Effect of Packaging Method on the Storage Stability of Filleted Mackerel Products (포장방법이 고등어제품의 저장성에 미치는 영향)

  • To improve the individual packaging method and extend the shelf life of mackerel (Scomber japonicus), salted and unsalted mackerel fillets were packaged in laminated plastic film bag (Nylon/PE: $20{\mu}m/40{\mu}m,\;12{\times}15$ cm) filled with $CO_2$ gas, in vacuum, and stored at O and/or $5^{\circ}C$. The other samples were packaged in plastic foam trays, overwrapped with oxygen permeable film (control), and stored at same temperature. Volatile basic nitrogen (VBN), trimethylamine (TMA), histamine (HM) and viable cell counts (VCC) were progressed with the increasing of storage time, but thiobarbituric acid (TBA) values decreased gradually after reaching at a maximum peak in 5-9 days. Judging from 4 chemical components, VBN was the most available component in quality judgement of mackerel fillets and its upper limiting content was 25 mg%. Regression equation for shelf life prediction of mackerel fillets with sensory evaluation and VBN component was determined.

Evaluation of the Accuracy of the $EasyTest^{TM}$ Malaria Pf/Pan Ag, a Rapid Diagnostic Test, in Uganda

  • In recent years, rapid diagnostic tests (RDTs) have been widely used for malaria detection, primarily because of their simple operation, fast results, and straightforward interpretation. The Asan $EasyTest^{TM}$ Malaria Pf/Pan Ag is one of the most commonly used malaria RDTs in several countries, including Korea and India. In this study, we tested the diagnostic performance of this RDT in Uganda to evaluate its usefulness for field diagnosis of malaria in this country. Microscopic and PCR analyses, and the Asan $EasyTest^{TM}$ Malaria Pf/Pan Ag rapid diagnostic test, were performed on blood samples from 185 individuals with suspected malaria in several villages in Uganda. Compared to the microscopic analysis, the sensitivity of the RDT to detect malaria infection was 95.8% and 83.3% for Plasmodium falciparum and non-P. falciparum, respectively. Although the diagnostic sensitivity of the RDT decreased when parasitemia was ${\leq}500\;parasites/{\mu}l$, it showed 96.8% sensitivity (98.4% for P. falciparum and 93.8% for non-P. falciparum) in blood samples with parasitemia ${\geq}100\;parasites/{\mu}l$. The specificity of the RDT was 97.3% for P. falciparum and 97.3% for non-P. falciparum. These results collectively suggest that the accuracy of the Asan $EasyTest^{TM}$ Malaria Pf/Pan Ag makes it an effective point-of-care diagnostic tool for malaria in Uganda.

MASS MORTALITYS OF OYSTER DUE TO RED TIDE IN JINHAE BAY IN 1978 (1978년 진해만 적조와 양식굴의 대량폐사)

  • In early August 1978, a huge red tide occurred off Chilcheon Is, , at the mouth of Jinhae Bay. It expanded rapidly into the central part and then soon covered all the bay except the innermost part of the bay. After staying for a week it disappeared, and thereafter several small scale red tides partially occurred and disappeared untill the end of August. It differed from the red tides hitherto recorded from this bay in respect of the dominant plankter, the geographical extent and the severe damaging effect to local oyster resources. During the red tide period, nevertheless, no oyster damage was found. In September, however, oyster mortailty was found from all rafts and longlines in the bay. Except the inner most part of the bay the oyster farms were completely destroyed. Of the oyster Production in the winter 1978, $96\%$ of an estimated yield of 5,879 tons (shucked meat) was lost and it was estimated to be 2,275 million won, equivalent to $US\$$ 4.55 million. The dominant species was a dinoflagellate, Ceratium fusus and it constituted about $45\%$ of the total phytoplankton. Cell count showed $7.0\times10^4\;cells/\iota$ and chlorophyll-a, $50mg/m^3$ during red tide peak. No oxygen was found ill the bottom waters in September. Sulphides in bottom waters and in the superficial mud increased to 15 and 8-fold respectively in September compared with July ana August. Precipitation from January to May of 1978 was about a third in comparison with the past ten years average but rainfall ill June was two and half-fold more than normal year, and thereafter drought persisited till September Air and water temperatures were also higher, and sunny days continued for a long time without strong winds. Therefore, water was calm for a long time after the red tide extinguished. The result indicated that the occurrence of the Ceratium red tide occurred in that year which was characterized by the combination of the formation of almost anoxic bottom water before the red tide occurrence, high air temperature and the calmness after a great quantity of rainfall in June. The mass mortality of oysters was presumed not to be directly related with the red tide but with the depression of dissolved oxygen in the environmental waters at the bottom due to settling of the red tide organisms.

  • The monthly distribution of marine bacteria in the coastal waters of Chung-Mu was investigated from April, 1976 to March, 1977. The aim of this study was to obtain basic data for the prevention of food poisoning and for the efficient aquaculture of the area. Samples of sea water, mud, fish and shell fish were taken every month. The results are as follows: 1. One thousand four hundred and twenty-six strains were isolated from 732 samples of sea water, mud, fish and shell fish. They were 450 strains of Pseudomonas fluorescens, 422 strains of Achromobacter liquefacience, 72 strains of Vibrio parahaemolyticus, 234 strain of Vibrio alginolyticus, and 248 strains of Proteus vulgaris. 2. V. parahaemolyticus occupied $9.84\%$ of the total samples and $52\%$ of them were found in the sea water and mud. 3. The muds sampled districtly beneath the aquaculture raft contained much gas. They seemed to originate from the deposition of excretion of shell fish. The fatness of the shell fish was low where the gas was abundant. 4. It was .found that the shell fish with low fatness contained much Vibrio sp. 5. Regional distribution shows that marine bacteria were abundant in the order of station 10, 9, 8, 11, 1. The area around station 9 was polluted by reclamation of the area, and station 8 showed the influence of the excrement treat tank located nearly.

The Effect of Post-Treatment N-Acetylcysteine in LPS-Induced Acute Lung Injury of Rats

  • Background: Oxidation plays an important role in acute lung injury. This study was conducted in order to elucidate the effect of repetitive post-treatment of N-acetylcysteine (NAC) in lipopolysaccaride (LPS)-induced acute lung injury (ALI) of rats. Methods: Six-week-old male Sprague-Dawley rats were divided into 4 groups. LPS (Escherichia coli 5 mg/kg) was administered intravenously via the tail vein. NAC (20 mg/kg) was injected intraperitoneally 3, 6, and 12 hours after LPS injection. Broncho-alveolar lavage fluid (BALF) and lung tissues were obtained to evaluate the ALI at 24 hours after LPS injection. The concentration of tumor necrosis factor ${\alpha}$ (TNF-${\alpha}$) and interleukin $1{\beta}$ (IL-$1{\beta}$) were measured in BALF. Nuclear factor ${\kappa}B$ (NF-${\kappa}B$), lipid peroxidation (LPO), and myeloperoxidase (MPO) were measured using lung tissues. Micro-computed tomography (micro-CT) images were examined in each group at 72 hours apart from the main experiments in order to observe the delayed effects of NAC. Results: TNF-${\alpha}$ and IL-$1{\beta}$ concentration in BALF were not different between LPS and NAC treatment groups. The concentration of LPO in NAC treatment group was significantly lower than that of LPS group ($5.5{\pm}2.8$ nmol/mL vs. $16.5{\pm}1.6$ nmol/mL) (p=0.001). The activity of MPO in NAC treatment group was significantly lower than that of LPS group ($6.4{\pm}1.8$ unit/g vs. $11.2{\pm}6.3$ unit/g, tissue) (p<0.048). The concentration of NF-${\kappa}B$ in NAC treatment group was significantly lower than that of LPS group ($0.3{\pm}0.1\;ng/{\mu}L$ vs. $0.4{\pm}0.2\;ng/{\mu}L$) (p=0.0001). Micro-CT showed less extent of lung injury in NAC treatment than LPS group. Conclusion: After induction of ALI with lipopolysaccharide, the therapeutic administration of NAC partially attenuated the extent of ALI through the inhibition of NF-${\kappa}B$ activation.

Estimates of Basin-Specific Oxygen Utilization Rates (OURs) in the East Sea (Sea of Japan) (동해 각 분지의 수층내 산소 소모율 추정)

  • The oxygen utilization rate (OUR) is one of the crucial parameters for ocean carbon cycling and climate models. However, parameterization of OUR in the East Sea (Sea of Japan) is yet to be established. We estimated the basin-specific OURs in the East Sea and fitted them with exponential functions with depth by using pCFC- 12 age and apparent oxygen utilization (AOU) measured in summer 1999. The estimated OURs are higher in the upper water column and decrease with depth, in general. The vertical distributions of the estimated OURs in the Western and Eastern Japan Basins (WJB & EJB) are very similar. The OURs in the Ulleung Basin (UB) varied greatly depending on whether the surface layer (0~200 m) data are included in the OUR estimate or not. Apparently, weaker oxygen consumption occurs in the deep layer of Yamato Basin (YB). The ranges of the OURs between 200 m and 2000 m at WJB, EJB, UB, and YB are 8.15~0.83, 8.11~0.68, 5.29~0.73, and 7.31~0.06 ${\mu}mol$ $kg^{-1}$ $yr^{-1}$, respectively. Consideration of the wintertime surface water oxygen disequilibrium condition in estimating the OUR will be necessary in the future study.

Hydrochemistry and Nitrogen and Sulfur Isotopes of Emergency-use Groundwater in Daeieon City (대전지역 민방위 비상급수용 지하수에 대한 수리화학과 질소 및 황 동위원소 연구)

  • The purpose of this study is to investigate the hydrochemical characteristics of emergency-use groundwater in the Daejeon area, and to elucidate the contamination source of $NO_3-N$ and the origin of sulfate in the groundwater. The groundwater shows weak acidic pH, the electrical conductivity ranging from 142 to $903{\;}\mu\textrm{S}/cm$, and the hydrochemical types of $Ca-HCo_3$ and $Ca-Cl(SO_4,{\;}NO_3)$. The Box-Whisker analysis and the Krigging analysis of chemical data of groundwater were made to demonstrate the concentration distribution of hydrochemical composition, and to compare the trend of hydrochemical data. The groundwater in the area of Dong-gu, Jung-gu and Daeduk-gu, where are old town, shows higher electrical conductivity, nitrate content, sulfate and $EpCO_2$ levels than groundwater in new town area of Seo-gu and Yusung-gu. ${\delta}^{15}N$ of groundwater in the area of Seo-gu and Yusung-gu ranges from +7.4 to $+9.6{\textperthousand}$, indicating that major contamination source of $NO_3-N$ is the leakage from municipal sewage pipe lines. ${\delta}^{15}N$ of groundwater in the old town area of Tong-gu, Jung-gu and Daeduk-gu shows the range between +10.2 and $+23.5{\textperthousand}$, meaning that major contamination source is leakage of septic tank. ${\delta}^{34}S$ of groundwater shows the range of $+3~13.4{\;}{\textperthousand}$. Sulfur isotope indicates the possibility of a sulfate reduction and the input of anthrophogenic source.

  • As a result of research, the character of the general dress-costumes from the late 17th century to the early 18th century in Genre Paintings of DuSeo Yun and YoungSeok Cho is as follows. Firstly young women wore braided hair at the back of head and married women wore hair in the style of Unjeun-mori with Gache. The length of Jeogori (Korean traditional jacket) covered waistor shortened to waist length. The width of Jeongori was suitable, because side-seam line was straight or oblique as it comes into inner line. The width of Git was enough and Mokpan-git (shape of board) and Kal-kit (shape of knife) appeared, and sometimes used other color fabric. Sleeve was narrow and ostly folded up. Chima (Korean traditional skirt) used darker color fabric than Jeogori and the width of Chima was narrow and its length was short. Sokbaji (Korean traditional underpants) shown below were narrow and its end narrower. They were barefoot or they wore Hye (Korean traditional shoes) after putting on Beoseon (Korean traditional socks). Secondly general man's hair tie a topknot (sangtu) and put on headdres, 'Bang-lip', 'Mang-geon', hairband, 'Tang-geon' on head. The length of Jeogori became shorter from the line which covered hip to the line which covered waist. The width of Jeogori was suitable and sometimes it had a slit of side-seam line. The width of Git (neckand) was wide and the length of Git was long. 'Kal-git'appeared and it used other color fabric. The shape of sleeve was straight and narrow. They folded up their sleeves. They folded up their sleeves. They folded up their slack that look like 'Jam-bang-i'and the width of slacks was not suitable, and it was narrow. Baji (Korean traditional pants) were with or without knot, worn 'Hangjeon'(ankle band). They were barefoot and wore 'Hye'or 'Jipsin'(Korean traditional straw shoes). Thirdly a person of high birth or a low-ranked official put 'Yu-geon', 'Mang-geon', 'Gat', 'Tang-geon', 'Bok-du', 'Bok-geon', 'Whi-hang'on their head on a topknot. They wore 'Po (Shim-ui, Jick-ryeong'Jung-chi-mak, Do-po, etc)'on Baji and Jeogori. 'Po'was long and wide, it knot with 'Se-jo-dae'(string belt) or 'Po-baek-dae'(band belt). It had a slit of sideline and 'Mu'which had or had not or which were hard to confirm. The shape of sleeve was straight or very wide and its length was long. The width of Baji was wide and knotted with 'Hangjeon'and wore'Beoseon'and 'Hye'. Fourthly child's hair was short or knotted to the back of the head. The length of Jeogori reached waist line and its width was wide. It had a 'Jeogori'which had s slit of sideline. The shape of sleeve was 'Tong-su'(straight), and the length of sleeve was diverse. They put 'Baeja'on 'Jeogori'. The width of Baji was not wide. They wore them straight without or with knot, 'Hangjeon'. They were barefoot or put on 'Jipsin'.

Quality stability of anchovy-based powder for instant soup packed in tea bag (탈산소제에 의한 Tea bag 포장한 멸치 복합 분말의 저장 안정성)

  • The anchovy-based powder for instant soup packed in twenty tea bag were repacked with (Product B) or without oxygen absorber (Product A) in laminated film bag $(PVDC/OPP,\;thickness:\;100.5\;{\mu}m,\;size:22{\times}18cm)$, and then stored at ambient temperature $(25{\pm}3^{\circ}C)$. Moisture, crude protein and crude lipid contents in anchovy-based powder for instant soup were 12.1%, 54.7% and 2.9%, respectively. Moisture content showed little changes during storage in both product (A) and (B). pH and saturated fatty acid such as 20 : 5 and 22 : 6 decreased, while volatile basic nitrogen content, carbonyl value, thiobarbituric acid value, monoenoic fatty acid such as 16 : 0, brown pigment formation and Hunter values increased during storage of product (A). But, these values showed a little change during storage of product (B). It is concluded that anchovy-based powder for instant soup can be handily and safely used during storage of 150 days.

On the Pronunciation and the Meaningful Rendering of the Oriental Medical Chinese Terminology into Korean (한의학용어(韓醫學用語)의 발음(發音)과 독음(讀音)에 대(對)하여 -두음법칙(頭音法則)과 경음화(硬音化)를 중심으로-)

  • In this paper, this writer looked into the initial law and fortification, which are two of the most important phonetic changes of Sino-Korean words. Pronunciation and inscription rules of Oriental Medical terminologies have also been studied. Moreover, several problems of meaningful rendering of Oriental Medical Chinese terminologies into Korean have been looked into. As a result, the following conclusions could be drawn. 1. The initial law only applies to Sino-Korean words that consist of more than one syllable. It does not apply to words borrowed from foreign languages. Especially, compound words like Jang-ssi-yu-gyeong(張氏類經) or Im-sin-yuk-hyeol(姙娠衄血) consist of already existing words such as Jang-ssi(張氏), Yu-gyeong(類經), Im-sin(姙娠), and Yuk-hyeol(衄血), and thus the initial law applies to these words. They are inscribed and pronounced 'Jang-ssi-yu-gyeong' and 'Im-sin-yuk-hyeol'. 2. Fortification of Sino-Korean words can be applied variously according to the structure and meaning of the words. Words such as '科', '格', '氣', '法', '病', '症', and '證' are often fortified and at the same time used frequently in Oriental Medicine. Also, many other words are derived from these words. However, there has not been a scholastic consent among the Oriental Medical society as to in which circumstances these words will be fortified. Therefore, a standardization process to stipulate the pronunciation of Oriental Medical terminologies is necessary. 3. Meaningful rendering of Oriental Medical Chinese terminologies into Korean also needs scholastic investigation. Especially, the word 兪 should be meaningfully rendered and pronounced 'su' just like the words 輸 and 腧, but is wrongly pronounced 'yu'. Other than this, the words 井滎兪經合, 秦艽, 膻中, 共振丹, 成無已, and 麗澤通氣湯 should respectively be pronounced 'jeong-hyeong-su-gyeong-hap', 'jin-gyo', 'dan-jung', 'gong-sin-dan', 'Seong-mu-yi', and 'Yi-taek-tong-gi-tang'. Moreover, there are four pronunciations to the word 梴 of 李梴. This should also be standardized. This writer proposes that in the future, correct meaningful rendering of Chinese terminologies into Korean and phonetic signs be inscribed in dictionaries regarding Oriental Medical terminologies.
