학교급식소의 HACCP 시스템 적합성 검증 -가열조리 및 가열조리 후처리 공정의 미생물적 품질평가를 중심으로- (Verification of the HACCP System in School Foodservice Operations - Focus on the Microbiological Quality of Foods in Heating Process and After-Heating Process -)

  • The objective of this study was to evaluate and improve the microbiological quality of HACCP application in school foodservice operations. The microbiological quality of foods and utensils were evaluated two times at each critical control point (CCP) with 3M petrifilm in five Daegu elementary schools. Two processes were evaluated: Heating process and after-heating process. The CCPs of the heating process were receiving, cooking and serving temperatures. The CCPs of the after-heating process were personal hygiene, cross contamination avoidance and serving temperature. After the first experiment, 31 employees of five schools were classroom educated, trained on-site, and pre- and post-tested on HACCP-based sanitation with the goal of improving the microbiological quality of the foodservice. Scores representing knowledge of holding, thawing, washing, food temperature, sanitizing and food-borne illness increased after education. In the heating process, internal food temperatures in the first and second experiments were higher than 74$^{\circ}C$, the holding temperature in the first experiment was less than 6$0^{\circ}C$. In the second experiment, the serving temperature improved to a satisfactory level. The microbiological quality in the second experiment improved by decreasing the time from cooking to serving. In the after-heating process, the ingredients were boiled before being cut in the first experiment. In the second experiment, ingredients were cut before being boiled, improving microbiological quality. Also in the second experiment, cooking just before serving food improved its microbiological quality through time-temperature control. These results strongly suggest it is essential to measure microbiological quality regularly and to educate employees on HACCP continuously, especially time-temperature control and cross contamination avoidance in order to improve foodservice quality.

부산광역시 세 해수욕장 백사장에서 세균 오염도 조사 (A View of Soil Microbial Contamination on the Three Sandy Beaches in Busan)

  • Bacterial contamination of beach sand was examined in April, June, July, and August. Twenty four topsoil and subsoil samples were taken from the 1m and 5m points from the coastline in three Busan beaches (Haeundae, Gwanganli, and Songjeong). The 5m points from the coastline showed higher coliform contamination than 1 m points. July showed the highest bacterial contamination on beaches among surveyed months. Coliform contamination in the subsoil was higher than that of the topsoil. The bacterial contamination of 5m points of topsoil and subsoil in June except the Songjeong Beach was higher than those of July and August. We investigated Staphylococcus aureus, Vibrio parahaemolyticus, Vibrio vulnificus, Vibrio cholerae, and Bacillus cereus. Only B. cereus was detected at the beach in August. Although microbiological pollution of the Gwanganli Beach was the highest among three Busan beaches, the degree of contamination was not high compared to those of other countries. However, sandy soil management in public beach for pathogenic microorganisms is needed.

Evaluation of Microbiological Contamination of Water Purifiers at Two Universities in Chungcheong Region

  • The purpose of this study is to investigate microbial contamination in water purifiers from two universities (A and B) in Chungcheong region and to evaluate about the harmfulness of the isolated bacteria to the human. The degree of microbiological contamination of six water purifiers at university A was investigated three times from July 2018 to September 2019, and nine water purifiers at university B were investigated in 2023. The isolated bacteria were biochemically identified using an API kit and Vitek-2 system, and then the bacteria were identified to the species level using MALDI-TOF MS. In addition, the possibility of human infection of the isolated bacteria was evaluated through a literature search. In July 2018 and September 2019, the number of bacteria isolated inside the faucet was below the acceptable standard for hot water, but exceed for cold water in all water purifiers. In January and September 2019, bacteria exceeding the acceptable standards were isolated nine times from the cold water of six water purifies (a total of 12 water purifiers). Bacteria identified by MALDI-TOF MS included anaerobic bacteria (Clostridium novyi, Clostridium themopalmarium etc.), Gram-positive bacilli (Microbacterium testaceum, Arthrobacter woluwensis etc.), and Gramnegative bacilli (Acinetobacter nosocomialis, Comamonas kerstersii etc.), which are difficult identify by biochemical methods. In conclusion, bacteria exceeding the acceptable standard were isolated from the cold water of most of the water purifiers. Most of the isolated bacteria were low-pathogenic bacteria from natural environment, but opportunistic bacteria that can cause infection in humans were also isolated from some water purifiers.

목장형 유가공업의 미생물학적 안전성에 대한 고찰 (Microbiological Safety Concerns with Dairy Products from Farmstead Plants)

  • The consumption of natural cheese in Korea has dramatically increased since 1997. However, most of the cheeses consumed in Korea are imported. Thus, surplus milk has accumulated in Korea. To solve this problem, the Ministry of Agriculture, Food and Rural Affairs established a policy to create a farmstead dairy industry. Although the law governing the industry was established in 2016, food safety guidelines have not been prepared. Milk and cheese are prone to contamination with mycotoxins such as aflatoxin M1 and ochratoxin A, antibiotic residues such as penicillin and tetracycline, and pathogenic bacteria including Listeria monocytogenes, Escherichia coli, Salmonella, and Staphylococcus aureus. L. monocytogenes infections have a very high mortality rate; hence, special attention should be paid to preventing contamination of milk and cheese with this organism. To ensure the microbiological safety of farmstead dairy products, the HACCP model has been used. However, this model is not suitable for current processing environments of farmstead dairy products because of the small size of the operations. In addition, scientific data on the microbiological safety of farmstead dairy product are limited and are urgently needed.

  • This study was focused on the sanitary analysis of hazard factors and the establishment of critical control points on steak-set menu In hotel by the documents and microbiological investigation. The hazard factors of shrimp cocktail were microbial contamination, residual pesticides, unsuitable healing and cross contamination. The hazard factors of potato soap were residual pesticides, microorganisms contamination, unsuitable heating and solanine in potato. The hazard factors of simple salad were microorganisms contamination, unsuitable heating and cross contamination by inappropriate package. The hazard factors of steal were residual antimicrobial drugs, microorganisms contamination, unsuitable heating and cross contamination. The critical control points of shrimp cocktail were temperature control , number of washing and center temperature control of heating step. The critical control points of potato soup were stock temperature control , number of washing and center temperature control of Heating step. The critical control points of simple salad were number of washing and dryness of utensil. The critical control points of steak were stock temperature control , number of washing, center temperature and time control of heating step.

계절에 따른 길거리 제조 식품의 미생물 오염 특성 (Microbial Quality of Street Foods Sold by Season)

  • 본 연구는 대도시지역(서울, 대전, 부산, 광주)에서 판매되는 길거리 식품(김밥, 어묵, 순대)에 대한 미생물 모니터링 검사를 실시하여, 이들 제품에 대한 위생 안전성 확보를 위한 기초 자료를 제공하기 위해 진행되었다. 김밥의 총호기성균은 5.1~9.9 log CFU/g으로 검출되었으며, 여름철에 가장 높게 검출되었다. 호냉성균은 총호기성균과 유사한 패턴으로 검출되었으며, 여름철에 수거된 순대 7건에서 6.0~7.9 log CFU/g 수준으로 검출되었다. Total coliform은 53.6%의 검출률을 나타내었으며, 김밥의 70.8%에서 4.0 log CFU/g 이상 검출되었다. E. coli는 김밥과 순대에서 15건이 검출되었으며, 어묵에서는 검출되지 않았다. 식중독균중 S. aureus가 28건(7.8%)이 검출되었으며, C. perfringens는 12건(3.3%)이 검출되었다. 특히 김밥에서 S. aureus, C. perfringens가 각각 24건, 10건에서 검출되어 식중독 발생 가능성이 높은 것으로 판단되었다. 그리고 계절별로 보면 겨울에 비해 봄, 여름의 검출률이 높았으며, 지역별로 보면 부산지역에서 가장 높은 검출률을 보였다.

즉석 섭취 식품에 대한 미생물 오염 분석 (Analysis of Microbiological Contamination in Ready-to-eat Foods)

  • 본 연구에서는 대표적인 즉석섭취식품 5종(김밥, 초밥, 회, 샐러드, 샌드위치)에 대한 미생물 모니터링 검사를 실시하여, 이들 제품에 대한 위생 안전성 확보를 위한 기초자료를 제공하기 위해 진행되었다. 이를 위해 전국의 대형 백화점, 할인점, 슈퍼 등지에서 판매되는 즉석섭취식품 5종, 총 440품목을 수거하여 위생지표세균 검사 및 식중독균 검사를 실시하였다. 제품별로는 초밥이 20.4%로 가장 높은 미생물 검출율을 보였으며, 그 다음으로 13.3%의 김밥, 12.5%의 회, 6.9%의 샐러드, 2.8%의 샌드위치의 순서로 나타났다. 검출된 미생물을 살펴보면 황색포도상구균이 6.6%로 가장 많이 검출되었으며, 다음은 2.7%의 대장균군, 2.3%의 리스테리아균, 0.7%의 바실러스 세레우스균, 0.5%의 대장균 순서로 검출되었으며, 장염비브리오균과 살모넬라균은 검출되지 않았다. 검출된 황색포도상구균의 정량분석 결과는 전체적으로 $200{\sim}5,500\;cfu/g$의 분포를 보였으며, 평균적으로는 600 cfu/g을 나타내었다.

청량음료의 미생물 오염에 대하여 (On the Microbial Contamination in Softdrink Manufacturing Process)

  • The authors have investigated about the microbial contamination of goods which is a criterion of hygienic control. Conducting on investigation, a special attention has been paid on the rate of microbial contamination in the goods, especially in manufacturing process of the softdrink. The authors also made an experiment on total microbes which is the criterion of contamination in each step of the process and in raw materials together with materials to be used for subdividing. Results obtained were as follows : 1) The orgin of microbial contamination was found in bottle cap and in tap water, that is, there appeared 9 colony per ml in bottle cap and 31-74 colony per ml in tap water, respectively. 2) It was found that microbial contamination are 4 colony per ml in average through year. However, it appeared 1 colony per ml in winter and 8 colony per ml in summer. 3) Coliform groups are not detected in goods through a year. 4) There was no variation in number of total microbes after ion exchange resin passage in purification process of tap water. 5) The number of microbes in goods are decreased when the raw materials are treated in high temperature short time (HTST) sterilization.

보육시설급식소의 HACCP시스템 적용을 위한 미생물적 품질평가 I. 가열조리 및 가열조리후 처리 공정을 중심으로 (Microbiological Quality Evaluation for Implementation of a HACCP System in Day-Care Center Foodservice Operations I. Focus on Heating Process and After-Heating Process)

  • The objective of this study was to evaluate the microbiological quality of heating and after-heating processed foods for implementation of a HACCP system in day-care center foodservice operations. The evaluating points were microbial assessment and temperature of foods during receiving, cooking, and serving in heating process. In non-heating process, in addition to monitoring microbial assessment of food during preparation, cooking, and serving steps, the microbial populations of employees' hands and utensils and serving temperature were also evaluated. Microbiological quality was assessed using 3M Petrifilm$^{TM}$ to measure total plate count and coliforms for foods and utensils and Staphylococcus aureus for hands in five Gumi day-care centers. Microbiological quality assessment for foods and utensils is summarized as follows. Microbiological quality of the heating processed foods was satisfactory for cooking and serving steps. The internal temperature of food was above 74$^{\circ}C$. However, temperature control before the serving step was not achieved due to inappropriate time management between the cooking and serving steps. In the after-heating process, the total plate counts of boiled mungbean sprouts salad, blanched spinach salad, com vegetable salad were below the standard at the serving step. The majority of samples showed that coliforms exceeded the norm, which is thought to be the result of the cross-contamination from utensils. These results suggest that it is essential to educate employees on the importance of hand washing and of avoiding cross-contamination by using clean, sanitized equipment to serve food in the after-heating process. Establishing Sanitation Standard Operating Procedures (SSOPs) is an essential part of any HACCP system in day-care center foodservice operations.

편의점 판매용 김밥 도시락 생산 및 유통과정의 품질개선을 위한 연구 (The Improvement of the Sanitary Production and Distribution Practices for Packaged Meals (Kim Pab) Marketed in Convenience Stores Using Hazard Analysis Critical Control Point (HACCP) system)

  • Time-temperature relationship and microbiological quality were assessed and critical control points were identified through hazard analysis during the phases of production in two different packaged meals (Dosirak) manufacturing establishments (A, B:Kim Pab). Microbiological tests on foods, equipments and utensils were done according to standard procedures and included total plate count, coliforms and fecal coliforms. The results of the study are summarized as follows : time-temperature control management was needed because time-temperature abuse more than 8 hours at dangerous temperature zone (5-6$0^{\circ}C$) was observed from pre-preperation to distribution phase; Poor sanitary practices of employees were observed in hand washing and using disposable gloves; Microbiological analysis results of equirpments and utensils showed possible cross-contamination risks when foods were contacted with them; Kim Pab needed thorough quality control because it included various mixed ingredients of cooked and uncooked and had many apportunities of cross-contamination either by equipments or hands through whole production processes.
