  • I. Subject of the Study: Studies on the economical nutrition supplement of cereal foods for the improvement in our notional eating habits. II. Purpose and Importance of the Study: 1. Our nation is confronted with the situation that the rice, a principal food, short of some essential amino acids, lysine and threonine, leads to imbalanced meals insufficient in the nutrient of protein, to bring many difficulties in the elevation of our national physique. 2. The shortage of even the rice imperfect in the nutrient of protein makes the import of lots of foreign rice inevitable. It is considered that the protein supplement and decrease in the consumption amount, of rice, is a serious key to the solution of our food difficulty, and then a way of the proetin supplement of rice through the addition of essential amino acid is to be rarely applied in the view of the our present finance and situation. 3. In the present experiment, therefore, it aims to the suggestion of an aspect of the improvement in our national eating habits guiding in the nutrition elevation which our nation can afford economically through the development of first, a way of the protein supplement by the mixture of cereals producted plentifully in our country, and second, a way of the decrease in the consumption amount and the improvement in the nutrition of rice through the substitution of the other cereals for rice. III. Contents of Scope of the Study: 1. Objects of the study: Objects of the study are the following three items; a) The nutrition supplement of rice through the mixture of cereals. Our nation makes mainly rice as a principal food, but practically many kinds of cereal are produced in our country. They contain different levels and qualities of each nutrient and they are different from one another in the kinds of essential amino acid consisting protein. For that reason, the mutual complement efficeincy of insufficient nutrients is observed through the mixture of cereals. b) The nutrition supplement of rice through the addition of superior protein sources to rice, a principal food. The development of rice as superior foods in the sense of nutrition is conducted through the risement in protein quality by the addition of protein sources in good quality, for example, fish flour (anchovy flour), egg powder, milk powder, and so on, and through the supplement of vitamins and minerals. c) The decrease in the consumption amount of rice through the substitution of the other cereals for rice, as a principal food. The compensation for the short amount of rice is made by the reduction in the consumption of rice through the discovery of a way of substitution of the other cereals for rice, as a principal food and of the settlement of problems in nutrition and finance subsequent to this. 2. Contents of the study: a) An ideal mixture-ratio of cereals is established for rats by feeding mixed foods(rice-barely or rice-wheat) containing 5%, 15%, 25%, 35% and 45% level of either barely or wheat. b) The nutritive value is determined in the whole subsititution of other foods for rice, and then, a way of the complement of over and under nutrients is devised. c) The ideal combination is investigated for rats through feeding mixed foods of main food, rice and supplement foods of protein sources, soy bean, fish flour, egg powder and milk Powder. d) According to results from the above three experiments, the concise functional test for men and the examination of economical property are made. 3. Scope of the study: a) The observation of the effect of each diet on the growth rate for rats. The growth rate of rats was observed for 15 groups of mixed foods of a main food, rice, and wheat flour, barley powder or soy bean powder, respectively, and 12 groups of wheat flour diets supplemented with $1{\sim}3%$ milk powder, and rice or wheat flour diets supplemented with 5% of milk powder, egg powder, fish flour or soy bean powder, respectively. b) The determination of food consumption. The food consumption was determined at weekly intervals for 27 kinds of diet described in a) item. c) The determination of food efficiency rate. The food efficiency rate for each diet was determined by calculation from the gained body weight and the food consumption amount at the same intervals described in b) item. d) The determination of protein efficiency rate. The protein efficiency rate for each diet was determined by calculation form gained body weight and the protein amount of the food consumption amount at the same intervals described c) item. e) The determination of the body component. The hematocrite and hemoglobin levels in the blood, total nitrogen in the serum, blood sugar, and lipids and glycogen in the liver were determined. f) The observation of nitrogen balance. As a means of the observation of nitrogen balance, the total nitrogen in the urine was determined. g) The analysis of economical property. The economical property was analyzed as the gained body weight to the amount equivalent to one won through the conversion of the food consumption amount into money. h) The functional test for men. The concise functional test for men was made in order to establish if the best diet for experimental animals can be applied to men. IV. Results of the Study: The national food product plan, nationwide nutritive enlightment and the improvement activities in our country eating habits, especially, mixed and powder food problems are to be significantly referred, and the following results must be applied. a) In the mixed foods of cereals, the mixed food of the rice-barley containing $5{\sim}15%$ level of barley is best in terms of nutrition. b) The addition of superior protein sources, egg, Bilk, soy bean, or fish, respectively to either rice or wheat flour makes a great risement in the nutritive value. c) The animal protein is more effective in the elevation of nutritive value of cereals. d) Rice takes the most nutritive operation and has the highest preference, among rice, wheat flour and barley. e) Wheat flour is more economical than rice in evaluation of the gained body weight to the regular money, and the addition of fish or soy bean is more economical than that of any other supplement food. But the above results are true of the range of nutrition and economical property. f) The study on the nutrition composition and barley will lead to the improvement in our national eating habits as mixed food of the rice-barley containing $5{\sim}15%$ level of barley is more nutritive. g) This study on the nutrition only for the growing animal can not be considered as a perfect and entire evaluation. Consequently, the perfect data for our national nutrition can be obtained from the experiment similar to this for the much longer period examining, in details, the growth rate, change of physical strength, mental and bodily change, average life span, and resistance ability to infectious diseases.

Cordycepin 강화 우유 생산에 관한 연구 I. 동충하초 균사체의 적정사용량 결정을 위한 사양연구 (Development of cordycepin fortified milk production in Holstein cows I. Effects of various levels of Cordyceps militaris mycelia from grains supplement on cordycepin content in milk in dairy cows)

  • 본 연구는 개발된 곡립기주 밀리타리스 동충하초 균사체들 착유우사료에 수준별로 배합하여 60일간 급여하였을 때, 착유우의 사료 섭취량, 유성분 및 우유와 혈액내 cordycepin 함량과 혈중 항산화능력을 조사하여 실제 젖소사양에서 기능성 cordycepin 강화 우유생산을 위한 곡립 밀리타리스 동충하초 균사체의 적정사용량을 결정하고자 실시하였다. 본 연구는 비유중기 착유우 20두를 공시하여 대조구와 세 수준의 첨가구(3%, 6%, 9%)에 각각 5두씩 배치하고, 60일간 사양하였다. 동충하초 급여는 사료섭취량에 유의한 영향을 미치지 않았고 모든 처리군에서 전반적으로 양호한 섭취량을 나타내었다. 또한 산유량, 유성분 및 체세포수(SCC)는 처리구간에 유의한 차이가 나타나지 않았다. 우유중 요소태질소농도는 곡럽 밀리타리스 동충하초 균사체의 급여비율을 증가시킴에 따라 유의하게 증가하였다(P<0.05). 대조구에 비하여 곡립 밀리타리스 동충하초 균사제 급여군들의 우유 및 혈액내 cordycepin 함량은 유의적 (P<0.05)으로 증가하였지만, 균사제 첨가수준간에는 유의한 차이가 나타나지 않았다. 첨가 수준이 높아질수록 cordycepin의 섭취량이 증가하는 반면, 우유로 이행되는 양은 처리구간 큰 차이가 없기 때문에 첨가수준이 증가할 수록 우유내 전이율은 유의성은 없지만 낮아지는 것으로 나타났다. 하지만 조사된 항목들에서 개체별로 큰 차이가 조사되었는데, 우유내 cordycepin 함량의 경우 범위가 0~0.4 ㎍/mL로, 검출되지 않는 개체들도 나타났다. 경제적인 측면을 고려하면 본 실험에 사용된 3% 수준의 cordycepin 공급량을 선택하는 것이 바람직하겠지만, 3% 수준에서 검출되지 않은 개체수(2두)가 다른 수준들에 비하여(6%, 9% 각각 1두) 상대적으로 많았기 때문에 보다 균일한 결과를 얻기 위해서는 6% 수준을 선택하는 것이 바람직하다고 사료된다.

Cordycepin 강화 우유 생산에 관한 연구 II. 장기간 동충하초 균사체급여가 우유 중의 cordycepin 함량 변화에 미치는 영향 (Development of cordycepin fortified milk production in Holstein cows II. Effects of long-term supply of Cordyceps militaris mycelia on cordycepin content in milk in dairy cows)

  • 본 연구는 밀리타리스 동충하초(Cordyceps militaris) 균사체를 6%수준으로 비유초기 젖소에게 (대조구 5두, 처리구 5두) 6개월간 급여하였을 때, 혈액 및 우유내 cordycepin 함량을 조사하여 비유시기별 변화양상을 조사하고자 실시하였다. 건물 섭취량, 우유중 체세포수 및 우유중 요소태질소농도는 비유 전 기간동안 밀리타리스 동충하초 균사체 급여군과 대조구 간에 유의한 차이가 나타나지 않았다. 또한 유단백질비율 및 생산량을 제외한 산유량, 유지방 및 유당에는 비유기간이 지속됨에 따라 밀리타리스 동충하초 균사체 급여 군과 대조군 간에 유의한 차이가 나타나지 않았다. 하지만, 유단백질 함량 및 생산량은 전체기간 평균이 대조군보다 급여군에서 유의하게 높았다(P<0.05). 혈액 및 우유중 cordycepin농도는 기대했던 대로 대조군에서는 전혀 검출되지 않았으나, 밀리타리스 동충하초 균사체를 급여한 처리구에서는 혈액 중 0.31~0.38㎍/mL, 우유 중 0.18~0.26㎍/mL범위의 cordycepin이 검출되었다. 또한 표준오차의 값이 높아, 개체별 차이가 큰 것으로 조사되었으며 또한 개체별 자료에서도 비유시기에 따라 우유내 cordycepin 함량의 변화가 높아 일정한 패턴을 도출할 수가 없었고, 검출되지 않는 경우도 일정수준 나타났다. 혈액과 우유내 cordycepin 함량은 유의적인 상관관계(P=0.006)가 있는 것으로 조사되었지만 r2=0.24로 매우 낮았다. 비유시기에 따른 동충하초의 cordycepin이 우유로 이행되는 패턴은 일정치 않은 것으로 조사되어, 비유시기는 cordycepin의 우유이행에 영향을 미치지 않는 것으로 사료된다. Cordycepin의 우유내 전이율 범위도 개체별로는 0.00~0.95%로 변이가 높았고 매우 낮게 조사되었다. 결론적으로 젖소에게 동충하초의 급여를 통한 cordycepin의 우유내 전이는 젖소 개체별 변이가 매우 크며 또한 전이효율이 낮아 농가 산업화에는 많은 어려움이 따를 것으로 자체 평가된다.

Bio-fermentation Technology to Improve Efficiency of Swine Nutrition

  • The United Nations Convention on Biological Diversity defines biotechnology as "Any technological application that uses biological systems, dead organisms, or derivatives thereof, to make or modify products or processes for specific use" Biotechnology has made tremendous contributions to improve production efficiency of agriculture during the last century. This article reviews successful examples of application of bio-fermentation in improving swine nutrition efficiency mainly based on the authors'z own research experience. Production of feed grade supplemental amino acids by bio-fermentation allowed nutritionists to formulate accurate feed for optimal lean growth and reduced nitrogen excretion. Recent issues with high feed grain prices caused potential feed quality problems. Bio-fermentation allowed nutritionists to use exogenous supplemental enzymes such as phytase and NSPases in swine diets, thereby improving nutrient utilization and reducing nutrient excretion to the environment. Yeast metabolites are also produced by bio-fermentation and have been repeatedly shown to improve milk production of sows during early lactation even though actual mechanisms are still to be investigated. Bio-fermentation technology also allowed nutritionists to prepare vegetable protein sources with large protein molecules and anti-nutritional factors suitable for feeding newly weaned piglets, as selected microorganisms significantly reduce specific anti-nutritional factors and size of peptides. Preparations of vegetable protein sources suitable for newly weaned pigs will greatly contribute to swine nutrition by providing efficient alternatives to the use of animal protein sources that are often expensive and somewhat against societal preference. Considering the few examples listed above, biotechnology has closely influenced improvement of production efficiency in the swine industry. As we have limited resources to produce meat to satisfy ever-increasing global demands, extensive adaptation of biotechnology to enhance production efficiency should be continued. However, at the same time, wise and careful application of bio-technology should be considered to ensure production of safe food and to meet the expectations of our society.

한우 번식효율에 대한 Blood Urea Nitrogen과 Body Condition Score의 영향 (Blood Urea Nitrogen and Body Condition Score on Reproductive Efficiency in Korean Cattle)

  • 본 실험은 한우 400두를 공시하여 사양조건에 따른 blood urea nitrogen(BUN)의 농도가 암소의 번식에 미치는 영향을 조사하였으며 또한 body condition score(BCS)가 번식효율에 미치는 영향을 조사하였다. 1 화본과 식물이 주종인 초지에서 방목을 하였을 때 BUN의 평균농도는 7.39$\pm$2.65 mg/㎗ 이었으며 발정이 육안적으로 확인된 암소의 58.2%가 4∼8 mg/㎗ 사이에 분포하였으며 수태율도 높은 경향을 보였다. 2.사사기 농후사료를 급여하였을 때 BUN의 평균 농도는 12.36$\pm$2.92 mg/㎗이었으며 8∼14 mg/㎗사이에서 높은 수태율을 보였다. 3. BCS가 2.5∼3.5사이에 있을 때 분만 후 발정재귀가 가장 빠르게 나타났으며 수태율도 높은 경향을 나타내었다. 4. 방목기, 사사기에서 BUN과 BCS상호간의 다소의 차이는 있었으나 유의성은 인정되지 않았다. 이상의 결과를 종합해 보면 사양조건에 따라 적정 BUN및 BCS의 수준을 유지할 때 번식의 효율을 증대시킬 수 있을 것이라 사료된다.

Effect of Elemental Sulfur Supplementation on Rumen Environment Parameters and Utilization Efficiency of Fresh Cassava Foliage and Cassava Hay in Dairy Cattle

  • Effect of sulfur (S) on utilization efficiency of fresh cassava foliage and cassava hay in dairy cows was evaluated using thirty-two $1^{st}-2^{nd}$ lactation Holstein-Friesian crossbred dairy cows. The experimental treatment was a 2${\times}$2 factorial arrangement in a randomized complete block design (RCBD) using two roughages (rice straw+fresh cassava foliage (FCF) and rice straw+cassava hay (CH)) and two elemental sulfur (S) levels (0.15 and 0.4% S of dry matter (DM)), respectively. Four dietary treatments (FCF+0.15, FCF+0.4, CH+0.15 and CH+0.4) were offered ad libitum in the form of a total mixed ration (TMR) with concentrate to roughage (chopped rice straw+chopped cassava foliage) ratio at 60:40. Fresh cassava foliage or cassava hay resulted in similar dry mater intake, rumen ecology parameters, total tract digestibility, blood chemistry, milk production and composition. However, HCN intake, blood and milk thiocyanate concentration were significantly higher (p<0.01) in cows fed fresh cassava foliage with no sign of potential toxicity. Dry matter intake, body weight changes, molar percentage of propionate in rumen, neutral detergent fiber (NDF) digestibility and nitrogen (N) retention of cows tended to be increased while DM digestibility (65.6, 72.7, 68.6 and 72.1% of total DM intake for the respective treatments), rumen bacteria population (1.4, 1.7, 1.6 and $1.7{\times}10^{11}$ cell/ml for respective treatments), fungal zoospore population (0.4, 0.6, 0.4 and $0.5{\times}10^{6}$ cell/ml for respective treatments), urinary allantoin (25.3, 28.0, 26.3 and 27.6 g/d for respective treatments), microbial N yield (136.0, 154.6, 142.8 and 151.3 g N/d for respective treatments) and milk protein content (3.4, 3.5, 3.2 and 3.5% for respective treatments) were significantly (p<0.05) higher in cows fed on supplemented sulfur at 0.4% of DM in comparison with 0.15% S-supplemented diets. Based on these results, it is concluded that cassava foliage could be used as a portion of roughage for dairy cows and supplementation of S would be nutritionally beneficial.

Ensiled Green Tea Waste as Partial Replacement for Soybean Meal and Alfalfa Hay in Lactating Cows

  • The purpose of this study was to evaluate the effects of protein supplementation of green tea waste (GTW) on the performance of lactating cows. Another aim was to increase resource utilization and to eliminate any environmental negative impact from the tea waste. GTW from a beverage company was ensiled at a low pH (<4.0) and high acetic acid and lactic acid concentration, and it contained high crude protein (CP, 34.8%), total extractable tannins (TET, 9.2%) and condensed tannin (CT, 1.7%). Two experiments were conducted to investigate the palatability and performance in lactating cows fed GTW. In the palatability trial, three lactating cows were allocated to three dietary treatments in a 3$\times$3 Latin square design. The animals were offered a total mixed ration (TMR) including GTW at rates of 0, 2.5 and 5.0% on a dry matter (DM) basis. Total DM intake was not different among the treatments. In the performance trial, four lactating cows were used in a 2$\times$2 Latin square design with a 3 week sampling period. GTW was incorporated into TMR at a rate of 5.0% on a DM and 10.0% on a CP basis. Thus GTW replaced alfalfa hay and soybean meal at a level of 25.0% on a DM. DM and CP intake were not affected by the inclusion of GTW, whereas TET and CT intake were significantly increased (p<0.001). Milk production, milk composition and the efficiency of milk production were not altered by the GTW inclusion. Although ruminal pH and VFA, and blood urea nitrogen were not changed, ruminal $NH_{3}-N$ and plasma total cholesterol were relatively low in the GTW group, but not significantly different. The excretion of urinary purine derivatives and estimated MN supply were also not significantly affected by GTW treatment. It is therefore concluded that GTW can be used as a protein source without any detrimental effects on the performance of lactating cows.

유유아(乳幼兒) 및 성장기 아동을 위한 영양식품 개발에 관한 연구 -흰쥐 성장에 미치는 영향- (The Protein rich Food Mixtures for Korean Infants)

  • Korea is one of the typical rice eating countries where availability of animal protein is limited even for the growing generation. Nutritive food products for infants and children are not available commercially in large scale at the present time, although a limited amount of expensive milk products are produced. The present study deals with a pioneering attempt on a new food mixture to meet this demand. Several food mixtures, possibly produced in the country, consisting of rice, soybean, FPC, vitamin, minerals and other food additives are developed in this work Sixty female and male rats aged $30{\sim}40$ days were divided into five groups, twelve rats each. The rats had been maintained with the six different diets, as follow. Formulation of proposed infant food mixturesComposition F-R-1 F-S-2 F-F-3 F-P-4 S Rice 100% 40% 37% 46% 70% Sugar - 12 13 10 70 Casein - - - - 20 Bean - 40 37 24 - Yeast - 3 2 3 - Mineral Vitamain - 2 4 2 4.3 F.P.C - 3 4 7 - Fat - - 4 8 4 Cod liver Oil - - - - 3 The findings of this study presented in FER, PER, final organ weights, body weights growth, percentage of nitrogen retention in the body. F-P-4 group tended to remain the heaviest and F-R-1 the lightest in the body weight among three groups throughout the experimental period. In terms of FER (Feed Efficiency Ratio) and PER (Prortein E. R.) value, F-P-4 group kept the highest record throughout. F-P-4 group showed the highest value of nitrogen retention in the body. In comparision between F-P-4 groups and casein 20% group (standard) in all respects of this experiment, F-P-4 group which is the most superior among experimental group, revealed statisfically no significant inferior than that of standard group. This fact could be interpreted that most limiting a. a., methionine in the soy protein produced little inferiority of the experimental groups in the study.

Effects of Supplementing Brown Seaweed By-products in the Diet of Holstein Cows during Transition on Ruminal Fermentation, Growth Performance and Endocrine Responses

  • This study was conducted to examine the effects of supplementing brown seaweed by-products (BSB) in the diet of ruminants on ruminal fermentation characteristics, growth performance, endocrine response, and milk production in Holstein cows. In Experiment 1, the effects of different levels (0%, 2%, and 4% of basal diet as Control, 2% BSB, 4% BSB, respectively) of BSB were evaluated at 3, 6, 9, 12, and 24 h in vitro batch culture rumen fermentation. The pH tended to be higher for the higher level of BSB supplementation, with the pH at 12 h being significantly higher (p<0.05) than that of the control. The concentration of ammonia nitrogen was lower at 3, 9, 12, and 24 h incubation (p<0.05) compared with the control, and tended to be low at other incubation times. Volatile fatty acid concentration appeared to be minimally changed while lower values were observed with 4% BSB treatment at 24 h (p<0.05). In Experiment 2, effects of levels (0%, 2%, and 4%) of BSB on growth performance, endocrine responses and milk production were studied with Holstein dairy cows during transition. Dry matter intake, daily gain and feed efficiency were not affected by BSB supplementation. The concentration of plasma estrogen for the control, 2% BSB and 4% BSB after three months of pregnancy were 55.7, 94.1, and 72.3 pg/mL, respectively (p = 0.08). Although the differences of progesterone levels between BSB treatments and the control were minimal, the concentration in 4% BSB treatment increased to 157.7% compared with the initial level of the study. Triiodothyronine and thyroxine levels were also higher after both three months and eight months of pregnancy than the initial level at the beginning of the study. In addition, BSB treatments during one month after delivery did not affect daily milk yield and composition. In conclusion, the present results indicate that supplementation of BSB did not compromise ruminal fermentation, and animal performance at lower levels and hence may have potential to be used as a safe feed ingredient in dairy cows.

Assessing metabolic properties of dairy cows fed low quality straws by integrative arterial and venous metabolomics

  • Objective: This study was conducted to reveal potential metabolic differences of dairy cows fed corn stover (CS) and rice straw (RS) instead of alfalfa hay (AH) as main forage source. Methods: Thirty multiparous mid-late lactation Holstein dairy cows were selected and randomly assigned to three diets, AH, CS, or RS (n = 10). After 13 weeks of the feeding trial, coccygeal arterial and superficial epigastric venous plasma samples were collected before morning feeding for gas chromatography time-of-flight/mass spectrometry analyses. Results: In the artery, 8 and 13 metabolites were detected as differential metabolites between AH and CS, and between AH and RS, respectively. The relative abundance of phenylpropanoate (log2fold change [FC]) = 1.30, 1.09), panthenol (log2FC = 2.36, 2.20), threitol (log2FC = 1.00, 1.07), and 3,7,12-trihydroxycoprostane (log2FC = 0.79, 0.78) were greater in both CS and RS than in AH, and tyrosine (log2FC = -0.32), phenylalanine (log2FC = -0.30), and pyruvic acid (log2FC = -0.30) were lower in RS than in AH. In the vein, 1 and 7 metabolites were detected as differential metabolites between AH and CS, and between AH and RS, respectively. By comparing AH and RS, we found that metabolic pathways of phenylalanine, tyrosine, and tryptophan biosynthesis and phenylalanine metabolism were enriched by integrative artery and vein analysis. Furthermore, AH and RS, arterial phenylpropanoate and 4-hydroxyproline were positively, and phenylalanine was negatively correlated with milk urea nitrogen. Finally, in AH and CS, arterial panthenol was negatively correlated with feed efficiency. Conclusion: Arterial metabolic profiles changed more than those in the veins from animals on three forage diets, differing in amino acids. We found that phenylalanine, tyrosine, and tryptophan biosynthesis and phenylalanine metabolism were restricted when cows were fed low-quality cereal straw diets.
