In order to utilize non-commercial melon as alcoholic beverage material, in this study the optimum fermentation method and manufacture conditions were investigated and thereafter the properties of final product were determined. As for melon wine made with only melon juice, sensorial properties, particularly flavor, were not acceptable as alcoholic beverage. To improve the lack of melon wine, we made mash with cooked rice and Nuruk, and then added melon juice during fermentation. Acceptable sensorial properties were obtained in melon wine when 30% extract juice of oriental melon was added after 4 day of fermentation. The alcoholic beverage added melon juice showed much higher yellowness value than that without melon juice indicating that a clear yellow color similar to melon was actually observed in final product. Adding melon juice led little changes in amount and composition of free sugars, organic acids and amino acids and could improve sensorial properties.
Identification of Actinomycetes isolate strain SH-8002, a producer of ACE inhibitor, based on procedures employed in the international Streptomyces project. The strain, designated as SH-8002, was identified as Streptomyces zoamyceticus SH-8002 based on its morphological, physiological, biochemical and chemotaxonomic characteristics. The ACE inhibitor produced by the strain was highly achieved in fermentation medium condition that was 1% soluble starch, 0.5% tryptone, 0.2% K$_{2}$HPO$_{4}$, 0.2% CaCO$_{3}$, 0.1% NaCl, pH 8.0 at 30$\circ$C for 144 hrs.

To determine the optimum fermentation condition, the 50:50 feed mixture of both crushed corn and wet brewer’s grain were anaerobically fermented at various conditions. Three supplementation levels(0, 2%, and 5%) of molasses, five supplementation levels(0, 0.1%, 0.5%, 1.0%, and 2.0%) of yeast and five different incubation temperatures(4$^{\circ}C$, 10$^{\circ}C$, 30$^{\circ}C$, 40$^{\circ}C$ and 50$^{\circ}C$) were tested to determine the optimum fermentation conditions. During fermentation, alcohol concentration, live yeast cell number (LYCN) and pH values of the mixture were analyzed. Alcohol concentrations of the fermented feed mixtures were proportionally increased with increasing level of molasses supplementation. After 24hr fermentation, alcohol concentrations at 0.1%, 0.5%, 1.0% and 2.0% of yeast supplementation was 1.9%, 2.4%, 3.1% and 3.1%, respectively. These results indicate a proportional increase of alcohol concentration with the increasing supplementation of yeast (P<0.05) up to 1%, thereafter showing plateau at 2% supplementation. LYCN was relatively high with more than 0.5% yeast supplementation, whereas the value was significantly low(P<0.05) at 0.1% yeast supplementation. Alcohol production was significantly higher at 30$^{\circ}C$ and 40$^{\circ}C$ than other incubation temperatures (P<0.05), with the highest concentration at 30$^{\circ}C$. pH was rapidly decreased until 24 hours of incubation with steeper decrease at lower temperatures(P<0.05). Based on there results, optimum fermentation conditions for the alcoholic-fermented feed production could be achieved with 5% supplementation of molasses, 1% supplementation of yeast, and 24hr long incubation at 30$^{\circ}C$.

In Korea, fermented fish has been playing an important role as a preserved and flavor rich food. It is said that the digestion of fish protein is due to both action of intrinsic (autolytic enzymes) and bacterial enzymes in fish. The mass production of fermented fish has been impeded since traditional method of fermentation requires a long duration for a complete digestion. A high concentration of salt and unsanitary condition are also considered disadvantages of the old method. To improve the quality of the product and to develop mechanized process of fermentation, fermentors which have such control device as temperature, pH and agitation control system have been urgently needed. In this study, a model design of a fermentor is studied. The calculation was based on the optimum conditions for enzymatic hydrolysis of fish protein which involve temperature, pH, viscosity and other factors.
In order to obtain a strain of producing lipase which has resistance against alkaline and detergent, a screening test was carried out. Among 500 strains isolated from soil samples, the strain J-19 was selected for this study. The composition of the optimum medium for the highest lipase production was 2.0% glycerin, 1.0% corn steep liquor, 2.0% yeast extract, 0.1% $MgSO_4$$7H_2O$, 0.2% $K_2HPO_4$, 1.5% soybean oil and 0.1% LAS(linear alkylbenzene sulfonate) with initial pH value of 10.0 and 3-day cultivation at $25^{\circ}C$. The lipase activity of the strain J-19 under optimal condition was 3.3. units/ml, which was increased about 1.3-fold than that of basal medium.
In spite of the well confirmed advantages of wilting on the fermentation quality, wilting silages are difficult to make at optimum dry matter content. The prolonged wilting, especially in humid condition, result in lower water soluble carbohydrate (WSC) contents, extensive protein breakdown and sometimes higher total volatile fatty acid (VFA) during wilting an ensilage. Apart from difficulty of controlling moisture content, another problem associated with wilted silages is different evaluation on the potential productivity. In temperature climate of Asia, therefore further researches on the effects of wilting on the silage fermentation and potential productivity seen to be necessary.
From persimmon fruits, about 40 yeast strains were isolated and tested for their ability of alcohol fermentation were tested. Among them, two strains, RCY14 and RCY15, showing the highest alcohol fermentibility were selected for further investigations. They were identified as Saccharomyces cerevisiae and Saccharomyces kluyveri based on their morphological, cultural and physiological properties. Their optimum condition for the alcohol fermentation in YPD-15% glucose was pH 6.0, 30$circ$C and 120 rpm of shaking speed. The alcohol yields of S. cerevisiae RCY14 and S. kluyveri RCY15 in a persimmon juice were 94.54 and 96.81%, respectively. Although the alcohol yields of both strains were not very high in YPD-15% glucose, they were much higher in a persimmon juice as compared to those of S. cerevisiae Balyon-1, S. cerevisiae 701 and S. cerevisiaein W3 which are being used in the industrial alcohol fermentation.
The production of aerial conidia of Lecanicillium lecanii 41185, a highly virulent fungus, by solid-state fermentation was studied for use as a biocontrol agent against aphids. Among several agro-industrial solid media, steamed polished rice was found to produce the highest amount of aerial conidia. The optimal conditions for aerial conidia production were determined to be a 28.5% moisture content in the rice, 25$^{\circ}C$ culture temperature, rice pH of 6.0, 75% ambient relative humidity, 4-dold seeding culture, 0.6% $KNO_3$, and 12 d of culture time. The conidia yield increased from $5.7\times10^9$ conidia/g polished rice to 18.2 $18.2\times10^9$ conidia/g polished rice following application of these optimized conditions.
This study was conducted to produce vinegar using maesil. Acetic acid bacteria was 20 strains isolated from several conventional vinegars. Among the isolates, a strain showed highest acetic acid productivity was selected and identified as Acetobacter sp. SK-7. The optimum medium of acetic acid production by Acetobacter sp. SK-7 was 30% of maesil juice, 4% of ethanol, and 2% of starting acidity and 0.2% of glucose. Optomum condition for the high yield of acetic acid was in the shaking culture at 30$^{\cire}$. The acidity of culture medium was reached to 7.1% after 12 days fermentation. Organic acid was identify 6 kinds containing acetic acid. The total content was 7,068.7 mg% after 12 days and malic acid slowly decreased and acetaic and citirc acid gradationally increased according to fermentation
The present study was carried out to evaluate the potential of lignocellulosic byproducts for the production of citric acid through solid-state fermentation by Aspergillus niger NRRL 567. A sequential optimization based on one-factor-at-a-time method was applied to optimize fermentation conditions and media constituents. The results obtained from the optimization indicated that $30^{\circ}C$, 70% moisture content, 0.5~1.0 mm particle size, pH 5.5 and 4% methanol were found to be the optimum condition at 72 hr fermentation. The application the optimization resulted in an improvement of maximum citric acid production from 74.5 to 206.0 g/kg dry material (DM) from wheat straw. The optimal condition was used to produce citric acid from A. niger grown on different lignocellulosic byproducts, including wheat straw, corn stover and peat moss. A. niger produced the highest citric acid levels of 231.8, 213.8 and 240.2 g/kg DM at 120 hr fermentation, respectively.
