The Relationship between Milk Protein Phenotypes and Lactation Traits in Brown Swiss and Canadienne

  • A total of 1033 Brown Swiss and 610 Canadienne cows were phenotyped for the genetic variants ${\alpha}_{s1}$-casein, ${\beta}$-casein, ${\kappa}$-casein, ${\beta}$-lactoglobulin and ${\alpha}$-lactalbumin. In Brown Swiss, frequency distributions were: 97.3% B and 2.7% C variant of ${\alpha}_{s1}$-casein; 31.6% $A^1$, 51.8% $A^2$, 0.5% $A^3$ and 16.1% B variant of ${\beta}$-casein; 70.4% A, 29.3% B, and 0.3% C variant of ${\kappa}$-casein; 41.7% A and 58.3% B variant of ${\beta}$-lactoglobulin; and 100% B variant of ${\alpha}$-lactalbumin. Corresponding frequencies in Canadienne for those five milk proteins were: 98.6 and 1.4%;58.5, 33.5, 0.08 and 7.9%; 78.8, 21.1 and 0.1%, 42.4 and 57.6%; and 100%. Analysis of variance by least squares showed possible association between milk protein phenotypes and some lactational production traits. There were no significant association of phenotypes of ${\alpha}_{s1}$-casein, ${\beta}$-casein and ${\beta}$-lactoglobulin with milk yield, fat yield, protein yield, fat percentage and protein percentage in both breeds during the three lactations. In the Brown Swiss, ${\kappa}$-casein phenotype was associated with 305-day fat yield and protein yield during the first lactation. ${\kappa}$-Casein AB was associated with higher milk, fat and protein yield during the second lactation. During the third lactation, ${\beta}$-lactoglobulin AA in Canadienne cows was associated with higher protein content in the milk (3.70%) when compared to phenotypes AB (3.54%) and BB (3.64%).

Effects of Milk Production, Season, Parity and Lactation Period on Variations of Milk Urea Nitrogen Concentration and Milk Components of Holstein Dairy Cows

  • The study was conducted to assess the effect of milk production, parity, stage of lactation, season and individual milk components themselves on milk urea nitrogen (MUN) concentration and other milk components of 3,219 Holstein dairy cows in Korean dairy farms. The MUN concentrations in Korean dairy cows were estimated to 16.68$\pm$5.87 mg/dl. Milk yield was negatively correlated with fat and protein contents and somatic cell counts (SCC) in milk (p<0.01). The increasing MUN concentration has positive correlation with yield and fat content. By increasing somatic cell, milk yield was reduced and MUN level was increased. Cows in spring and winter produced more milk over 1.43 and 0.93 kg/day, respectively, than cows in summer (p<0.01). Milk urea nitrogen concentrations of milk produced in summer and fall were significantly lower (p<0.01) than those in spring and winter. Both MUN concentration and somatic cell counts were highest in winter. Milk yield was lower (p<0.01) in the first calving than other calving time and was tended to increase until the fifth parity and then decrease. Milk urea nitrogen and SCC were not related to parity of cows in this study. Milk yield and SCC were positively related to lactation period while MUN concentrations and milk fat and protein contents were negatively influenced by stage of lactation. In the present study, the relationship between MUN and reproduction of dairy cows was also investigated. Cow produced milk in high MUN concentrations (greater than 18 mg/dl) had more open days than cows in MUN concentrations less than 18 mg/dl. However, no significant difference between MUN concentration levels and frequency of artificial insemination was found in this study. It is suggested that although MUN values for nutritional management and measures of production or reproduction are used, non-nutritional factors should be considered.

여름철 고온스트레스 기간에 고 양이온 사료와 반추위 보호지방과 나이아신의 추가공급시 착유우의 유생산 및 체온조절에 미치는 영향 (Effects of Higher Dietary Cation with or without Protected Fat and Niacin on the Milk Yield and Thermoregulatory Ability in Holsteins During Summer Heat Stress)

  • 본 실험은 여름철 착유우의 체온조절 능력, 산유량 및 유성분에 미치는 양이온-음이온 균형 (dietary cation-anion difference : DCAD)과 반추위 보호지방이나 나이아신의 첨가 효과를 구명하기 위하여 수행하였다. 30두의 비유중기 홀스타인 착유우 (DIM 134±12.4, 산유량 23.4±2.3kg/d)를 세개의 군으로 구분하여 배치하였다 (처리당 10두). 시험축은 후리스톨 우사에서 사육되었고, 우사에는 41cm 직경의 송풍팬이 부착되어 풍속 4 m/s로 송풍되도록 하였다. 시험축은 7월부터 8월까지 2개월동안 3가지의 시험사료를 섭취할 수 있도록 하였으며, 시험사료는 양이온-음이온 균형이 +15와 +30인 사료에 보호지방 첨가, 나머지 사료는 반추위 보호지방이나 보호지방과 나이아신을 보충하였다. 시험기간 중 7월에는 최대 온도가 28.5℃로 시험축이 약간의 고온스트레스를 받는 정도로 유지되었으나, 시험이 진행되어 8월에는 특징적인 심한 고온스트레스를 보였고, 최대온도가 32.4℃에 도달하였으며, THI는 74.0이었다. 건물, 조단백질, 가소화양분총량 섭취량은 양이온-음이온 균형 수준과 반추위 보호 지방이나 나이아신에 의하여 영향을 받지 않았으나, 산유량은 반추위 보호지방과 나이아신을 첨가한 사료를 섭취한 착유우에서 무첨가구에 비하여 높았다(P<0.05). 반추위 보호지방이나 반추위 보호지방과 나이아신을 동시에 첨가한 처리간에는 산유량의 차이는 없었다. 그리고 유지방과 직장온도도 양이온-음이온 균형 수준과 반추위 보호지방이나 나이아신 첨가에 의한 차이는 나타나지 않았다. 그러나 호흡률은 반추위 보호지방이나 반추위 보호지방과 나이아신을 동시에 첨가한 처리에서 낮게 나타났다 (P<0.05). 본 연구의 결과는 높은 수준의 양이온-음이온 균형 (+30)과 반추위 보호지방과 나이아신을 첨가하는 경우에 여름철인 7월과 8월 고온기에 홀스타인 착유우의 고온스트레스를 줄이고, 호흡율을 감소시키며, 산유량을 증가시킬 수 있음을 나타내었다.

Changes in Milk Production and Metabolic Parameters by Feeding Lactating Cows Based on Different Ratios of Corn Silage: Alfalfa Hay with Addition of Extruded Soybeans

  • The objective of this study was to investigate the effects of different ratios of corn silage (CS): alfalfa hay (AH), and extruded soybeans (ESB) on milk yield, milk composition, blood metabolites, and fatty acids in milk fat and plasma. Ninety multiparous Holstein cows were arranged in a randomized block design experiment which lasted 14 weeks. Treatments were arranged as a $3{\times}3$ factorial with 0%, 5% or 10% ESB (dry matter basis) and three forage treatments: I) 30% CS, 10% AH and 10% Leymus chinense hay (LC); ii) 20% corn silage, 20% alfalfa hay and 10% LC; iii) 10% CS, 30% AH and 10% LC. Cows were allowed to consume a total mixed ration ad libitum. There was no change of dry matter intake when cows were fed the experimental diets. As more AH was added to the diets, milk yield, milk protein content and yield, and trans9, cis11-conjugated linoleic acids (CLA) concentrations in milk fat and plasma increased. When ESB were supplemented to the diets, milk yield, and trans9, cis11-CLA concentration in milk fat and plasma increased. When 10% ESB was added to the diet containing 30% AH the trans9, cis11-CLA content (1.46 g/100 g of total fatty acids) in milk was the highest among all treatments. These results suggests that AH could replace part of a CS diet and be a good forage source of diet for dairy cows to improve milk yield and milk composition. Meanwhile, ESB could be included in the diet with high AH to improve production performance of dairy cows.

Milk Conjugated Linoleic Acid Response to Fish Oil and Linseed Oil Supplementation of Grazing Dairy Cows

  • The effect of supplementing the diet of grazing dairy cows with fish oil (FO) and linseed oil (LSO) on milk conjugated linoleic acid (CLA) was investigated. Sixteen Holstein cows (17019 DIM) were assigned into two groups and fed a grain supplement (8.0 kg/d; DM basis) containing 800 g of saturated animal fat (CONT) or 200 g FO and 600 g LSO (FOLSO). All cows grazed together on Sudan grass pasture ad libitum and were fed the treatment diets for 3 wks. Cows were milked twice a day and milk samples were collected during the last three days of the trial. Milk production (24.89 and 22.45 kg/d), milk protein percentage (2.76 and 2.82) and milk protein yield (0.68 and 0.64 kg/d) for the CONT and FOLSO diets, respectively, were not affected (p>0.05) by treatment diets. Milk fat percentage (3.90 and 2.86) and milk fat yield (0.97 and 0.64 kg/d) were lower (p<0.05) with the FOLSO diet compared with the CONT diet. The concentration and yield of milk cis-9 trans-11 CLA were higher (p<0.05) with the FOLSO diet (2.56% of total FA and 16.44 g/d, respectively) than the CONT diet (0.66% of total FA and 6.44 g/d, respectively). The concentrations of milk trans C18:1 and vaccenic acid (VA) were higher (p<0.05) with the FOLSO diet (13.53 and 7.48% of total FA, respectively) than the CONT diet (3.69 and 2.27% of total FA, respectively). In conclusion, supplementing the diet of grazing cows with FO and LSO increased milk cis-9 trans-11 CLA content but reduced milk fat content and yield.

Milk production and composition of conventional and organic-fed Holstein dairy cows as affected by temperature and relative humidity

  • This study aimed to determine the effects if ambient temperature (Ta), relative humidity (RH), and temperature-humidity index (THI) on milk production parameters such as milk yield, fat, protein, milk urea nitrogen (MUN), and lactose. A total of fifty (50) mid-lactating Korean Holstein cows (144 - 150 days postpartum) were randomly assigned to two groups in equal numbers (n = 25) according to the type of diet received: conventional feed, a mixture of 56: 44 ratio of roughage and concentrate mix, and organic feed containing 100% organic roughage. Temperature, RH, and THI were recorded daily and averaged monthly. Conventional group showed higher dry matter intake throughout the experiment and thus, showed higher total milk yield and milk composition such as milk fat, protein, and lactose content than organic milk. Milk of the conventional group showed higher polyunsaturated fatty acid concentration. Highest milk yield was observed in September (21.7℃, 82.4%RH) in conventional group (27.69 kg·day-1) and in June (21.4℃, 72.9%RH) in organic group (14.31 kg·day-1). In conventional group, milk yield was positively correlated with Ta and THI, and milk protein was negatively correlated with Ta, RH, and THI. In organic feeding, only the MUN among milk composition parameters showed a significant correlation where it showed a negative correlation with Ta, RH, and THI. Conventional feeding showed significantly higher milk yield, fat, protein, and lactose than organic feeding throughout the experiment, although, organic feeding showed to be less likely affected by Ta, RH, and THI than the conventional feeding.

Evaluation of genotype by environment interactions on milk production traits of Holstein cows in southern Brazil

  • Objective: This study assessed the possible existence of genotype by environment interactions for milk, fat and protein yields in Holstein cattle raised in one of the most important milk production basins in Brazil. Methods: Changes in the genetic parameters and breeding values were evaluated for 57,967 animals from three distinct regions of southern Brazil, divided according to differences in climate. The genotype by environment interaction was determined by genetic correlations between regions, estimated by the restricted maximum likelihood, considering the animal model. Bull rankings were investigated to verify the ratio of coincident selected animals between regions for each trait. Results: The estimates of heritability coefficients were similar between two regions, but were lower in the third evaluated area, for all traits. Genetic correlations between regions were high, ranging from 0.91 to 0.99 for milk, fat and protein yields, representing the absence of a genotype by environment interaction for productive traits. The percentage of selection error between regions for the top 10% of animals ranged from 0.88% to 2.07% for milk yield, 0.99% to 2.46% for fat yield and 0.59% to 3.15% for protein yield. Conclusion: A slight change in genotype between areas was expected since no significant genotype by environment interactions were identified, facilitating the process of selecting Holstein cattle in southern Brazil.

Effects of Dandelion (Taraxzcum coreanum) Supplementation on Milk Yield, Milk Compositions and Blood Characteristics in Lactating Dairy Cows

  • This study aimed to investigate the effects of Dandelion (Taraxzcum coreanum) supplementation on milk yield, milk composition and blood characteristics in lactating dairy cows. Eight lactating dairy cows were divided into two groups (control: TMR supplementation, treatment: TMR with Dandelion supplementation). The milk yield, milk fat, lactose, solids not fat (SNF) and somatic cells counts (SCC) were not significantly different between the control group and the treatment group, whereas milk protein, milk urea nitrogen (MUN) and free fat acid (FFA) were significantly higher in the treatment group compared to the control (p<0.05). The blood components of the treatment group were compared with those of the control group and only aspartate aminotransferase (AST) appeared significantly high (p<0.05). The other blood components were not significantly different in the two groups. Blood corpuscle components in the groups were not significantly different. Especially, all blood corpuscle components in the treatment group were within the normal range. However, the white blood cells (WBC), lymphocytes (LYM) and hematocrits (HCT) in the control group exceeded the normal range. Based on the above results, the addition of Dandelion to feed increased milk protein, MUN and FFA, but did not significantly affect the composition of the blood and corpuscle in Holstein milking cows.

Dietary Supplementation of Fat Increased Milk Fat Percentage without Affecting Ruminal Characteristics in Holstein Cows in a Warm Tropical Environment

  • The purpose of this experiment was to investigate the effect of the diets supplemented with lard or prilled fat ($Carolac^{(R)}$) on lactation performance, plasma constituents and ruminal characteristics of Holstein cows under a warm climate. In trial 1, 18 Holstein cows, 14 primiparas at 43 DIM and 4 multiparas at 55 DIM, were randomly assigned into six $3{\times3}$ Latin squares, in which three dietary treatments were isoproteinous but varying in energy contents and three 21 d periods. The treatments were basal diet (Control), basal diet supplemented with 2.5% lard (LD), and basal diet supplemented with 2.5% commercial Prilled fat (PF). In trial 2, three rumen canulated pregnant nonlactating Holstein cows with 550 kg average body weight were allotted into a $3{\times}3$ Latin square design with diets same as in trial 1 were fed to the cows at the level of 1.5% body weight on dry matter (DM) basis. The results indicated that the DM intake did not differ among the treatments. Milk yield and 4% FCM yield were greater (p<0.05) in PF than in Control. LD and PF resulted in greater milk fat percentage. Protein, lactose and solid contents in milk were not different among the three dietary treatments. The concentration of nonesterified fatty acids (NEFA) in plasma was significantly greater in LD and PF than that in Control. However, the concentrations of triglycerides, urea nitrogen, and cholesterol in plasma were not significantly different among the three treatments. Although the ruminal molar percentage of isobutyrate in LD and PF was greater, no significant difference was observed in ruminal pH, NH3-N concentration and VFA production among the three treatments. Diet supplemented with fat can improve milk yield and milk fat percentage without resulting in disadvantages of ruminal characteristics in cows at early lactation and under warm climate.

Quality Characteristics of Low-fat Ground Pork Patties Containing Milk Co-precipitate

  • The optimum level of fresh granulated low-calcium (0.2%) skim milk co-precipitate, as fat substitute in low-fat ground pork patties was determined on the basis of physico-chemical, cooking and sensory properties. Low-fat ground pork patties (<10% total fat), formulated with 15 per cent water, 4 per cent added fat, 1.5 per cent salt and 4-10 per cent milk co-precipitate, were evaluated for proximate composition, cooking characteristics and compared with control patties with 15 % added fat. The moisture and protein content of raw and cooked low-fat patties were significantly (p<0.05) higher than control. The incorporation of milk co-precipitate in low-fat patties improved cooking yield, fat and moisture retention and reduced shrinkage. The sensory properties of low-fat patties were comparable with control patties. The overall acceptability of low-fat patties formulated with 7% milk co-precipitate was significantly (p<0.05) higher than patties with 10% level and non-significantly (p<0.05) higher than low-fat patties containing 4% milk co-precipitate and control. Instrumental Texture Profiles of developed low-fat patties and control patties were comparable with slight increases in hardness and gumminess of the low-fat product. The developed low-fat ground pork patties (7% milk co-precipitate) had lower TBA values, better microbiological and sensory refrigerated storage stability than high-fat control patties packaged in air permeable films for 21 days.
