Possible Use of the Animal By-product Mixture as n Dietary Fish meal Relpacer in Growing Common Carp (Cyprinus carpio) (잉어 사료에 있어 축산 가공 부산 혼합물의 어분 대체 가능성)

  • This study evaluated the possible utilization and the replacing range of animal by-product mixture (ABPM) as a dietary fish meal replacer in growing common carp (Cyprinus carpio). ABPM is a mixture of leather meal, meat and bone meal, blood meal and squid liver powder at a specific weight based ratio. Five different diets were formulated on isonitrogenous and isocaloric basis of $40\%$ crude protein and 15.3 KJ/g diet in which white fish meal (WFM) protein was substituted with the ABPM Protein as follows: diet 1, $100\%$ WFM ($0\%$ ABPM, control); diet 2, $75\%$ WFM+$25\%$ ABPM ($25\%$ ABPM); diet $3,\;50\%$ WFM+$50\%$ ABPM ($50\%$ ABPM); diet 4 $25\%$ WFM+$75\%$ ABPM ($75\%$ ABPM); diet $5.0\%$ WFM+$100\%$ ABPM ($100\%$ ABPM). As the dietary protein sources, each diet contained $34.7\%$ of animal protein supplied by white fish meal and/or ABPM and $65.3\%$ of plant protein. After one week of conditioning period, fish averaging 10 g were randomly assigned to each diet treatment as triplicate groups and fed one of the experimental diets for 12 weeks. Weight gain of fish fed diet 1 (control) and 3 were significantly higher than those of fish fed diet 2, 4 and 5 during the first 4 weeks (P< 0.05), while there were no significant differences among all diet groups during the third 4 weeks (P>0.05). Feed conversion ratio of fish fed diet 1 was significantly higher than those fed diet 2, 3, 4 and 5 during the second 4 weeks (P<0.05), while there were no significant differences among all diet groups during the first and the third 4 weeks (P<0.05). There were no significant differences in proximate analysis among fish fed the experimental diets either for the second 4 weeks or the third 4 weeks (P>0.05). These results indicated that ABPM could be used as a fish meal replacer up to $100\%$ in growing common carp.

Studies on the Folic Acid and Methionine Requirements for Young Broiler Chicks Including New Analytical Methods for Folic Acid in Poultry Feedstuffs (가금 원료사료의 새로운 엽산 분석방법과 어린 육계의 엽산과 메티오닌의 요구량에 관한 연구)

  • In Experiment 1, microbial assays were conducted on 57 feed ingredient samples to determine the content of total folic acid using Lactobacillus casei(ATCC 7469). Folic acid contents of feed samples pretreated with conjugase, ${\alpha}$-amylase, and a mixture of protease(Pronase)were corn, 09${\pm}$1.18($\pi$g${\pm}$SD); fish meal, 23.05${\pm}$1.27; milo, 29.34${\pm}$0.55; bakery meal, 25.80${\pm}$6.93; meat and bone meal, 56.76${\pm}$4.97; wheat middlings, 85.14${\pm}$2.56; and soybean meal, 193.97${\pm}$3.98. Experiments 2 and 3 were conducted to determine the effects of dietary supplemental folic acid and methionine on the performance of starting broiler chicks for 18 days. Four levels of dietary folic acid(0.24. 0.54,1.14 and 2.34mg/kg) and four levels of dietary methionine(0.45, 0.53,0.61, and 0.69%) were fed in a factorial design. The basal diet was based on corn, isolated soybean protein, meat and bone meal, and fish meal. It contained adequate amounts of all nutrients except methionine and folic acid in both experiments. Increased growth rate was observed in chicks fed the basal diet supplemented with either folic acid or methionine. Total dietary folic acid and methionine plus cysteine requirements for optimum growth were estimated to be 1.80 mg/kg and 0.89% in Experiment 2, and 1.47 mg/kg and 0.91% in Experiment 3, respectively. There were interactions between dietary folic acid and methionine on weight gain in both experiments. Chicks fed diets containing 2.34 mg folic acid /kg tended to display slow growth rate in both experiments. There was a significant linear feed conversion response to folic acid in Experiment 2, and a significant quadratic feed conversion resuonse to methionine in Experiment 3. There were both linear and quadratic liver folic acid responses to dietary folic acid in both experiments. There was no indication that dietary methionine had any effect on liver folic acid content. The incidence of tibial dyschondroplasia increased with increasing supplemental methionine, but were no significant differences detected at 5% level.

  • To analyze dialy meal of royal meal, studied Jook Soora Sang (Rice Gruel), Mieum Sang (Thin Gruel) and Bankwa Sang, Soora Sang in Hyun Neung Won were on record Wonheng Ulmyo Jungri Euigwae (1795). Historic book ‘Jungri Euigwae’ described the king's visit to his father's royal tomb‘ Hyun Neung Won’, during the domain of Cheung Jo, the 22nd king of Choson Dynasty. The results obtained from this study are as follows. Rice Gruel (Jook Soora Sang), taken before breakfast, was arranged the same as the Soora Sang. The table for thin gruel (Mieum) was arranged in three kinds of sets; one for thin gruel, the others for stewed meat (Goem) and sugared fruit (Jeong Kwa). The diet seems to have been quit scientific and restorative. Bankwa Sang and Soora Sang in Hyun Neung Won was arranged the same as the other Bankwa Sang and Soora Sang. Therefore setting the table of royal meal had a rule.

Meal Preference on the School Food Service of Middle School Students in Gwangju and Chollanamdo Area (중학생의 학교급식에 대한 음식기호도 - 광주ㆍ전남지역을 중심으로 -)

  • A survey on meal preferences from 693 middle school students was conducted with the objective to enhance the quality of the school food service in Gwangju and the Chollanamdo area. Data were collected by questionnaires and analysed with the SAS program. The most preferred rice was cooked rice; the most unusual meal preference was laver rice; and the most-liked bread was sweet red bean jam bun. The noodle of choice was Tchajangmyon, and the most-liked rice cake was reasoned bar rice cake. The highest ranted korean soups were boiled fish paste soup, kimchi stew, and short rib sour. The most preferred fried meal included fried beef with sweet and sour sauce, and favorite side-dishes were seasoning vinegar squid and kimchi. Yogurt and strawberry were the preferred desserts. A gender difference in preferred foods was seen. The males tended to favor rice with blackish bean sauce, dumpling soup, beef bean curd soup, beef soup, short rib soup, beef bone and tripe soup, hot shredded beef soup, chopped roast chicken, pork roast, roast meat, steamed pork short-ribs, fried port, fried ham, sausage, milk, and yogurt. Males were partial to staple foods and side dishes, The, females favored laver rice, seasoned bar rice cake, bean sprouts soup, fried squid ring, seasoned cucumber, seasoned bean sprouts, fried kimchi, fruits salad, corn salad and citrus fruits. Females tended to choose lighter meals. Meal preference according to residential area showed that, students in Gwangju had more preferences than students in the Chollanamdo area. Classified according to grades, third graders had the greatest meal preference.

Evaluation of Soybean Meal or Feather Meal as a Partial Substitute for Fish Meal in Formulated Dists for Fat Cod (쥐노래미 사료의 어분 대체 단백질원으로서 대부박 및 우모분의 이용성)

  • This study was performed to determine the level of soybean meal (SM) or feather meal (FM) that could substitute for fish meal in fat cod(Hexagrammos otakii Jordan et Starks) diet. A control diet with fish meal as protein source was included. The amount of 5, 10, 15 and 20% of SM or FM substituted for fish meal in the control diet, respectively. Amino acids supplementation in the 20% SM diet was compared. In addition, combination of 5% SM, 5% corn gluten meal, 5% meat meal, 5% blood meal and 5% FM was substituted for fish meal in the control diet. Duplicate groups of the 40 fish averaging 21g were fed one of 11 isoproteic (45%) and isolipidic (15%) experimental diets to satiation twice a day for 2 months. No significant differences were found among fish fed the control, substituting up to 20% SM or 10% FM in weight gain, feed efficiency, daily feed intake, and protein efficiency ratio (P>0.05). It is concluded that SM or FM can be used as a partial substitute for fish meal up to 20% or 10% in the control diet, respectively.

Evaluation of Soybean Meal as a Partial Substitute for Fish Meal in Formulated Diets for Korean Rockfish, Sebastes schlegeli (조피볼락 사료의 어분 대체 단백원으로서 대두박 평가)

  • This study was designed to determine the level of soybean meal (SM) that could be substituted for fish meal in the diet for Korean rockfish (Sebastes schlegeli). A control diet with white fish meal as only protein source was included, SM was substituted at levels of $5\%,\;10\%,\;15\%,\;and\;20\%$ for portions of the fish meal in the diet. Amino acids (met+lys) supplementation and two different SM particle sizes (0.5 mm and 0.25 mm) in the $20\%$ SM diet were compared. In addition, combination of $10\%$ SM, $10\%$ corn gluten meal (CGM) and $10\%$ meat and bone meal (MBM) was substituted for the fish meal in the diet. Duplicate groups of the 30 fish averaging 22.9 g were fed one of 8 isoproteic $(48\%)$and isolipidic $(7.5\%)$ experimental diets to satiation twice a day for 9 weeks. No significant differences were found among fish fed the control, substituting up to $20\%\;SM,\;20\%$ SM containing amino acids, and $10\%\;SM+10\%\;CGM+10\%$ MBM diets in weight gain, feed efficiency, daily feed intake, and protein retention (P>0.05). Feed efficiency, daily feed intake and protein retention in fish fed the diet containing $20\%$ SM with 0.5 mm particle size were not significantly different to those in fish fed the diets containing less than $20\%\;SM\;(P>0.05)$, however, weight gain was significantly lower than that of the control and $5\%\;SM\;diets\;(P<0.05)$. It is concluded that SM ran be used as a partial substitute for fish meal up to $20\%$ in the diet, and that the inclusion of SM with an adequate combination of several protein sources can replace larger amounts of fish meal in the diet.

  • A Survey was conducted to identify patrcis' eating behavior at the buffet styled restaurant during dinner time. The average frequency of taking food was 4.1±0.9 and this was statistically significant by age group. The frequency of taking food after satiety was 1.2±0.8. From the menu, 15 seafood items were the most popular which were chosen more than twice. The average of consumed food items was 24.9±8.9 out of 198. The average seafood items which were chosen by each individual was 5.8, desert items was 4.5, salad items with dressing was 4.2. The total weight of the consumed food was 954±365.1g. Mostly gruel, soup and saled chosen the first time. Alcholic beverages and drinks were chosen also first time. Seafood was chosen the 1.2 times and meat was chosen the first, second, and third time. Rice and soup. bread and noodles were chosen the second and third time. Desert was chosen the third time. The consumption of calories and nutrients were compared with the Korean Recommended Dietary Allowances. The average consumption of calories was 49.6% Korean RDAs, protein 71.4%, vitamin A 65.0%, thiamin 74.3%, riboflavin 71.8%, niacin 89.8%, ascorbic acid 72.7%, iron 68.1%, and calcium 108.3%. In one meal, the data shows over eating. The caloric consumption of desert was 275.5Kcal and seafood was 174.1Kcal. The protein consumption of seafood was 23.5g and meat was 7.5g. According to this research, customers have a lot of good chances to be exposed to the variety of food. This is desirable to correct the food habits with a experience. On the other hand, excessive food consumption is a problem. Therefore we suggest the provision of nutrition information about desirable order of eating a meal and the health problems due to overeating. We expect other research of nutritional evaluation in a meal in the different foodservice systems to be made in the future.

우모분과 pyridoxine에 의한 taurine 강화 계육 생산

  • An experiment was conducted to investigate the effects of dietary supplementation of feather meal (FM its) digests on the performance of broiler chicks and taurine content in broiler meat. A total of 1,000 broiler chickens were assigned to five dietary treatments : Control, FM diet(FM), FM+pyridoxine(FM+Pyridox), H$_2$O$_2$ treated FM diet(H$_2$O$_2$-FM) and enzyme treated FM diet (Enzyme-FM). Treated diets were supplemented with FM or FM digests at the level of 5 % to the control diet. During the stater period, weight gain of chicks fed FM+Pyridox was significantly higher(P<0.05) than those of the other FM or FM digest treatments but was not different from the control. Weight gam of overall period were not significantly different among treatments. Feed intake of the control was greater than that of FM or FM digest treatments. Feed conversion ratio(feed intake/gain) of chicks fed FM and H$_2$O$_2$-FM were significantly higher than those of Enzyme-FM and FM+Pyridox, but were not significantly different from the control. Taurine contents of leg and breast mucle were significantly (P<0.01) different among treatments but those of liver were not significantly different. Taurine content of FM+Pyridox was highest in both leg and breast muscle. It was 85 % higher in leg muscle and 15 % higher in breast muscle than that of the control. Sensory evaluation data showed significant but not consistant responses in various parameters. FM + Pyridox treatment showed highest score in aroma of raw leg muscle of male and in juiciness and tenderness of broiled breast muscle of male chickens. Control group showed highest color score in raw leg muscle of female and lowest overall acceptability score in broiled breast and leg muscle of male chicken. It is concluded that taurine can be enriched especially in broiler leg meat by 5 % FM diet supplemented with pyridoxine.

A Study on the Food Habits and the Dietary Behaviors of University student in Seoul (서울 지역 대학생의 식습관 및 식생활태도에 관한 조사)

  • This study was to investigate the food habits and the dietary behaviors of university students. Questionnaires were completed by 492 students in five different departments. The data were analyzed by SAS program. The results are summarized as follows: Fifty(10.2%) of respondents were vegetarians, 81(16.4%) were heavy meat eaters and all the others were light meat eaters. All students had their biggest meal at supper. Three hundred and ninety-three(79.9%) of the respondents usually had rice for breakfast. Three hundred -sixteen(64.2%) ate 3 meals a day, 155(31.5%) ate 2 meals and all the others ate 1 meal or more than 3 meals. The length of mealtime was 30 minutes in 268(54.5%), 10 minutes in 209(42.5%) and more than 1 hour in all the others. Respondents considered taste the most important meal factor with nutrition, hygiene, and amount ranked accordingly. A majority(63.0%) of respondents ate occasionally ate between meals, while 28.1% snacked frequently, and 8.9% ate no snacks. Although nutrition dept. students had studied nutrition subject, some results of nutrition dept. students were desirable and others were undesirable in dietary behaviors. Therefore they should have a nutritional education program to improve their food habits and the dietary behaviors for students' health. And nutritional education program should be organized practically and systematically.

Comparative Analysis on Meal and Food Preference between Non-obese and Obese Elementary School Children (비비만과 비만 초등학생의 식사상황 및 음식기호도 비교분석)

  • This study was carried out to find out differences about meal conditions and food preference between non-obese and obese elementary school children. Ten children(non-obese 5 and obese 5) from each of the nationwide 192 schools were surveyed by self-developed questionnaire. Total of 1,767 questionnaires(815 from non-obese and 952 from obese children) were collected and data were analyzed using SPSS 12.0 program. The results of the comparative analysis were summarized as follows. There was not significantly different in height between non-obese $group(151.0{\pm}12.5cm)$ and obese $group(151.2{\pm}12.3cm)$. But BMI was significant difference between non-obese $group(18.0{\pm}2.2cm)$ and obese $group(27.3{\pm}3.2cm)$. Economical status was not significantly different between 2 groups. But educational level of parents and mother’ job were significant differences between 2 groups. Only 2/3 of the subjects reported to have breakfast at regular basas, regularity of having breakfast was not significantly different between 2 groups. Also regularity of having lunch during vacation was not significantly different between 2 groups. But Reasons of skipping breakfast and lunch were significantly different between 2 groups. Regularity of having dinner, reasons of skipping dinner, intake amount in dinner, and frequency of having snacks were significantly different between 2 groups. But the time required for lunch and dinner were under 20 minutes of 60-80% of the subjects, and were not significantly different between 2 groups. Non-obese group have liked fast foods, fruits & juices, sweets, and cakes & cookies than obese group. Obese group have liked meat & meat products and ramyeon, but they have not eaten those foods frequently because of anxiety about being more fatty. These findings suggested that nutrition education programs include different strategy according to obesity and obese prevention program is needed for non-obese school children.
