Pastirma is a dry-cured meat product, produced from whole beef or water buffalo muscles. This study was carried out to investigate the effect of production stages (raw meat, after curing, after $2^{nd}$ drying and pastirma) on the total lipid, neutral lipid, phospholipid and fatty acid composition of phospholipid fraction of pastirma produced from beef M. Longissimus dorsi muscles. The pH and colour ($L^*$, $a^*$ and $b^*$) analyses were also performed in raw meat and pastirma. It was found that pastirma production stages had significant effects (p<0.01) on the total amounts of lipid, neutral lipid and phospholipid, and the highest amounts of lipid, neutral lipid and phospholipid were detected in pastirma. In pastirma, neutral lipid ratio was determined as $79.33{\pm}2.06%$ and phospholipid ratio as $20.67{\pm}2.06%$. Phospholipids was proportionately lower in pastirma than raw meat. Pastirma production stages affected pentadecanoic acid (15:1) (p<0.01), linoleic acid (18:2n-6) (p<0.05), ${\gamma}-linoleic$ acid (18:3n-6) (p<0.05), erucic acid (22:1n-9) (p<0.05), docosapentaenoic acid (22:5n-6) (p<0.05), total unsaturated fatty acid (${\Sigma}USFA$) (p<0.05) and total saturated fatty acid (${\Sigma}SFA$) (p<0.05) ratios of phospholipid fraction and also the moisture content (p<0.01). Pastirma process also affected pH and colour ($L^*$, $a^*$ and $b^*$) values (p<0.01), and these values were higher in pastirma than raw meat.

The gut microbiome is critical in human health, and various dietary factors influence its composition and function. Among these factors, animal products, such as meat, dairy, and eggs, represent crucial sources of essential nutrients for the gut microbiome. However, the correlation and characteristics of livestock consumption with the gut microbiome remain poorly understood. This review aimed to delineate the distinct effects of meat, dairy, and egg products on gut microbiome composition and function. Based on the previous reports, the impact of red meat, white meat, and processed meat consumption on the gut microbiome differs from that of milk, yogurt, cheese, or egg products. In particular, we have focused on animal-originated proteins, a significant nutrient in each livestock product, and revealed that the major proteins in each food elicit diverse effects on the gut microbiome. Collectively, this review highlights the need for further insights into the interactions and mechanisms underlying the impact of animal products on the gut microbiome. A deeper understanding of these interactions would be beneficial in elucidating the development of dietary interventions to prevent and treat diseases linked to the gut microbiome.
The study was conducted to evaluate the effect of early feed restriction on growth, fat accumulation and meat composition in unsexed broiler chickens. In experiment 1, three hundred and fifty one-day-old broiler chicks were divided into 7 groups. Each treatment group was represented by five replicates of ten broilers each. One group was fed ad libitum as the control group and the other six groups were fed 25% ad libitum (25% multiplied by amount of feed intake of ad libitum chicks at the previous day) for 4 or 6 days, 50% ad libitum for 4 or 6 days, and 75% ad libitum for 4 or 6 days. In experiment 2, five hundred broiler chicks were divided into 10 groups. Each treatment group was represented by five replicates of ten broilers each. One group was fed ad libitum as the control group. Three initial age at which broilers were restricted (2, 4 or 6 days of age) and three type of feed restriction (physical restriction, meal feeding and diet dilution) ($3{\times}3$) were examined. They were restricted feeding for 6 days. Experimental results showed that broilers fed 25% ad libitum for 4-6 days tended to reduce leg meat fat with lower abdominal fat (p<0.05) (experiment 1). Breast meat fat was significantly higher in restricted broilers (p<0.01). Plasma triglyceride was higher in broilers fed 75% ad libitum for 4-6 days. In experiment 2, abdominal fat was lower in restricted broilers (p<0.05). Breast meat fat was significantly higher (p<0.01), whereas leg meat fat was significantly lower (p<0.05) in restricted broilers. Plasma triglyceride was significantly higher in physical feed restriction for 4 days, meal feeding for 4 days and diet dilution for 6 days (p<0.05). In conclusion, to reduce fat accumulation in abdomen and leg meat, broilers should be fed 25% ad libitum for 6 days started at 4 days, or subjected to meal feeding (6 hours per day for 6 days) started at 6 days.
The objective of this study was to evaluate the nutritional content of bullfrog meat from different parts of the animal, including fore-chest, thigh and calf. Bullfrog meat was found to be a rich source of proteins, essential amino acids and minerals, but with a low fat content, compared with other aquatic meat products. There was no significant difference (p>0.05) between thigh and calf in mineral content (K, P, Na, Mg, Ca, Zn, Fe, Cu, and Mn), but the contents of K, P, and Mg were higher in thigh and calf than in the fore-chest (p<0.05). The salt-soluble, water-soluble and insoluble protein bands in sodium dodecyl sulphate-polyacrylamide gel electrophoresis (SDS-PAGE) electrophoresis, from fore-chest, thigh and calf were similar, with the most abundant bands being 35 kDa (salt-soluble protein), 35-48 kDa (water-soluble protein) and 48 kDa (insoluble protein). The results showed that the insoluble protein content in the fore-chest meat was higher than that in the thigh meat and calf meat, but the salt-soluble protein fraction was the most abundant in thigh meat. These results showed that the nutrients in different parts of bullfrog meat were different.
The lipids of Clanis bilineata larvae meat (CBLM) are susceptible to oxidation, and thus the commercial and consumption values of CBLM decrease during frozen storage. In the present study, peroxide values (PV), thiobarbituric acid-reactive substances (TBARS), free fatty acid (FFA) content, fatty acid composition, and likeness (palatability) score of CBLM were determined to investigate the effect of glutathione on the oxidation of CBLM lipids. Glutathione decreased the PV, TBARS, and FFA content, maintained fatty acid composition, and increased the likeness (palatability) score of the CBLM, indicating that glutathione can be used as a cryoprotectant to extend the shelf life of CBLM.
A study was conducted to determine the carcass composition of broilers when fed with three varying levels of dietary energy (3,000, 3,200 and 3,400 kcal/kg ME) at 20% crude protein and 0.79% Total Sulphur Amino Acid. The results showed that there was a significant (p < 0.05) increase in the ME intake of the chickens when the ME of the diet increased. Other factors like the protein intake, dressing percentage, weight gain and feed intake were not significantly affected. On the carcass, the increasing dietary ME levels resulted in a significant (p < 0.05) increase in the abdominal fat percentage and carcass fat percentage and a significant (p < 0.05) decrease in the carcass protein percentage. Similarly, the dietary ME produced a significant (p < 0.05) increase in the amount of and fat percentages of breast meat, thigh meat, and drumstick meat with a significant reduction in the protein percentage. There seemed to be an inverse relationship between the percentages of protein and fat. An increase in fat percentages always resulted in similar reduction in the protein content of the meat. These results also showed major differences between the white and red meat of the chicken.
The effects of feeding a mannan oligosaccharide (Bio-Mos) from 0 to 3 g/kg diet and vaccination program on 1- to 35-day performance (growth and feed efficiency), metabolizable energy, nitrogen utilization and carcass composition of meat chickens were investigated. A general vaccination program was used against IB, IBD and ND with half of the birds per diet receiving a booster dose of IB and ND vaccines at 12 days of age. Dietary supplementation of Bio-Mos (BM) did not influence body weight gain, feed efficiency and nutrient utilization. The highest dietary BM (3 versus 1.5 or 0 g/kg) increased carcass abdominal fat and reduced the proportion of drumstick in the carcass of meat chickens. The booster dose reduced the performance of birds. It was concluded that the addition of BM to the diet of chickens did not significantly influence the performance and nutrient utilization of meat chickens.

Various processing methods have a great impact on the physiochemical and nutritional properties of meat that are of health concern. Hence, the postmortem processing of meat by different methods is likely to intensify the potential effects on protein oxidation. The influence of meat protein oxidation on the modulation of the systemic redox status and underlying mechanism is well known. However, the effects of processed meat proteins isolated from different sources on gut microbiota, oxidative stress biomarkers, and metabolomic markers associated with metabolic syndromes are of growing interest. The application of advanced methodological approaches based on OMICS, and mass spectrometric technologies has enabled to better understand the molecular basis of the effect of processed meat oxidation on human health and the aging process. Animal studies indicate the involvement of dietary proteins isolated from different sources on health disorders, which emphasizes the impact of processed meat protein on the richness of bacterial taxa such as (Mucispirillum, Oscillibacter), accompanied by increased expression of lipogenic genes. This review explores the most recent evidences on meat processing techniques, meat protein oxidation, underlying mechanisms, and their potential effects on nutritional value, gut microbiota composition and possible implications on human health.
A comparative study on the quality of meat from three breeds of goats reared in Bulgaria: Local Aboriginal (LA); Bulgarian White Dairy (BWD) and crossbreeds of local aboriginal with Saanen goats (LA ${\times}$ S). Eight intact young male goats from each breed have been included in the experiment. The animals from the three breeds have been reared under similar conditions. The animals have been slaughtered at the age of 2 months (at weaning) and at the age of 6 months (upon reaching sexual maturity). The following tests have been performed on samples of m. longissimus dorsi between $5^{th}$ and $6^{th}$ ribs: pH 45 min post mortum, colorimetrically color of meat, water holding capacity and fatty acid composition of the fat. The thickness of muscle fibre and the proportion of muscle, connective and adipose tissue have been microscopically determined at m. longissimus dorsi, m. semitendinosus and m. iliopsoas. After deboning and separating the bigger tendons, the chemical composition of the meat from the left half of the carcass has been determined. The results reveal lack of statistically significant differences among the three breeds concerning pH, the water holding capacity, color of meat, thickness of the muscle fibre and fatty acid composition of the fat. The carcass meat of crossbreeds of LA ${\times}$ S contains significantly more fat than the other two breeds. This influences the proportion of muscle, connective and adipose tissue in m. longissimus dorsi, m. semitendinosus and m. iliopsoas, resulting in more adipose tissue in the LA ${\times}$ S compared to young goats of the LA or the BWD. There are differences in slaughtering 2-month-old goats (at weaning) and 6-month-old ones (upon reaching sexual maturity). At a greater age the content of fat in the carcass increases, as well as the quantity of the adipose tissue, the intensity of the colour of the meat and there is a tendency towards thickening of the muscle fibre and increasing the water holding capacity of meat. The moisture content in meat decreases due to the increase of fat.
본 연구는 비건 인구의 증가 및 비건 문화의 확대에 발맞추어 대체육 제품에 대한 시장의 요구가 커짐에 따라, 대체육의 영양학적인 부적합의 가능성이 제시된 아미노산 조성과 아연 생체 이용률의 측면에서 대체육 제품이 동물성 육류 제품을 영양학적으로 대체할 수 있는지 평가하고자 수행되었다. 텐더 형태의 동물성 계육 제품 1종과 대체육 제품 2종을 선정하여 HPLC를 통한 아미노산 함량 및 조성측정, ICP-AES를 이용한 아연, 칼슘 등의 미량 원소 함량 측정, 아연 생체 이용률 저해 화학종인 피트산의 침전 추출 및 UV-Vis 분석을 통한 정량을 수행하고, 측정 결과를 실제 제품 섭취의 맥락에 맞추어 적용, 분석하였다. 연구 결과, 대체육 제품에서 valine, lysine 등 일부 필수 아미노산 함량이 동물성 육류 제품에 비해 부족하고, 제품을 통해 권장 섭취량을 달성하기 어려운 것으로 나타났다. 아연 생체 이용률의 경우, 칼슘에 의한 아연 생체 이용률 저해는 유의미하지 않을 것으로 분석되었으며, 같은 대체육이라 하더라도 제품 원재료의 아연 함량, 피트산 함량에 따라 낮은 단계에서부터 높은 단계까지 다양한 아연 이용률을 보였다. 따라서 아연 함량이 높고 피트산 함량이 낮은 식물성 원재료를 선정, 적절히 가공함으로 적절한 아연 생체 이용률을 달성하는 대체육 제품을 생산할 수 있을 것으로 보인다.
