Effects of Cooking and Drying Methods on the Lipid Content and Neutral Lipid Composition of Shrimp (가열 및 건조방법이 새우의 지방질 함량과 중성지방질 조성에 미치는 영향)

  • Effects of cooking and drying methods on the lipids content and neutral lipid component of shrimp, Metapenaeus joyneri, were investigated. Total lipid content of the fresh shrimp was 6.0%(dry basis), which was not changed significantly depending on the cooking and drying methods. Lipid of the fresh shrimp was composed of 36.8% of neutral lipids, 21.5% of glycolipids, and 41.7% of phospholipids. Freeze dried shrimp was substantially higher in neutral lipid contents but lower in glycolipid and phospholipid contents than hot air dried one. Main components of the neutral lipids were triglycerides, free sterols, free fatty acids and esterified sterols. Freeze dried shrimp contained higher triglycerides contents than hot air dried shrimp, whereas free fatty acids content in hot air dried shrimp was greater than that of freeze dried one due to the decomposition of triglycerides to free fatty acids during hot air drying. Major fatty acid composition of the total lipid were palmitoleic acid, eicosapentaenoic acid and docosahexaenoic acid, and that of neutral lipid were palmitic acid, palmitic acid, oleic acid, eicosapentaenoic acid and docosahexaenoic acid in fresh shrimp.

Effect of Antibiotics on Phospholipid Biosynthesis and Fatty Acid Composition in Chlorella ellipsoidea Chloroplasts (Chlorella ellipsoidea 엽록체의 인지질 생합성 및 지방산 조성에 미치는 항생제의 효과)

  • The effects of amphotericin B ($150\;\mu\textrm{g}/ml$) and cycloheximide ($10\;\mu\textrm{g}/ml$) on the biosynthesis of phospholipid and the composition of fatty acids in chloroplasts isolated from ChZorella were analyzed. The contents of the total lipid and phospholipid (PC, PE, PI) in treatment with antibiotics were lower compared with the control. In the whole cell system, the major fatty acids utilized for biosynthesis of phospholipid were palmitic acid (31.96%) and linoleic acid (16.96%) in control while those were palmitic acid (36.15%) and linolenic acid (16.71%) in treatment with amphotericin B. And in treatment with cycloheximide, palmitic acid (31.90%) and stearic acid (15.32%) were used in phospholipid formation. The major fatty acids in chloroplasts were analyzed as to be palmitic acid and linolenic acid in control (33.75%, 18.90%) and in treatment with amphotericin B (36.75%, 9.46%). However, it was shown that the major fatty acids in chloroplasts treated with cycloheximide were palmitic acid (28.01%) and oleic acid (19.27%).9.27%).

Effect of Supplement of Korean Pinenut Oil on Plasma Total Fatty Acid Composition in Cholesterol-fed Rabbits (한국산 잣기름이 콜레스테롤 첨가식이로 사육한 토끼의 혈장 총지방산 조정에 미치는 영향)

  • The present study was carried out in atheroscleorotic New Zealend white(NZW) rabbits. to evaluate the effect of dietary supplementation with Korean pinenut oil, on plasma total fatty acid composition. In study I, NZW rabbits were fed 10 weeks on a commercial chow diet supplemented with 5% of energy as fats(soybean oil or pinenut oil) or 10% of energy as fats(soybean oil or pinenut oil) with the addition of 1% cholesterol to the diet. Nineteen fatty acids ranged from myristic acid (14:0) to cervonic acid (22:6 ${\omega}3$) were identified in all the samples. The c5, c9, $c12{\sim}18$ : 3 acid was not reported in the fatty acid methyl ester profiles of each group because it was included in the linoleic acid peak. The major constitutent fatty acids in the chow diet group were linoleic acid, oleic acid, palmitic acid and ${\alpha}$-linolenic acid. In the cholesterol group, oleic acid, linoleic acid and palmitic acid were the major fatty acids. In plasma of cholesterol-fed animals, the levels of 16:1 ${\omega}$ 7 and 18:1 1 ${\omega}$ 9 were increased. Linoleic acid was the major fatty acid in soybean oil/cholesterol and pinenut oil/cholesterol groups. Plasma linoleic acid levels were significantly incresed from 4 to 6% by the supplementation of 5% soybean or 5% pinenut oil in the cholesterol diet for 5 weeks, compared to cholesterol group. Plasma 16 : 1 ${\omega}$ 7 levels in animals fed with 5 or 10% pinenut oils were significantly lower than in those fed cholesterol for 5 weeks. After 10 weeks on the soybean oil and pinenut oil diet there were no significant differences in the fatty acid composition. In study II, the fatty acid composition was not affected by the types or levels of oils supplemented for 5 weeks. After 10 weeks on the oil diets 16:1 ${\omega}$ 7 and 18:1 ${\omega}$ 9 were decreased in 10% soybean in oil/cholesterol and 10% pinenut oil/cholesterol groups, compared to cholesterol group.

Detection of Hydrocarbons Induced by Electron Beam Irradiation of Almond (Prunus amygosalus L.) and Peanut (Arachis hypogaea) (전자선 조사한 아몬드(Prunus amygosalus L.)와 땅콩(Arachis hypogaea)에서 유래한 지방분해산물 분석)

  • Food irradiation has recently become one of the most successful techniques to preserve food with increased shelf life. This study aims to analyze hydrocarbons in almonds (Prunus amygosalus L.) and peanuts (Arachis hypogaea) induced by electron beam irradiation. The samples were irradiated at 0, 1, 3, 5 and 10 kGy by e-beam and using florisil column chromatography fat, and content was extracted. The induced hydrocarbons were identified using gas chromatography-mass spectrometry (GC/MS). The major hydrocarbons in both irradiated samples were 1,7-hexadecadiene ($C_{16:2}$) and 8-heptadecene ($C_{17:1}$) from oleic acid, 1,7,10-hexadecatriene ($C_{16:3}$) and 6,9-heptadecadiene ($C_{17:2}$) from linoleic acid and 1-tetradecene ($C_{14:1}$) and pentadecane ($C_{15:0}$) from palmitic acid. Concentrations of the hydrocarbons produced by e-beam were found to be depended upon the composition of fatty acid in both almonds and peanuts. The $C_{n-2}$ compound was found to be higher than $C_{n-1}$ compound in oleic acid and palmitic acid, while in case of linoleic acid, $C_{n-1}$compound was higher than $C_{n-2}$ compound. The radiation induced hydrocarbons were detected only in irradiated samples, with 1 kGy or above, and not in the non-irradiated ones. The production of 1,7-hexadecadiene ($C_{16:2}$), 8-heptadecene ($C_{17:1}$), 1,7,10-hexadecatriene ($C_{16:3}$) and 6,9-heptadecadiene ($C_{17:2}$), in high concentration gave enough information to suggest that these may be the possible marker compounds of electron beam irradiation in almonds and peanuts.

Cholesterol Contents and Fatty Acid Composition of Chukar, Pheasant, Guinea Fowl and Quail Egg Yolk

  • Little information on the cholesterol content and the fatty acid composition of avian species other than chicken is available. This study was conducted to compare the yolk cholesterol content and the fatty acid profiles of some wild birds maintained in captivity on commercial grain-based chicken diets. The concentration of cholesterol/g of yolk as well as the total yolk cholesterol per egg varied among species. Yolk cholesterol concentration, expressed as mg/g of yolk, was highest in chukar, followed by pheasant, guinea fowl and quail, while total yolk cholesterol in an egg was highest in guinea fowl, followed by pheasant, chuckar and quail. An inverse relationship between yolk cholesterol concentration and egg weight was observed among species with an exception of quail. Although major fatty acids of egg yolk were oleic acid, palmitic acid, linoleic acid and stearic acid in all birds, the composition varied among species. Chukar and quail showed higher oleic acid content than pheasant and guinea fowl, while showing lower linoleic acid. Fatty acids of chukar and guinea fowl eggs were more saturated than those of pheasant and quail. Chukar and especially quail had higher monounsaturated fatty acids (MUFA) than pheasant and guinea fowl; in quail egg 51.6% of total fatty acids were MUFA. Polyunsaturated fatty acids (PUFA), essential fatty acids (EFA) and the ratio of PUFA to saturated fatty acid (P/S ratio) were higher in pheasant and guinea fowl than in chukar and quail. Differences in fatty acid profile of triglyceride (TG) among birds were largely similar to those of total lipid. In comparison to TG, phosphatidyl choline (PC) was low in MUFA while high in saturated fatty acids (SFA), PUFA, P/S ratio and EFA. PC was most saturated in guinea fowl egg yolk, followed by chukar, quail and pheasant. PUFA, P/S ratio and EFA in PC were highest in pheasant followed by chukar, guinea fowl and quail. PE was distinguished from PC by its high contents of stearic acid, eicosapentenoic acid (EPA) and docosahexenoic acid (DHA) while low in palmitic, oleic and linoleic acids. In egg yolk of all birds MUFA was significantly lower in PE than in PC except in quail. Compared to other species, quail had a considerably higher content of MUFA in PE at the expense of SFA and PUFA.

Analyses of Lipid and Volatile Components in Juniper Seed(Juniperus rigida Sieb. et Zucc.) (노간주나무(Juniperus rigida Sieb. et Zucc.) 열매의 지질 및 향기성분 분석)

  • Juniper seed oil extracted by steam distillation has been a useful material as a medicine, insect repellant, and flavorant for alcoholic beverages. As the result of juniper seed oil analysis, the acid value, saponification value, unsaponification value phosphorus contents, and refractive index were 91.04, 85.15, 15.52, 11.04 ppm, 1.47, respectively The content of neutral lipids, glycolipids and phospholipids were 85.4%, 12.2% and 2.4%, respectively. From the fatty acids analysis, the major fatty acids from the juniperseed harvested in August were lauric acid (31.9% ), palmitic acid (28.0% ), stearic acid (9.9%), and oleic acid (8.5%) . However, maturated seed oil harvested in October mainly consists of linoleic acid (47.6%), linolenic acid (17.6%), oleic acid (16.1%), and palmitic acid (11.9%). Upon these analyses, fatty acids composition of juniper seed oil depends on the seed maturation. According to volatile compounds analyses of essential oil extracted using steam distillation method and SPME, the major compounds were $\beta$-myrcene, $\alpha$-pinene, $\beta$-farnescene, $\beta$-cubebene, limonene, trans-caryo-phyllene, $\alpha$-terpinolene, camphene, sabinene, and $\beta$-pinene.

대두발효식품의 cerebroside 조성 및 생리활성

  • Cerebrosides were isolated from soybean, deunjang and chungkukjang and their constituents were investigated. The principal fatty acid of soybean cerebroside was 2-hydroxy-palmitic acid but chungkukjang cerebroside consisted palmitic acid, elaidic acid(trans 18:1), oleic acid and stearic acid. The only sugar in cerebrosides was glucose. TLC analysis of cerebroside hydrolysate elucidated soybean and chungkukjang had same sphingold bases, mainly dihydroxy bases, trans-4, trans-sphingadienine. But, alkali stable glycolipid fractions of chungkukjang and deunjang had $2{\sim}3$ different primary amines.

Physicochemical Characteristics of Traditional Doenjang with added Lentinus edodes (표고버섯을 첨가한 전통된장의 이화학적 특성)

  • Traditional doenjang with Lentinus edodes added at a concentration of 0, 3, 5 and 10% (w/w) was prepared and its physicochemical characteristics were analyzed during fermentation for 6 months. The moisture content, salt level and pH for doenjang were decreased with increasing addition of Lentinus edodes powder, but crude protein content was increased. Among the free sugars, glucose, galactose, arabinose, sucrose and maltose were identified and quantified, with the first two being the major free sugar. Minerals were detected in the order of Na> K> P> Ca> Mg> Fe while the content of Cu, Mn and Zn exhibited little change. The contents of each amino acid of traditional doenjang with added Lentinus edodes, glutamic, leucine and aspartic acids, had a much higher level. In fatty acid compositions, palmitic, stearic, oleic and linoleic acids were analyzed, with oleic acid being the most abundant fatty acid at $56.4{\pm}0.8\sim57.5{\pm}0.5%$ in all the tested samples. GMP and IMP contents of nucleotides and their related compounds were extremely high. It was thought that these substances contributed to the sweet taste of traditional doenjang with added Lentinus edodes. These results showed the applicability and high quality of traditional doenjang with added Lentinus edodes.

Effect of Individual Fatty Acids on Synthesis and Secretion of Apolipoprotein and Lipoprotein in hep-G2 Cells

  • The effects of individual fatty acids, differing in their degree of unsaturation(18:0, 18:1, 18:2 and 18:3) on the biosynthesis and secretion and lipids were investigated in Hep-G2 cells. Synthesis of apolipoprotein was measured by the incorporation of 3H-leucine into apolipoprotein(d<1.21g/ml) and synthesis of lipids was measured by the incorporation of 3H-glycerol and 14C-acetate into various lipid classes. Inclusion of 1.0mM of each fatty acids into the culture medium significantly increased the synthesis of total apolipoprotein and Apo B(p<0.05). However, addition of fatty acid did not affect the synthesis of cellular and medium protein. Among different fatty acids tested, oleic acid had the greatest effect on Apo B synthesis. While stearic, linoleic and linolenic acid, all had similar effects. The secretion of triglyceride into the medium markedly increased in all fatty acid groups being 5-6 times over the albumin control. The triglyceride secretion was the highest int he oleic acid group. The secretion of phospholipid and cholesterol also increased with triglyceride output. A positive relationship existed between the output of lipoprotein-triglyceride and Apo B. Since the synthesis of Apo B was significantly increased when various fatty acids were included into the culture medium, part of the apparently stimulated synthesis of the apolipoprotein may be in response to the increased formation and secretion of lipoprotein lipids.
