A Study of Exploiting Raw Material of Seasoning by Using Fish and Shells -1. On Composition of Seasoning Material in Cooking By-product- (어패류를 이용한 조미료 소재 개발에 관한 연구 -1. 패류 자숙액즙의 성분조성-)

  • The possibility of shellfish utilization of juice as seasoning materials was examined through the analyzing proximate compositions and N-containing materials. The amounts of the sucking liquid wastes were estimated as 58,819 tons for oyster, 764 tons for pen-shell, 604 tons for cockle and 3,896 tons for blue-mussel from 1985 to 1990 in Korea. Water contents ranged from 95.2 to $97.4\%$ and crude protein level was $1.0{\sim}1.4\%$. Taurine was the most abundant nitrogenous compound($40{\sim}56\%$) in extracts, and glycine($10.4{\sim}36.1\%$), alanine($4.8{\sim}8.6\%$) and glutamic acid($3.1{\sim}5.3\%$) followed. More than $40\%$ of ADP and AMP as mucleotide were contained in all shellfish samples but pen-shell and cockle had $20\%$ of inosine, also. Glycinebetaine was present in corcentrations of 139.8mg/g in oyster and $45.5{\sim}61.9mg/100g$ in pen-shell, cockle and blue-mussel. Total creatinine and trimethylamine oxide levels were $30.4{\sim}59.1mg/100g$ and $0.82{\sim}47.2mg/100g$, respectively.

Shape control of calcium carbonate prepared from shell resources (패각의 제조한 탄산칼슘의 형상제어)

  • Amorphous calcium carbonate was prepared by wet chemical method and performed the control of their shape using crystalline calcium carbonate that prepared from oyster shell by the $CO_2$ gas blowing method. As a result, amorphous calcium carbonate was obtained by the dissolution process of crystalline calcium carbonate in the dil-HC1 solution, mixing of sodium carbonate solution, precipitation and filtering with high speed. And using the amorphous calcium carbonate of mud type, crystalline calcium carbonates with cubic, needle, spindle, spherical and plate shape were obtained in the temperature rang of 2~$85^{\circ}C$ and reaction time range of 5~60 minute.

  • Followings are the results of growth of Pacific oysters transplanted from the temperate waters of Korea in February 1981, and cultivated upto early July in the tropical waters of Ambong Bay in Malaysia: The shell length increased from 5.78 mm in February to 25.01 mm in July, and the shell height increased from 7.33 mm in february to 38.91mm in July. The meat weight progressively increased and reached the maximum value of 1.66g in May, but then gradually decreased until July, and the fatness varied from $28\%$ of maximum in March to $11\%$ of minimum in July-Survival rate was $47\%\;and\;39\%$ of the initial number in June and July respectively.

  • Objectives : This research examined about dietary therapy on the gastric & duodenal ulcer based on the literary findings, for clinical treatment and prevention of the gastric & duodenal ulcer. Methods : This Research examined on histories, compositions, applications, and effects of dietetic on about 200 cases of dietary therapy of the gastric & duodenal ulcer from recent Chinese literatures Results : 1. Various vegetables, animals and mineral materials including herbs, grains, vegetables, fruits, food and drink were used for the dietary therapy. 2. Methods of the preparation for use as therapeutics were decoction, pulvis, gruel, medicinal wine, cake, tea, paste and gelatin and etc. 3. Frequently used materials were cuttle fish bone, Bletillae rhizoma, oyster shell, egg shell, sugar, aloe, licorice, lily, red jujube, and pig stomach. 4. Four properties of cold, warm, cool and hot were equal in frequencies. Most common tastes were sweet and bitter. Conclusion : Though dietary therapy for the gastric & duodenal ulcer is not based on clinical or experimental data, but through experience. It is mostly based on Yin-Yang and five elements, visceral manifestation, channels and their collateral channels and chinese herbal medicine theories. If we use them properly according to oriental medicine method, it will be effective on treating and preventing the gastric & duodenal ulcer.

The Effects of Marine Sediments and NaCl as Impurities on the Calcination of Oyster Shells (굴패각 소성시 해저 퇴적물과 NaCl 불순물이 소성 특성에 미치는 영향)

  • The calcination of oyster shells have been studied as the possible substitute for the limestone used as an absorbent of $SO_2$ gas. However, since pure shells can not be used in calcination process, some impurities are contained and the changes in the characteristics of the calcination products are expected. In this study, the surface characteristics of the calcination products are investigated by mineralogical analysis according to the contents of NaCl, which can be derived from sea water, and sediments on the surface of the shell as impurities. The marine sediments on the shells were mainly composed of quartz, albite, calcite, small amounts of amphibole and clay minerals such as ilite, chlorite and smectite. After calcination of oyster shells mixed with 0.2-4.0 wt% sediments at $900^{\circ}C$ for 2 hours, regardless of the dehydration, dehydroxylation, and phase change of these minerals at the lower temperature than this experiment, no noticeable changes were observed on the specific surface area of the calcined product. However, when mixed with 0.1 to 2.0 wt% NaCl, the specific surface area generally increases as compared with the shell sample before calcination. The specific surface area increases with increasing amount of salt, and then decreases again. This is closely related to the changes of surface morphology. As the amount of NaCl increases, the morphology of the surface is similar to that of gel. It changes into a slightly angular, smaller particle and again looks like gel with increasing amount of NaCl. Our results show that NaCl affects morphological changes probably caused by melting of some oyster shells, but may have different effects on the specific surface area of calcination product depending on the NaCl contents.

Mineral Contents of Hot Water Extracts and Shell of Shellfishes from Western Coast of Korea (서해안 조개류의 껍질과 열수 추출물의 무기질 함량)

  • Yields of shells, appearance of the shellfishes, mineral contents of the shells and their hot water extracts were determined in six shellfishes such as corb shell(CS). short neck clam(SNC). taste clam(TC), ark shell(AS). top shell(TS) and oyster(OY) from the western coast of Korea. Yields of shells in shellfishes were 70.I~80.5% but yields of TC was the lowest as 40.7%. The highest among weight of the shell the shellfishes was the TS(26.2g) and the lowest weight was TC(5.6g) Colors of CS, SNC, TC. AS. TS and OY were yellowish brown, brown, black. greenish brown and gray. respectively. Ca content of the shell of shellfishes was 36.23~38.78% and the content of K and Na were 0.23~4.54% and 1.48~l.59%, respectively. Contents of Na, Mg, Fe. Mn, Zn, Cu. P and S were in the range of 0.01~0.21%. It also contained heavy metals, such as Pb(1.90~7.75 ppm), Cd(0.5~4.50 ppm), As (1.40~4.30 ppm), Se (0.2~l.50 ppm). Cr(1.00~8.30 ppm) and Hg(0.002~8.2 ppm), Ca content in hot water extracts of shell of shellfish was the highest in TC(2,448 mg/100 g), and the lowest in SNC(115 mg/100 g). K content in TC extracts was the highest with the levels of 952 mg/100 g. P content of TC and SNC were 201 and 0.36 mg/100 g, respectively. The contents of Pb, As, Se and Cr were the highest in the extracts of TC and were 110. 40. 90, 20 $\mu$g/100 g, respectively. But Cd was not detected in the extracts of SNC.

Investigation on the Cause of Bad Natural Seed Collection of the Pacific Oyster, Crassostrea gigas: Relationships between the Conditions of Mother Shell and the Viability of the Released Eggs and Larvae Based on the Pathological and Embryological Survey (참굴 채묘 부진 원인 구명에 관한 연구 -병리 발생학적 조사를 통한 참굴 모패의 건강도와 난 및 유생의 생존율과의 상관관계 구명 -)

  • Infection rates of oyster ovarian parasite, Marteiliodes chungmuensis and productivity of the oyster shellstock infected with the parasite were investigated at the main seed collection areas in the southern coast of Korea where the extreme bad seed collection of oyster occurred in 1992 and 1993 to evaluate the cause of the bad seed collection. Additionally, the bacterial flora of the sea water and oyster lana were examined to identify the shellfish larva pathogenic bacteria like Vibrio sp. and Pseueomonas sp. In August 1992 to September 1993, infection rate of oyster ovarian parasite, M. chungmuensis at Tongyong, Kyongsangnam province, and Yosu, Chollanam province where the bad seed collection occurred, were $11.8\~100\%$ and $14.3\~100\%$, respectively. But the parasite was not detected in the shellstock collected at Daechon, Chungchongnam province. While a virus-like particle was identified in the cytoplasm of the egg infected by the parasite. The parasite infected egg was not able to fertilize completely. Uninfected egg in the gonad contaminated by the parasite could be able to fertilize but showed an abnormal development till D-shaped larva and then, died of necrosis after D-shaped lana. And some lana developed from low lipid content egg could not develop to the spat and died after the early umbo stage. The predominant bacteria in the oyster lana collected at bad seed collection areas were Pseudomonas sp. and Pseudomonas like bacteria and the occupancy rates were $53.3\~87.1\%$.

Effects of Fly Ash, Gypsum, and Shell on the Chemical Properties of Soil and Growth of Chinese Cabbage in Acidic Soils (산성토양에서 석탄회,석고,패각시용이 토양화학성과 배추의 생육에 미치는 영향)

  • In order to evaluate the utility of the bituminous coal fly ash, gypsum, oyster shell as soil amendments, acid sandy loam soil with low boron content were amended in the upper 15cm with amendments, and then chinese cabbage was cultivated in fall. Amendments treated were, in metric tons per hectare, i ) none(Check) ; ii) 80 fly ash(FA) ; iii) 4shell(SH) ; iv) 56 fly ash+24gypsum (FG) ; v) 40 fiy ash + 24 gypsum +0.8 shell(FGS). On the whole, amendments imoroved soil chemical properties and contents of N, P, K, Ca, and B in leaves. Among treatmens, FA prominently neutralized soil pH and increased available $P_2O_5$ ,B but decreased Fe contents in soils. FGS also affected the increment of exchangeable Ca, Mg, and available B. Yield response in fresh weight of chinese cabbage was in order of 85% for FGS>77% for FG>66% FA>5% for SH plants. Reducing sugar and vitamin-C contents of leaves depending on treatments showed the same tendencies as that in yields, whereas crude fiber opposite to theme. In particular, FA, FG, and FGS plants showed normal growth without boron deficiency symotoms which appeared in Check and SH plants.Taken together, FGS was an effective combination enable to maximize the utility of fly ash, gypsum, and shell as soil amemdments, especially in cabbage yield and quality.

Amendments treated were, in metric tons per hectare, i) none(Check) ; ii) 80 fly ash(FA) ; iii) 4 shell(SH) ; iv) 56 fly ash+24 gypsum (FG) ; v) 40 fly ash+24 gypsum+0.8 shell(FGS). On the whole, soil chemical properties were improved by amendments treatments. Amongst treatments, FA prominently neutralized soil pH and increased contents of Av. $P_2O_5$, Ex. K, and Av. B in soils. Besides, it showed the highest ratio in bacteria/fungi and (bacteria+actinomycetes)/fungi. FGS also affected the neutralization of soil pH and the increment of Ex. Mg. Amendments plants appeared alkaline damages only at early growing stage, but showed positive responses in fresh weight yields : 23% for FGS : 21% for FG : 19 18% for SH. At harvesting, leaves both of FA and FGS plants had higher values in contents of N, P, K, Ca, Mg, Fe, Mn, Zn, B, reduang-sugar, and vitamin-C than of others. In especial, Check plants appeared the heart rot symptoms owing to calaum defiaency differently from amendments plants. Taken together, FGS was an effective combination enable to maximize the utility of fly ash, gypsum, shell as soil amendments, espeaally in cabbage yield and quality.

Comparative Study on Endogeneous Activities of ${\beta}-Galactosidase$-like Enzyme in Several Finfishes and Shellfishes (어패류 및 종에 내재되어 있는 ${\beta}-Galactosidase$의 활성 비교)

  • Endogeneous activities of ${\beta}-galactosidase$-like enzyme in various tissues from several finfishes and shellfishes were examined by histochemical analysis based on X-gal staining and by fluorimetric measurement using 4-methylumbelliferyl-${\beta}$-D-galactoside (4-MUG). Species used in this study were 3 freshwater fishes, mud loach (Misgurnus mizolepis), common carp (Cyprinus carpio) and tilapia (Oreochromis niloticus) ; 3 marine fishes, olive flounder (Paralichthys olivaceus), stone flounder (Kareius bicoloratus) and marbled sole (Limanda yokohamae) ; and 4 shellfishes, abalone (Haliotis discus hannai), Pacific oyster (Crassoskra gigas), pearl oyster (Pinctada fucata martensii) and ark shell (Anadara broughtonii). The activities of ${\beta}-galactosidase$-like enzyme in all finfishes examined were significantly different among species, with the wide variations between tissues in a species. In general, the tissues such as kidney, intestine and liver were ones which showed the significantly higher values in 4-MUG fluorimetry and deeper staining patterns in X-gal analysis compared to other tissues. On the other hand, serum and muscle revealed the significantly lower activities than others did, regardless of species. Shellfishes were also found to have endogenous activities of ${\beta}-galactosidase$-like enzyme which were significantly varied depending on both species and organs in a species. Hepatopancreas from all shellfishes examined showed the deepest pattern in X-gal staining and also the highest value in 4-MUG analysis, while activities of ${\beta}-galactosidase$-like enzyme in adductor muscles and mantle muscles from all shellfish species in this study except Pacific oyster were negligible : Pacific oyster had the significant activity of this enzyme in muscle tissues. Putative endogenous lacZ fragment was amplified from both finfishes and shellfishes by polymerase chain reaction (PCR). The molecular size of PCR products was about 510 bp, and there was no difference in size among species examined.
