There are several types of salts that classifed into raw salts(Chunil salt, Saeng salt), purified salts (NaCl reagent grade, Hanju salt) and processed salts(Gueun salt, Saeng kum, Bamboo salt) in Korea. Their major element is NaCl but raw salt from sea water contains other minerals such as K, Mg and S. Mineral contents of the various kinds of salt analyzed with ICP-AES and AAS were different, especially on the contents of K, Mg and Ca. Chunil salt was abundant in Ca(1,037ppm), K(3,707ppm), Mg(10,266ppm) and S(7,459ppm), and salt water from the Chunil salt contained small amounts of Pb, Al, Cr and Hg. Processed salts contained high levels of Ca, K, Mg and Fe. Especially, high levels of K, P, Fe and Ge were detected in bamboo salt. Purified salts showed regular crystal form and raw salts exhibited irregular crystal form under the SEM. The processed salts were not crystal form, but fused and irregular round form.
The effects of heat treatment on the physicochemical properties and mineral composition of sun-dried salt were investigated. The salts parched at high temperature were appeared the higher alkalinity and the lower oxidation-reduction potential (ORP) than the samples without heat treatment. The commercial salts (bamboo salt and yellow loess salt) and the sun-dried salt parched at high temperature had relatively higher sodium ion content (418-450 ppm) compared to that (418.0 ppm) of refined salt. The increase of calcium ion occurred in the salts parched at high temperature compared to the sun-dried salt without heat treatment, but the magnesium ion was vice versa. The commercial salt, yellow loess salt had highest turbidity (0.973) whereas sun-dried salt showed lowest level (0.097) among the tested samples. Turbidity of heat treatment samples decreased as solubility increased. The maximum concentration of dialyzed salt was reached after 4 hr regardless of various processed salts, but those had no difference significantly among the tested samples. The X-ray diffraction patterns of the parched sun-dried salts showed different peak intensity with common salts, and they were similar to the patterns of oxide salts, especially MgO. The maximum value (2.56%) of MgO appeared in the sun-dried salt parched at $1,400^{\circ}C$.
In an attempt to develop functional salts having beneficial health effects, we experimentally prepared three functional salts by fortification with soluble seaweed minerals (Hizikia mineral salt, HMS), fucoidan (fucoidan salt, FS) and laver extracts (laver salt, LS). To characterize the functional salts, their physicochemical properties and in vitro functionalities, such as pH, color, mineral composition, solubility, oxidation-reduction potential, sensory properties, angiotesin converting enzyme (ACE) inhibitory activity, and bile acid binding capacity were investigated. The functional salts revealed slightly lower NaCl concentrations, but showed a variety of pH values compared with conventional table salt. The pH values of HMS, FS, and LS were 11.3, 6.8, and 6.5, respectively. The oxidation-reduction potentials (ORP) of the functional salts varied from -229 mV to 38 mV, significantly lower than refined salt. The functional salts were significantly darker in color than refined salt, and the mineral composition of HMS was considerably enriched compared to refined salt, particularly in potassium ion. As a result of the sensory evaluation, FS and LS were comparatively palatable in saltiness, pungency, bitterness, and overall acceptance compared with refined salt. It was also found that one functional salt had ACE inhibitory activity (54.8% in LS) and another had bile acid binding capacity (80.7% in FS).
Effects of mineral salts on sisomicin fermentation were investigated. The optimal concentration of CoCl$_2$for accomplishing a high antibiotic yield was found to be 16.8 $\mu$M at which it could function as a cofactor. At this level the other mineral salts tested had no effect. On the other hand, at much higher concentration levels (above 1 mM), four mineral salts such as ZnSO$_4$, KH$_2$PO$_4$, FeSO$_4$and MgSO$_4$were used in order to liberate the intracellular sisomicin out-side the cells, because the sisomicin accumulated mostly in cells and it was supposed to limit the improvement of antibiotic yield. ZnSO$_4$and KH$_2$PO$_4$had no effect at all, and FeSO$_4$brought about some improvement. However, by keeping the concentration of MgSO$_4$to be 25 mM or higher in culture broths, the antibiotic yield could be improved by more than 100%, partially due to the enhanced liberation of the intracellular antibiotic.

The effect of topical application 100,300 and 500 $\mu$g/ ml with Mineral Salts of magnesium sulphate and potassium nitrate on economic parameters was ana- lyzed following treatment of last larval stadium. The treated larvae showed significantly decreased larval weight and silk gland weight in all the treated groups along with other decreased Iarval, cocoon and adult parameters. The female cocoon weight was significantly decreased in all the treated groups with decreased female cocoon shell weight and male cocoon weight at 300 and 500$\mu$g/ml respectively. The length and weight of filament was significantly decreased at 300 and 500 $\mu$g/ml respectively and denier at 500 $\mu$g/ ml. The fecundity decreased significantly in 300 and 500 $\mu$g/ml treated groups when compared with the corresponding parameters of the carrier control.
In order to recycle the incineration ash (bottom ash and fly ash) generated from the incineration of municipal waste for a cement material, salts as well as heavy metal should be removed by the stabilization treatment. Most of these heavy metal and over 80% of salts are removed by a washing as a pre-treatment. However, wastewater which is another pollutant is generated by a washing, then proper treatment should be developed. First the characteristics of incineration ashes collected from two domestic full-sized incinerators were investigated and removal rate of salts and heavy metals from them also studied. The wastewater quality was compared to the criteria of the regulation by analyzing the characteristics of generated wastewater during the washing of incineration ash as a condition of liquid/solid ratio. Also, we tried to used this experimental results for the basic data to develop proper processing technique of municipal waste.
Botryosphaeria dothidea causing apple fruit rot was cultured in pectin-polypectate mineraI salts or apple mediumss, to investigate pectolytic enzyme production and activity. Exo-polygalacturonase(PG) and exo-polymethylgalacturonase (PMG) in apple medium showed maximum of activity to 6.4 and 7.2 units at six days of culture, respectively. Their maximum activity in pectin-polypectate mineral salts medium was 5.9 and 5.3 units at eight days of culture lower than in apple medium respectively. Endo-PG and endo-PMG in pecin-polypectate mineral salts medium were maximum of activity to 4.4 and 16.2 units at six and eight days of culture, respectively, but activities in apple medium were 3.2 and 6.7 units at eight days of culture. Activity of polygalacturonate-trans-eliminase(PGTE) and pectinmethyl-trans-eliminase(PMTE) was higher in pectin-polypectate mineral salts medium than in apple medium. Fungal growth was maximum at six and eight days of culture in pectin-polypectate mineral salts and apple medium, respectively.
Chemical composition, and mineral and heavy metal contents of Yeomsan and Baekso sun-dried salts (1-5-year-old) were determined. Moisture contents (Yeomsan, 6.07-17.02%; Baekso, 4.29-16.15%) and pH (Yeomsan, 5.92-6.31; Baekso, 5.52-6.23) decreased as age of salts increased, while NaCl contents (Yeomsan, 80.35-92.74%; Baekso, 81.06-94.58%) increased with increasing storage period of salts. Older salts had lower content of water-insoluble matters. Nitrate content was not affected by aging of salts, whereas nitrite content was lower in older salts. Sulfate content of sun-dried salt decreased with aging of salt. Average concentrations (ppm wet weight) of major minerals in Yeomsan and Baekso sun-dried salts were: Mg, Mg, 1002-119; K, 1062-3411; Ca, 1503-3437; Li, 25-101; Ge, 8.35-0.21; Si, 43.99-6.48; and Mn, 6.79-1.55. Mineral content generally decreased with salt aging. Among heavy metals, Hg was not detected in all salts, and Cd (0.02-0.04ppm) was not affected by storage period. Pb was not detected in 5-year-old salts. Older salts showed brighter color than younger ones.
The principal objective of this study was to investigate the association of variable salts with the hardness of cubed white radish. We analyzed the contents of domestic sun-dried salt, Chinese sun-dried salt, domestic refined salt, Australian rock salt and Australian industrial sun-dried salt in the radish samples. Our assessment of the water content of variable salts showed that domestic refined salt was highest(7.27%) and Australian rock salt was lowest(0.16%). The NaCl contents of variable salts were as follows : 93.23% in refined salt, 93.76% in Australian rock salt, 87.85% in domestic Shinan sun-dried salt and 87.98% in Chinese sun-dried salt. The content of insoluble matter in water were $0.03{\sim}0.05%$ in all salts except 0.85% in Australian industrial sun-dried salt. The pH values of salts were as follows : 8.93 in domestic sun-dried salt, 8.62 in Chinese sun-dried salt, 6.69 in refined salt, 5.83 in Australian rock salt and 6.41 in Australian industrial sun-dried salt. Regarding the mineral component content assays, domestic salt was found to harbor lower Na content but far higher Mg, K, Ca contents than other salts. In our evaluation of the hardness of cubed white radish, we detected a continuous increase in the hardness of cubed white radish soaking in a 4% salt solution of domestic Shinan natural salt, but an initial increase followed by a decrease in the hardness of cubed white radish soaking in a 4% solution of the other salts.
By extensive studies with the quantitative status of the mineral constituents of thousands of water samples, it was found that almost in all natural waters irrespective of the surface or sub-surface sources, minimum 99.5% of the total amount of the cationic constituents are generally the contributions of 3 commonly present parameters viz. Ca, Mg and Na and that of the anionic species are same and contributed by $HCO_3$, Cl and $SO_4$ only. In the field of water works, all these major mineral substances are conventionally measured as their individual ions. But till now, no reliable and generalised methods or rules have been developed for the determination of the exact kinds of the individual salt components and their amounts from these ionic constituents normally present in water. As salt content, only the TDS (Total Dissolved Solids) parameter is frequently measured by evaporation of the water sample. But TDS can tell nothing about the kinds and amounts of the individual salts present in it. Considering the analytical importance of the estimation of the mineral substances as their individual salts, some generalised mathematical models have been developed by this research which are based on the 'hypothetical order of chemical combinations' as may occur among the ionic constituents. With the help of these models, one can easily assume the most probable salts with approximate quantities derived from the ionic constituents. In addition, approximate amount of Na content can also be estimated mathematically with simultaneous verification of the correctness of the water analysis results. The models are stated in this paper with practical illustrations and descriptions of the method of applications.
