영양강화식품 중 무기질 함량 조사연구 (A Study on the Content of Minerals in Fortified Food)

  • 본 연구는 무기질이 강화된 식품(음료류, 면류, 시리얼류, 곡류가공품) 68건에 대하여 무기질류의 함량을 분석하여 표시량에 대한 검출량의 비율을 조사하였고 칼슘과 다른 무기질의 비율을 분석하였다. 칼슘, 철, 아연의 함량은 마이크로웨이브 장치로 분해 후 ICP-OES로 분석하였다. 칼슘을 강화한 음료류, 면류, 시리얼류, 곡류가공품 38건에 대한 칼슘의 검출량은 표시량의 82.2~293.1%이었다. 무기질류를 강화한 음료류, 면류, 시리얼류, 곡류가공품에 대한 철(42건)과 아연(24건)의 검출량은 각각 표시량의 83.3~301.0%, 90.1~314.1%이었다. 칼슘과 철의 분자량비는 과채주스 90.55(50.55~220.64), 과채음료 850.41, 혼합음료 553.49, 두유류 179.07(118.37~238.01), 국수 204.39(41.64~397.52), 유탕면류 296.97(121.64~868.88), 시리얼류 30.89(15.69~62.05) 그리고 곡류 가공품 7.73(0.22~49.92)이었다. 칼슘과 인의 중량비는 과채주스 1.44(0.96~1.98), 과채음료 1.92, 혼합음료 1.66, 두유류 4.23(2.25~7.72), 국수 1.14(0.28~1.97), 유탕면류 1.88(1.17~2.42), 시리얼류 1.29(0.87~2.92) 그리고 곡류가공품 0.30(0.06~1.57)이었다. 칼슘과 마그네슘의 중량비는 과채주스 1.85(0.87~5.04), 과채음료 28.72, 혼합음료 2.97, 두유류 5.27(2.93~9.36), 국수 3.97(1.34~7.57), 유탕면류 6.77(4.63~10.78), 시리얼류 4.40(2.30~12.55) 그리고 곡류가공품 1.17(0.23~7.48)이었다. 이와 같은 결과로 칼슘의 함량과 칼슘 강화식품에서 칼슘과 다른 무기질들의 비율에 대한 엄격한 관리가 필요하고 또한 과도한 영양 문제를 방지하기 위해 영양강화식품의 식품 표시 및 영양에 대한 더 많은 이해 방안이 모색되어야 한다는 것을 제안할 수 있다.

Effect of Feeding Strategies on Milk Production of Holstein Dairy Cows Managed by Small-Farmers Alpine Grassland in Korea

  • The main objective of this experiment was to investigate effects of two different feeding systems on body weight, milk yield, milk composition, and mineral and fatty acids content of Holstein dairy cows' milk. Sixteen of 25 months-old Holstein dairy cows were assigned to two groups (n=8) to study effects of the feeding system for 150 days. Two feeding systems were compared for five months; Group 1 was housed indoors and mainly fed a concentrate diet, Group 2 was maintained outdoors for five-seven hours/day on various kinds grass in a pasture. The experiment was conducted June-October 2017. Results revealed the indoor-fed cows had higher body weight, that was significant compared with the outdoor-based feeding system of Holstein dairy cows (p<0.05). Indoor-raised milking cows had higher milk yield (32.45 kg) as compared with pasture-raised milk yield (26.44 kg). Cows fed indoors significantly increased milk yield, total protein content, lactose, citric acid level, and lowered level of total solid and free fatty acids relative to the pasture-fed milking cows (p>0.05). There were higher levels of mineral content and fatty acid content in the milk of indoor-fed dairy cows than the pasture-raised dairy cows (p>0.05). Our study results demonstrated the potential benefits of the indoor feeding system for increased body weight, milk yield, mineral and fatty acids content summer through autumn when low pasture growth rates and quality may otherwise limit production.

Physiochemical characteristics and fermentation ability of milk from Czech Fleckvieh cows are related to genetic polymorphisms of β-casein, κ-casein, and β-lactoglobulin

  • Objective: The aim of the study was to find a possible association between the ${\beta}-$ and ${\kappa}-casein$ and ${\beta}-lactoglobulin$ genotypes and important milk physiochemical and technological characteristics such as acidity, alcohol stability, the contents of some minerals and the parameters of acid fermentation ability (FEA) in Czech Fleckvieh Cattle. Methods: Milk and blood samples were collected from 338 primiparous Czech Fleckvieh cows at the same stage of lactation. The genotypes of individual cows for ${\kappa}-casein$ (alleles A, B, and E) and ${\beta}-lactoglobulin$ (alleles A and B) were ascertained by polymerase chain reaction-restriction fragment length polymorphism, while their ${\beta}-casein$ (alleles $A^1$, $A^2$, $A^3$, and B) genotype was determined using melting curve genotyping analysis. The data collected were i) milk traits including active acidity (pH), titratable acidity (TA), alcohol stability (AS); calcium (Ca), phosphorus (P), sodium (Na), magnesium (Mg), and potassium (K) contents; and ii) yoghurt traits including active acidity (Y-pH), titratable acidity (Y-TA), and the counts of both Lactobacilli and Streptococci in 1 mL of yoghurt. A linear model was assumed with fixed effects of herd, year, and season of calving, an effect of the age of the cow at first calving and effects of the casein and lactoglobulin genotypes of ${\beta}-CN$ (${\beta}-casein$, CSN2), ${\kappa}-CN$ (${\kappa}-casein$, CSN3), and ${\beta}-LG$ (${\beta}-lactoglobulin$, LGB), or the three-way interaction between those genes. Results: The genetic polymorphisms were related to the milk TA, AS, content of P and Ca, Y-pH and Lactobacilli number in the fresh yoghurt. The CSN3 genotype was significantly associated with milk AS (p<0.05). The effect of the composite CSN2-CSN3-LGB genotype on the investigated traits mostly reflected the effects of the individual genes. It significantly influenced TA (p<0.01), Y-pH (p<0.05) and the log of the Lactobacilli count (p<0.05). Conclusion: Our findings indicate that the yoghurt fermentation test together with milk proteins genotyping could contribute to milk quality control and highlight new perspectives in dairy cattle selection.

국산(國産) 조제분유(調製粉乳)와 발효유(醱酵乳)의 영양효과(營養效果)에 관(關)한 연구(硏究) - 1. 유제품(乳製品)의 영양소(營養素) 함량비교(含量比較)를 위한 연구(硏究) - (Studies on the Nutritional Effects of Locally Produced Dried Formula Milk and Fermented Milk -1. Comparative Studies on the Nutrients Content of Dried Formula Milk and Fermented Milk-)

  • 국내(國內)에서 생산(生産)되고 있는 세가지 조제분유(調製粉乳) 및 한가지 발효유(醱酵乳)의 일반성분(一般成分), 비타민, 무기물, 아미노산(酸) 및 지방산(脂肪酸) 함량(含量)을 분석(分析)하여 보증성분(保證成分)과 비교(比較)하고, 아울러 모유(母乳)와 비교(比較)하여 이들 유제품(乳製品)의 영양가(營養價)를 평가(評價)하기 위하여 7주간(週間) 실험(實驗)을 실시(實施)하였던 바 그 결과(結果)를 요약(要約)하면 다음과 같다. 1. 단백질(蛋白質) 및 지방(脂肪) 함량(含量)에 대한 분석치(分析値)는 보증함량(保證含量)보다 약간 낮았고, 당질(糖質) 함량(含量)은 약간 높았으나, 다른 성분(成分)은 대체로 분석치(分析値)와 보증함량(保證含量)이 서로 근사(近似)했고, 분유(粉乳)들간(間)에도 차이(差異)가 없었다. 발효유의 단백질(蛋白質) 및 지방(脂肪) 함량(含量)은 우유보다 낮았으나, 당질(糖質)의 함량(含量)이 높은 것으로 보아 상당한 양(量)의 가당(加糖)이 있는 듯 하였다. 2. 비타민은 거의 모든 분석치(分析値0가 보증(保證)된 함량(含量)보다 높았는데, 특히 비타민A는 $2{\sim}3$배(倍), 비타민E는 $4{\sim}5$배(倍)씩 높았고, 나이아신은 보증함량(保證含量)에 미달하였다. 또한 분유(粉乳)들간(間)에는 약간의 함량차(含量差)가 있었다. 3. 무기질(無機質)은 분석치(分析値)와 보증함량(保證含量)이 비슷했는데 칼슘 외 분석치(分析値)가 보증함량(保證含量)보다 다소 많았다. 이상의 분석(分析)된 조제분유(調製紛乳)들을 15%로 희석하여 우유(牛乳) 및 모유(母乳)와 비교(比較)했을 때, 열량(熱量), 당질(糖質), 단백질(蛋白質)도 우유(牛乳)보다 훨씬 희석되어 모유(母乳)에 유사(類似)함을 알 수 있었다. 또한 철분 및 대개의 비타민이 모유(母乳)나 우유(牛乳)보다 많은 점으로 미루어 이러한 영양소(營養素)가 강화(强化)되어 있음을 짐작할 수 있었다. 이 환원유(還元乳)를 일정(一定)한 조건(條件)에서 한국 영양권장량과 비교(比較)했을 때, 모든 영양소(營養素)를 충분(充分)히 공급(供給)할 수 있었는데 나이아신 만이 권장량에 미달하였다. 또한 분유(粉乳) C에서 철분이 약간 미달했고, 비타민A는 1일(日) 권장량에 6배(倍)나 되어 앞으로 재검토(再檢討)를 요(要)하는 문제라 하겠다. 4. 아미노산(酸) 조성(組成)은 분유간(粉乳間)에 다수 차계(差界)를 보였으며, 필수(必須)아미노산(酸) 조성(組成)이 우유에 가까웠던 점(點)으로 보아 아미노산 조절(調節)은 없었는듯 하였다. 발효유의 아미노산(酸) 조성(組成)은 우유와 거의 같았다. 5. 지방산(脂肪酸)의 조성(組成)은 전체(全體) 포화지방산대(飽和脂肪酸對) 불포화지방산(不飽和脂肪酸)의 비(比)가 3종(種)의 분유간(粉乳間)에 비슷하였고, 특히 필수지방산(必須脂肪酸)의 조성(組成)이 모유(母乳)와 유사(類似)하거나 높아 이들 지방산(脂肪酸)이 첨가(添加)되어 있음을 나타냈다. 이상의 여러 결과(結果)들을 종합(綜合)할 때 3종(種)의 분유간(粉乳間) 영양효과(營養效果)는 비슷하고, 조제분유(調製粉乳)의 일반조성(一般組成), 무기질(無機質) 및 지방산(脂肪酸) 조성(組成)에 있어서 모유(母乳)에 상당히 접근(接近)하는 것으로 믿어진다. 한편 철분, 비타민 등(等)의 강화(强化)로서 단일식품(單一食品)으로서의 효용성(效用性)을 높인 것은 사실이나, 일부 영양소(營養素)의 지나친 강화(强化)문제는 좀더 신중히 다루어져야 할 것으로 생각된다.

Effect of Barn or Grazing on Biochemical Indices in Prepartum, and Milk Composition in Postpartum of Dairy Cows

  • The present study was designed to determine the effect of barn or cycle of grazing on changes of biochemical metabolites in prepartum and changes of milk composition in postpartum of dairy cows. For this purpose, a total of sixteen 25 months old Holstein primiparous dairy cows were allocated in two groups (n=8) with an average body weight of 571.61 ± 35.30 kg (Barn) and 578.10 ± 39.20 kg (Grazing). The study was conducted from June 2018 to October 2018. Results revealed that barn raised dairy cows had a higher increase in their serum albumin and calcium level on day 14 prepartum. However, the level of palmitic acid, saturated fatty acid increased significantly, and the level of fat, oleic acid, γ-linoleic acid, arachidonic acid and unsaturated fatty acids decreased significantly in barn raised dairy cow's milk on day 14 postpartum. There were no significant differences observed with respect to all other biochemical metabolites, fatty acids and minerals between barn raised and cycle grazing dairy cows during prepartum and postpartum. Our study results could serve to a better understanding of barn raised cow with respect to changes of biochemical metabolites in prepartum and changes of milk composition, fatty acids and minerals content in grazing dairy cows in postpartum for estimating their physiological status.

젖소에 있어서 분만 후 혈액 및 우유의 성분 변화와 성분간의 상관관계 (Changes of Blood and Milk Components and Correlation among Them after Parturition in Dairy Cows)

  • 본 연구에서 Holstein 유우 78두로부터 분만 후 9주까지 1주 간격으로 혈액과 우유를 채취하여 cholesterol, glucose, 광물질(selenium, Ca, p), vitamin E 및 혈장내 progesterone을 분석하여, 이들 성분의 변화와 성분간의 상관 관계 및 변화 요인에 관하여 조사하였으며, 결과는 다음과 같다. 1. 분만 후 9주까지의 각 성분별 평균 수준은 혈액에서 cholesterol, glucose, selenium, Ca, P, vitamin E 및 BUN이 각각 78.8 mg/dl, 62.3 mg/dl, 8.9mg/dl, 7.4 mg/dl, 52.2 ng/ml, $10.3{\mu}g/l$ 및 16.3 mg/dl이었으며, MSe와 MUN은 15.3 ng/ml과 15.8 mg/dl이었다. 2. 혈액내 cholesterol, glucose, selenium, Vitamin E 및 MSe는 분만 후 시일 경과에 따라 증가되었다. 3. 성분간의 유의적 상관관계를 보면 cholesterol은 P와 부(-), selenium과 U과는 정(+)의 상관이 었고, glucose는 P, MSe와 정(+), P는 selenium 와 부(-) 상관이었으며 그리고 BUN과 MUN은 정(+) 상관을 나타내었다. 4. 성분 변화의 요인으로서 유우 나이는 glucose와 selenium, 산차는 selenium과 vitamin E, 유량은 glucose와 MSe 수준에 차이가 나타났으며 청초와 건초 급여간에는 혈액내 Ca와 selenium를 제외 한 성분에서 차이를 보였다. 요소태 질소에서는 MUN에서만 나이와 산차간에 차이가 있었다. 이상의 결과로 분만 후 급여 사료에 따라 혈액 및 우유의 성분에 차이를 보이며, 특히 혈액 및 우유내의 selenium은 분만 후 젖소에는 중요한 요소임을 확인할 수 있었다.

Effects of low dietary cation-anion difference induced by ruminal ammonium chloride infusion on performance, serum, and urine metabolites of lactating dairy cows

  • Objective: The objective of the present study was to determine ammonium chloride tolerance of lactating dairy cows, by examining effects of negative dietary cation anion difference (DCAD) induced by ruminal ammonium chloride infusion on performance, serum and urine minerals, serum metabolites and enzymes of lactating dairy cows. Methods: Four primiparous lactating Chinese Holstein cows fitted with ruminal cannulas were infused with increasing amounts (0, 150, 300, or 450 g/d) of ammonium chloride in a crossover design. The DCAD of the base diet was 279 mEq/kg dry matter (DM) using the DCAD formula (Na + K - Cl - S)/kg of DM. Ammonium chloride infusion added the equivalent of 0, 128, 330, and 536 mEq/kg DM of Cl in treatments. According to the different dry matter intakes (DMI), the resulting actual DCAD of the four treatments was 279, 151, -51, and -257 mEq/kg DM, respectively. Results: DMI decreased linearly as DCAD decreased. Yields of milk, 4% fat-corrected milk, energy-corrected milk, milk fat, and milk protein decreased linearly as DCAD decreased. Concentrations of milk protein and milk urea nitrogen increased linearly with decreasing DCAD. Concentration of Cl- in serum increased linearly and concentration of PO43- in serum increased quadratically as DCAD decreased. Urine pH decreased linearly and calculated urine volume increased linearly with decreasing DCAD. Linear increases in daily urinary excretion of $Cl^-$, $Ca^{2+}$, $PO_4{^{3-}}$, urea N, and ammonium were observed as DCAD decreased. Activities of alanine aminotransferase, aspartate aminotransferase, and ${\gamma}-glutamyl$ transferase in serum and urea N concentration in serum increased linearly as DCAD decreased. Conclusion: In conclusion, negative DCAD induced by ruminal ammonium chloride infusion resulted in a metabolic acidosis, had a negative influence on performance, and increased serum enzymes indicating potential liver and kidney damage in lactating dairy cows. Daily ammonium chloride intake by lactating dairy cows should not exceed 300 g, and 150 g/d per cow may be better.

국내 조제유의 영양성분 규격기준 설정 방안 (Study on the Establishment of Nutrient Requirements for Infant Formular)

  • This study was conducted to evaluate the nutrition quality of the commercial infant formulas and to seek the solution to the establishment of the standard of nutrient requirements for infant formula in Korea. Nutrition informations were obtained from the labels of nineteen commercial infant formulas manufactured by 3 different companies, and the actual amounts of some nutrients were analyzed and compared to the labeled amounts. In addition, the nutrient composition of the commercial infant formulas was compared to the composition of breast milk, RDA for infants, and Codex standard for infant formula. The kind of minerals, vitamins and special components added to the commercial infant formulas were the major differences among 3 manufacturers. For some nutrients, the analyzed amounts were lower than the labeled amounts. In addition when different batches of the same kind of infant formula were analyzed, the large variations in the amounts of certain nutrients were noted. These data suggest that the nutrition labeling informations need to be validated, and nutrients added to the formulas are to be homogenized thoroughly. In order to solve these problems, therefore, like other countries, we need to establish the standard of nutrient requirements for infant formulas. Considering the available data on breast milk composition, RDA for infants and coordination with the international standard, we suggest the adoption of the Codex standard for infant formula may be the best way to manage the nutrition quality of commercial infant formulas at the present time.

Effects of dietary trace mineral levels on physiological responses, reproductive performance, litter performance, blood profiles, and milk composition in gestating sows

  • Objective: This study was conducted to evaluate the effects of optimal trace mineral levels on the physiological responses, reproductive performance, litter performance, blood profiles and milk composition in gestating sows. Methods: A total of 59 multiparous sows (Yorkshire×Landrace) with similar body weight (BW), backfat thickness (BF), and parity were assigned to one of four treatments with 14 or 15 sows per treatment using a completely randomized design. The treatments were 100% (M1), 300% (M3), 600% (M6), and 900% (M9) of the National Research Council (NRC) Nutrient Requirements of Swine. During lactation period, all the sows were fed the same commercial lactation diet. Results: No significant differences were observed in the BW, BF, reproductive performance, milk composition, or growth performance of the piglets. On day 70 of gestation, the serum zinc concentration showed a quadratic response to M6 treatment (quadratic, p<0.05). Moreover, as the dietary mineral levels increased, the zinc concentration increased linearly at 110 days of gestation (linear, p<0.05). Furthermore, copper and iron concentrations in the serum of sows at 24 h postpartum decreased linearly when high levels of dietary minerals were provided (linear, p<0.05). In the serum of piglets, serum zinc concentrations decreased linearly (linear, p<0.05), and iron concentration showed a quadratic response (quadratic, p<0.05) with an increase in trace mineral premix levels in gestation diets. Conclusion: The current trace mineral requirements of NRC (2012) are suitable for gestating sows, and the addition of dietary mineral levels in the gestating diet did not show any improvements during the gestation and lactation periods.

한국 충남 및 전북에서 생산된 유기우유와 일반우유의 이화학적 특성에 관한 연구 (Physicochemical Properties of Organic Milk and Conventional Milk from Chungnam and Jeonbuk, Korea)

  • 본 연구는 한국의 충남과 전북지역에서 생산되는 유기우유와 일반우유의 이화학적 성분분석을 통해 차이점을 구명하고자 수행하였으며, 각 지역에서 유기우유 및 일반우유 생산농가를 각각 5개씩 선정하여 3회(2월, 3월 및 8월) 우유를 채취하였으며, 일반성분, 무기물 및 지방산을 분석하였다. 유기우유의 유성분 중 유지방(p<0.01), 총 고형물(p<0.05), 유리지방산(p<0.01) 및 구연산(p<0.05)의 함량은 일반우유에 비해 유의적으로 낮았지만, 유단백질은 유의적으로 높았다(p<0.05). 유기우유의 유당, 우유 중 요소태 질소(MUN) 및 체세포수는 일반우유와 차이가 없었지만, MUN은 전북지역의 우유가 충남지역보다 높았다(p<0.05). 우유내 무기물 중 P의 함량만 유기우유에서 높았고(p<0.01), Ca, K, Mg, Zn 및 Fe의 함량은 차이가 없었다. 지방산 분석 결과, 우유내 지방산 중 함량이 높은 palmitic acid나 oleic acid에서는 유의적 차이가 없었지만, stearic acid와 총 포화지방산은 일반우유에서 높았다(p<0.01). 또한, 불포화지방산인 palmitoleic acid, linoleic acid, linolenic acid, eicosenoic acid, arachidonic acid는 유기우유에서 높았다(p<0.01). 따라서, 총 불포화지방산(p<0.01), 단일불포화지방산(MUFA, p<0.05) 및 고도불포화지방산(PUFA, p<0.01)의 함량도 유기우유에서 높게 나타났다. 본 연구결과, 한국의 충남 및 전북지역에서 생산되는 유기우유는 일반우유와 비교하여 지방함량 및 지방산 조성에서 많은 차이를 보였는데, 특히 유기우유는 건강에 유익한 고도불포화지방산의 함량이 높고, 소비자들은 식품의 안전성과 건강에 대한 관심이 커지기 때문에 앞으로 유기우유의 소비가 증대할 것으로 기대된다.
