A Survey of Food and Nutrient Intakes of Korean Women by Age Groups (한국 여성의 연령별 식품 및 영양소 섭취량 조사)

  • To study the level of change in food and nutrient intake among different age groups, a dietary survey using the 24-hour recall method was conducted among 80 female elementary school children, 84 high school students, 100 adults from 25 to 35 years old and 120 elderly people over 60 years of age. The results of the study showed that plant food and total food intake were higher in adults and animal food intake was significantly higher in children. The percentage of plant food to total food intake was highest in the elderly and that of animal food to total food intake was highest in the children. The elderly consumed significantly less meat and poultry and more fish than the other groups. However, the children consumed significantly higher amounts of milk and dairy products. The elderly had the lowest Ca intake. Carbohydrate energy intake in the elderly was 70.3%, significantly higher than that for the other age groups. All of the age groups consumed a quantity of Ca below the Korean RDA and 77.5% of the elderly consumed an amount below 75% of the RDA. Nutrient adequacy ratio (NAR) of most nutrients was lowest in the elderly. Mean adequacy ratio (MAR), an index of overall dietary quality, was 0.88 for the children, 0.84 for the adolescents, 0.80 for the adults, and 0.70 for the elderly. Therefore, the results show that food and nutrient intake changes with advancing age, and the overall quality of the diet of elderly people is lower than that for the other age groups.

Reducing Veterinary Drug Residues in Animal Products: A Review

  • A survey we conducted suggests that the ingestion of veterinary drug residues in edible animal parts constitutes a potential health hazard for its consumers, including, specifically, the possibility of developing multidrug resistance, carcinogenicity, and disruption of intestinal normal microflora. The survey results indicated that antibiotics, parasitic drugs, anticoccidial, or nonsteroidal anti-inflammatory drugs (NSAIDs) are broadly used, and this use in livestock is associated with the appearance of residues in various animal products such as milk, meat, and eggs. We observed that different cooking procedures, heating temperatures, storage times, fermentation, and pH have the potential to decrease drug residues in animal products. Several studies have reported the use of thermal treatments and sterilization to decrease the quantity of antibiotics such as tetracycline, oxytetracycline, macrolides, and sulfonamides, in animal products. Fermentation treatments also decreased levels of penicillin and pesticides such as dimethoate, malathion, Dichlorodiphenyldichloroethylene, and lindane. pH, known to influence decreases in cloxacillin and oxacillin levels, reportedly enhanced the dissolution of antimicrobial drug residues. Pressure cooking also reduced aldrin, dieldrin, and endosulfan in animal products. Therefore, this review provides updated information on the control of drug residues in animal products, which is of significance to veterinarians, livestock producers, and consumer health.

Effects of Dietary Proteins on Serum Insulin-like Growth Factor-I (IGF-I) and IGF-Binding Protein-3 in Korean Rockfish, Sebastes schlegeli (사료의 단백질이 조피볼락 혈액중 Insulin-like growth factor-I (IGF-I) 및 IGF-binding protein-3에 미치는 영향)

  • Insulin-like growth factor-I (IGF-I) is a mitogenic peptide with a molecular mass of 7 kDa. It is produced mainly in the liver and has important functions in the regulation of development and somatic growth. Moreover, Serum IGF-I concentration is regulated by the quantity and the nutritional quality of dietary protein. To determine the IGF-I level in Korean rockfish, Sabastes schlegeli, were fed four experiment diets that contained different protein quantities, namely $30\%,\;40\%,\;50\%\;and\;60\%$ for 70 days. Weight gain of the fish increased depending dietary protein quantity, Also, IGF-I concentrations increased according to dietary protein quantity, Feeding experiments were conducted to examine the effects of dietary protein sources on the serum IGF-I level in Korean rockfish, Fish meal (CO), soybean meal (SM), corn-gluten meal (CGM), meat meal (MM) and feather meal (FM) were used as variable protein sources of the formulated diet. IGF-I concentrations of the CO and MM groups ($277.7\pm23.2,\;291.5\pm41.2\;ng/mL$) were higher than those of the CGM and FM groups ($208.9\pm21.3,\;217.2\pm38.2\;ng/mL$). And IGFBP-3 levels by western blot analysis increased in good protein diets such as in the CO and MM groups. In conclusion, IGF-I may be a sensitive indicator the protein metabolism in fish as well as mammalian.

Effect of Irradiation and Packaging Methods on the Oxidation of Cholesterol in Raw and Cooked Chicken Leg Meat (방사선 조사 및 포장방법이 생계육 및 조리계육의 콜레스테롤 산화에 미치는 영향)

  • Chicken thigh from a retail market were used as experimental samples. Some chicken samples of raw state were packaged with PVDC at an aerobic and vacuum condition. The other samples were cooked until core temperature arrived at 70$^{\circ}C$ and then packaged immediately in the same way of raw samples. After samples were irradiated by electron beam at 6 kGy, they were stored in a refrigerator. Identification and quantity of cholesterol oxides were made at 0 and 7 days of storage, respectively. During the early stage of storage, 7$\beta$-hydroxycholesterol, $\alpha$,$\beta$-epoxide, cholestanetriol and 7-ketocholesterol were produced from the raw meat samples, and the production of these chemicals were significantly higher(P〈0.05) from the samples with aerobic packaging than those with vacuum packaging. With storage time, 7$\alpha$-hydroxycholesterol, 6-ketocholesterol and some other chemicals, which were not found during the early stage of storage, were found. Also, the formation of these chemicals were significantly increased(P〈0.05) with storage time. Cholesterol and lipid oxidation products of cooked meat after irradiation and irradiated meat after cooking were significantly increased(P〈0.05) with storage time for all treatments, and vacuum packaging results in showed significantly lower value(P〈0.05) than aerobic packaging. Summarizing the aforementioned results, it was found that the formation of cholesterol and lipid oxides and lipid oxidation was more easily affected by packaging condition than irradiation.

SUITABILITY OF SHELLFISHES FOR PROCESSING 1. Suitability of Baby Clam for Processing (패류의 가공적성 1. 바지락의 가공적성)

  • It is matter of fact processing technology must affects the quality and yield of final product and these also depend on the selection of raw material directly or indirectly. So that the estimation of tile preprocessing condition of shellfish is of great importance for distributors and processors. This study was attempted to establish the basic data for evaluating the processing suitability of baby clam, which is one of the five important shellfishes for domestic use and export. The important results are as follows: 1. The ratio of meat volume and meat weight to the holding capacity by shells may be useful for measuring the condition index of baby clams. 2. Baby clams grown in the beds with the composition of a large quantity of gravel were low in condition index value than in sand and mud. 3. If the green feed phenomenon was the prime consideration for canned baby clams, tile most suitable harvest season if October. In this period, the digestive tract in body was almost colorless. 4. As a whole, seasonal changes of moisture and fat content in baby clams were reversely correlated. Protein content increased from April and slightly decreased for a while from July to August and increased again from September. In March, the content of glycogen was 6.3 to 6.8 percent. From this period to October, glycogen was rapidly decreased. In October, it was only 0.1 to 0.2 percent but increased from November. There were little seasonal changes in pH value and crude ash content. The pH value of meat was 6.0 to 6.2 and crude ash content was about 2 percent. 5. By the results of condition index and chemical composition of baby clams, the suitable harvest season as raw materials for processing was from March to June and from September to October. 6. The steamed baby clam meat was packed with 2 percent salt solution containing 0.15 percent, citric acid or 0.5 percent $Na_2$ EDTA in a round sanitary tin can coated with C-enamel that is 203.9 ml by volume and sterilized for 60 minutes at $112^{\circ}C$. The canned product has shown a good result to reserve the natural characteristics of baby clam through six month storage at room temperature.

Effects of Roughage Feeding Type during the Growing and Early-Fattening Periods on Growth Performance, Feed Efficiency and Carcass Characteristics in Holstein Steers (육성 및 비육전기의 조사료 급여형태가 홀스타인 거세우의 성장 발육, 사료이용성 및 도체특성에 미치는 영향)

  • Twenty four Holstein steers fed commercial concentrates with rice straw(T1), mixed grass hay(T2), or wet brewer’s grains based TMR ad libitum(T3) were used to investigate the effects of roughage feeding type during the growing and early-fattening periods on growth performance, feed efficiency and carcass characteristics. Growth performance and feed efficiency were investigated during the feeding trial conducted from 6 to 23 mo of age, and carcass characteristics were investigated after slaughter. Body weight at slaughter and daily gains were 751 to 802 kg(mean 782 kg) and 1.064 to 1.159 kg/d(mean 1.122 kg/d), respectively, showing that those for T2 were highest followed by T3. Compared with T1, the daily gain for T2 was improved by 8.9%. The TDN intakes per kg gain were 6.87, 7.17 and 7.15 kg for T1, T3 and T2, respectively, indicating that feed efficiency for T2 was improved(approx. 5%) compared with T1. The feeding treatments did not change dressing percentage(mean 60.8%), back fat thickness(6.68 mm) and rib-eye area(84.0$cm^2$). Neither meat quality characteristics nor physicochemical properties were significantly different among the treatments. However, economic analysis accounting for 882.8, 991.7 and 943.8 thousand won per head for T1, T2 and T3, respectively, indicated that T2 and T3 increased(7-12%) total net income compared with T1. Therefore, it may be concluded that high quality meat of Holstein steers can be produced if they are fattened until 23 mo of age and that feeding mixed grass hay as roughage or TMR containing mainly wet brewer's grains during the growing and early-fattening periods can improve growth performance compared with feeding rice straw.

  • The tzeam is the one of steaming cook that boiled the main material of poultry. meat and the sub-material of vegetables. It is always setted on the main-table in above seven chup ban sang and also kyoja sang. In this thesis, according to the kinds of tzeam in the main material of poultry, meat was to analysis reference frequency to them the materials, the measuring unit of materials, the terms of cooking and kitchen utensil by 47 books published in Korea from 1420 to 1987. 1. It was 37 kinds of tzeam in the main material of poultry, meat. 2. Materials were classified into the main-material, sub-materials, seasioning and decorations. 3. There were 43 kinds of measuring units, of them 18 kinds were for volume, 12 kinds were for quantity, 4 kinds were for length and the rest measuring units were 9 kinds. 4. There were 26 kinds of kitchen utensil for cooking. They were mainly used a hab 1 rice ball with lids, and castles (cast iron castle). 5. There were 27 kinds of cooking terms. The terms of them, 11 kinds were for heating methods, 16 terms of them were for the cutting process.

Effects of Supplementation Period and Levels of Fermented Mineral Feed(Power-Mix(R)) on the Growth and Carcass Characteristics of Hanwoo Steer (무기물 사료(Power-Mix(R))첨가 급여 기간과 수준이 거세한우의 육량 및 육질에 미치는 영향)

  • This study was carried out investigate the effects of the period of dietary supplementation and the level of fermented mineral feed on daily body weight gain and carcass characteristics of Hanwoo steer. The dietary treatments were compared during two supplementation periods (T1:Feeding Hanwoo steers from 18 months to 25 months, T2: feeding Hanwoo steers from 7 months to 25 months), and the diets tested were of four types (0%: normal concentrate as a basal diet, 1%: 1% addition of fermented mineral feed, 2%: 2% addition of fermented mineral feed, and 3%: 3% addition of fermented mineral feed). A Total of 35 Hanwoo steers were allocated into 7 feeding groups. The daily gain of the 0% fermented mineral feed group was lower (0.64 kg) than that of the other groups (1%: 1.08 kg, 2%: 0.90 kg, 3% treatment: 0.75 kg) for the T1 period, and for the T2 period the order was 1% (0.98 kg) > 0% (0.75 kg) > 1% (0.89 kg). The amount of back fat in decreasing order was as follows: 0% (12.0) > 1% (10.8) > 2% (10.2) > 3% fermented mineral feed (7.8 mm) for the T1 period, and for the T2 period the order was C (16 mm) > T1 (13.8 mm) > T3 treatment (12.6 mm). Eye muscle area increased with increased fermented mineral feed levels. The marbling score of the T1 groups was highest with 3% fermented mineral feed (4.2), and of the T2 groups, the highest score was seen with 1% fermented mineral feed (5.6). Meat color and meat maturity were not different among all groups. The grade of meat quantity and meat quality of both the T1 and T2 groups were highest with the addition of 3% fermented mineral feed. The daily income ranged from 2,062 won to 5,265 won in the T1 groups, which were ordered as follows: 1% > 2% > 3% > 0% fermented mineral feed, and of the T2 groups, the 1% group was highest at 6,098 Won, while the 3% group was lowest at 4,590 Won.

National Genetic Evaluation (System) of Hanwoo (Korean Native Cattle)

  • Hanwoo (Also known as Korean native cattle; Bos taurus coreanae) have been used for transportation and farming for a long time in South Korea. It has been about 30 yrs since Hanwoo improvement began in earnest as beef cattle for meat yield. The purpose of this study was to determine the trend of improvement as well as to estimate genetic parameters of the traits being used for seedstock selection based on the data collected from the past. Hanwoo proven bulls in South Korea are currently selected through performance and progeny tests. National Hanwoo genetic evaluations are implemented with yearling weight (YW), carcass weight (CW), eye muscle area (EMA), backfat thickness (BF) and marbling score (MS). Yearling weights and MS are used for selecting young bulls, and EMA, BF, and MS are used for selecting proven bulls. One individual per testing room was used for performance tests, and five individuals per room for progeny tests. Individuals tested were not allowed to graze pasture, but there was enough space for them to move around in the testing room. Feeds including roughages and minerals were fed ad libitum, and concentrates were provided at the rate of about 1.8% of individual weight. Overall means of the traits were $352.8{\pm}38.56$ kg, $335.09{\pm}44.61$ kg, $77.85{\pm}8.838\;cm^2$, $8.6{\pm}3.7$ mm and $3.293{\pm}1.648$ for YW, CW, EMA, BF and MS. Heritabilities estimated in this study were 0.30, 0.30, 0.42, 0.50 and 0.63 in YW, CW, EMA, BF and MS, respectively, which are similar to results from previous research. Yearling weight was 315.54 kg in 1998, and had increased to 355.06 kg in 2011, resulting in about 40 kg of improvement over 13 yrs. YW and CW have improved remarkably over the past 15 yrs. Breeding values between 1996 and 2000 decreased or did not change much, but have moved in a desirable direction since 2001. These improvements correspond with the substantial increase in use of animal models since the late 1990s in Korea. Hanwoo testing programs have practically contributed to the improvement in aspects of quality and quantity. In sum, the current selection system is good enough to accommodate circumstances where fewer sires are used on many more cows. Although progeny tests take longer and cost more, they seem to be appropriate under the circumstances of the domestic market with its higher requirement for better meat quality. Consequently, accumulative data collection, genetic evaluation model development, revision of selection indices, as well as cooperation among farms, associations, National Agricultural Cooperative Federation, universities, research institutes, and government agencies must be applied to the Hanwoo selection program. All these efforts will assist the domestic market to secure a competitive position against imported beef under Free Trade Agreement trade system and will provide farmers with higher profits as well as the public with a higher quality of beef.

Effect of Measured Energy Restriction and Age Intervals on Growth, Nutrient Digestibility, Carcass Parameters, Bone Characteristics and Stress in Broiler Breeders during the Rearing Period

  • This study aimed at targeting fixed increases in body weight (100 g/wk) by quantitatively regulating energy allowances (ME) in broiler breeders from 5 to 20 wks of age. Four energy regimes were tested: 1. The energy required for maintenance, activity and growth was calculated for 100 g increases in body weight/wk and a measured quantity of grower diet (160 g protein and 2,600 kcal ME/kg) was offered to the control group (ME-100) to achieve the anticipated weight gain. The energy allowances increased with age from 132 to 294 kcal/d. 2. Additionally, three energy regimes were considered, quantitatively reducing ME by 10% (ME-90) or 20% (ME-80) and increasing by10% (ME-110) over the control group. Each test group had 23 replicates5 female chicks housed in cages. The influence of energy regimes and age on growth, nutrient digestibility, carcass attributes, bone parameters and stress was evaluated at 4 wk intervals. Quantitative ME restriction by 10% (119-265 kcal/d) produced an average weight gain of 98.1 g/wk, which was closer to the targeted increase of 100 g/wk, whereas the control group attained it nine days earlier. Restriction of energy by 10 or 20% produced better conversion efficiency of feed, energy and protein and apparent digestibility of protein, Ca and P than 10% excess ME. Energy regimes did not influence eviscerated meat yield, but higher energy allowances (ME-110) significantly increased abdominal fat pad and liver weights and decreased giblet weight, percent muscle protein and tibia ash. Relatively higher stress was recorded in ME-restricted groups, as reflected by wider heterophil and lymphocyte ratios and increased bursa weight. Early age (5-12 wk) significantly influenced bone mineralization, conversion efficiency of feed, energy and protein and apparent digestibility of protein, Ca and P, while later ages (13-20 wk) increased eviscerated meat yield, abdominal fat, tibia weight and muscle protein and reduced stress. Energy regime x age interactions were significant and are discussed. In conclusion, the synthetic broiler line used in our study responded positively to controlled energy feeding during the rearing period. Breeders offered 119-265 kcal/d, a reduction of 10% energy over the control group, were more effective in regulating grower performance than the latter. In addition to energy regimes, age intervals also exhibited significant influence on specific parameters during the grower phase.
