Changes in Physio-Chemical Properties of Deer Meat Cold Storage at 4°C and -2°C (냉장저장중 사슴고기의 이화화적 성질의 변화)

  • A total of 5 female elk dEER $(220kg\pm10kg)$ were included in a study on the changes in physicochemical properties of deer meat during storage at $4^{\circ}C\;and\;-2^{\circ}C$. The deer was exposed to normal pre-slaughter handling and put under anesthesia before slaughtered. The loin and leg cuts were deboned from the carcass after 24hrs slaughter. The samples weighing approximately 300g were packaged using wrap packaging and stored for 3, 7, 11 and 15 days at $4^{\circ}C\;and\;-2^{\circ}C$. Water-holding capacity was decreased with increasing storage days at $4^{\circ}C\;or\;-2^{\circ}C$, respectively The deer meats kept at $-2^{\circ}C$ showed lower TBARS value than the meats kept at $4^{\circ}C$, and it was possible to extend the storage period of the meats. VBN values of the meats kept at $4^{\circ}C\;and\;-2^{\circ}C$ showed as edible values after storage for 15 days, although there were no significant differences among the storage temperature. pH values of loin and leg tended to be increased with the passage of storage time, and the values of the meats kept at $-2^{\circ}C$ was lower than that at $4^{\circ}C$. The change of meat softness was remarkable at $4^{\circ}C$, and the change at $-2^{\circ}C$ was slow. Therefore, it was effective to extend the storage period when the meats were kept at $-2^{\circ}C$. Color of the meats kept at $-2^{\circ}C$ was darker than that at $4^{\circ}C$, the index of red color was higher for the meats kept at $-2^{\circ}C$, and yellow color of meats kept at $-2^{\circ}C$ was more rapidly changed with the passage of storage time.

Effects of Starter Cultures on the Quality Traits of Electron Beam Irradiated Fermented Meat during Aging (전자선 조사된 원료육과 Stater Culture의 사용이 발효육의 숙성 중 품질에 미치는 영향)

  • The microbiological and physicochemical properties of irradiated (2 kGy) or non-irradiated fermented meats processed with or without a commercial starter culture were evaluated during fermentation and aging. The pH of irradiated (2 kGy) fermented meats with starter cultures dramatically decreased during fermentation and aging (p<0.05), and the final pH was 4.25. The total aerobic counts and lactic acid bacteria counts reflected the addition of the starter culture. As the fermentation progressed, the total aerobic counts closely paralleled the lactic acid bacteria counts. The TBARS values of irradiated fermented meats increased regardless of the treatment during fermentation and aging. These results show that the irradiated(electron-beam) meat/fat resulted in the reduction of the total microbes and survives lactic acid bacteria. The use of starter cultures in meat batters post-irradiation may be useful for the production of fermented meats.

Antibiotic Resistance and Virulence Potentials of Shiga Toxin-Producing Escherichia coli Isolates from Raw Meats of Slaughterhouses and Retail Markets in Korea

  • In this study, the prevalence of Shiga toxin-producing Escherichia coli (STEC) was investigated among raw meat or meat products from slaughterhouses and retail markets in South Korea, and their potential for antibiotic resistance and virulence was further analyzed. A total of 912 raw meats, including beef, pork, and chicken, were collected from 2008 to 2009. E. coli strains were frequently isolated in chicken meats (176/233, 75.9%), beef (102/217, 42.3%), and pork (109/235, 39.2%). Putative STEC isolates were further categorized, based on the presence or absence of the Shiga toxin (stx) genes, followed by standard O-serotyping. Polymerase chain reaction assays were used to detect the previously defined virulence genes in STEC, including Shiga toxins 1 and Shiga toxin 2 (stx1 and 2), enterohemolysin (ehxA), intimin (eaeA), STEC autoagglutination adhesion (saa), and subtilase cytotoxin (subAB). All carried both stx1 and eae genes, but none of them had the stx2, saa, or subAB genes. Six (50.0%) STEC isolates possessed the ehxA gene, which is known to be encoded by the 60-megadalton virulence plasmid. Our antibiogram profiling demonstrated that some STEC strains, particularly pork and chicken isolates, displayed a multiple drug-resistance phenotype. RPLA analysis revealed that all the stx1-positive STEC isolates produced Stx1 only at the undetectable level. Altogether, these results imply that the locus of enterocyte and effacement (LEE)-positive strains STEC are predominant among raw meats or meat products from slaughterhouses or retail markets in Korea.

  • This study was carried out to compare the quality of imported chicken breast meats with domestic esse. In the proximate analysis. Thai chicken breast meats showed the highest content of tile crude protein(P<0.001), and the lowest contents of the crude fat and moisture. KAB(breast meat purchased at Korean traditional market) were higher. In total plate counts and in E. coli than other (P<0.001). and showed the highest TBARS value. In the descriptive analysis for the fresh meats. Thai chicken showed the highest acceptability score. In the results of cooked meat. KAB showed the highest acceptability score.

Assessment of Dipping Treatment with Various Lactic Acid or Sodium Benzoate Concentrations to Extend the Shelf-life of Spent Hen Breast Meats

  • This study was conducted to investigate the effect of immersion treatment using lactic acid (LA) and sodium benzoate (SB) on the physicochemical quality and freshness of spent hen breast meats. A total of 135 spent hen breast meats were subjected to 9 different treatments using various concentrations of LA and/or SB in sterile DW. The 9 treatment groups were as follows: Control, sterile DW without LA or SB; T1, 1% LA; T2, 2% LA; T3, 4% LA; T4, 1% LA and 0.1% SB; T5, 2% LA and 0.1% SB; T6 2% LA and 0.2% SB; T7, 2% LA and 0.4% SB; T8, 4% LA and 0.2% SB, respectively. All groups were kept at 4oC for 15 d. The microbial counts in the control group gradually increased during storage, but those for the treated groups were significantly lower than the control or were not detected. The pH values of the control were significantly higher than those of the treated groups (p<0.05). In the color measurements, the lightness ($L^*$) and yellowness ($b^*$) values increased during storage and the redness ($a^*$) values decreased (p<0.05). The K-value and volatile basic nitrogen of the treated groups were significantly lower than those of the control group (p<0.05). Overall, the combined results of this study indicate that LA and SB could be used as favorable preservatives for spent hen breast meats to extend their shelf-life during refrigerated storage.

Prediction of Bind Values of Raw Meats by Examination their Compositions and Functionalities (원료육의 성분 및 기능성 규명을 통한 결착지수의 추정)

  • This study was carried out to estimate the bind values of raw meats which are used as an input constaint in the least-cost formulation of an emulsion-type sausage. The least-cost formulation will be useful for Korean meat processore to produce more effectively as meat-grade system is put in force. The analysis results in compositions, functionalities, and pigment contents of raw meats were various according to the difference of species and their parts. The cohesiveness was correlated positively with moisture or protein content and negatively with fat content. Consequently two multiple regression equations for bind value could be derived from the compositions of raw meats. The equations then may be useful for predicting the bind value of a raw meat which presently has not been analysed.

Predicting the Contamination of Listeria Monocytogenes and Yersinia enterocolitica in Pork Production Using Monte Carlo Simulation (몬테카를로 시뮬레이션을 이용한 돈육 생산공정에서의 Listeria monocytogenes 및 Yersinia enterocolitica의 오염수준 예측)

  • Monte Carlo simulation was used to predict the contamination levels of Listeria monocytogenes and Yersinia enterocolitica in final pork products. Mean values of the estimated log contaminated levels of L. monocytogenes on carcasses, cut meats, and cut meats after storage were -4.59, -4.46 and -4.45 $log_{10}CFU/cm^2$ respectively. The mean values of estimated log contaminated levels of Y. enterocolitica on carcasses, cut meats, and cut meats after storage were -3.44, -4.00 and -3.97 $log_{10}CFU/cm^2$, respectively. Sensitivity analysis showed that L. monocytogenes and Y. enterocolitica in pork was most sensitive to the prevalence of L. monocytogenes and Y. enterocolitica in the equipment used.

Protein Nutritional Qualities of Fish Meat Extracts and Their Residues (양식어류 고음과 잔사의 단백질 품질평가)

  • To confirm the food quality of conventionally processed fish extracts, protein quality of boiled crucian carp(Carassius carassius) and bastard halibut(Paralichthys olivaceus) extracts and their residues were evaluated. For the both fish extracts, some of the essential amino acids were lowered significantly but two times more proline and glycine were detected in extracts than those in raw fish meats. Boiling(100oC, 5 hours) caused 1.8(crucian carp)~2.4(bastard halibut) times more total free amino acid contents in fish extracts as compared to those in original fish meats. Taurine, glutamic acid, proline, lysine, and ammonia were the predominant free amino acids released in fish extracts. In vitro digestibility of boiled fish extracts were lower at a level of 4~6% than those of raw fish meats. Fish extraction residue had a higher in vitro digestibility and had a 60% lower level of TI than that of original fish meats. 18(bastard halibut)~ 24%(crucian carp) of available lysine was reduced in boiled fish extracts but a remarkable variation was not noted between extracts and residues. PERs and NPRs of fish extracts were significantly lower than those of casein, while those values of extraction residue were slightly higher as compared to those of control(ANRC casein). In vivo apparent digestibility exhibited a similar trend to in vitro digestibility. Hematological properties in serum of rat fed with fish extracts and residue were not changed significantly but the serum cholesterol concentration were reduced in rats fed fish extraction residue comparing with those of control. These results suggest that body weight loss due to fish extracts may not affect physiological changes.

Variation in the Estimated Value of Dietary Pb Intake among the General Korean Population: Domestic Research from 2008 to 2018 (일반인의 납 경구섭취량의 경시적 변화: 2008-2018년 국내자료를 중심으로)

  • Objectives: The study aims to examine the variation over roughly the past 10 years (from 2008 to 2018) in the estimated daily dietary Pb intake (Pb-D) based on the variations of daily intake amount and Pb content in respective food groups. The following factors were considered: (1) variation of estimated value of Pb-D, (2) Pb contents in each food group and (3) the most influential food group for dietary Pb intake. Methods: Estimated values of Pb-D were taken from food consumption by the food groups reported in the Korean National Health and Nutrition Survey and the Pb content of each food group as reported in 19 previous publications. Variation from 2008 to 2018 of Pb intake was calculated from daily intake amount and Pb content in each food group. Results: The survey showed that main Pb intake sources were the food groups 'meats and poultry' and 'fish and shellfish'. These food groups showed gradually increased Pb exposure from 2008 to 2018. Estimated daily Pb intake was 42.18 to 57.68 ㎍/day for men and 30.97 to 42.54 ㎍/day for women. Both men and women showed slightly increased dietary Pb intake from 2008 to 2018. The food groups 'meats and poultry' and 'fish and shellfish' proved the highest Pb intake food groups. Estimated Pb intake from 'meats and poultry' was 8.47 to 12.98 ㎍/day and that of 'fish and shellfish' was 5.63 to 10.10 ㎍/day. Conclusion: Over the past ten years, daily Pb intake has slightly increased in men and women. The food groups 'meats and poultry' and 'fish and shellfish' might be the main variation factors of Pb intake.
