부천시 어린이 급식소 맞춤형 위생 관리 매뉴얼 개발 및 효과 평가 (Development of Customized Hygiene Management Manual for Bucheon Children Meal Supply Organization and Evaluation of Effects)

  • This study developed Bucheon customized children meal hygiene central control point (CCP) to promote practical hygiene and safety management in a children meal supply organization in Bucheon. Education was administered to 54 organizations using the developed CCP, and the study evaluated kitchen hygiene management improvement effects. When the effects of hygiene education in eight categories (CCP 1~8) were examined, total scores increased by 9.31 from $22.36{\pm}5.039$ before education to $31.67{\pm}3.262$ with a statistically significant difference (p<0.001). After CCP education, personal hygiene management, food material management, cooking management, serving management, facility and equipment management improved significantly. The result demonstrates that CCP education was effective for kitchen hygiene management. Using CCP education, overall CCP education items were significantly improved, but there was almost no significant increase in the non-relevant item of CCP education. As there was an average difference in the non-relevant item of CCP education after follow-up evaluation, CCP education had an overall effect on hygiene and safety improvement. Based on the above result, the effect could be potentiated if CCP is complemented, if a systematic hygiene management manual is developed for the nationwide children meal supply organization, and if CCP education media is continually developed along with education.

안양지역 어린이급식소의 급식 위생관리 항목 분석 (Analysis of meal hygiene management items in children's foodservice facilities in Anyang area)

  • 본 연구에서는 안양지역 관내 어린이급식소 중 2019년부터 3년간 낮은 급식 위생관리 등급으로 머물러 있는 어린이급식소에서 개선되어야 할 주요 항목이 무엇인지 밝혀내고자 하였다. 등급은 이전 급식 위생관리 수준이 미흡할 경우 새싹군으로, 우수할 경우 열매군으로 나누었으며, 위생관리 6영역, 45가지 세부 항목을 분석하였다. 분석 결과, 어린이급식소의 급식 위생관리 등급에 따라, 또 시기에 따라 점수가 낮은 항목들은 다양했다. 새싹군은 3년 내내 열매군에 비해 6영역 모두에서 점수가 낮았으며, 특히 보존식에 대한 세부 항목의 점수가 가장 낮았다. 결론적으로, 어린이급식소의 급식 위생관리 시, 등급별로 개선해야 할 위생관리 항목이 다르다는 것을 인지하여, 철저히 관리해야 할 항목을 사전에 파악하고 그에 적합한 지도를 시행해야 할 것이다.

간식인지수준에 따른 구강건강관리의 차이분석 (Analysis of difference in oral health management by snack recognition level)

  • Objectives : The oral health education for interaction between snack and oral health is made more in detail, it seems to contribute to improvement of oral health by reducing occurrence of dental caries. Methods : This study performed the survey for 530 high school and college students living in Y City, Chungbuk for 10 days from June 14, 2011 to understand the difference by the level of snack recognition. 530 copies of questionnaire were collected, the final 502 copies were analyzed and the results are as followings. Results : 1. As for the snack intake frequency, 'sometimes' and '2~3 times a day' was found to be largest with 32.0% respectively in female and 'sometimes' was largest with 34.9% in male. As for the '2~3 times a day' was most in high school students with 31.5% and 'sometimes' was most in college students with 39.0%. 2. As for snack characteristics, 'crispy' was most preferred in female and male with 43.7% and 39.4% respectively and, by school year, high school students and college students preferred 'crispy' most with 39.1% and 46.0% respectively. 3. As for the item of meal, 'sometimes skip' was most in female with 46.1% and 'all three meals a day' was most im male with 51.4%. 'All three meals a day' was proved to be most with 48.3%in high school students and 'sometime skip' was most in college students with 48.0%. 4. As for the difference of oral health management by school year, college students ($3.37{\pm}0.70$) proved to be higher in the oral health management (p<.01) than high school students ($2.98{\pm}0.81$) and the Negative snack recognition group ($3.24{\pm}0.73$) was found to be higher in the oral health management (p<.01) than the Positive snack recognition group ($3.06{\pm}0.82$). Although the interaction between school year and snack recognition level was not different in case of college students, the Negative snack recognition($3.17{\pm}0.77$) proved to manage higher oral health (p<.05) than the high snack recognition gathering ($2.81{\pm}0.80$) in case of high school students. 5. As for the difference of the oral health most im male wex and). Although the innteractifemale ($3.39{\pm}0.72$) proved to most the oral health (2.(p<.01) than male ($2.81{\pm}0.75$) and the group with Negative snack recognition terac ($3.24{\pm}0.73$) most d the oral health (2.(p<.01) than the group with Positive snack recognition level ($3.06{\pm}0.82$). As for effects of interaction between sex and snack recognition level, while there was not much difference in the oral health management by the snack recognition level in case of female, the cluster of low snack recognition level ($3.03{\pm}0.69$) proved to manage the oral health more (p<.01) than the gathering of high snack recognition level ($2.59{\pm}0.75$). Conclusions : To see the results as above, it can be seen the oral health management is higher as the snack recognition level is higher by sex and school year.

부산지역 사업체급식소 식품공급업자의 위생인식조사 (A Study on the Sanitary Perception of the Food Suppliers for the Business and Industry Foodservice in Busan Area)

  • It is thought that the sanitary perception and hygienic food treatment of food suppliers as the first handlers of foodstuffs are extremely significant for the safe and sanitary management of food in group meal services. So in this study, a survey of 103 food suppliers who provide raw materials for 80 meal services in business places around Busan area was conducted on general matters, participation in sanitation education, sanitary perception, sanitary treatment of foodstuffs, knowledge of sanitation, etc. The results of the survey are as follows: 1. 42.7% of the subjects have worked for the food supply companies for one to five years and the main job of 36.9% of them is delivery service. Food suppliers who handle over two foodstuffs are 6839%. 2. Concerning the participation in sanitation education, 43.7% of the subjects have not experienced any such education, The reason of 23.3% of them for not having the education is that there have been no opportunity for them at all. And 83.5% of them regard the education on hygiene as necessary. 3. In the sanitary perception, 93.1% of the subjects considered the temperature control of the food delivery vehicles as important and 82.5% of them replied on of the leading causes of food poisoning as foodstuffs. 64.0% thought of their knowledge of food sanitation as not very good, but moderate. 4. Concerning sanitary treatment of foodstuffs, 50.5% of delivery vehicles were wearing sanitary uniforms and 24.3% of them washed their hands while supplying food. 5. In the score of hygienic knowledge, the average score of all food suppliers was 60.6 point. In the score of hygienic knowledge on general matters, managing supervisors got 6.31$\pm$1.70. In the score of hygienic knowledge based on the perception of food sanitation, the food suppliers with the experience of sanitation education scored 6.42$\pm$1.93 point and the point was significant(p<0.01), compared with that of the food suppliers without the experience of sanitation education. The food suppliers who answered their knowledge was very good scored the highest point, 8.00$\pm$1.41. The food suppliers who replied that sanitation education was truly necessary recorded the hygienic knowledge score of 6.75$\pm$1.77, significantly(p<0.01) high. In the score of hygienic knowledge on the basis of the practical degree of sanitary handling of food materials, the food suppliers who answered they cleaned their delivery vehicles everyday scored 6.48$\pm$1.93, the food suppliers who answered they sterilized their delivery vehicles everyday scored 6.29$\pm$1.89, the food suppliers who answered they controlled the temperature of their delivery vehicles irregularly scored 6.58$\pm$1.79 and the food suppliers who answered they washed their hands every time when they were working scored 6.86$\pm$2.24, significantly(p<0.05) high in comparison with every item in other factors. And the food suppliers who answered they were wearing sanitary uniforms irregularly while supplying foodstuffs scored the highest point, 6.66$\pm$2.92.

전북지역 어린이급식관리지원센터에서 제공하는 어린이집 간식메뉴의 유형, 식품 다양성 및 학부모 만족도 연구 (Study on the snack menu pattern, food diversity and satisfaction of parent provided by Center for Children's Foodservice Management in Jeonbuk area)

  • 본 연구는 전북지역 어린이급식관리지원센터에서 어린이집에 제공하는 2,432개의 간식메뉴의 유형과 학부모대상으로 간식의 품질특성에 대한 중요도와 수행도를 파악하고, 품질특성 간의 영향력을 조사하였다. 오전간식 메뉴의 79.1%는 1 품목, 오후간식의 59.1%는 2 품목, 메뉴의 스낵 음료 조합패턴은 오전간식은 F 66.1%, F+B 18.7%, 오후간식은 F+B 60%, F 40.1%이었다. 식품군별 제공비율 분석결과, 곡류는 오후간식의 87.2%, 채소류와 과일류의 오전간식 비율은 각각 21.7%, 42.4%, 고기 생선 달걀 콩류의 오전과 오후간식 비율은 15.9%, 15.7%, 우유 및 유제품류의 오전과 오후간식 비율은 34.1%, 36.6%이었다. 오전간식의 72.6%는 비조리, 오후간식은 85.6%가 조리메뉴이었다. 식품군패턴 분석결과, 오전간식은 F (31.6%), D(12.0%), F+D (10.1%), G (7.9%)의 순이며, 오후간식은 G(34.4%), G + D (27.4%), G + V (8.2%), G + M (6.3%)의 순이었다. 식품군 점수 (DDS)는 오전 1.46점, 오후 1.67점이었다. 식품군별 다빈도 메뉴품목 분석결과, 곡류는 오전 간식으로 죽류 51.8%, 오후간식은 밀가루 식품류 (34.5%), 빵류 (25.9%)이며, 고기 생선 달걀 콩류는 오전에 육류(28.7%), 콩류 (24.5%), 견과류 (23.6%)이며, 오후는 가공육류 (30.2%), 어패류 (24.3%)이었다. 채소류 중 숙채소는 오전 67.8%, 오후 86.0%이며, 과일류는 오전에 과일류(99.3%), 오후에는 주스류 (67.9%), 우유 및 유제품류는 주로 우유 (오전 71.6%; 오후 82.5%)이었다. 학부모들의 간식메뉴에 사전 인지수준은 5점 기준 4.09점, 자녀가 영아, 국 공립어린이집일 때 사전 인지수준이 높았다. 어린이집 간식에 대한 전반적인 만족도는 5점 기준 4.06점, 직업이 있는 경우, 영아 및 국 공립어린이집일 때 만족도가 높았다. 간식의 19개 품질특성의 전체 중요도 4.42점, 전체 수행도 4.25점 이었다. 중요도가 가장 높은 특성은 '식재료의 위생' (4.79)이며, '제공 시간' (4.04)이 가장 중요도가 낮았다. 수행도는 '식재료의 위생' (4.38)이 가장 높으며, '제공 양' (4.13)이 가장 낮았다. 간식에 대한 전반적인 만족도에 미치는 관련변수들의 상대적 영향력 분석결과, 1단계에서 설명해주는 변인은 '주 메뉴와의 균형' (${\beta}=0.219$, p < 0.05), 설명력은 33.1% (F = 11.662, p < 0.001)이었다. 2단계에서 위생특성 투입에 따른 총 설명력은 35.9%(F = 3.372, p < 0.05)이었다. '종사자의 위생'의 영향력이 가장 크며 (${\beta}=0.245$ p < 0.05), 그 다음은 '주 메뉴와의 균형' (${\beta}=0.208$, p < 0.05), '제공 양' (${\beta}=0.176$, p < 0.05)의 순이었다. 이상의 결과, 전북지역 어린이급식관리지원센터는 아동의 등원시간 및 활동정도를 고려하여 오전과 오후의 간식메뉴를 구성하고 있으며, 이에 대한 학부모들의 만족도는 높았으나 메뉴구성 가이드라인과 비교할 때 메뉴의 다양성에서 개선이 필요하겠다. 따라서 향후 지역의 거점센터를 중심으로 간식메뉴 구성을 위한 기준마련이 필요하겠다.
