Plasma and milk samples of 24 periparturient Holstein cows were collected from 1 week prepartum to 10 week postpartum to measure the effects of parity on mineral status in periparturient cows. Cows were fed mainly mixed ration with the concentrate supplement during the experimental period to meet nutrient requirement of dairy cattle for TDN, protein, and minerals, Plasma Ca of cows decrease as parity increased, but plasma Mg, K, Fe and Zn were lowest in the first lactation cows. Plasma inorganic P, Na, and alkaline phosphatase were not affected by the parity. Plasma Ca, Fe and Zn of cows decreased at parturition, but plasma Mg increase. Plasma Ca of the first, second and third and more lactation cows at parturition were 9.65, 8.96, and 8.92 mg/dl, respectively. Colostral Ca, P, Mg, Na, and Zn were highest in the first lactation cows, although colostrum yield was lower. Milk yield from 1 to 10 weeks postpartum was lowest in the first lactation cows, but mineral concentrations in milk were not affected by the parity.
Nutrient utilization and plasma level of minerals were studied in lactating crossbred cows fed diet supplemented from different source of minerals. Twelve crossbred cows of first to third lactation during their mid stage of lactation were distributed equally under two groups and were fed concentrate mixture, green fodder (para grass) and finger millet straw as per requirement. Cows in group I were fed concentrate mixture supplemented with 1% mineral mixture whereas cows in group II were not supplemented with mineral mixture in the concentrate mixture but were offered additional quantity of green fodder (1 kg DM/cow/day) to compensate for the requirement of minerals. Balance study conducted towards the end of 120 days of feeding experiment indicated that the total dry matter intake in both the groups did not differ significantly. The cows in group II offered additional quantity of green fodder consumed significantly (p<0.05) more of green fodder (5.11 vs. 4.51 kg /animal/day) and the cows in group I consumed significantly (p<0.01) more of finger millet straw (1.71 vs. 0.92 kg/animal/day). The digestibility of major nutrients did not differ between the groups except for ether extract which was significantly (p<0.05) lower in cows fed additional green fodder. The total daily intake of P, Cu, Fe and Co did not differ significantly in both the groups whereas significantly higher intakes of Ca, Mg, Zn and Mn were observed in cows supplemented with inorganic source of minerals. However, supplementation through both the sources could meet the mineral requirement in group I and group II. The gut absorption (%) of all the minerals was comparable between the groups except for Mg which was significantly (p<0.05) higher in cows supplemented mineral mixture. The net retention of all the minerals was significantly more in the group supplemented with inorganic source of minerals. Except for P, Mg and Co the retention as percentage of total intake was comparable for all minerals in both the groups. Irrespective of source of mineral supplementation the average monthly blood plasma mineral levels (Ca, P, Mg, Cu, Zn, Fe) were within the normal range and comparable between the groups. Lower level of Cu observed at the start of the experimental feeding in both the groups increased with the advancement of supplemental feeding. The plasma Zn and Fe content in cows of both the groups did not vary. The blood plasma level of some minerals (Ca, P, Mg and Cu) was significantly higher towards the end of experimental feeding as compared to the initial values due to the reduction in milk yield with advancement of lactation or due to supplemental effect of minerals. It could be concluded that supplementation of minerals through inorganic source is better utilized in terms of retention as compared to green fodder (para grass), which is a moderate source of most nutrients.
This study was conducted to investigate the concentrations and infants intake of sodium and potassium from human milk during the first 5 months of lactation. The sodium concentrations of the milk during the lactation appeared 21.1, 18.1, 15.9, 12.4, 10.6 and 11.4 mg/100g at 0.5, 1, 2, 3, 4, and 5 months of lactation respectively. The potassium concentrations of the milk 48.5, 43.3, 40.8, 39.9, 40.5 and 38.5 respectively, Na/K ratio of the milk were 0.76, 0.75, 0.70, 0.56, 0.46 and 0.53(mEqu\\mEq). Sodium intakes of breast-fed infants were 106.9, 108.4, 90.6, 82.5 and 95.6mg/day during the lactation. Potassium intakes of the infants were 255.7, 276.0, 289.7, 294.6, 320.3 and 318.3mg/day. Sodium and potassium concentrations in infant formula averaged 23.62 and 67.61 mg/100g which was 1.90 and 1.69 times as those of breast milk at 3 month of lactation. Commercial whole milks had 39.53 and 135.22mg/100g of sodium and potassium respectively which was 3.19 and 3.39 times as those of the milk. From this study, reevaluation of sodium and potassium intakes if breast-fel infants was merited and the regulation of that minerals in infant formula is need to lower the renal solute load of formula-fed infants.(Korean J Nutrition 34(1):23-29, 2001)
The serum concentrations of the major minerals(calcium, phosphorus, magnesium, sodium, potassium) and trace elements(iron, Zinc, copper manganese)were datermined in 23 breast fed infants living in Eumsung, Choong-buk region. The results obtained are summarized as follows: 1)The mean levels of calcium, phosphorus, magnesium, sodium and potassium of the serum of total subjects were 8.15$\pm$0.33mg/dI, 11.06$\pm$0.16mg/dI, 2.00$\pm$0.14mg/dI, 3.4476$\pm$17.99mg/dI and 9.06$\pm$2.04mg/dI respectively. 2)The serum concentrations of iron, zinc, copper and manganese in total subjects averaged 95.83$\pm$0.33mg/dI, 93.79$\pm$7.06$\mu$g/dI and 98.57$\pm$7.06 $\mu$g/dI and 4.93$\pm$0.62$\mu$g/dI respecitively. 3)Breast fed infants had significantly higher serum calcim, magnesium, sodium and iron concentrations than the formula fed groups. Otherwise, serum potassium, copper and manganese levels in breast milk fed infants were significantly lower than those in formula fed infants. 4) In formula fed infants, serum potassium and copper levels increased increased significantly with months after birth.
This study was performed to investigate patterns of fortified food (FF) consumption and intake of vitamins and minerals from FFs among 577 Korean children (12.4 years of age) who attended elementary or middle school. FFs eaten by children as a snack were surveyed using the food record method during 3 days, including 2 week days and one weekend. As a result, 114 FF items were eaten by the children, and several kinds of nutrients such as vitamin A, D, E, B complex, C, calcium (Ca), iron (Fe), and zinc (Zn) were fortified in these foods. Ca-FFs (65.8%) were most frequently consumed, followed by vitamin C-FFs (33.4%) and vitamin D-FFs (33.3%). The number of FF items in each food group was the most in the milk group (n=24, 21.0%), followed by the beverage group (n=19, 16.7%), and the cookie/bread/cake group (n=17, 14.9%). Fortified nutrients in FFs were in various combinations, but the major combination patterns were Ca, Ca plus vitamins, Ca plus vitamins plus other minerals, and Ca plus other minerals. Daily mean intakes of vitamins and minerals from the FFs were 66-300% more than those of the recommended nutrient intake (RNI ) or adequate intake (AI) for most vitamins and minerals. Daily maximum intakes (95th percentile) of vitamins and minerals from FFs were 1-15 times the RNI or AI for most vitamins and minerals. Vitamin and mineral consumption ratios from each FF group were different according to the kind of fortified nutrient. For example, vitamin C was mostly eaten in fortified beverages (46-54%), and Fe was mostly eaten in fortified cookie/breads/cakes (87%). The above results show that FF consumption varied widely among the children, and that most of the children's foods were fortified with several vitamins and minerals without a common rule; thus, subjects risked over consuming vitamins and minerals by eating FFs. Therefore, practical guideline on FF use for children's optimal nutrition and health should be provided through nutrition education.
Milk was concentrated by commercial tubular membranes, The permeation rate reduction of hydrophilic membranes (sulfonated poly sulfone (SPSf), polyacrylonitrile (PAN), cellulose acetate (CA)) was found not to be large but hydrophobic membranes to be pronounced considerably, In the case of UF concentration total solids, proteins, fats and minerals were increased as concentrated but carbohydrates decreased. NF showed the same behavior except carbohydrates showing small reduction rate.
The purpose of this study was to improve menu management of welfare institutions for mental-disorders. Special objectives were: to analyze dietitians' special considerations for menu planning in the view of nutrition, recipients' food preferences, and foodservice management; and to interprete menus by food groups and food costs. An open-ended questionnaire was developed and sent to 55 dietitians of welfare institutions for mental-disorders by a fax. Dietitians were asked to write their special considerations for menu planning relating to the nutrition, recipients, and menu management. A total of 46 dietitians responded to the questionnaires. Also, 32 weekly menus were sent to analyze in this study. Results of this study showed that dietitians considered specially energy, proteins, vitamins, minerals, and fats for recipients's health conditions and daily RDA. However, dietitians wanted more information about right menu plan manuals for psychiatric patients. Analysis of weekly menus showed that milk and milk products were th most insufficient serving food group in these institutions. Also, snacks (p<0.05)and milk products (p<0.05) serving was significantly affected by higher food costs. The results implicated that future research on menu development should be necessary for nutritional balanced meal services in welfare institutions.
This study evaluated the impact of an AI heifer calf rearing scheme on dairy stock development, in a coconut grazing and a peri-urban smallholder dairy production system in the Western Province of Sri Lanka. The heifer rearing scheme included free advice on calf rearing, drugs, acaricides, minerals and subsidised concentrates for 30 months. The farmers in the coconut growing area integrate dairying with their plantation, they sell their milk to the main processors. The peri-urban farmers are intensive milk producers, who sell their milk at informal markets. To estimate the effect of the heifer rearing scheme on dairy replacement stock development, scheme farmers were compared with farmers who did not participate in the scheme. Calf mortality was twice as high in non-scheme farms (23-28%) as in scheme farms (12-14%). The scheme had a positive effect on weight development and scheme heifers calved 4.5 months earlier than non-scheme heifers. The calf rearing package is cost effective in both farming systems, however, the required cash inputs are a major constraint. The costs per in-calf heifer under the scheme are much lower than the production of such animals by either multiplication in state farms or importing them. The coconut grazing system showed the highest potential for producing surplus dairy stock.
The effects of heat treatment of milkon the contents of nutrients, minerals and vitamins were studied by the rontine analytical method. The results obtained were: calcium acid 117.5mg, phosphorus 62.61mg and iron 112.8ug. The average constituents of rowmilk tested were not affected by heating except vitamins.

The purpose of this study was to investigate the quality of dehulled soybean (DHSB), and the rapid preparation possibility of soybean milk with DHSB (SM-DHSB), and then the quality of SM-DHSB. In DHSB, the moisture content decreased, the crude protein, crude fat, minerals, and carbohydrate contents increased, and the isoflavone (daidzein, genistein and glycitein) content was similar to that of soybean (SB). The water absorption rate of DHSB for soybean milk preparation was higher than that of SB. In the results of SM-DHSB and soybean milk (SM) qualities, the crude protein content, total solid content, and the viscosity of SM-DHSB were higher, the yield and the proximate composition (except crude protein) were similar, and the Biji production rate, and total dietary fiber content of SM-DHSB were lower compared to the SM. In terms of the isoflavone contents of SM-DHSB, daidzein and genistein content were similar, and glycitein content was lower compared with the SM. Consequently, these results suggest the possible use of DHSB for rapid SM-DHSB preparation, because the soaking time was decreased by the high water absorption rate of DHSB in the SM preparation, and the quality of SM-DHSB improved compared to those of the SM.
