Characteristics of Proteins in Italian Millet, Sorghum and Common Meillet (조, 수수 및 기장의 단백질 특성)

  • Amino acid composition of proteins in Italian millet, Common millet and sorghum were invstigated by HCI hydrolysis method. The optimum condition was obtained by hydrolysis at 110$\^{C}$ for 24hr. As major amino acids from protein hydrolyzate, the content of tyosine, arginine and phebylalanine were 7.06%, 6.79% and 6.44%, respectively. The content of glutamic acid in Common millet, Italian millet and Sorghum were 5.73%, 5.64% and 5.46%, respectively. Glycine content was about 2.93% in three samples. Contents of crude protein and pure protein in Italian millet, Common millet and sorghum were determined by micro-kjeldahl method. Crude protein contents were slightly higher than that of pure protein. Protein content of sorghum was higher than those of Italian millet and Common millet. For SDS-PAGE analysis, Italian millet showed more soluble proteins including 50kDa, 30kDa and smaller proteins than other cereals. In particular, Common millet and Sorghum only solubilized proteins less than 15kDa.

Profile of phenolic compounds, antioxidant and SOD activity of millet germplasm

  • Millets are provided considerable amounts of nutrients and gluten-free cereal products and their rich non-nutritional compounds having proven health benefits, especially phenolic compounds. The aim of present investigation was to determine phenolic composition and antioxidant and SOD activity of three different millet of genetic resources namely, foxtail, proso and finger millet. Phenolic compounds were extracted from dehulled grain of genetic resources using methanol and examined for their total phenolic content (TPC), antioxidant activities and superoxide dismutase (SOD)-like activity. The TPC range of hog millet, finger millet and finger millet range from 3.3 to 25.1, 11.1 to 29.0 and 3.8 to 94.3 gallic acid equivalent (GAE)mg/g, respectively. Most of TCP content in dehulled millet grains was distributed from 10 to 20 gallic acid equivalent (GAE)/g, but two accessions of finger millet (IT235690 and 235689) were showed over than 90. The antioxidant activities were measured by 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity. Finger millet and hog millet showed 26.4% and 26.7% in the mean of DPPH scavenging activity percentage, but foxtail millet was 13%. The finger millet showed the higher value than hog and foxtail millet in superoxide dismutase (SOD)-like activity. Particularly, two accessions of finger millet (IT235690 and 235689) showed the highest phenolic content and antioxidant activities among the used millet genetic resources and will be primary resources for finger millet breeding to develop the appropriate breeding strategies.

Growth and yield characteristics of foxtail millet, proso millet and sorghum affected by paddy-upland rotation systems

  • This study is performed to investigate the optimal cropping systems to allow cultivation of upland crops to the paddy rice land. This experiment was conducted at Anseong-si Gyeonggi province of Korea in 2015. In order to investigate growth and yield characteristics of foxtail millet, proso millet and sorghum by different paddy-upland rotation systems, three crops foxtail millet, proso millet and sorghum with four varieties of Samdachal, Samdamae, Kyeongkwan1, Hwanggeumjo in foxtail millet, Leebaekchal, Manhongchal, Hwangsilchal, Hwanggeumgijang in proso millet and Nampungchal, Moktaksusu, Aneunbangisusu, Hwanggeumchal in sorghum were examined. Four paddy-upland rotation systems of paddy-upland rotation, paddy-upland-upland rotation, paddy-upland-upland-upland rotation, and upland-paddy-upland rotation system were tested. Days from seeding to heading and ripening of foxtail millet was the shortest in the paddy-upland-upland-upland rotation system, but proso millet and sorghum did not show statistical difference among four rotation systems. In the average of culm length, paddy-upland-upland-upland rotation system showed the highest culm length in foxtail millet (141.5cm), proso millet (159.6cm) and sorghum (138.6cm) respectively among four paddy-upland rotation systems. In average yield per 10a, foxtail millet and proso millet showed the highest each 234.3kg/10a, 176.2kg/10a in paddy-upland-upland-upland rotation system, whereas sorghum was the highest 221.2kg/10a in paddy-upland-upland rotation system. The most suitable crop and varieties in paddy-upland rotation system was judged to be sorghum among three crops and suitable varieties were Samdachal in foxtail millet, Leebaekchal in proso millet and Nampungchal in sorghum respectively.

Digestibility of Amino Acids of Maize, Low Tannin Sorghum, Pearl Millet and Finger Millet in Caecectomized Roosters

  • The aim of the present study was to determine the apparent and true digestibilities of amino acids of maize, low tannin sorghum, pearl millet and finger millet in adult caecectomized cockerels. Adult cockerels (n = 60), 25-weeks old, were used in this study of which 30 birds were caecectomized as per a standard method. The apparent digestibilities of amino acids of sorghum were not affected by caecectomy, but were higher for maize, finger millet and pearl millet in caecectomized cockerels. Caecectomy had no influence on the true digestibilities of amino acids of maize, but higher digestibilities were observed for most of the amino acids of sorghum and finger millet in caecectomized cockerels. Caecectomy lowered the true digestibility of cystine, threonine and serine of pearl millet. The apparent digestibilities of amino acids of maize, finger millet and pearl millet were underestimated in intact cockerels. The true digestibilities of most of the amino acids of sorghum and finger millet were underestimated, while those of cystine, threonine and serine of pearl millet were overestimated in intact cockerels. The findings suggest that the amino acid digestibility values of cereal grains determined using caecectomized cockerels might be appropriate and reliable for poultry diet formulations. Moreover, the digestibilities of amino acids of finger millet were inferior to other cereal grains, while those of pearl millet were comparable to maize and sorghum.

Effect of the Millet and Waxy Millet on Properties of White Layer Cake (메조 및 차조 첨가가 White Layer Cake의 품질특성과 저장에 미치는 영향)

  • White layer cakes with 10-50% content of domestic millet and waxy millet were carried out to determine how the content of millet and waxy millet affected Quality and properties of a product. The 10% content of waxy millet resulted in the greatest volume, which decreased with the increase in the content of millet and waxy millet; up to 40% content of millet and waxy millet made no significant difference in weight from the control one. The specific loaf volume decreased with the increase in the content of millet and waxy millet. In terms of crum color, as the content of millet and waxy millet increased, the value of L tended to decrease, making it darker, and there was a significant increase in the value of a and b. As for crust color, the value of L, a, and b tended to increase with the increase in the content of millet and waxy millet, making it darker, but with no significant difference from the control one. In terms of texture, 10% content of millet and 10-20% content of waxy millet made no significant difference in hardness from the control one; as for retrogradation, waxy millet tended to make greater increase in hardness than millet. 5℃ storage resulted more rapidly in retrogradation than 25℃. The sensory evaluation showed that with the increase in the content, waxy millet, millet, and the control in order served to make it darker and harder in terms of external properties, with small pores, uneven texture, and reduced flavor in terms of internal properties. There was no significant difference between the cake with 10-20% content of millet and waxy millet and the control one in making a white layer cake by adding millet and waxy millet.

Quality Characteristics of Sponge Cakes Containing Various Levels of Millet Flour (조 분말의 첨가가 sponge cake의 품질특성에 미치는 영향)

  • Effects of normal (non-waxy) and waxy millet flours on properties of sponge cake were examined. Total dietary fiber contents of normal and waxy millets were 5.04 and 5.12%, respectively, while that of soft wheat flour was 2.23%. Alkaline water retention capacity value generally increased with addition of normal and waxy millet flours, whereas peak, minimum, and final viscosities decreased. Mixing time and mixing height decreased with addition of millet flour. Lightness of cake crust increased with addition of normal millet flour, whereas it decreased with addition of waxy millet flour, tightness of cake crumb decreased as the amount of normal and waxy millet flours increased. Increasing proportions of normal and waxy millet flours resulted in significantly decreased loaf volume. Replacement of 10% wheat flour by both normal and waxy millet flours did not significantly affect characteristics of sponge cake, but addition of more than 20% millet flour resulted in significant differences in quality characteristics.

  • This study was undertaken to investigate the effect of cereals on the physicochemical and sensory characteristics of Noti. Noti is one of Korean traditional pan-fried glutinous cereal cakes. In this case, Noti was made from the steamed glutinous millet flour Aspergillus and Penicillium developed in glutinous millet Noti dough from 40th day. The reducing sugar content of glutinous millet Noti was higher than that of the Noti dough during the same period and almost similar as the first day even 90 day storage. The moisture content of glutinous millet Noti was less than 20%. Moisture content of glutinous millet Noti to compare with the common rice cake was from 1/2 to 1/3. While gelatinization degree significantly decreased in the rice cake that did not add malt, glutinous millet Noti did not show decreasing gelatinization degree in comparison with the common rice cake. Overall acceptability was to add 15% malt and keep 6 hr saccharification time at 60$^{\circ}C$. The hard ness of glutinous millet Noti by Instron measurement was slowly increased after the l0th day. Cohesiveness and elasticity were increased during the period of storage.

Comparison of Functional Materials in Organic Cultivated Minor Cereal Crops (유기농 잡곡의 몇몇 기능성 물질 비교)

  • Miscellaneous grain crops has been appeared as a well-being food and the demand of them are increasing recently. It is urgent to study especially about the functional materials of foxtail millet, common millet and sorghum. This experiment was conducted to evaluation and comparison several functional materials of fatty acids, anthocyanin content, total phenol content and DPPH assay of rice, and foxtail millet, common millet and sorghum produced organically so that these results would provide as a basic information for developing functional products by using miscellaneous grain crops. Total content of fatty acids was in order of foxtail millet (0.649%) and common millet (0.33%), sorghum (0.172%) and rice (0.111%) respectively. The content of unsaturated fatty acid was also in order of foxtail millet (0.511%) and common millet (0.269%), sorghum (0.122%) and rice (0.069%) respectively. Although there was no detection of anthocyanin content in rice, foxtail millet and common millet, sorghum showed high content of anthocyanin content. Sorghum of Mongdangsusu showed the highest anthocyanin content (137.5mg/g). In the total phenol content of rice, foxtail millet, common millet and sorghum, rice of Chucheongbyeo had high content ($13.70{\mu}g/g$) whereas Daeanbyeo was the lowest content ($10.07{\mu}g/g$). Foxtail millet of Hinchajo, common millet of Byeorukgijang and sorghum of Chalsusu showed the highest total phenol content of $25.8{\mu}g/g$, $69.4{\mu}g/g$ and $682.2{\mu}g/g$ respectively. In the average of total phenol content among rice, foxtail millet, common millet and sorghum, foxtail millet, common millet and sorghum showed $12.25{\mu}g/g$, $16.95{\mu}g/g$, $51.01{\mu}g/g$ and $447.4{\mu}g/g$ of total phenol content respectively. The average of total phenol content of sorghum was $26.3{\mu}g/g$. It is 36.3 and 26.3 times higher compared with rice and foxtail millet respectively. In the antioxidant activity of seeds by DPPH(1,1-diphenyl-2-picrylhydrazyl) assay for rice, foxtail millet, common millet and sorghum, rice of Chucheongbyeo, foxtail millet of Ganghywajo and common millet of Geumeungijang showed the highest antioxidant activity with 3.6%, 4.78% and 13.4% respectively. Antioxidant activity of sorghum ranged from 88.47 to 90.11%. The average of antioxidant activity among four crops, the highest antioxidant activity was obtained from sorghum (89.50%) and the next was common millet (6.13%), foxtail millet (2.43%), and rice (1.60%) in their order of antioxidant activity. The average of antioxidant activity of sorghum showed 55.9, 37.0 and 15times higher compared with rice, common millet and foxtail millet respectively.

Photosynthesis and Regrowth of Leaf in Sorghum-Sudangrass Hybrid, Pearl Millet, and Barnyard Millet after 2nd Cutting (청예용 수수-수단 그라스 잡종, 진주조, 사료용 피의 후기 생육에서 재생엽의 생장과 광합성)

  • Field experiment was carried out to study the new and old leaf development and photosynthesis of sorghum-sudangrass hybrid 855F, pearl millet Suwon No.6 and barnyard millet in cutting and non-cutting plots from the 2nd cutting day(September, 17th). Leaf regrowth of sorghum-sudangrass hybrid and pearl millet begun after the 2nd cutting day, except barnyard millet. Photosynthetic rate of new leaf blades in cutting plots reached to higher level than old leaf at 12th to 20th day after cutting(DAC). Stomatal density of leaf blade of each crop in non-cutting plot was observed higher pearl millet and sorghum-sudangrass hybrid than barnyard millet. New leaf blade of each crop in cutting plot was showed complete development in stomata size, form and vascular bundles in 12th DAC. Non-structural carbohydrates(NSC) contents of stembase in sorghum-sudan hybrid which had 17 %, the highest among three forages decreased daily into 8th DAC and begun to increase from 20th DAC. But, those of pearl millet and barnyard millet in cutting plots were about 10 % at cutting day and inclined to decrease continuously into the 20th DAC and reached about 3~4% in 32nd DAC. These results showed that regrowth energy of sorghum-sudangrass hybrid was mainly dependent on non-structural carbohydrates of stembase until 12th DAC, but pearl millet had active lower leaves supported its regrowth by concurrent photosynthesis. As barnyard millet which did not reserve enough NSC, its regrowth fail to survive under low temperature. Also, late regrowth of rest two forage crops was delayed with decreasing daily temperature after mid-September.

Effects of Seeding Rate and Depth during Broadcast Sowing on Growth and Yield of Foxtail millet (Setaria italica L.) and Proso millet (Panicum miliaceum L.) (조, 기장의 산파파종 시 파종깊이와 파종량에 따른 생육특성)

  • This study was conducted to evaluate effects of seeding rate and depth during broadcast sowing on growth and yield of foxtail millet and proso millet over 2 years. The rate of sowing seeds was adjusted to 5, 7, 10 and 20 kg per ha on foxtail millet, and 5, 10, 15 and 30 kg per ha for proso millet. Sowing depth was 0.5, 1, 3, 5, 7, and 10 cm used tractor rotary attachment for shallow-tilling. The rate of seedlings standing when foxtail millet and proso millet were sowed to a depth of 0.5~5 cm was 72.0~78.0% and 73.0~80.5%, respectively. Plant height and weight at the three-leaf stage after emergence was highest for the treatment with 3 cm rotary depth. As the rate of broadcast seed sowing increased, plant length, diameter, seed length, and seeds on the panicle decreased. The grain yield of foxtail millet was highest with broadcast seed sowing of 10 kg per ha (3652, $3977kg\;ha^{-1}$) and proso millet was highest at broadcast seed sowing of 15 kg per ha (2226, $2052kg\;ha^{-1}$) in 2012 and 2013, respectively. Therefore, the optimum rate of sowed seeds under broadcast cultivation was $10kg\;ha^{-1}$ for foxtail millet and $15kg\;per\;ha^{-1}$ for proso millet. Optimum sowing depth for foxtail and proso millet under broadcast cultivation was 3 cm, using a rotary tractor attachment for shallow-tilling.
