This study explores some basic issues behind adults' seeking and using patterns of alternative medicine as well as health food (health food/medicine). In order to do this, 791 adult participants in Seoul and Busan were interviewed face-to-face. The results of the survey showed that 1) interpersonal influence was the most influential factor in relation to the adoption of health food/medicine(46.9% of the participants reported on the influences), 2) keeping healthy was the main motivation for the usage of health food/medicine(34.5% of the participants), 3) mass media was the important information source for health food/medicine, 4) with regard to trustworthiness of information sources, experts were believed to be the most trustworthy while information from acquaintances were thought less, and finally, 5) pharmacies and health food stores were main suppliers of health food/medicine. This study suggests some marketing strategies for health food/medicine. For example, it can be suggested that interpersonal communication among other information channels should be focused and might be increased trust by using professionals.
The elderly often experience difficulty while eating; this can include physical problems, such as chewing and swallowing. Furthermore, their salt intake can be high due to a diminished sense of taste and smell. This can result in a reduction in calorie intake and subsequent malnourishment. Currently, the number of food products available in the market that are targeted specifically at the older population is very low. Development of nutritional supplement-based foods for the elderly is expected to reduce these dietary problems and therefore prevent nutritional deficiencies within this population. Milk and other dairy products are excellent sources of nutrition in terms of both nutrient content and absorption rates. Dairy products have been consumed around the world for centuries, and therefore represent an excellent food source for the elderly. In addition, use of milk-derived ingredients, such as casein and calcium, will enable the development of a variety of food products and supplements targeted at this specific age group. In the future, it is expected that milk and other dairy products will be used to develop a variety of nutritious food items for the elderly in the domestic food market.
The increased number of elderly in Korea presents great challenges for community nutrition programs. Strategies to enhance elderly nutrition are needed, as well as dietary advice that are reality-based and tailored to the need of the elderly. The purpose of this study was to evaluate the overall effectiveness of an elderly nutrition improvement program(ENIP), by assessing changes in nutrition knowledge, attitudes, and behavior after program completion. ENIP was conducted in Suwon for 4 months in 1998 at 5 centers for the elderly. The program provided individual nutrition counseling and brief biweekly group education sessions. To stimulate participation and motivation, the elderly in two centers were served free milk packs(200ml) three time a week during the program(milk+education group), and the elderly in 3 other centers were served yoghurt on the program day(education group). Altogether, 102 subjects finished the program(milk+education group 67 ; education group 35). Data about nutrition knowledge, dietary attitudes, diet records(24 hour recall) and dietary habit was collected before(baseline) and after the program(follow-up). The Drop-out rate for the milk+education group(2.9%) was significantly lower than that for the education group(30.0%)(p<.001). The Nutrition Knowledge fo females milk+education group increased significantly after the program, but no significant differences were observed in other groups. Over 60% of all the elderly showed positive responses to the healthy eating attitudes. Energy, protein, vitamin A, riboflavin, Calcium and Potassium intakes improved in the male milk+education group. The Vitamin C intake improved in the male education group. Energy and vitamin A intakes improved in the female milk+education group and energy, vitamin A, thiamin, riboflavin, niacin, Ca nad P in the female education group. A stepwise multiple regression analysis was performed to examine the effects of food intake changes on overall nutrient quality. For all elderly, the fish intake explained 12.6% of the variance, followed by candy intake and vegetable intake(model $R^2$=19.6%). Dietary habits such as meal time regularity and salty food reduction were markedly improved in both groups. Sixty-one percent of the milk+education subjects stated their participation was voluntary and active, while 51% of education subjects did. Sixty four percent of the subjects stated their interest on diet increased remarkably through program participation. Considering the results, it is conjectured that ENIP had a great impact on nutrient intake, dietary attitudes and habits. Milk supplement showed no direct effects on elderly nutrition improvement, but it encouraged the program by reducing drop-out rates and inducing voluntary participation. Therefore milk supplement could enhance the community nutrition education program. Moreover it is strongly suggested that the ENIP be expanded to other communities.
The effects of four types of tropical protein-rich trees on nutrient digestibility, nitrogen (N) balance, urinary purine derivative (PD) excretion and blood metabolites in four Thai Brahman cattle (290${\pm}$2.5 kg) were studied. The animals were fed twice daily, with each feeding consisting of 1 kg (fresh weight) rice straw and one of the four dietary supplements: i) 1.98 kg oven-dried rain tree pods (RTP) and 20 g premix (RTPP), ii) 980 g RTP and 1 kg sun-dried leucaena leaves and 20 g premix (LLRT), iii) 980 g RTP and 1 kg sun-dried cassia leaves and 20 g premix (CLRT) and iv) 980 g RTP and 1 kg sun-dried mulberry leaves and 20 g premix (MLRT). The apparent dry matter (DM) and organic matter (OM) digestibilities were higher (p<0.05) in cattle fed the CLRT supplement than in those fed the other supplements, whilst the apparent digestibility of neutral detergent fibre (NDF) was higher (p<0.05) in cattle fed the CLRT and MLRT supplements than in those fed the other supplements. The N-balance of cattle fed LLRT and CLRT supplements was higher (p<0.05) than in cattle fed RTPP and MLRT supplements, whilst the apparent digestibility of N was highest (p<0.05) in cattle fed RTPP supplement, compared to the other supplements. Allantoin and PD excretion in the urine, and the ratios of allantoin/DOMI and PD/DOMI were higher (p<0.05) in cattle fed RTPP and MLRT than for those fed LLRT and CLRT supplements. Plasma ${\beta}$-hydroxy butyrate (${\beta}$-HBA) and insulin concentrations were higher (p<0.05) in cattle fed RTPP supplement than in those fed the other supplements. The study demonstrated the value of using local multipurpose trees (MPTs) to improve Brahman cattle feeding systems in the tropics.
Objective: This study aimed to investigate the effects of single or/and double strains of probiotic supplement on feed efficiency, growth performance, and microbial population in distal gastrointestinal tract (GIT) of weaning rabbits. Methods: Sixty-four weaning (28 days old) New Zealand White rabbits were randomly distributed into four groups with treatments including: basal diet without probiotic supplement (control) or supplemented as follows: $1{\times}10^6cfu/g$ B. subtilis (BS group), $1{\times}10^7cfu/g$ L. acidophilus (LA group), or $0.5{\times}10^6cfu/g$ B. subtilis plus $0.5{\times}10^7cfu/g$ L. acidophilus (BL group). During the research, the male and female rabbits were fed separately. Body weight of the rabbits was recorded at 28, 42, and 70 d of age. Results: There was an increase (p<0.05) in body weight gain for the LA group at 42 d. Rabbits fed BL responsed with a greater growth (p<0.05) and better feed conversion ratio (p<0.05) than those fed with no probiotic. Digestibility coefficients of dry matter, organic matter, crude protein, neutral detergent fiber, and gross energy were higher (p<0.05) in LA and BL groups than those in the control group. Male rabbits had higher (p<0.05) Bacilli spp. and Coliformis spp. in the ileum than female rabbits. Rabbits supplemented with BS had greater (p<0.05) numbers of bacilli in all intestinal segments than those receiving no probiotic, whereas intestinal Lactobacilli populations were greater (p<0.001) in the LA and BL diets compared to control. Average intestinal coliform populations were lowest (p<0.05) in the rabbits supplemented with LA as compared to those fed the control and BS. Conclusion: Supplementation of L. acidophilus alone or in combination with B. subtilis at a half of dose could enhance number of gut beneficial bacteria populations, nutrient digestibility, cecal fermentation, feed efficiency, and growth performance, but rabbits receiving only B. subtilis alone were not different from the controls without probiotic.

A series of experiments were performed to study the influence of the following parameters on the physical traits and composition of swine manure compost: (1) addition of magnesium (Mg) at a molar ratio of 1.2 with respect to $PO_4$, and (2) reutilization of compost containing $MgNH_4PO_4{\cdot}6H_2O$ (magnesium ammonium phosphate, MAP). Three independent batch tests were conducted for replication: batch test I-control (C) and Mg added (T), batch test II-C, T and compost recycle ($T_{R1}$), and batch test III-C, T and compost recycle ($T_{R2}$). Magnesium addition and compost reutilization had no adverse effect on the degradation of organic matter. Reuse of the compost, however, had a clear effect on the total nitrogen (TN) and total phosphorus (TP) contents in the final compost. Repeated compost reutilization as a bulking material was resulted in composts rich in N and P. Upon adding the Mg supplement to the composting materials, the ortho-phosphate (OP) to TP ratio decreased due to the MAP crystallization reaction. The decrease in the OP/TP ratio and the increase in the TP content of the compost indicate that water-soluble phosphate is converted into a slow-release phosphate by the formation of crystals during composting. X-ray diffraction analysis of the irregular shaped crystals in the compost indicated that they are MAP crystals and that the crystallization of MAP begins immediately after the addition of the Mg supplement. The Mg addition to composting materials and the reutilization of compost as a bulking material would be a practical means to conserve nutrient content.

Effects of different levels of molasses in a concentrate supplement on milk yield of cows grazing Setaria grass pastures were investigated. Thirty Friesian cows, 6-7 years old with mean pre-experimental body weight of $428{\pm}6.5$ kg, in early stage of lactation were randomly allotted to five dietary treatments in a completely randomized design experiment that lasted for 126 days. Experimental dietary treatments were forage alone and forage/concentrate mixtures with molasses included at 0, 5, 10 or 15% levels designated as $T_1$, $T_2$, $T_3$, $T_4$ and $T_5$, respectively. The parameters studied were voluntary dry matter (DM) intake, average daily live weight change (LWC), milk yield, body condition score (BCS) and apparent nutrient digestibility coefficients. The DM and energy contents of Setaria grass were low compared to the concentrate diets. Fibre fractions-NDF, ADF, ADL, hemicellulose and cellulose; and gross energy were higher in concentrate mixtures than in the forage. Total DM intake (forage+concentrate mixtures) was significantly higher (p<0.001) in cows on the concentrate mixtures. LWC was not significantly different (p>0.05) between the cows. Average milk yields were significantly different (p<0.05) between cows. Fat corrected milk (FCM) was similar among cows in the treatments. BCS was better (p<0.001) in cows on concentrate mixtures. Digestibilities of DM, CP, NDF, ADF, ADL, OM, and energy were significantly higher (p<0.001) in cows on $T_2$, $T_3$, $T_4$ and $T_5$ than in those on $T_1$. There were no significant differences in the digestibility of DM, CP, NDF, ADF and ADL (p>0.001) in cows on concentrate mixtures. This study therefore demonstrated that lactating dairy cows in Fiji need a level of readily fermented energy source such as molasses in their diets; however, a level above 10% is not nutritionally suitable for lactating dairy cows. Based on data on production parameters-milk yield, fat corrected milk, body condition score and apparent nutrient digestibility coefficients-molasses levels that range between 5-10% are recommended, however, 10% is the best and therefore recommended for inclusion in the concentrate mixture of lactating dairy cows on a basal diet of Setaria sphacelata in Fiji.

Increasing the levels of energy in the ration increases the carcass fat content, while increasing the proteing levels decreases carcass fat content. Supplement-tation of poultry diets with amino acids such as methionine, lysine, glycine and tryptophan as well as amino acid such as well as amino acid mixtures can reduce body fat deposition. Normal stress leads to chicken muscular damage resulting in reduced meat quality, but this can be controlled by preslaughter management practices. Feed manufactures can utilize ntilize nutrient modulation to control pale soft exudative(PSE)syndrome. Finally, the success in poultry meat production depends on the consistent achievement of carefully selected levels of quality. Quality assurance should be the wider function of incorporating quality into the production system and the combination of motivating quality into actions and operations.
