Evaluation of nutritional status and adequacy of energy and nutrient intakes among atopic dermatitis children under 12 years of age: based on Korea National Health and Nutrition Examination Survey data (2013-2015) (12세 미만 아토피 피부염 어린이의 에너지 및 영양소적정섭취 수준 평가: 2013-2015년 국민건강영양조사 자료를 바탕으로)

  • Purpose: Atopic dermatitis (AD), a typical chronic disease in children, is an allergy disease that is highly associated with food. Thus, attention to food intake is needed to prevent and manage it. Therefore, we analyzed differences in food and nutrient intakes depending on AD status in under 12-year-old children. Methods: A total of 2,690 participants were enrolled in this study from the combined 2013-2015 Korea National Health and Nutrition Examination Survey. Subjects were divided into an AD group and normal group (non-AD group). General characteristic, food and nutrients intakes, and prevalence of insufficient and excessive nutrient intake were analyzed using χ2 test and regression analyses. The AD odds ratio (OR) for insufficient and excessive nutrient intakes was analyzed using multiple logistic regression analyses. Results: Food and nutrient intakes were not significantly different between the AD and non-AD groups. However, the ratio of calcium intake to recommended nutrient intake was about 70% in both groups, which can be attributed to the overall lack of calcium intake among Korean children. There were no differences in energy or nutrient intakes between the groups, but compared with Korean Dietary Reference Intakes for Koreans, the appropriate intake ratios of fat and vitamin C in the AD group were higher than those in the non-AD group. The AD OR decreased when fat was consumed at above appropriate levels and vitamin C was consumed at lower or excess levels. Conclusion: In children, AD may be related to the nutrient intake ratio of fats and vitamin C, and we speculate that these results were affected by dietary restrictions for AD management.

Contents of Inorganic Nutrient in Leaf Perilla in Growing Stages under Plastic Film House Cultivation (시설재배 잎들깨의 생육시기에 따른 엽 중 무기성분 함량)

  • This experiment was conducted to clear up the cause of nutrient physiological disorder and to manage of optimum fertilization for leaf perilla crop under plastic film house condition in Geum-san area in 2009. A nutrient contents of leaf perilla were analyzed during the growing stages of crop from the first harvest to the last harvest stages, and the data were going to use as the nutritional factors for farms' activity in the fields. In survey of leaf perilla growing status at five farmers' fields, it was needed 30 days for growing of 5~10 stems, 60 days for 10~15 stems and 45 days for 15~20 stems of leaf perilla. Contents of nitrogen, phosphorus and potassium in leaf and stem had been kept on some high values in early stages, but it had been decreased in gradually in late stages of growing. Nitrogen and potassium contents were more changeable in leaf than stem, and phosphorus content was kept in more both of leaf and stem than those of nitrogen and potassium. The major macro-nutrient contents of perilla leaf on first of July were 6.34 in N, 0.54 in P, 2.48 in K, 1.98 in Ca and 0.62% in Mg, total uptake amounts of major three elements were $400kg\;ha^{-1}$ in N, $30kg\;ha^{-1}$ in P and $250kg\;ha^{-1}$ in K. Total yield of perilla leaf was $52,000kg\;ha^{-1}$, and total dry matter was $10,510kg\;ha^{-1}$ with $8,680kg\;ha^{-1}$ in leaf dry matter and $1,830kg\;ha^{-1}$ in stem dry matter.

Assessment of Dietitian's Nutritional Quality Management for School Food Service (학교급식 영양사의 영양적 품질관리 수행도 평가)

  • The purpose of this study was to evaluate school dieticians' performance of nutritional quality control, and further to establish effective and objective standards of nutritional quality control. Data for this study came from 200 school dieticians' responses in the Chungbuk area. The total quality management (TQM)-based questionnaire was structured. The questionnaire consisted of the following four fields (1) performance of nutritional quality control, (2) performance of stepwise food production to maximize nutrient preservation rate, (3) management of documents and records related to nutritional quality control, and (4) other relating matters. The items of the questionnaire were measured on a five-point Likert scale which ranged from 'strongly agree' to 'strongly disagree'. First, the analysis indicated that school dieticians performed 'least' on human resource management', 'mediocre' on nutritional quality control, and best on 'leadership'. Second, the analysis on performance of stepwise food production to maximize nutrient preservation rate showed that dieticians considerably endeavored to maximize nutrients of cooked food, but it was found out that the most of nutrient destruction can be caused by heating during cooking. Third, the result showed that the systematic use of documents and records for nutritional quality control was not sufficiently accomplished, especially in the production phase of food. In addition, the measure by the Pearson correlation coefficient indicated that there was a significant relationship between performance of nutritional quality control and performance of stepwise food production to maximize nutrient preservation rate, and between performance of nutritional quality control and management of documents and records related to nutritional quality control. Finally, the findings of this study suggest that more effort should be exerted to carefully establish TQM-based standards for the improvement of nutritionary quality.

Effects of Germination Condition, Nursery Media and Nutrient Concentration on Seedling Growth Characteristics of Pak-choi and Lettuce in Plant Factory (발아조건과 배지종류 및 양액 농도에 따른 식물공장 재배 청경채와 상추의 묘 생육특성)

  • This experiment was conducted to study the effects of germination condition, nursery media and nutrient concentration in plant factory on the growth characteristics of pak-choi and lettuce seedlings. The results showed that temperature (15, 20, $25^{\circ}C$) and light conditions (lighting and no lighting) had no significant effect on germination rate of pak-choi and lettuce, whereas the interaction of growing media (rockwool and urethane sponge) and moisture management before and after sowing had significant effect on germination percentage. In case of no moisture management before and after sowing, germination percentage was much higher in rockwool medium than urethane sponge medium. But germination percentage of urethane sponge was higher than that of rockwool with applying moisture before and after sowing. At the nutrient concentration of EC $1.0dS{\cdot}m^{-1}$ the fresh weight of pak-choi was heavier than in EC 1.5 and $0.5dS{\cdot}m^{-1}$ by 1.8 and 6.0 times, respectively. At the nutrient concentration of EC $1.0dS{\cdot}m^{-1}$ the fresh weight of lettuce was also heavier than in EC 1.5 and $0.5dS{\cdot}m^{-1}$ by 1.7 and 3.5 times, respectively.

Comparison of the Cognitive Function and Nutrient Intakes of Elderly Women with Dementia in a Long-Term Care Facility and a Day-Time Care Facility in Incheon (인천지역 장기요양시설과 주간보호시설 여성치매노인의 인지기능 및 영양섭취 비교)

  • In this study we compared the cognitive function (Mini-Mental State Examination for Dementia Screening: MMSE-DS) and nutrient intake of elderly women with dementia in a long-term care facility (EW-LCF) and a day-time care facility (EW-DCF). This survey was conducted from July 2015 to May 2017 on 73 elderly women with dementia (47 women in LCF and 26 women in DCF) in the city of Incheon. The data obtained from interviews with the subjects and caregivers were analyzed using the SPSS 20.0. The total score of the MMSE-DS and intakes of most nutrients in the EW-LCF were significantly lower compared to the EW-DCF (p<0.05). The nutrient adequacy ratios (NAR) of protein, vitamin A, C, $B_6$, $B_{12}$, thiamin, riboflavin, niacin, folic acid, calcium and phosphorus in the EW-LCF were significantly lower compared to the EW-DCF (p<0.05). However, the indexes of nutritional quality (INQ) of vitamin C, $B_6$, thiamine, niacin, calcium, magnesium, and iron in the EW-LCF were significantly higher compared to the EW-DCF (p<0.05). As a result, the subjects showed an unbalanced and insufficient nutrition intake status regardless of the type of care facility. Most nutrient intakes of the EW-LCF with lower cognitive function were very significantly lower compared to the EW-DCF (p<0.001). Therefore, it is necessary to assess the cognitive function and nutritional status regularly at care facilities for the elderly women suffering with dementia and to provide specialized individual nutritional management.

Effect of Cultivation Activity in Daecheong Lake Flood Control Site on Water Quality (대청호 홍수조절지 내 경작활동이 수질에 미치는 영향)

  • The excessive use of fertilizer and compost in agricultural land increases the accumulation of nutrients in soil. The surplus nutrients in soil transported through surface and sub-surface flow can lead to water pollution problems and algal bloom. Moreover, nutrient accumulation and continuous crop cultivation changes the physical structure of the soil, which increases the potential of nutrient. The cultivation in the Daecheong Lake reservoir area may have a direct effect on the lake's water quality due to leaching and releasing of nutrients when water level rises. This research was carried out to analyze the physical and chemical properties of soil in the agricultural areas surrounding Daecheong Dam reservoir to provide basic data available for the establishment of Daecheong Lake water quality management measures. The soil of the Daecheong Lake reservoir was classified as sandy Loam, where surplus nutrients can be transported. Chemical compositions in the soil were found to be significantly affected by use of different fertilizer amounts. Nutrient outflow occurred during spring rainfall events from the rice paddy fields, whereas excess nutrients from summer to fall seasons originated from dry paddy fields. Nutrient outflow from dry paddy fields is mainly from sub-surface flow. Organic agricultural wastes from agricultural land and excessive vegetation inside the river was also evaluated to contribute to the increase in organic matter and nutrients of the river. The results can be used to select the priority management area designation and management techniques in the Daecheong Lake for water quality improvement.

The Comparison of Water Budget and Nutrient Loading from Paddy Field According to the Irrigation Methods (관개방법에 따른 논에서의 수문 및 수질특성에 미치는 영향)

  • The comparison of water balance and nutrient loading from paddy field with different irrigation management were carried out during 1999 ${\sim}$ 2002 at two different sites; one is irrigated with groundwater and the other is irrigated with surface water. For the surface water irrigated paddy field, irrigation was performed continuously during growing season. Whereas, initial irrigation with groundwater was applied during initial growing season, and the ponded water depth was maintained by natural precipitation since initial irrigation. The runoff frequency of groundwater irrigated paddy field was less than that of surface water irrigated paddy field. The nutrient concentration of ponded water was high by fertilization at early cultural periods, so reducing surface drainage during fertilization period can reduce nutrient loading from paddy fields. Amount of irrigation water to surface water irrigated paddy field was higher than to groundwater irrigated paddy field and evapotranspiration was similar because it is influenced by climate. Overall input in and output from paddy field irrigated with goundwater were less than that with surface water. This study indicate that efficient water management can reduce surface drainage outflow, save water, and protect water quality. It might be important BMPs for paddy field.

A Study on Validity of a Semi-Quantitative Food Frequency Questionnaire for Korean Adults (성인의 식이섭취 조사를 위한 반정량 식품섭취빈도조사지의 타당도 연구 -건강증진센터 내원 성인을 대상으로 -)

  • This study was conducted to validate the semi-quantitative food frequency questionnaire that was developed to assess the intakes of fatty acids, as well as energy, carbohydrates, fat, protein, minerals and vitamins in Korean adults. The validity of the semi-quantitative food frequency questionnaire was tested on 78 subjects (31 men,47 women) aged 34 to 66 years. The semi-quantitative food frequency questionnaire included 93 food items and was validated on two 3-day dietary records. The mean intakes and the Spearman Correlation Coefficients between the semi-quantitative food frequency questionnaire and the two 3-day dietary records were analyzed for each nutrient and food group level. The mean nutrient intakes obtained from the semi-quantitative food frequency questionnaire were estimated to be greater than those of the two 3-day dietary records. The Spearman Correlation Coefficients between the energy-adjusted nutrient intakes from the semi-quantitative food frequency questionnaire and the two 3-day dietary records ranged from 0.24 for polyunsaturated fatty acids to 0.55 for fat in men and from 0.29 for polyunsaturated fatty acids to 0.55 for saturated fatty acids in women, respectively. The Spearman Correlation Coefficients for food intake ranged from 0.11 for teas and beverages to 0.58 for grains and their products in men,-0.04 for potatoes and starches to 0.73 for milk and dairy products in women. Foods consumed regularly had lower intra-person variation and tended to have higher observed correlation coefficients. These results indicate that the semi-quantitative food frequency questionnaire is a useful tool for estimating nutrient intakes, particularly of total fat and saturated fatty acid intakes.

The development of the 2020 Dietary Reference Intakes for Korean population: Lessons and challenges (2020 한국인 영양소 섭취기준 제·개정: 교훈과 도전)

  • The discovery of the relationship between nutrients and deficiency diseases during the 100 years from the mid-1800s to the mid-1900s was a breakthrough that led to advances in the study of nutrition. The Recommended Dietary Allowances (RDA) were created as a quantitative standard for avoiding diseases caused by nutrient deficiency. In addition, a reductionism paradigm has become generally accepted among nutrition scholars in health and disease, which focused on the properties of individual nutrients, content in foods, cellular levels, and mechanisms of action. The reductionist paradigm worked very well for the prevention and treatment of malnutrition diseases. However, as the incidence of nutrient deficiencies decreased and that of chronic diseases increased, the nutrition goals have been changed to secure safe and adequate nutrient intake and to reduce chronic disease risks. Accordingly, Dietary Reference Intakes (DRIs), a set of nutrient-based reference values, were designed to replace the RDA. The revised Korean DRIs were published for 40 nutrients in 2020. However, there is still room for improvement in the reference intake levels targeted at reducing the risk of chronic disease. The reductionist approach can no longer be practical because chronic diseases are related to the interactions between multi-components in the foods and multi-targets in the body. Therefore, a second innovative leap is needed following the nutrition development breakthrough made over 100 years ago. To this end, the nutrition paradigm must evolve from reductionism to a holism approach. Cutting-edge scientific technologies, such as metabolomics, transcriptomics, microbiomics, and bioinformatics, should also be acceptable in nutrition science based on the knowledge gained from basic nutrition studies.

Long-term Application Effect of Silicate Fertilizer on Soil Silicate Storage and Rice Yield

  • Monitoring of soil fertility and crop productivity in long-term application of silicate fertilizers is necessary to use fertilizers efficiently. This study was conducted to investigate effects of continuous application of silicate fertilizer for rice cultivation from 1969 to 2014. The treatments were no silicate fertilizer treatments (N, NC, NPK, and NPKC) and silicate fertilizer treatments (N+S, NC+S, NPK+S, and NPKC+S). The 46-yr input of $2\;ton\;ha^{-1}yr^{-1}$ of silicate fertilizer increased pH 0.6 ~ 1.1 and exchangeable Ca $2.0{\sim}2.4cmol_c\;kg^{-1}$ in silicate fertilizer treatments (N+S, NC+S, NPK+S, and NPKC+S) compared with no silicate fertilizer treatments (N, NC, NPK, and NPKC) because silicate fertilizer included Ca component. Also, available silicate concentrations of silicate fertilizer treatments (N+S, NC+S, NPK+S, and NPKC+S) increased $169mg\;kg^{-1}$ compared to no silicate fertilizer treatments. In Period II ('90~'14), the mean annual Si field balance varied from 62 to $175kg\;ha^{-1}yr^{-1}$ in silicate fertilizer treatments, indicating continuous accumulation of soil Si. Silicon uptake and grain yield of rice had greater differences between N treatment and N+S treatment than other treatments. This showed that the application of silicate fertilizer had greater effect in nutrient-poor soils than in proper nutrient soils. Thus the application of silicate fertilizer led to improvement the fertility of soil and increasement of rice production for the lack of soil nutrients.
