Differences in Muscle Fiber Characteristics and Meat Quality by Muscle Type and Age of Korean Native Black Goat

  • To investigate the relationship between muscle fiber characteristics and meat quality traits by age of Korean native black goat (KNBG), four muscles (longissimus dorsi, LD; psoas major, PM; semimembranosus, SM; gluteus medius, GM) were obtained from five adult goat (AG; 18 months old) and five young goat (YG; 9 months old). PM muscle had the highest fiber number percentage (FNP) and fiber area percentage (FAP) of type I, followed by SM, GM, and LD muscles. FNP and FAP of type IIB were significantly (p<0.001) higher in AG than those in YG. YG had higher L* values but lower b* values than AG. The highest L* and b* values were observed in LD muscle (p<0.001). Age and muscle type had detrimental (p<0.001) effect on shear force and collagen content for all muscle in AG as compared to YG. YG had significantly (p<0.001) higher myofibrillar fragmentation index (MFI) than AG for all four muscles. These results suggest that muscle fiber compositions of different muscle types of KNBG depend on age, resulting in variations of meat color, MFI, collagen content, and shear force.

Momordica charantia extract supplementation tend to affect improvements in body composition and metabolic parameters on tennis players: A pilot study

  • Dietary supplements derived from natural sources are an essential factor in optimizing athletic performance. It has been proposed that the extract of Momordica charantia (M. charantia) that is known as a bitter melon can be potentially used as a novel supplement for health promotion. This pilot study aimed to examine the effects of the M. charantia extract when administered in the form of a sports drink, and we evaluated changes in body composition and metabolic factors in tennis players after 4-week consumption of the extract. Eight male college tennis players were instructed to consume an M. charantia extract 6 times per day (3 in the morning and 3 in the afternoon, and the total daily intake was 600 ml). Collected data were analyzed using paired t-tests to examine the changes over time after consumption of the M. charantia extract. The results revealed a significant increase in the trunk muscle mass, basal metabolic rate, and daily calorie intake (p < 0.05). Levels of protein, minerals, and total body water showed an increased tendency (not statistically significant), whereas intracellular water and extracellular water showed a decreased trend. Furthermore, fat-free mass, skeletal muscle mass, and muscle mass showed an increased tendency. In conclusion, consumption of the M. charantia extract caused an increase in parameters related to protein, muscle mass, and metabolism. It seems that follow-up studies related to fatigue, inflammation, and stress hormones related to the M. charantia extract consumption would be needed.

Carcass Characteristics and Chemical Composition of the Longissimus Muscle of Nellore, Caracu and Holstein-friesian Bulls Finished in a Feedlot

  • This work was carried out to study the carcass characteristics, the chemical composition and the fatty acid profile in Longissimus muscle (LM) of bull breeds Nellore, NEL (11), Caracu, CAR (12) and Holstein-Friesian, HFR (12) finished in a feedlot. The bulls were fed twice a day with corn silage, cotton meal, cracked corn, urea, limestone and mineral salt. NEL and CAR bulls had similar (p>0.05) final weight and hot carcass weight. However, NEL and CAR bulls had higher (p<0.05) final weight and hot carcass weight than HFR bulls. Carcass hot dressing, carcass conformation, cushion thickness, Longissimus muscle area and texture were similar (p>0.05) among NEL, CAR and HFR bulls. NEL and HFR bulls had higher (p<0.05) carcass length in comparison to the CAR breed. Nellore breed had higher (p<0.05) leg length in comparison to CAR and HFR breeds. Leg length was similar (p>0.05) between CAR and HFR breeds. Thickness fat, color and marbling score were lower (p<0.05) in NEL breed in comparison to CAR and HFR breeds. LM of NEL bulls had higher (p<0.05) meat moisture content in comparison to CAR and HFR bulls. In contrast, lipid content was lower (p<0.10) in HFR bulls. LM ash and crude protein contents were similar (p>0.05) among breeds. Saturated fatty acids (SFA) were higher (p<0.10) in HFR animals. Monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), n-6, n-3 and PUFA/SFA ratio were similar (p>0.05) among the different breeds. N-6/n-3 ratio was higher (p<0.05) in CAR animals.

Effects of crude glycerin from waste vegetable oil in diets on performance and carcass characteristics of feedlot goats

  • Objective: This experiment was conducted to investigate the effects of crude glycerin from waste vegetable oil (CGWVO) on performance, carcass traits, meat quality, and muscle chemical composition. Methods: Twenty-four crossbred (Thai Native${\times}$Anglo Nubian) uncastrated male goats ($16.8{\pm}0.46kg$ body weight [BW]) were assigned to a completely randomized design and subjected to four experimental diets containing 0%, 2%, 4%, and 6% of CGWVO (63.42% of glycerol and 47.78% of crude fat) on a dry matter (DM) basis. The diets were offered ad libitum as total mixed rations twice daily. The feed intake, feeding behavior, growth performance, carcass and meat traits, and muscle chemical composition were evaluated. Results: Based on this experiment, there were significant differences (p>0.05) among groups regarding DM intake, growth performance, and carcass traits where goats receiving 6% of CGWVO had lower daily DM intake, growth performance, and carcass traits than those fed on 0%, 2%, and 4% of CGWVO. There were no effects of CGWVO on carcass length, carcass width, Longissimus muscle (LM) area, Warner-Bratzler shear force, pH and color of LM at 45 min after slaughter, as well as on other carcass cut and muscle chemical composition. Conclusion: In conclusion, the addition of up to 4% of DM in the diets for crossbred finishing goats seems to be the most interesting strategy, since it promotes greatest animal performance. Moreover, this study was a suitable approach to exploit the use of biodiesel production from waste vegetable oil for goat production.

Carcass traits, fatty acid composition, gene expression, oxidative stability and quality attributes of different muscles in Dorper lambs fed Nigella sativa seeds, Rosmarinus officinalis leaves and their combination

  • Objective: This study examined the influence of dietary supplementation of Nigella sativa seeds, Rosmarinus officinalis leaves and their combination on carcass attributes, fatty acid (FA) composition, gene expression, lipid oxidation and physicochemical properties of longissimus dorsi (LD), semitendinosus (ST), and supraspinatus (SS) muscles in Dorper lambs. Methods: Twenty-four Dorper lambs ($18.68{\pm}0.6kg$, 4 to 5 months old) were randomly assigned to a concentrate mixture containing either, no supplement (control, T1), 1% Rosmarinus officinalis leaves (T2), 1% Nigella sativa seeds (T3), or 1% Rosmarinus officinalis leaves+1% Nigella sativa seeds (T4) on a dry matter basis. The lambs were fed the treatments with urea-treated rice straw for 90 days, slaughtered and the muscles were subjected to a 7 d postmortem chill storage. Results: The T2 lambs had greater (p<0.05) slaughter and cold carcass weights than the control lambs. Dietary supplements did not affect (p>0.05) chill loss, dressing percentage, carcass composition, intramuscular fat and muscle pH in Dorper lambs. Meat from supplemented lambs had lower (p<0.05) cooking and drip losses, shear force, lightness, and lipid oxidation and greater (p<0.05) redness compared with the control meat. The impact of dietary supplements on muscle FA varied with muscle type. Diet had no effect (p>0.05) on the expression of stearoyl-CoA desaturase and lipoprotein lipase genes in LD and ST muscles in Dorper lambs. The T2 and T3 diets up regulated the expression of AMP-activated protein kinase alpha 2 gene in LD and ST muscles and up regulated the expression of sterol regulatory element-binding protein 1 in ST muscle in Dorper lambs. Conclusion: Dietary supplementation of Nigella sativa seeds and Rosmarinus officinalis leaves had beneficial effects on meat quality in Dorper lambs.

브레인스피닝 프로그램이 소아청소년의 인지기능, 신체조성, 건강관련체력에 미치는 영향 (Effects of Brain Spinning Program on Cognitive Function, Body Composition, and Health Related Fitness of Children and Adolescents)

  • Purpose : This study was conducted to determine the effects of a brain spinning program on cognitive function, body composition, health related fitness and physical self-efficacy of children and adolescents. Methods : This study, 34 children and adolescents were selected and divided into two groups : the exercise group (n=16), which received a brain spinning program and the control group (n=16), which did not receive any exercise program. The program was conducted for 30 minutes three times a week for 4 weeks, and the cognitive function, body composition, health related fitness and physical self-efficacy were measured both before and after the program. Results : The exercise group, which received a brain spinning program showed a significant increase in short-term memory (p<.05) and working memory (p<.01), and muscle mass increased significantly only in the exercise group (p<.05). In addition, left grip strength increased in the exercise group (p<.01), and the maximum oxygen intake decreased significantly only in the control group (p<.05), and Sit-forward bend increased significantly only in the exercise group (p<.01). Physical self-efficacy significantly increased only in the exercise group (p<.05). Conclusion : In summary, short-term memory, cognitive efficiency, working memory, muscle mass, left grip strength, maximum oxygen intake, and left forward bending in children and adolescents significantly increased after the 4-week brain spinning program. However, the control group that was not provided with the 4-week brain spinning program showed a significant increase in body weight and a significant decrease in maximum oxygen intake. In conclusion, the 4-week brain spinning program has positive effects on short-term memory, cognitive function, muscle mass, muscle strength, cardiorespiratory endurance, flexibility, and physical self-efficacy.

Effects of fungal (Lentinussajor-caju) treated oil palm frond on performance and carcass characteristics in finishing goats

  • Objective: This experiment was conducted to investigate the effects of fungal treated oil palm fronds (FTOPF) on performance, carcass traits, meat quality, and muscle chemical composition. Methods: Eighteen growing crossbred male goats (Thai Native${\times}$Anglo Nubian) with $18.7{\pm}2.0kg$ of initial body weight (BW) were stratified and blocked by BW in a randomized complete block design. Three diets containing 30% of oil palm fronds (OPF) either untreated (UOPF) or treated with Lentinussajor-caju (FTOPF) with or without urea (FTOPFU) were used as roughage sources in total mixed rations (TMRs). The diets were offered ad libitum and weight gain was determined. At the end of the experimental period, the harvest data and carcass characteristics of the goats were recorded, and muscular longissimus dorsi composition was determined. Results: No significant effect of fungal treated (FT) inclusion was observed in any of the feed intake, growth performance, and carcass characteristics. Likewise, no apparent effects on carcass composition and muscle chemical composition were detected in this study, except for hind leg and chump were affected (p<0.05) by FT inclusion. Conclusion: In conclusion, feeding of fungal (Lentinussajor-caju) treated oil palm frond in TMR diet did not affect performance and carcass characteristics in finishing goats.

  • Purpose: The purpose of this study was to examine the effect of a 8-week dynamic yoga program on body composition and blood lipids in middle-aged post-menopausal women. Method: Twenty participants were allocated to the yoga group (YG, n=10) or the control group (CG, n=10). They were assessed for lean body mass, percent body fat, waist to hip ratio, total cholesterol, low density lipoprotein cholesterol, high density lipoprotein cholesterol, and triglyceride both before and after intervention. The yoga group participated in the program lasting $50{\sim}60$ minutes, five times a week for 8 weeks. Results: Unlike the control group, the yoga group showed a significant decrease in total cholesterol, low density lipoprotein cholesterol, percent body fat, and waist hip ratio after the yoga training. However, changes in lean body mass, high density lipoprotein cholesterol, and triglyceride level during the intervention period were not different between the yoga group and the control group. Conclusion: The 8-week dynamic yoga program could be adopted to prevent cardiovascular diseases in middle-aged post-menopausal women by promoting body composition & blood lipids.

Effects of Aquarobic Exercise on Body Composition and Cardiovascular Index in Elderly Women

  • Objective: The community has implemented a variety of exercise programs for the elderly population. However, studies comparing changes in the cardiovascular system through body composition and blood analysis after applying aqua aerobic exercise are insufficient. The purpose of this study was to investigate the effect of a 12 weeks aqua exercise on body composition and cardiovascular index in elderly women. Design: Non-equivalence pre-post design. Methods: Thirty elderly women were assigned to aquarobic group(n=15) and control group(n=15). The aquarobic exercise was 60 minutes per every session, 2times per week, for 12weeks. Weight, skeletal muscle mass, body fat percentage, total cholesterol, triglyceride, HDL cholesterol, and LDL cholesterol were measured before and after the exercise program. Paired and independent t-tests were performed using SPSS program. Results: The result showed was weight(p<0.05), body fat percentage(p<0.05), total cholesterol(p<0.05), triglyceride(p<0.05), HDL cholesterol(p<0.05), and LDL cholesterol(p<0.05) were significantly decreased and skeletal muscle mass(p>0.05) was not significantly increased after aquatic exercise program. Conclusions: According to the study result, aqua exercise program made a positive effect in the improvement of obesity and cardiovascular function in elderly women. Therefore, we suggest that you actively consider implementing the Aquarobic exercise program when operating the community health promotion program in the future. In addition, in future studies, comparative studies according to various ages and genders and studies on the effects of aqua aerobic exercise as a community exercise program for chronically illness patients are needed.

배합사료와 생사료로 사육한 넙치의 체조성 및 육질 비교 평가 (Comparative Evaluation of Proximate Composition and Muscle Quality according to the Olive Flounder (Paralichthys olivaceus) fed Extruded Pellets and Raw Fish-Based Moist Pellet)

  • This study was conducted to evaluate the quality characteristics (proximate composition, fatty acids, amino acids and sensory properties) of whole body and dorsal muscle in olive flounder, which is switch size from juvenile to growing fed extruded pellets (EP) and raw fish-based moist pellet (MP) for 9 months. Sample was collected at 5 and 9 months to compare with those of EP and MP. Whole body crude protein of fish fed EP at 9 months was significantly higher than that of fish fed MP (P<0.05). Linolenic acid(18:3) and n-6/n-3 ratio in dorsal muscle of fish fed EP were significantly higher than those of fish fed MP (P<0.05). No significant differences were observed in the results of the flavor, color, taste and texture of the muscle of the fish fed EP compared to those fed MP (P>0.05). Based on the experimental results, we concluded that olive flounder cultured with EP is not inferior to those fed MP for quality characteristics of whole body and muscle.
