Evaluation of Sanitary Management based on HACCP of Business and Industry Foodservice Operations in Taegu and Kyungpook Areas (대구 , 경북지역 사업체급식소의 HACCP 에 근거한 위생관리 실태조사)

  • The purpose of this study was to evaluate the status of sanitary management based on HACCP. The surveys which were on various aspects of general characteristics, food handling practice, personal sanitation, equipment sanitation, and equipment possession were carried out using questionnaires for 146 business and industry foodservice operations in Taegu and Kyungpook areas. The results of this study were summarized as follows. Forty-nine percent of surveyed foodservice operations was in Taegu, 51% in Kyungpook and 69.2% in direct foodservice operations and 28.1% in contracted foodservice operations. Seventy-eight percent of foodservice operations replied that they have done only basic sanitary management, while 13% surveyed stated that they were implementing HACCP. Food handling practice and personal sanitation were significantly better in Kyungpook area than in Taegu. Significantly high levels in food handling practice, personal sanitation, equipment sanitation, and equipment possession were seen in foodservice operations which had more than 1,000 meal served than those which had less than 1,000 meals served. According to the results of food handling practice, in items of food-temperature measurement during receiving, cooking, holding after cooking, and reheating, foodservice operations showed very low scores below the average. All foodservice operations presented good scores in the parts of personal and equipment sanitation. In equipment possession, sterilizing systems were generally not enough, dishwasher and sterilizing facilities of contracted foodservice operation showed significantly high scores. Therefore, the business and industry foodservice operations will have to pay special attention to temperature management in the foodservice production process as the first step to implement of HACCP.

  • Normal Operations Safety Survey (NOSS), a methodology for capturing safety data during normal Air Traffic Control (ATC) operations. The NOSS methodology is based on the Threat and Error Management (TEM) framework, and is a safety management tool to monitor safety during normal aviation operations. Monitoring safety in normal operations is an essential activity within the safety management systems of Air Traffic Services (ATS) providing organizations, and NOSS is proposed as a suitable way to do this. This study, operating in the latter half of the year of 2010 in South Korea on NOSS was the understanding and to apply.

Enhancing Quality Teaching in Operations Management: An Action Learning Approach

  • Action learning motivates students to solve open-ended problems by 'developing skills through doing'. This paper reviews the concept of action learning and discusses the adoption of action learning approach to teach operations management at universities. It presents the design and delivery of an action-learning course at City University of Hong Kong. The course incorporates classroom lectures, tutorials and an action-learning workshop. The experience gained proves that action learning facilitates student participation and teamwork and provides a venue of accelerating learning where enables students to handle dynamic problem situations more effectively. The paper concludes that adopting action-learning approach can help lecturers to enhance quality teaching in operations management courses, and provide an alternate means of effective paradigm other than traditional classroom teaching and/or computer-based training at universities.

Design and Implementation of A Real Time Process Management System for Telecom Operations and Management (통신망 운용관리를 위한 실시간 프로세스 운용관리 시스템의 설계 및 분석)

  • To face with the fast and ever changing telecommunication environments, we need a real time process management system that can detect abnormal events in real time and warn the suspicious events to operations personnel. Additionally, a real time process management system can be adapted fast to various services that are developed by telecom companies. In this paper we develop a real time process management system to monitor and analyze telecom operations and management processes in real time. Toward this, we design application and database architectures of telecom operations and management processes based on Enhanced Telecom Operations Map (eTOM) that is business process framework in telecommunication operations and management field and recognized as an international standard in ITU-T M.3050. With these application and databasearchitectures we implement eight main functions for the real time process management system based on service oriented architecture. Therefore, new services can be applied to these functions fast. Also, the functions can detect abnormal event fast. Finally, since the functions are developed along with the international standard, the system has the flexibility for the development in various situations. Overall, this research can be a good guideline of developing a process management system regarding the telecom operations and management field or other fields that need to manage the processes in real time.

Success Factors of Knowledge Management in the Perspective of Knowledge Management Integration into Operations (지식경영과 업무의 통합을 위한 지식경영 성공요인 도출 연구)

  • This paper aims to explore the success factors of knowledge management in the perspectives of knowledge management integration into operations and to examine the effect of those factors on the knowledge management performance of individual users and organizations in order to link knowledge management performances to operational performances. I found two factors such as "knowledge management integration into operation processes" and "knowledge management integration into application systems" and their measures by means of literature review and modified Delphi research. Exploratory and confirmatory factor analysis confirmed that those two factors and their measures are statistically valid. Besides, the structural equation modeling analysis showed that the relationship between "knowledge management integration into operation processes" and "individual user's performance on knowledge management" and the relationship between "individual user's performance of knowledge managemen" and "organizational performance of knowledge management" are significant.
