Comparison of Carcass Characteristics, Meat Quality, and Blood Parameters of Slow and Fast Grown Female Broiler Chickens Raised in Organic or Conventional Production System

  • The objective of the study was to compare the carcass characteristics, meat quality, and blood parameters of slow and fast grown female broiler chickens fed in organic or conventional production system. The two genotypes tested were medium slow-growing chickens (SG, Hubbard Red JA) and commercial fast-growing chickens (FG, Ross 308). Both genotypes (each represented by 400 chickens) were divided into two sub-groups fed either organic (O) or conventional (C) systems. Chickens of each genotype and system were raised in a semi environmentally controlled poultry house until 21 d of age and were assigned to 5 pens of 40 chickens each. Then, O system chickens were transferred into an open-side poultry house with an outdoor run. At 81 d of age, 10 female chickens from each genotype and from each production system (n = 40) were randomly chosen to provide material for analysis, and were weighed and brought to the slaughterhouse to assess carcass characteristics and meat quality. The blood parameters were determined by using 5 female chickens from each genotype and from each production system (n = 20). FG had the higher live weight, along with carcass, breast, and thigh-drumstick weights compared to SG (p<0.05). FG had the higher breast yield, whereas SG had the higher thigh-drumstick yield (p<0.05). The O system resulted in a higher amount of abdominal fat (p<0.05). In addition, the O system values were higher for dry matter, crude ash, crude protein, and $pH^{15}$ values in breast meat, and for crude ash, crude protein, and $pH^{15}$ values in drumstick meat (p<0.05). In addition, total saturated fatty acids, total mono-unsaturated fatty acids, and total omega 3 were significantly higher in the O system than in the C system. Thus, the O system showed a positive advantage compared to the C system regarding female chicken meat quality, primarily within the ash, protein, and total omega 3 fatty acid profiles. In conclusion, the present study indicated that the main factor affecting the carcass characteristics of female chickens was genotype, whereas the organic system contributed to enhanced meat quality. These findings provide a better understanding of the relative roles of genotype and production systems in female broiler characteristics, and might aid producers in designing their facilities to optimize yield and quality while maintaining acceptable animal welfare standards.

주정폐수 혐기성 소화의 저해작용에 관한 연구 (A Study on the Inhibition of Anaerobic Digestion for Alcohol Distillery Wastes)

  • 주정폐수의 혐기성 소화 저해작용을 이해하기 위하여 회분식 혐기성 소화를 수행하였다. 나맥원료 주정폐수와 백미원료 주정폐수를 각각 분리막으로 여과하여 순수한 용존 유기물 부분과 고형물질 부분을 따로 분리하였다. 주정폐수의 용존 유기물 부분과 고형물질 부분 및 분리하지 않은 원 주정폐수를 기질로 사용하여 회분식 혐기성 소화를 수행하였다. 나맥원료 주정폐수의 고형물 부분에서 발생하는 프로피온산은 용존성 유기물 부분에서 발생하는 프로피온산의 비율보다 약 2배 가량 많았으며, 원 폐수에서 발생하는 프로피온산의 비율보다도 많았다. 나맥원료 주정폐수의 혐기성 소화 저해작용은 고형물질 부분 혐기성 소화과정 중 생성된 다량의 프로피온산에 연유될 수 있을 것이다.

남은 음식물 및 유기성 폐자원을 활용한 오리사료의 제조 및 그 가치평가 (Utilization of food and Organic Wastes for Duck Feeds and Evaluation of Their Feeding Values)

  • An experiment was conducted to evaluate feeding values of food and other organic wastes, and to determine their dietary effects on performance and carcass yield in ducks. A total of 156 meat type ducklings at the age of 25 days were housed in 12 pens and assigned to 4 treatments, in which the birds were fed for 21 days. One of 4 diets, commercial duck feed, raw food waste (RFW), fermented food waste(FFW) and mixture of 50% RFW and 50% FFW (R+FFW). Feed consumption was significantly higher (p<0.05) in the RFW groups. Body weight gain showed no significant differences between the control and other treatments. The feed consumption ratio was significantly higher in the RFW groups (p<0.05) than that of the other groups. Carcass yield was significantly higher in the R+FFW groups (p<0.05) than the other groups. The weight of liver per live body weight showed significant differences among the treatment groups (p<0.05). The length of intestine was significantly different from those of the treated groups(p<0.05).

  • 지난 반세기 이상 작물보호제의 수단으로 사용되어 왔던 화학농약은 사용 후 식물과 환경구성 요소 중에 남게 되는 잔류성 문제로 일반사회의 지대한 관심거리로 부상하고 있다. 세계 각 국이 국가차원의 규제로써 등록시 안전성 요구자료를 강화하고 있고 일단 등록된 농약이라 할지라도 주기적으로 안전성은 다시 평가하는 재등록제를 도입하고 있다. 특히 최근 지구환경보호 차원에서 국제기구를 중심으로 잔류성 유기 오염물질 (POPs), 내분비계 장애물질 (EDs)에 대한 관심이 집중됨에 따라 국가차원에서 우리 먹거리의 안전성을 확보하고 환경보전을 위하여 다양한 조사사업과 정책 등이 수립 시행되고 있다. 이들 조사결과에 대하여 과학적인 평가와 진단 그리고 대책들은 소비자의 알 권리를 충족하기 위하여 일반 대중에게 공개되어야 할 것이다.

  • 서로 다른 지역에서 발생한 음식물 쓰레기에 제지슬러지, 인분케익을 혼합하여 부숙시킨 후, 부숙기간에 따른 음식물 쓰레기의 이화학적 성상 및 줄지렁이의 섭식반응 및 생체량 변화를 조사하였다. 발생지역에 따른 음식물 쓰레기의 이화학적 성상은 큰 차이가 없는 것으로 나타났으며, 지렁이가 섭식하기에는 음식물 쓰레기내의 염분 농도가 전반적으로 높게 나타났다. 음식물 쓰레기에 인분케?을 혼합하여 부숙시켰을 때보다 제지슬러지를 혼합, 부숙시켰을 경우 염류농도 저하효과가 높게 나타났으나, 지렁이의 섭식효율과 생장률을 크게 개선시킬만큼 효율적이지는 않은 것으로 나타났다. 따라서 음식물 쓰레기에 대해서 지렁이 처리법을 적용시키기 위해서는 음식물 쓰레기내의 염류농도를 저하시키는 방법의 개발이 선행되어야 할 것으로 판단된다.

Effects of Humic Acid and Blueberry Leaf Powder Supplementation in Feeds on the Productivity, Blood and Meat Quality of Finishing Pigs

  • The objective of this study was to determine effects of humic acid (HA) and blueberry leaf powder (BLP) supplementation in pig feed on productivity, blood profiles, and meat quality characteristics of longissimus muscle. The experimental design included six treatments: 1) CON, no addition; 2) T1, BLP 0.1%; 3) T2, BLP 0.2%; 4) T3, humic acid 2%; 5) T4: humic acid 2%+BLP 0.1%; and 6) T5: humic acid 2%+BLP 0.2%. HA and BLP supplementation in pig feed significantly increased average daily feed intake (ADFI) values (p<0.05). HA supplementation in pig feed had beneficial effects in lipid profiles without altering feed efficiency rate (FER). HA and BLP co-supplementation in pig feed decreased pH in longissimus thoracis (p<0.05). In addition, sensory characteristics were enhanced when pig feed was supplemented with HA and BLP without causing adverse effects in meat quality. Taken together, addition of HA and BLP in pig feed may produce functional meat products.

육성비육돈에 대한 생균제의 첨가급여가 분 악취 및 파리유충 발생에 미치는 영향 (Effects of Feeding Probiotics on the Odor-Generating Substances and Development of maggots(Fly's larvae) in Pig's Feces)

  • This research was conducted to investigate the effects on the amount of nitrogen and phosphorus and the number of maggots in the feces from the experimental pigs fed probiotics additives, and the variance of NH3-concentration(ppm) generated in the experimental pig-pens. The experiment was performed twice in the W-farm(under the condition of sufficient energy and protein in Spring) and B-farm(insufficient energy and protein in Summer). The experiment was designed with 5 treatments (control and 4 treatments according to the kinds of additives used). In the W-farm experiment, 75 three-way crossbred pigs weighing average 38kg were randomized with 3 replications for 102 days. In the B-farm experiment, 105 three-way crossbred pigs weighing average 33kg were randomized with 3 replications for 130 days. The results obtained are as follows: 1. The amount of dry matter, organic matter, nitrogen and phosphorus in the feces was not significantly different among the treatments. But the amount of OM, N and P shows a tendency to be somewhat lowered in the treatment A. On the otherhand, the amount of dry matter was somewhat lowered in the treatment B. The amount of such matters in the W-farm was somewhat lowered than those in B-farm. But there was not significant difference between W-farm and B-farm. 2. On the variance of the number of maggots developed in the pig's feces according to each treatment, the number of maggots in the treatments added probiotics were markedly decreased in comparison with those of the control(T), and it was significantly different(p<0.01). Especially the decrease in the treatment A and B was much remarkable. 3. The addition of probiotics to the pigs' feeds made the NH3-concentration generated in the pig-pens decrease markedly. especially the NH3-concentration in the treatment A had the highest decreasing ratio among all the treatments. The decreasing ratio of NH3-concentration of the treatments added probiotics as compared to control(T) was 59.1∼80.0%(average 70.3%) in the treatment A, 56.8∼80.0%(ave. 68.5%) in the treatment B and 24.4∼46.0%(ave. 35.0%) in the treatment C and D. On the variance of the NH3-concentration according to the experimental times)seasonal conditions), the NH3-concentration generated in the pig-pens was gradually increased from April to August, on the other hand it was decreased in the September. By the result of this study, it was appeared that the probiotics added to the pigs' feeds made the NH3-concentration decrease in the pig-pens to the extent of safety degree(25 ppm and less) permitted to swine especially in the treatment A and B.

돈분 슬러리 성상에 따른 최적 바이오가스 회수 (Optimum Recovery of Biogas from Pig Slurry with Different Compositions)

  • 돈분 슬러리를 이용한 혐기성 소화과정에서 유기물 농도 및 식종슬러지의 식종비율, 소화조의 혼합강도 등의 최적 실험조건을 도출하고, 돼지의 성장에 따른 사료 급여 특성과 분뇨의 성상이 바이오가스 발생에 미치는 영향을 관찰하였다. 식종슬러지 비율 50%와 TS 농도 1% 수준에서 메탄함량은 45%이었고, 유기물 함량이 3~7 %로 증가할수록 메탄가스 함량도 증가되었다. 반응조의 혼합강도에 따른 총 누적가스 발생량은 식종슬러지의 식종비율에 따른 영향은 관찰되지 않았고, TS 농도 3%와 5%에서 혼합강도를 증가시켰을 때(80 $\rightarrow$ 160 rpm) 바이오가스 발생량도 증가되었다. 돈분폐수의 혐기소화 실험시 바이오가스를 회수하고자 하는 최적의 운전 조건은 투입되는 TS 농도 3~5% 정도의 유기물 농도와 50% 수준의 식종슬러지의 식종비율 그리고 반응조의 적절한 교반강도(120 rpm) 따라 결정될 수 있다. 돈분뇨 종류에 따른 가스발생량은 분만돈 분뇨의 바이오 가스 발생량이 높았고, gas 발생의 peak(20일)도 짧게 나타나 분해율이 가장 좋은 것으로 나타났다. 돼지의 사육 및 소비 형태에 따라 돼지의 사육 환경이 변화되며, 투입되는 사료의 급여 특성도 달라져 바이오가스 발생 특성도 차이가 있는 것으로 나타났다.

Effects of Synchronization of Carbohydrate and Protein Supply in Total Mixed Ration with Korean Rice Wine Residue on Ruminal Fermentation, Nitrogen Metabolism and Microbial Protein Synthesis in Holstein Steers

  • Three Holstein steers in the growing phase, each with a ruminal cannula, were used to test the hypothesis that the synchronization of the hourly rate of carbohydrate and nitrogen (N) released in the rumen would increase the amount of retained nitrogen for growth and thus improve the efficiency of microbial protein synthesis (EMPS). In Experiment 1, in situ degradability coefficients of carbohydrate and N in feeds including Korean rice wine residue (RWR) were determined. In Experiment 2, three total mixed ration (TMR) diets having different rates of carbohydrate and N release in the rumen were formulated using the in situ degradability of the feeds. All diets were made to contain similar contents of crude protein (CP) and neutral detergent fiber (NDF) but varied in their hourly pattern of nutrient release. The synchrony index of the three TMRs was 0.51 (LS), 0.77 (MS) and 0.95 (HS), respectively. The diets were fed at a restricted level (2% of the animal's body weight) in a $3{\times}3$ Latin-square design. Synchronizing the hourly supply of energy and N in the rumen did not significantly alter the digestibility of dry matter, organic matter, crude protein, NDF or acid detergent fiber (ADF) (p>0.05). The ruminal $NH_3$-N content of the LS group at three hours after feeding was significantly higher (p<0.05) than that of the other groups; however, the mean values of ruminal $NH_3$-N, pH and VFA concentration among the three groups were not significantly different (p>0.05). In addition, the purine derivative (PD) excretion in urine and microbial-N production (MN) among the three groups were not significantly different (p>0.05). In conclusion, synchronizing dietary energy and N supply to the rumen did not have a major effect on nutrient digestion or microbial protein synthesis (MPS) in Holstein steers.

Effect of temperature on single- and mixed-strain fermentation of ruminant feeds

  • Use of raw feedstuffs for livestock is limited by low digestibility. Recently, fermentation of feedstuffs has been highlighted as a new way to improve nutrient absorption through the production of organic acids using inoculated microorganisms, which can also play a probiotic role. However, standard procedures for feedstuff fermentation have not been clearly defined because the process is influenced by climatic variation, and an analytical standard for fermented feedstuffs is lacking. This study aimed to evaluate the microbiological and biochemical changes of feedstuffs during fermentation at temperatures corresponding to different seasons (10℃, 20℃, 30℃, and 40℃). We also investigated the effects of yeast, lactic acid bacteria (LAB), and Bacillus spp. on fermentation and determined the results of their interactions during fermentation. The viable cells were observed within 8 days in single-strain fermentation. However, when feedstuffs were inoculated with a culture of mixed strains, LAB were predominant at low temperatures (10℃ and 20℃), while Bacillus spp. was predominant at high temperatures (30℃ and 40℃). A significant drop in pH from 6.5 to 4.3 was observed when LAB was the dominant strain in the culture, which correlated with the concentrations of lactic acid. Slight ethanol production was detected above 20℃ regardless of the incubation temperature, suggesting active metabolism of yeast, despite this organism making up a marginal portion of the microbes in the mixed culture. These results suggested that fermentation temperature significantly affects microbiological profiles and biochemical parameters, such as pH and the lactic acid concentration, of fermented feedstuffs. Our data provide valuable information for the determination of industrial standards for fermented feedstuffs.
