Quality Changes of Supraspinatus M. of Hanwoo by Packaging Methods during Chilled Storage (포장방법에 따른 한우 극상근(Supraspinatus Muscle)의 냉장 저장 중 품질 변화)

  • The aim of this study was to investigate the quality changes in Supraspinatus muscle of Hanwoo with different packaging methods, such as wrapped packaging (C), vacuum packaging (V) and modified atmosphere packaging (MA). These samples were stored for 25 days under $5^{\circ}C$. Each sample was evaluated for pH, volatile basic mitrogen (VBN) value, purge loss, hardness, meat color and microbial counts. From the results obtained, no significant differences were observed among treatments at the pH. The VBN values of MA were significantly lower than those of C. Also, MA was enhanced stability of meat color compared with other packaging methods during storage days. The purge loss was the most in the V samples, followed by the C and the MA was the lowest. Total bacteria counts of MA sample were significantly lower than those from C. Therefore, it has been concluded that MA could be used as an effective packaging since it extends the shelf life and improve the quality of Hanwoo supraspinatus m.

The Effect of Functional MA Film Packaging on Storage of Mature-Red Tomato

  • The mature-red tomato fruits (cv. Pinky world) were packaged with functional modified atmosphere (MA) film (0.03, 0.06 mm) and stored at 0, 5, $15^{\circ}C$. The results showed that the concentrations of $CO_2$ and $O_2$ inside MA package were about $4.21{\sim}8.17%$ and $9.78{\sim}14.45%$ under steady state during storage 29 days at 0, $5^{\circ}C$, respectively. The MA packaging(MAP) suppressed the fruits softening and the color change. The minimum lycopene content and maximum firmness were separately observed in fruits packaged with MA film (0.03 mm) at $5^{\circ}C$ storage and film(0.06 mm) at $0^{\circ}C$, which the lycopene content 6.08 mg/100 g, and firmness was 0.49 Kgf at 29 th day storage. The optimal conditions to keep high quality of tomato fruits were obtained by MAP during storage at $0^{\circ}C$ for 29 days, independently of the film thickness, in which the adequate gas composition was $CO_2$ at $4.2%{\sim}5.6%$, $O_2$ at $14.3%{\sim}14.5%$, respectively.

Hygienic effect of modified atmosphere film packaging on ginseng sprout for microbial safety

  • This study evaluates the microbial safety of ginseng sprouts packaged in moss and a modified atmosphere (MA) film within Styrofoam boxes. Ginseng sprout samples were stored at 4℃ for seven days, and the total fungi and aerobic bacteria counts, relative humidity, and moisture content were measured at 0, 1, 3, 5, and 7 days. During the storage period, both packaging treatments caused an increase in the total fungi and aerobic bacteria counts. However, by the seventh day, the ginseng sprouts packaged in the MA film demonstrated significantly lower counts of total fungi (3.03 log CFU/g) and aerobic bacteria (7.32 log CFU/g) than those in moss (3.66 and 7.63 log CFU/g, respectively). Moss packaging alone resulted in the total fungi count reaching up to 3.36 log CFU/g, with the aerobic bacteria count consistently exceeding 7 log CFU/g, highlighting the importance of hygienic management. Moreover, no significant differences were observed in the moisture content and relative humidity between the MA-film- and moss-packaged groups throughout storage. These findings indicate that the functional MA film is a more hygienic packaging solution for ginseng sprouts than moss.

Designing Modified Atmosphere Packaging for Persimmon (Diospyros kaki cv. Fuyu) Fruit Based on Respiration Modelling (단감의 최적 Modified Atmosphere포장 규격 설정)

  • A respiration rate analysed by enzyme kinetics-based respiration model and gas permeability data of LDPE film were applied to design the optical modified atmosphere (MA) packaging condition of persimmon (Diospyros kaki cv. Fuyu) fruits. The fruit quality rapidly decreases due to physiology disorder such as softening and peel blackening. $O_2$ permeance ($Q_{O2}$ in $ml{\cdot}hr^{-1}{\cdot}atm^{-1}{\cdot}m^{-2}$) and $CO_2$ performance ($Q_{CO2}$ in $ml{\cdot}hr^{-1}{\cdot}atm^{-1}{\cdot}m^{-2}$) of low density polyethylene (LDPE) film samples were measured at $0^{\circ}C$ and described as function of thickness (L in ${\mu}m$) as $Q_{O2}=(2540{\times}1/L)-16$, and $Q_{CO2}=(13742{\times}1/L)-70$, respectively. MA package containing single persimmon fruit of 225g was designed and tested experimentally at $0^{\circ}C$ by using LDPE films. Package atmospheres predicted from the relationship of $O_2$, $CO_2$ and $N_2$ balances on the packages was in good agreement with those obtained experimentally. Physiology disorder occurrence was the lowest at 52 ${\mu}m$ package that attained optimum gas condition ($O_2$ 2.8% and $CO_2$ 5.4%). The computer simulation was found to be effective to help to design the optimum MA packaging condition of individual persimmon fruit.

  • The effects of packaging conditions on the freshness extension of table grapes were investigated during storage for 14 days at $25^{\circ}C$ The storage life of tables grapes was influenced by both packaging methods (corrugated cardboard and MA film with box) during storage. The fresh weight, vitamin C content, reduced sugar and titratable acidity of table grapes decreased during storage. The change of vitamin C content and acidity was influenced by both packaging methods during storage. The quality of table grapes packed with 20CE, 20LD film was better than the other packaging methods.

  • Weight loss of fear packed with corrugated paperboard box(FC) laminated with functional MA film after 60 days storage at 5$^{\circ}C$ was 1.0%, and that of LDPE, CE film was 0.6-0.7%, while that of control(Corrugated Paperboard box) was 2.8%. Total ascorbic acid content of pear ill MA films and FC package was higher than that of control. Titratable acid of control changed 37%, but that of the others packages changed below 27%. Soluble solid content of control changed 27%, while the others changed below 2%. Reference in overall appearence of pear were not found among packaging methods. Corrugated paperboard box(FC) laminated with Functional MA film can be used as packaging material for pear packaging.

  • The quality of 'Fuji' apple was analyzed the film thickness conditions and packed with functional MA film during 24 weeks storage at $0^{\circ}C$ to weight loss, hardness, acidity and SSC, decay ratio, and vitamin C. The weight loss of apple packed functional MA film was higher than that of contro.Value of the weight loss of apple packed in the control and functional MA filmswere 8.2% and 0.4-0.5%, respectively. The change of hardness and titratable acidity was also lower than that of control. The decay ratio of apple packed with functional MA films were 2.4~4.7%, but that of control was 6.8%. The decay ratio of apple was the lowest at 0.025mm functional MA film. Changes of vitamin C also was lower than that of control. Based on the results, we suggested that the functional MA film with 0.025mm thickness is desirable for keeping the quality of the 'Fuji' apple produced at Geochang, Korea.
