This study was performed to investigate the iron status and its related factors in female college students residing in Gyeongnam. The prevalence of iron deficiency among subjects ranged from 3.4% in mean corpuscular hemoglobin concentration (MCHC) to 43.7% in ferritin. Weight, lean body mass (LBM) and body mass index (BMI) were positively correlated with ferritin concentration, but negatively correlated with total iron binding capacity (TIBC). Among the nutrients, vitamin A and B2 were major predictors of elevated iron status. Meal regularity was positively correlated with Fe and ferritin concentration, and meal number with transferrin saturation (TS), meal quantity with red blood cell (RBC) and hematocrit (Hct). Consumption of fruit, meat, fish and poultry showed strong positive correlation with hematological indices. Therefore, increasing vitamin A, B2, C, and iron intakes as well as maintenance of a healthy weight may be helpful in preventing iron deficiency in female college students.

Due to recent scientific innovations in mulberry cultivation, leaf yield has been increased manifold. However, with successive leaf harvest, a quantum drop in leaf yield and quality has been noted. This inturn has affected the silkworm rearing and farmers suffered by the frequent crop failures. This is mainly due to nutrient deficiencies in mulberry leaf. Moreover, no complete information is available about hunger signs of nutritional disorders, analytical diagnosis and critical levels of nutrients required. The present paper, thus, may serve as an important nutrient guide for identification of hunger signs, leaf nutrients status under deficiency and critical levels of the elements namely N, P, K, Ca, Mg, S, B, Cu, Fe, Mn and Zn requirements for higher leaf yield and quality. The leaf nutrient status provided may help chemist for correcting the soil status. Besides, an integration of mulberry intercropping with legumes and applications of neem and castor oil cakes, VA-mycorrhizal inoculation, biofertilizer and vermicompost are suggested as integrated nutrient management for sustainable sericulture industry. Based on the information described in this paper, a model needs to be framed for maintaining continuous supply of nutrients to obtain desired quantity and quality of mulberry leaf for successful silkworm cocoon crop and increasing overall silk productivity.
Riboflavin status of 17 insulin-dependent diabetic mellitus(IDDM) patients in growing period was evaluated as a function of energy intake and expenditure, biochemical nutritional status and diabetic control indicators. Compared with recommended dietary allowances for Koreans(RDA, 1989), only 35.3% of subjects was at good levels of all nutrients intakes and 52.9% of subjects was below normal level of height and weight. Nutrients consumed below RDA levels were energy(=88.5% of subjects), niacin(64.7%), iron(52.9%) and protein(23.5%) respectively. The riboflavin status was within normal range by urinary riboflavin excretion but 17.6% of subjects was evaluated as showed riboflavin deficiency by erythrocyte glutathione reductase activity coefficient(EGRAC). Correlation between riboflavin intake, urinary riboflavin excretion, EGRA level and diabetic duration were not statistically significant. Correlation analyses indicated that EGRA level was inversely correlated with thiamin, niacin and cabohydrate intake. No significant correlations were found between the EGRA and glycosylated hemoglobin A1(HbA1) (r=-0.464, p=0.129). From this study, it is suggested that IDDM subjects need to maintain balanced diet containing nutrients above RDA for individual activity during growing period. It needs more study whether the current recommended riboflavin allowance is adequate for diabetic patients.
The goal of this study was to determine the nutritional value and nutrients provided by each meal and snack of consumed by university students. Subjects were randomly selected from volunteer students at five universities in Ankara. A sample of 400 students (167 female and 233 male) aged between 19 and 24 years participated in this study. A questionnaire designed to assess general characteristics, anthropometric measurements, and 24 hours dietary records was administered using face to face interviews. According to body mass index classifications, 69.5% of male students, and 77.7% of female students were found to be in the normal weight categories. Overweight categories were found to be 25.1% and 5.6% for males and females, respectively. Breakfast and lunch were the most frequently skipped meals, with a total of 47.7% of students skipping breakfast and 25.2% skipping lunch. The percentages of energy deficiency were found to be 78.4% in males, and 81.1% in females. Dinner was the main meal for consumption of energy and the other nutrients, except saturated fatty acids, for both genders. Also, dinner was the largest contributor of energy in both genders. Students ate more bread, cereals, and meat at dinner than during the other meals and snacks. Fruit was consumed more during snacks than at the other meals by all students. It was concluded that students need more nutritional information about healthy nutritional habits, adequate intake of nutrients, and ideal body weights.
This study was conducted to investigate the nutrient intake, dietary and weight control behaviors and iron deficiency of adolescent girls. The subjects were 216 female middle school students living in urban and rural areas of Inchon. Thin cross- sectional study was conducted by questionnaires and data were analyze by SAS program. Nutrient intakes collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program(CAN-pro). The mean height, weight. BMI and obesity index for the subjects were 158.2 cm, 51.1kg, 20.4 and -5.3 % in urban students and 155.9 cm, 49.3 kg 21.1 and -8.2% in rural students, respectively. Easting blood samples were obtained and analyzed for iron nutritional status. The mean obesity index of the urban students was higher than that of the rural students. The proportion of the overweight group was higher in urban students compared to rural students, However, over 10% of both area students belonged to the low weight group, respectively. Most students of both areas skipped breakfast and the main reason was on appetite and lack of time. Urban students were more concerned with body image. The nutrients which showed a lower mean intake as percentile of RDA were Ca, iron, vit A an Vit B$_2$ and most nutrient intakes of urban students were significantly higher compared to those of rural students. These results indicate that nutrient intakes in the female middle school students were considerably lower than the RDA. Also they had undesirable food habits and lower self-satisfaction with their body image, There were significant differences in the mean MCV, TIBC and serum ferritin between urban and rural area subjects. Mean Hb, Hct, MCH, MCHC and TS, bowaver, were not significantly different. Prevalence of iron deficiency greatly varied by indices from urban(11.5%) and rural (8.7%) when judged by Hb to urban(23.1) and rural (23.3%) by serum ferrition. Therefore, proper nutrition education is required for good nutrition desirable food habits, weight control, and guidance for iron deficiency in anemic female of adolescents.
Pregnant women in South Korea are a highly risk group fur iron deficiency anemia. Previous studies indicated that the 24-hour recall method was insensitive in distinguishing iron deficiency anemic women from normal women. This method is also impractical to when used at community health centers where no public health dietitians are employed. The objective of this study was to develop a convenient tool to evaluate the usual iron (Fe) intake of pregnant women. The study participants were 115 pregnant women (age 23 to 37 years) at gestational stage of 13 to 24 weeks. Anemic subjects were classified on the basis of their serum ferritin < 12.0 ${\mu}$g/L and hemoglobin < 12.0 g/dL levels. Food frequency questionnaires with 46, 29, and 15 commonly consumed food items were used to measure the usual intake of iron of the subjects. Hemoglobin and serum ferritin were measured from fasting blood samples. Nutrients intake was assessed on three consecutive days using the 24-hour recall method and the food record method. The iron index score calculated using the food frequency method showed a significantly positive correlation with iron intake for the three days dietary intake. The iron index showed a significantly difference (p < 0.05) between the normal and anemic groups. However, there was no significant difference in the iron intake between the anemic and the normal women as measured by the 24-hour recall and food record method. This study was performed to investigate dietary habits and nutritional intake according to body mass index (BMI) of female college students. The subjects were 1361 students with a mean age of 20.4 years residing in Seoul and Kyonggui area. BMI (kg/) between $\geq$ 18.5 to $\leq$ 23 was considered as nonnal, < 18.5 as underweight and > 23 as overweight. The subjects had a mean BMI of 20.0 kg/$m^2$ and 25% of them were classified as underweight group, 67% as normal group and 8% as overweight group. Dietary intake was assessed by food frequency method and consumption of foods and nutrients was analyzed. Frequency of meal skipping was higher in the overweight group, 16.1 % of the overweight group skipped dinner. Also, the frequency of snack intake was lowest in the overweight group. The overweight group consumed less meat and fish than the normal and underweight groups. The total number of foods consumed in a day was also significantly lower than that of the underweight and normal group. The overweight group consumed less energy, protein, fat, phosphorus and niacin than the underweight and normal groups. The overweight group took iron and sodium intake lower than the normal group. Mean intakes of nutrients except clacium and iron in all three groups were over Korea RDA. The NAR (nutrient adequacy ratio) value of all nutrients, except calcium, was lower in the overweight group when compared to the normal and underweight groups, and the MAR (mean adequacy ratio) of the overweight group was 0.89, which was lower than 0.92 of the underweight and 0.93 of the normal group. The above results indicated that the deficiency of major nutrients such as calcium and iron could be inducde by less kinds of consumed foods and frequent meal skipping including dinner in the overweighted group. Therefore, balanced nutrient intake is required to maintain skeletal health and prevent anemia in overweighted female college students aged twenties.
Populations both in the US and worldwide are aging. It is projected that by the year 2030 the population of Americans over 65 will increase to 70 million, more than twice their number in 1998. About one-third of elderly over the age of 65 have debilitating chronic health conditions that greatly impede their activities. Age-associated chronic diseases are believed to be associated with free radicals and the imbalance in antioxidant and oxidative stress contributes to development of several chronic health conditions. Diet and nutrients can have great impact in the health status of elderly. Several factors may contributor to the inadequate consumption of nutrients in elderly, including an inability to chew food adequately, polypharmacy, living along and limited income. Low intake of energy and several micronutrients are common among the elderly. Although overt deficiency of nutrients among the elderly is not common. a recent study showed that while elderly consume more fat, the total energy intake is low among the elderly. Inadequate intake of antioxidant nutrients such as vitamin E in elderly may contribute to the development of chronic health problems. Intake of higher than normal RDA levels of vitamin E for long periods of time has been shown to reduce the risk of many degenerative diseases, such as cardiovascular diseases(CVD) and cancer, and improve immune response in elderly. High intake of other antioxidants is also associated with reduced risk chronic diseases. Dietary antioxidants are abundant in fruits and vegetables. However, due to variety of factors, the elderly may not be able to receive these and other micronutrients through diet. Therefore, supplemental intake of micronutrients in the form of multi vitamins/minerals and/or specific micronutrients is a more practical approach to the maintenance of health status in the elderly.
In order to investigate the effects of frequent eating-out and breakfast skipping of working men on body mass index and nutrients intake status, working male adults aged 20 or over were selected (n = 1883) from the data of 2001 Korea national health and nutrition survey. The subjects were divided into 4 groups according to the eating-out frequency(high: once or more daily, low: less than once daily) and breakfast eating or not. Four groups were high eating-out with breakfast eating (n = 609), high eating-out with breakfast skipping (n = 192), low eating-out with breakfast eating (n = 877), and low eating-out with breakfast skipping (n = 205). High eating-out group showed higher body mass index (BMI) than low eating-out group, but the difference of BMI was disappeared when adjusted with age, residence region and family income. However high eating-out group in case of breakfast eating, compared with the low eating-out, showed higher intakes or densities of energy, fat, fat-energy% and higher ratio of energy-fat overintake, and also showed higher mean nutritional adequacy ratio and lower ratio of nutrients intake deficiency. Calcium, iron, vitamin A and C intakes were not affected by eating-out frequency, but were lowered by breakfast skipping. Breakfast skipping also decreased intake frequency of unprocessed cereals and increased those of ramyon and carbonated and alcoholic beverages. From the results frequent eating-out with breakfast eating caused increased intakes of energy and fat, but did not cause BMI increase. Breakfast skipping, but not eating-out, had negative influences on mineral and vitamin intakes. Accordingly good eating-out as well as breakfast eating should be exceedingly emphasized at nutrition education for the working males.
The purpose of this study was to determine the iron status of preschool children in Ulsan, Korea. The study was con-ducted using 95 children aged 3 to 6 years by investigating the anthropometric indices and assessing the dietary intakes and biochemical analysis. A questionnaire for dietary intakes using 24-hr recall method were carried out by the mothers of the 95 subjects. And also a study was conducted to assess hematological and biochemical status of iron and prevalence of iron deficiency. The average height and weight were 105.4 $\pm$ 7.0 cm, 18.7 $\pm$ 3.2 kg in boys, 103.8 $\pm$ 6.7 cm, 17.6 $\pm$ 2.7 kg in girls. These were lower than the body growth standard values of Korean pediatrics. There was not a significant difference in both between boys and girls. For the daily nutrient intake, energy was 1201.5 $\pm$ 280.9 kcal (79.3$\%$RDA), protein was 63.8 $\pm$ 28.2 g (219.4$\%$RDA), iron was 11.9 $\pm$ 4.5 mg (133.2$\%$RDA). The iron nutritional status by hematological assay found that Hct was 34.7 $\pm$ 2.0 ($\%$), Hb was 12.0 $\pm$ 0.8 g/dl, RBC was 4.3 $\pm$ 0.3 ($10^6/{\mu}l$), MCV was 80.5 $\pm$ 3.0 fL, MCH was 27.8 $\pm$ 1.1 pg and MCHC was 34.6 $\pm$ 0.6 g/dl. The biochemical measurement of serum iron was 75.6 $\pm$ 30.3 ${\mu}g$/dl, TIBC was 320.3 $\pm$ 34.1 ${\mu}g$/dl, serum ferritin was 30.0 $\pm$ 14.8 ${\mu}g$/dl, Zinc-Protophor-phyrin (ZPP) was 32.7 $\pm$ 8.0 ${\mu}g$/dl, and ZPP/Heme was 71.1 $\pm$ 19.5 ($\mu$mole/mol heme). The prevalence with Hct, Hb, TS and serum ferritin less than cut-off value was $8.4\%,\;9.5\%,\;12.6\%$ and $4.4\%$ respectively. But the prevalence of iron deficiency estimated with ZPP and ZPP/Heme criteria were $25.3\%$ and $27.4\%$, and were higher than in case of any other indices. The prevalence of iron deficiency anemia ((low Hb (< 11.0 g/dl) and low serum ferritin (< 10 ${\mu}g$/L) or low TS (3-4 yews: < $12\%$, 5-6 years: < $14\%$)) was found in only one 3 year old girl. The prevalence of iron deficiency except Hct and Hb was the highest in 3 year group, but the prevalence by Hct and Hb was the highest in 5 year group. Iron deficiency and iron deficiency anemia do not seem to be a major public health problem in preschool children in Ulsan.
