Effect of Drying Temperature on High Quality Functional Processed Products of Chinese Matrimony Vine (가공용 소재로서 구기자나무 잎의 건조온도 조건)

  • Background : Chinese matrimony vine (Lycium chinense Mill.) is a deciduous shrub belonging to the Solanaceae. The leaves are used as an alternative raw material replacing dried fruits associated with high production costs in many industires. The aim of this experiment was to determine the effect of drying temperature on the leaves used in the manufacture of functional products. Methods and Results : The leaves of Chinese matrimony vine were harvested when the plant height reached 60 - 70 cm in the spring and treated at four different temperatures ($40^{\circ}C$, $50^{\circ}C$, $60^{\circ}C$ and $70^{\circ}C$). The time to reach the desiccation state of 20% was 63 h at $40^{\circ}C$, 37 h at $50^{\circ}C$, 17 h at $60^{\circ}C$ and 11 h at $70^{\circ}C$. The drying rate per hour was 1.28% at $40^{\circ}C$, 2.25% at $50^{\circ}C$, 4.94% at $60^{\circ}C$ and 7.60% at $70^{\circ}C$. No significant difference were observed in ash, crude fat, polyphenol or rutin content of treated samples. Crude protein and betaine content decreased with higher dry temperatures. Nitrogen free extract of the treated samples increased with higher drying temperatures. Conclusions : Taking into consideration drying time, drying rate, color value, energy consumption and functional ingredients is advantageous to dry the leaves of the Chinese matrimony vine at $60^{\circ}C$ using a hot air agricultural dryer.

Effects of Chinese Medical Material Extract on Plasma Lipids and Glucose in Male Rats (한약재 추출물이 흰쥐의 혈장지질 및 혈당농도에 미치는 영향)

  • Chinese medical materials of Astragalas manbranaceus Bunge, Angelica gigas Nakai, Cnidium officinale, Glycyrrhiza uralensis Fisch, Lycium Chinese Mill were mixed, mixing ratio was 28:20: 18:18:16(w/w). Yield and concentration of extract obtained through extraction- concentration process of the mixed Chinese medical materials were 37.28%(w/w) and 50Brix, respectively. Animal feed(AF) used for animal test was manufactured from both mixing of general AF and this extract(0∼ 5%, w/w) and freeze dried. After the male rats were fed experimental diets in order to test during 4 weeks, the results of plasma TG, total cholesterol, phospholipid content changes and plasma, pancreas and femur insulin concentration changes were followed. The more the amount of treatment of Chinese medical material extract are, the higher the effect of concentration decline are in plasma lipid concentration. And at 3% treatment plasma TG, total cholesterol and phospholipid contents are decreased respectively 8.62%, 2.81% and 2.11%. Plasma glucose concentration has also similar effect that those things are decreased at 3% treatment. Insulin concentration of plasma, pancreas and femur are difficult to prove the effects due to respective increase and decrease. We guess that these results comes from not experimenting intentioned rat of diabetes mellitus but normal rat.

The Effects of Korean Wild Vegetables on Blood Glucose Levels and Liver-muscle Metabolism of Streptozotocin-induced Diabetic Rate (한국산 야생식용식물이 당뇨유발 흰쥐의 혈당 및 간과 근육내 에너지원 조성에 미치는 영향)

  • Attempts were made to determine the effects of 5-Korean wild vegetabel consumptions on blood glucose leveles and orgen-energy metabolisms in streptozotocin-induced diabetic rats. The 5-Korean wild vegetables were : Cassia tora L.(C.t), Lycium chinese Mill(L.c), Trichosanthes kirilowii Max(T.k), Polygonatum odoratum var. Pluriflorum Ohwi(P.o) and Arctium lappa L(A.l). Sixty male Spargue-Dawley rats(160-220g) were induced diabetes mellitus by streptozotocin injection into the tail vein and were devided into 6 groups : a diabetic control and 5-experimental groups. All groups of the rats were fed on a AIN-76 diet, and the 5-experimental groups were fed with each wild vegetable (10%) for four weeks. An increased tendency in body weight of all the groups was observed and the tendency was more significant in L.c, T.k. and P.o. groups. The organ weight of liver and kidney were higher in L.c. and A.l. groups and lower in T.k. group which has shown the improvement from diabetes. Plasma glucose levels were markedly decreased from the 1st week in C.t, T.k. and P.o. groups and the tendency has lasted throughout the four weeks experimental period. The consumption of P.o. has decreased plasma cholesterol level while any significant difference was not seen in plasma protein levels from all the experimental groups. The level of plasma triglyceride was decreased in P.o. group and the levels of plasma free fatty acids were also significantly lower in P.o. and T.k. groups. The liver protein levels were significantly higher in P.o. and T.k. groups and these two groups also showed the negative or relatively small amount of urinary glucose excretion. The experimental group of T.k. has revealed the decreased level of muscles protein and the increased level of muscle glycogen. The 5-Korean wild vegetables contained dietary fiber and 9-analyzed minerals comparable to the ordinary use vegetables.

A Study on the develpoment of new recipes of 5-Korean Wild Vegetables (한국산 야생식용식물의 조리과학적 연구)

  • The Contents of proximate compositions, vitamin C and minerals(Ca, P, Fe and Zn) of five Korean wild vegetables were analyzed. Twenty four cooking recipes with three of the vegetables were developed and their taste characteristics were evaluated by 12-trained panels. The five Korean wild vegetables are Cassia tora(C.t.), Lycium chinese Mill(L.c.), Trichosanthes quadricirra MIQ(T.q.), Polygonatum japonicum MORR et DECAIS(P.j.) and Articum lappa L.(A.l.). They have been known as the efficacious plants agaginst diabetes mellitus. In our previous work, their hypoglycemic effects have been studied through streptozotocin-induced diabetic rats and fed on the wild vegetables. Contents of moisture were 14~86% in the samples and L.c. showed relatively higher content of crude protein(16.4%). High level of crude fat was seen in C.t.(9.4%). Contents of vitamin C were also relatively high in the wild vegetables(14.2~42.0 mg%). Analysis of minerals revealed the high level of Ca in L.c. leaves, P in A.l. and Fe in C.t. and L.c. leaves. All of the samples contained Zn in 5.0~14.6 mg%. Twelvetrained taste panels indicated that the 24-preparations of L.c. leaves, fruites and P.j. were well accepted in taste, color and odor. Although L.c. fruit gruel, L.c. cream soup and P.j. saute were evalulated as less acceptable, their sensory scores were in 3.6~5.4 which were not undesirable. The newly developed cooking recipes of L.c. fruits and leaves showed better scores in color and texture, P.j. in texture and odor.
