Quality characteristics and antioxidant activity of roasted yakgwa according to the addition ratio of mealworm

  • The proximate composition, quality characteristics, antioxidant activity, and sensory evaluation scores of yakgwa added with mealworm powder (MP) were examined. MP contained 5.83 wt% moisture, 55.70 wt% crude protein, 35.96 wt% crude fat, 3.70 wt% crude ash, and 2.43 wt% carbohydrate and feature total polyphenol and flavonoid contents of 406.52 mg GAE/100 g and 21.18 mg NE/100 g, respectively. The DPPH and ABTS•+ radical scavenging activities and the reducing power of MP were determined as 90.25%, 44.06%, and 1.74, respectively. Except for moisture and carbohydrate content, the proximate composition of mealworm yakgwa (MY) increased with the amount of MP increased. The pH of the dough increased with the addition of MP, whereas the expansion degree tended to decrease. Sugar content was highest at MP contents of 0 wt% and 12 wt% (FM4 group), and hardness was lowest in the FM4 group. With the increasing MP content, the L, b values and antioxidant activity increased, whereas a value decreased. The sensory evaluation scores for the overall preference, appearance, color, and taste were lowest in the FM4 group. These results suggested that MP contents of 6-9 wt% were optimal for mealworm-based yakgwa.

  • 본 연구는 고기능 미래 식량자원으로서 이용 가치가 높은 밀웜과 검은콩을 첨가한 쿠키를 제조하고, 밀웜 및 검은콩 첨가량에 따른 품질특성, 항산화 활성, 기호성을 비교해 보고자 수행되었다. 밀웜의 첨가량을 0%, 10%, 20%, 30%로 증가한 쿠키와 밀웜과 함께 검은콩 분말 10%, 20%를 첨가한 쿠키를 제조하여, 품질특성, 항산화 활성, 관능 특성을 비교한 결과는 다음과 같다. 팽창율, 손실율은 밀웜만 첨가한 쿠키와 밀웜과 검은콩 분말을 함께 첨가한 쿠키 모두에서 밀웜 분말 첨가량이 증가함에 따라 유의적으로 증가하였다. 총 폴리페놀 함량, DPPH 라디칼 소거능, FRAP, ABTS 측정 결과 밀웜 분말과 검은콩 분말을 첨가한 쿠키 모두에서 아무것도 첨가하지 않은 쿠키보다 활성이 높게 측정되었다. 밀웜 분말의 첨가량이 증가할수록 항산화 활성은 증가하여 밀웜 분말 30% 첨가군에서 가장 높은 항산화 활성을 나타내었다. 또한 동일한 양의 밀웜에 검은콩 분말을 함께 첨가한 쿠키는 밀웜 분말만 첨가한 쿠키 보다 총 페놀함량, DPPH 라디칼 소거능, ABTS 라디칼 소거능이 높게 측정되었다. 밀웜만 첨가한 쿠키의 색도는 첨가량이 증가할수록 쿠키의 밝기(L 값)와 황색도(b 값)는 유의적으로 감소하고, 적색도는(a 값) 증가하였고, 밀웜과 검은콩을 함께 첨가한 쿠키는 적색도(a 값), 밝기 (L 값), 황색도 (b 값)가 모두 감소하는 것으로 측정되었다. 쿠키의 조직감 측정결과 밀웜 첨가량이 증가할수록 쿠키의 강도가 유의적으로 감소하였으나(p < 0.05), 검은콩을 함께 첨가한 쿠키는 강도가 강하게 나타나 밀웜증가에 의한 쿠키 강도의 감소를 검은콩을 첨가함으로써 개선할 수 있었다. 이상의 결과에서 밀웜 쿠키의 품질특성, 항산화 활성, 기호성을 모두 향상하기 위해서는 밀웜 분말을 10% 첨가하여 제조하는 것이 가장 우수하다는 것을 알 수 있었다.

탈지 밀웜 분말 첨가량을 달리하여 제조한 설기떡의 품질특성 (Quality Characteristics of Sulgidduk Prepared with Different Levels of Defatted Mealworm Powder)

  • 본 연구는 고 탄수화물식품인 설기떡에 단백질함량이 높은 탈지 밀웜 분말 첨가량(0, 3, 6, 9 및 12%)을 달리하여 제조한 설기떡의 품질특성으로 색도, 기계적 물성, 관능평가, 일반성분, 분지사슬 아미노산 함량을 평가하였다. 품질 특성 평가를 수행한 결과, 색도의 경우 명도(L) 값은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 낮아진 반면, 적색도(a)과 황색도(b) 값은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 높아졌다. 탈지 밀웜 분말 첨가량에 따른 설기떡의 기계적 물성 측정결과 경도, 검성은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 높아진 반면, 씹힘성, 탄력성과 응집성에서는 유의하게 낮아졌다. 탈지 밀웜 분말 첨가량에 따른 설기떡의 관능평가의 경우, 탈지 밀웜 분말을 6% 첨가한 설기떡(MS-6)의 색, 맛, 향 및 전반적인 기호도 점수가 가장 높았다. 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)의 일반성분을 대조군과 비교한 결과, 대조군과 MS-6간에 수분함량과 조회분 함량에는 차이가 없었으나, 단백질 함량은 MS-6이 높았고 탄수화물은 대조군이 높았다. 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)의 분지사슬 아미노산(BCAA) 함량을 대조군과 비교한 결과, 대조군에 비해 탈지 밀웜 분말 첨가로 근육형성 기능을 하는 branched amino acids인 valine($275.8{\pm}3.41mg/100g$), leucine($414.3{\pm}5.87mg/100g$) 및 isoleucine($188.9{\pm}2.31mg/100g$)의 함량이 유의적으로 증가되었다. 이상의 결과 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)은 일반성분 중 단백질함량, 아미노산 중 분지사슬 아미노산(valine, leucine 및 isoleucine) 함량이 대조군에 비해 높아져 영양적 단점이 보완되어 단백질 강화식품으로의 활용가치가 높을 것으로 보여진다.

Effects of Heating Time and Temperature on Functional Properties of Proteins of Yellow Mealworm Larvae (Tenebrio molitor L.)

  • Although the yellow mealworm (Tenebrio molitor L.) is a promising alternative protein source, the effects of processing conditions on functional properties are unclear. In this study, a protein extract of yellow mealworm larvae (PEYM) was subjected to different heat temperature ($55^{\circ}C$, $75^{\circ}C$, and $95^{\circ}C$) with different time (20, 40, and 60 min) to evaluate the functional properties and protein oxidation. Different heat temperature treatment significantly affected the exposure of surface hydrophobicity of the proteins and protein molecule aggregation, which reached maximum levels at $95^{\circ}C$ for 60 min. Protein oxidation was inversely proportional to the temperature. Both the highest carbonyl value (1.49 nmol/mg protein) and lowest thiol value (22.94 nmol/mg protein) were observed at $95^{\circ}C$ for 60 min. The heating time-temperature interaction affected several functional properties, including solubility, emulsifying potential, and gel strength (GS). Solubility decreased near the isoelectric point (pH 5 to 6). As the temperature and heating time increased, emulsifying properties decreased and GS increased. The oil absorption capacity and foaming properties decreased and the water absorption capacity increased. These results confirmed that PEYM is a suitable source of proteins for processing and applications in the food industry.

Substitution of Fish Meal by Mealworm (Tenebrio molitor) in Practical Diets for Pacific White Shrimp, Litopenaeus vannamei

  • Mealworm (Tenebrio molitor) was evaluated to investigate the effect of partial or total replacement of fish meal in diets for white shrimp, Litopenaeus vannamei. Experimental groups of shrimp with average initial body weight (2.43 ± 0.54 g) were fed each with 4 isonitrogeneous (38% crude protein) diets formulated to include 0, 25, 50 and 100% (diets 1 to 4, respectively) of fish meal substituted with mealworm. After eight weeks of feeding trials, shrimp fed with diet 3 and 4 revealed the highest values for live weight gain(8.01 ± 2.51 and 7.93 ± 1.12), specific growth rates (2.70 ± 1.12 and 2.59 ± 0.51) as well as better feed conversion ratio (2.69 ± 0.09 and 2.72 ± 0.19) compared to the control group with statistically significant manner (p<0.05). Survival range was 98% in all the treatments. An increase in weight gain and other growth associated parameters was observed with higher replacement. These results clearly indicate that 50% and 100% of fish meal protein in shrimp diet can be replaced by mealworm not only without any adverse effect but also the effect of promoting growth performance.

갈색거저리(밀웜)의 조리방법에 따른 기호도 및 구매의도에 관한 연구 (Preferences and Purchase Intention of Tenebrio molitor(Mealworm) according to Cooking Method)

  • 본 연구에서는 갈색거저리의 유충인 밀웜을 2가지 조리방법(소테, 오븐)에 따른 3가지의 다른 형태(원형, 다짐, 분말)에 대한 기호도 및 구매의도를 살펴봄에 따라 갈색거저리의 식품화에 필요한 기초자료를 확립하고자 한다. 또한, 새로운 음식 혐오증(Food neophobia)이 높은 식용곤충을 활용한 시판품 개발시 타깃 시장 전략 수립에 도움을 주고자 한다. 성별과 연령에 따른 기호도와 구매의도는 여성에 비해 남성, 연령이 높아짐에 따라 높게 나타났다. 건강 관여도가 높은 집단, 새로운 음식 혐오증이 낮은 집단일수록 기호도와 구매의도가 높게 나타났다. 그리고 3가지의 다른 형태에 따라서는 성별, 연령, 건강 관여도, 새로운 음식 혐오증 모두 소테와 오븐의 분말형태에서 가장 높은 기호도와 구매의도를 나타내었다. 본 연구의 결과는 식품 개발자들에게 시장 타깃팅을 위한 의미 있는 자료를 제공할 것으로 기대된다.

Effects of mealworm (Tenebrio molitor) larvae hydrolysate on nutrient ileal digestibility in growing pigs compared to those of defatted mealworm larvae meal, fermented poultry by-product, and hydrolyzed fish soluble

  • Objective: To investigate effect of mealworm (Tenebrio molitor) larvae hydrolysate on nutrient ileal digestibility compared to those of dried mealworm larvae meal, fermented poultry by-product, and hydrolyzed fish soluble in growing pigs. Methods: A total of 12 crossbred ([Landrace×Yorkshire]×Duroc) growing pigs with average body weight of 28.70±0.32 kg were surgically equipped with simple T-cannulas. A total of 12 pigs were assigned to individual metabolic crates and allotted to one of four treatments with 3 replicates in a fully randomized design. Results: Apparent ileal digestibility (AID) of dry matter (DM) was the highest in pigs fed HML diet. AIDs of crude protein (CP) were higher in pigs fed HML and DMLM diets than those in pigs fed the other two diets. AID of total amino acid was higher (p = 0.06) in pigs fed HML diet. AIDs of lysine (Lys), methionine (Met), and threonine (Thr) were similar in pigs fed DMLM and HML diets, but were higher (p = 0.05, p<0.05, and p = 0.05, respectively) than those in pigs fed FPBM or HFS diet. Pigs fed HML diet had higher standardized ileal digestibilities (SIDs) of DM and CP (p<0.05 and p<0.05, respectively) compared to pigs fed the other FPBM and HFS diets. SIDs of total amino acid were not different (p = 0.06) between treatments. For SIDs of Lys, Met, and Thr, pigs fed HML and DMLM diets showed higher SIDs (p = 0.05, p<0.05, and p<0.05, respectively) than pigs fed FPBM and HFS diets. SIDs of non-essential amino acids (aspartic acid, glycine, and alanine) were higher (p<0.05, p<0.05, and p<0.05, respectively) in pigs fed HML, FPBM, and DMLM diets than those in pigs fed the HFS diet. AID and SID of glutamic acid were higher in pigs fed HML and FPBM diets. Conclusion: In conclusion, dietary supplementation of mealworm larvae hydrolysate had higher digestibility in DM, CP, Lys, Met, and Thr compared to dietary supplementation with fermented poultry by-product and hydrolyzed fish soluble.

국산 및 중국산 갈색거저리(Tenebrio molitor)의 영양성분 및 유해물질 비교분석 (Comparative Analysis of Nutritional and Harmful Components in Korean and Chinese Mealworms (Tenebrio molitor))

  • 국산 및 중국산 갈색거저리 유충의 일반성분의 함량 분석 결과, 갈색거저리의 동결건조 분말은 고함량의 단백질(50.32~52.99%)을 포함하고 있었고, 중국산 분말이 약 2.67% 정도 국산에 비해 높은 단백질을 함유하고 있었다. 갈색거저리의 필수 및 비필수아미노산을 포함하고 있었고, 분석된 아미노산의 함량은 국산과 중국산이 비슷한 수준을 나타내었으며, 비필수아미노산 중 glutamic acid의 함량이 다른 아미노산에 비해 가장 높게 존재하였다. 지방산의 분석 결과, 갈색 거저리 분말은 총 지방산 중 76.80~80.55%의 많은 불포화 지방산을 함유하고 있었다. 불포화지방산 중 linoleic acid는 국산 $20.80{\pm}1.1%$, 중국산 $34.69{\pm}1.9%$로 13.89% 차이, oleic acid는 국산 $51.40{\pm}0.47%$, 중국산 $40.20{\pm}1.5%$로 11.2%의 차이, linolenic acid는 국산 0.5%, 중국산 1.4%로 명확한 함량 차이와 유의성(p<0.05)이 인정되었다. 유해물질인 식중독균(E. coli O157:H7, Salmonella spp.)은 국산과 중국산 분말 모두에서 검출되지 않았으며, 중금속 검사 결과에서 수은(Hg)이 국산과 중국산에서 각각 0.03 mg/kg, 0.08 mg/kg으로 검출되었으나 일반식품의 기준치 이하로 확인되었고 그밖의 중금속은 존재하지 않았다.

식용곤충 갈색거저리의 장기저장 및 생육 조절 연구 (Long-Term Storage and Growth Control of the Edible Mealworm Species, Tenebrio molitor Linnaeus)

  • We introduce a method for preserving yellow mealworm (Tenebrio molitor Linnaeus) larvae for an extended period and show that a high percentage of larvae can survive in good health under low-temperature storage conditions combined with specific diapause termination conditions. Our study revealed that we can regulate important development stages such as pupation, emergence, and larval duration by adjusting these termination conditions. When storing larvae aged 6-8 weeks for 140 days, the storage temperature can be varied based on our goals, giving us control over yellow mealworm production to meet specific demands. To produce adult beetles, storing larvae at 15 ℃ with wheat bran and ending diapause at 30 ℃ resulted in 90% pupation rate, with 60% becoming adults in 21 days. If our aim is larvae production, storing them at 10-12 ℃ with wheat bran and ending diapause at 25-30 ℃ allows the larvae to reach a suitable weight for processing. This straightforward approach ensures long-term storage of yellow mealworm larvae and provides a practical way to control their development, allowing efficient mass production tailored to market demands.

  • The purpose of this study is to show probability of alternate food by using edible insects through the reports (Edible insects: Future prospects for food and feed security) edited by WFO (World Food Organization). We were carried out to develop the functional meat new product using Mealworm (Tenebrio molitor lavare) and Chicken breast. People's interest to the healthy, low-calories food is growing up, the Foodservice industry is developing and making Functional food, which helps to a sale strategy. Insects have played an important role as human food throughout history, especially in Africa, Asia and Latin America. A rapid increase in the human population is expected in the second half of the 21 century, which will lead to lower availability of food, especially animal protein As the problem of food supply and demand has come to the fore with climate change, Food and Agriculture Organization of the United Nations (FAO) has noticed edible insects as future food resources in order to prepare against the shortage of protein source. Recently consumers, especially patients have doubts about safety of raw materials for food. To overcome these limitations, I propose an enteral nutrition formula using edible insects as a raw material.
