Q_{th}$ or ${\sigma}{\~} [1.2{\times}10^4 - 2.7{\times}10^4] cm^2g{-1}$, for which we find flat-density cores comparable to those of the low-Q solutions preferred to make SIDM halos match halo observations, has not previously been identified. Further study of this regime is warranted.

The aim of this study was to investigate the effect of pretreatments on quality of frozen peach. Pretreatments including steam blanching, water blanching, high pressure, and osmotic dehydration were applied to two varieties (Daeokgye and Hwangdo). Pretreated peaches were frozen and thawed at $-20^{\circ}C$ and $5^{\circ}C$, respectively. Steam blanching and osmotic dehydration with ascorbic acid reduced ${\Delta}E$ values without change of pH and acidity. Osmotic dehydration with sucrose decreased drip loss and increased brix. Freezing/thawing resulted in an increase of maximum force, while maximum force decreased with increasing time of steam and water blanching. Furthermore, osmotic dehydration with calcium chloride increased maximum force. High pressure decreased maximum force of Daeokgye and increased that of Hwangdo compared with non-treatment. Total polyphenol content, DPPH radical scavenging activity, and ABTS radical scavenging activity were improved by pretreatment including steam blanching, blanching, and osmotic dehydration with ascorbic acid.

The purpose of this study was to investigate the effect of Acanthopanax senticosus extract (ASE) (ethanol : DW=1:1, v/v) on inhibition of type 2 diabetes using an OLETF rat model via regulation of HbA1c and AGEs levels. Supplementation with ASE 0.1% and 0.5% effectively lowered levels of glucose, insulin, oral glucose tolerance test, and Homa-insulin resistance, suggesting reduced insulin resistance. Blood levels of HbA1c and AGEs were significantly reduced in a dose-dependent manner. As oxidative stress plays a key role in accelerating production of HbA1c and AGEs, which worsen symptoms of type 2 diabetes, levels of malonaldehyde and pro-inflammatory cytokines were measured. Lipid peroxidation in both blood and liver tissues was significantly reduced, and induction of pro-inflammatory cytokines interleukin-${\beta}$ and tumor necrosis factor-${\alpha}$, which elevate production of HbA1c and AGEs, was inhibited (P<0.05). To evaluate the possible cellular events after AGEs receptor activation, genetic expression of protein kinase C (PKC)-${\delta}$ and transforming growth factor (TGF)-${\beta}$ was measured by real-time polymerase chain reaction. Supplementation with both ASE 0.1% and 0.5% significantly inhibited mRNA expression of PKC-${\delta}$ and TGF-${\beta}$, indicating that ASE may have beneficial effects on preventing insulin-resistant cells or tissues from progressing to diabetic complications. Taken together, ASE has potential to improve type 2 diabetes by inhibiting insulin resistance and protein glycosylation, including production of HbA1c and AGEs. Anti-oxidative activities of ASE are a main requisite for reducing production of HbA1c and AGEs and are also related to regulation of the PKC signaling pathway, resulting in suppression of TGF-${\beta}$, which increases synthesis of collagen, prostaglandin, and disease-related proteins.

In recent, the roles of oleic acid, most abundant fatty acid in myelin, were investigated in relation to the brain functions. This study examined the effects of diets either with desirable ratios of $\omega$6/ $\omega$9 and P/M/S (mixed oil-fed group: MO) or with defficient in $\omega$3 series fatty acids (safflower oil-fed group: SO) on the oleic acid composition in RBC and brain synaptosomal, mitochondrial & microsomal phospholipids. The desirable fatty acid composition was computer-searched with different fats and oils to meet right ratios of both $\omega$6/ $\omega$3 and P/M/S. Diets were fed 3 weeks before conception and new-born pups were fed maternal milk from the same mothers and same diets until 9 wks of age. At 3 wks of age, the compositions of oleic acid in brain subcellular fractions and red blood cells were constantly remained whatever the composition of dietary fatty acids. But at 9 wks of age, the composition of oleic acid in synaptosome and mitochondria were significantly higher in MO group than SO group. The composition of oleic acid in milk was significantly higher in MO group than SO group, but in case of SO group, that of oleic acid was increased by 48%, in comparison with dietary fatty acid compositions. -9 desaturase index (18:0\longrightarrow8:1) of brain synaptosome was significantly higher in MO group than SO group at 3 and 9 weeks of ages, but that of brain microsome was higher in SO group than MO group at 9 wks of age. Taken together, the presences of oleic acid in the diet was important to maintain brain functions. The origins of oleic acid in brain may suggests two hypotheses; first, the central nervous system has priority for the uptake of oleic acid, and second the nervous system can synthesize all the oleic acid it needs, independently of its presence in the diet.

The slow evolution of global magnetic fields and other dynamical processes in atmospheres of CP magnetic stars lead to the development of induced electric currents in all conductive atmospheric layers. The Lorentz force, which results from the interaction between a magnetic field and the induced currents, may modify the atmospheric structure and provide insight into the formation and evolution of stellar magnetic fields. This modification of the pressure-temperature structure influences the formation of absorption spectral features producing characteristic rotational variability of some spectral lines, especially the Balmer lines (Valyavin et al., 2004 and references therein). In order to study these theoretical predictions we began systematic spectroscopic survey of Balmer line variability in spectra of brightest CP magnetic stars. Here we present the first results of the program. A0p star $\Theta$ Aur revealed significant variability of the Balmer profiles during the star's rotation. Character of this variablity corresponds to that classified by Kroll (1989) as a result of an impact of significant Lorentz force. From the obtained data we estimate that amplitudes of the variation at H$\alpha$, H$\beta$, H$\gamma$ and H$\delta$ profiles reach up to $2.4\%$during full rotation cycle of the star. Using computation of our model atmospheres (Valyavin et al., 2004) we interpret these data within the framework of the simplest model of the evolution of global magnetic fields in chemically peculiar stars. Assuming that the field is represented by a dipole, we estimate the characteristic e.m.f. induced by the field decay electric current (and the Lorentz force as the result) on the order of $E {\~} 10^{-11}$ cgs units, which may indicate very fast (< < $10^{10}$ years) evolution rate of the field. This result strongly contradicts the theoretical point of view that global stellar magnetic fields of CP stars are fossil and their the characteristic decay time of about $10^{10}$ yr. Alternatively, we briefly discuss concurring effects (like the ambipolar diffusion) which may also lead to significant atmospheric currents producing the observable Lorentz force.

The effect of additives on the quality of low salted doenjang was investigated during storage. Amylase activity gradually decreased during storage and protease activity decreased after four weeks. The number of yeast was lower in the mustard or ethanol added groups without a difference in bacterial count. The L- and b-values decreased gradually during storage with lower total color difference (${\Delta}E$) in garlic added doenjang. Gas production was reduced in the ethanol or mustard added groups. Titratable acidity and acid values were low in the ethanol and ethanol-garlic added ones. A reducing sugar content was higher in the groups with added additives. Ethanol decreased to the largest extent in mustard added doenjang. Amino-type nitrogen decreased in ethanol added doenjang, whereas ammonia-type nitrogen was low in the ethanol or mustard added groups. The taste, flavor, and overall acceptability of doenjang were significantly higher in the ethanol or garlic added groups than in the other groups.
To reduce saft content of kochujang, various combinations of sub-materials such as ethanol mustard and chitosan were added to kochujang, and their effects on microbial characteristics, enzyme activities, and physicochemical characteristics of kochujang were investigated after 12 weeks of fermentation. Activities of ${\beta}$-amylase and pretense were low in ethanol-mustard-chitosan-added kochujang, whereas no significant difference was observed in ${\alpha$-amylase activity among all groups. Number of viable yeast cells decreased remarkably in mustard-added kochujang during late aging period, and anaerobic bacterial counts decreased in sub-material-added groups. Consistency of kochujang increased by addition of sub-materials, and oxidation-reduction potential was low in chitosan-added group. Mustard-chitosan-added kochujang showed lowest increase in total color difference(${\Dalta}E$) and decrease in water activity. PH of kochujang wns highest in mustard-chitosan-added kochujang, resulting in significantly increased titratable acidity. Addition of sub-material increased reducing sugar contents of kochujang, whereas ethanol production was significantly repressed in mustard-chitosan-added kochujang. Amino nitrogen content was Highest in mustard-chitosan-added kochujang during late aging period, whereas ammonia nitrogen content was lower in ethanol-mustard-added kochujang. Results of sensory evaluation indicated ethanol-mustard-added kochujang was more acceptable than other groups in taste and overall acceptability.
Present studies were conducted to evaluate the effects of medium strength(MS and Hyponex), carbon sources and their concentrations, agar concentrations, and inoculation amounts on prothallus propagation of Pterdium aquilinum var. latiusculum(Desv.) Underw. ex Hell in vitro. The optimum MS medium strength for prothallus propagation was 2MS concentration. Phosphate source was most effective for prothallus growth of P. aquilinum var. latisculum. The addition of 1% sucrose or glucose to MS medium promoted prothallus multiplication. Growth of prothallus was not affected by agar concentration. Propagation of homogenized prothallus was vigorous even in liquid medium. Chopped gametophytes(100 and 200 mg) were inoculated on 250 ml ${\Delta}$flask with 100 mL of 2MS concentration medium and suspension culture was done at 100 rpm for 22 days. After 20 days, prothallus multiplication slowed down, so 100 mg of chopped prothalli is recommended for initial inoculation, since initial amount of inoculum did not affect subsequent prothallus multiplication. Consequently after 20 days of suspension culture, prothallus should be subcultured or transplanted outside of growing vessels.
