To investigate the textural and physical characteristics of WSF(whole soybean flour) tofu affected by coagulant and its concentration, $CaCl_2$, $CaSO_4$, $GDL(glucono-{\delta}\;lactone)$, $MgCl_2$, and some mixed coagulants were used in this study. Yields of WSF tofu coagulated with $CaSO_4$ and GDL were ranged 4.3-4.5(g/g WSF), but common tofu was 2.2-3.0(g/g soybean). As the water addition ratio increased, L and a value were increased while heating time increased, b value increased. L value of WSF tofu was lower and b value was higher than conventional tofu and 4 commercial tofus. Kinds of coagulant and its concentration significantly affected to textural properties of WSF tofu. As the concentration of coagulant increase, the hardness increased in most all coagulants. WSF tofu coagulated with $CaSO_4$ and GDL recorded low hardness and adhesiveness, and high springiness among the used coagulants at the same concentration. As the hardness increased, the gumminess and chewiness increased in most all coagulants. As coagulation temperature and molding pressure increase, hardness also increased. WSF tofu coagulated with 0.3% $CaSO_4+GDL$ was the most similar in the textural properties with conventional tofu and 4 commercial tofus. WSF tofu coagulated with 0.3% of $CaSO_4+GDL$ at $85^{\circ}C$, 10 times water addition, 5min. heating and $25.0g/cm^2$ molding pressure recorded the highest score in the sensory evaluation.
The purpose of this study is to present basic data for an improvement of school foodservice by identifying students' preference level for school meal menu. A survey was carried out in two high schools provided with different types of consignment service in Daegu. Study subjects were consisted of 100 high school students from a school with on-site service and 119 students from the other school with external transporting service. More than half of students (54.2% of male and 68.3% of female) had normal weights while 13.5% of male and 30.1% of female students had underweights. 'Taste' and 'family' were the most important factors in meal choices and in eating habits, respectively of all the study subjects. Students who answered to have unbalanced diet (33.0%) were less in school with on-site service than those (56.1%) with external transporting service. Compared with on-site service, preferences for meats fruit and milk were higher and as cooking method, preference for blanching lower but stew, roasting and frying higher in the school with external transporting service. Various types of cooking methods and food materials were better accepted by the students with on-site service than those with external transporting service who preferred meat more exclusively regardless of cooking methods of main dish. Most kinds of kimchi was less liked by the students with external transporting service. It is concluded that low preference for most menus provided by the external transporting service is attributed by limitation in food materials, cooking methods and maintenance of food temperature. The limitation could be overcome by more intensive efforts for developing menus and using more efficient facilities and ultimately by changing meal service system in cooperation with school administrators, dietitians and parents.
Polyphenol oxidase in japanese pear (Pyrus communis var. mansamkil) was isolated, partially purified and its some properties were investigated. Polyacrylamide disc gel electrophoresis indicated two bands with polyphenol oxidase activity in the extract from acetone dry powder of par flesh. These two polyphenol oxidases (PPO A and PPO B) were purified through acetone precipitation and diethylaminoethyl cellulose column chromatography. PPO A and B were purified 7.8 fold and 8.7 fold by the present procedure, respectively. The Rm values of partially purified PPO A and B were estimated to be 0.58 and 0.68, respectively. The optimum temp, and pH of PPO A activity were $33^{\circ}C$ and pH 7.0, while those of PPO B were $30^{\circ}C$ and pH 4.2, respectively. Two PPO were unstable over the temperature of $60^{\circ}C$. The substrate specificity of pear PPO showed high affinity toward o-diphenolic compounds, especially catechol in PPO A and chlorogenic acid in PPO B, but inactive toward m-diphenol, p-diphenol and monophenols. PPO A showed affinity toward the trihydroxyphenolic compound. $Zn^{{+}{+}}$ activated the PPO A activity but $Fe^{{+}{+}}$ inhibited PPO B activity, while $Fe^{{+}{+}}$ and $Zn^{{+}{+}}$ activated the PPO B activity, while $Fe^{{+}{+}}$ and $Zn^{{+}{+}}$ activated the PPO B activity but $K^+$, $Mg^{{+}{+}}$, $Ca^{{+}{+}}$ and $Hg^{{+}{+}}$ inhibited at 10mM concentration. $Cu^{{+}{+}}$ activated the enzyme action at low concentrations but inhibited at high concentration. Inhibition studies indicated that L-ascorbic acid, L-cysteine and thiourea were most potent. The Km values of PPO A and PPO B for catechol were 20mM and 14.3mM, respectively.
A new six-rowed naked barley cultivar "Jinjuchal" with high whiteness after cooking and high $\beta$-glucan content was developed from the cross between 'Jinmichapssalbori' with high winter hardiness, lodging tolerance, grain whiteness and pearling yield, and 'Suwon 333' with waxy endosperm by the Honam Agricultural Research Institute (HARI), NICS, RDA in 2007. An elite line, SB962002G-B-B-B-84-4 was selected in 2002 and designated as 'Iksan 79' It showed good agronomic performance in the regional yield trials (RYT) from 2005 to 2007 and was released with the name of "Jinjuchal" possessing high whiteness and low proanthocyanidin waxy endosperm. The average heading and maturing dates of "Jinjuchal" were April 27 and June 1 in paddy field, which were same and one day later than those of the check cultivar 'Saechalssalbori' respectively. The new cultivar, "Jinjuchal" had 81 cm of culm length that was 1cm longer than that of 'Saechalssalbori' and 4.9 cm of spike length. It showed 673 spikes per $m^2$, 56 grains per spike, 27.0 g of 1,000-grain weight, and 752 g of test weight. "Jinjuchal" showed stronger hardiness and better resistance to powdery mildew and BaYMV (Barley yellow mosaic virus) than those of the check cultivar, 'Saechalssalbori' It showed higher $\beta$-glucan content(8.4%) and water absorption rate than those of the check cultivar, 'Saechalssalbori' Its average yield of the pearled grain in the regional yield trial was 3.79 MT/ha in upland, and 3.73 MT/ha in paddy field, which were 1% lower and 3% higher than those of the check cultivar, respectively. Total phenol and proanthocyanidin contents were 4.2 and 0.2 mg/g, respectively. This cultivar is suitable for the area of the daily minimum temperature above $-6^{\circ}C$ in January in Korean peninsula.

Recently, demand for high energy density and long cycling stability of energy storage system has increased for application using with frequency regulation (F/R) in power grid. Supercapacitor have long lifetime and high charge and discharge rate, it is very adaptable to apply a frequency regulation in power grid. Supercapacitor can complement batteries to reduce the size and installation of batteries. Because their utilization in a system can potentially eliminate the need for short-term frequent replacement as required by batteries, hence, saving the resources invested in the upkeep of the whole system or extension of lifecycle of batteries in the long run of power grid. However, low energy density in supercapacitor is critical weakness to utilization for huge energy storage system of power grid. So, it is still far from being able to replace batteries and struggle in meeting the demand for a high energy density. But, today, LIC (Lithium Ion Capacitor) considered as an attractive structure to improve energy density much more than EDLC (Electric double layer capacitor) because LIC has high voltage range up to 3.8 V. But, many aspects of the electrochemical performance of LIC still need to be examined closely in order to apply for commercial use. In this study, in order to improve the capacitance of LIC related with energy density, we designed new method of pre-doping in anode electrode. The electrode in cathode were fabricated in dry room which has a relative humidity under 0.1% and constant electrode thickness over $100{\mu}m$ was manufactured for stable mechanical strength and anode doping. To minimize of contact resistance, fabricated electrode was conducted hot compression process from room temperature to $65^{\circ}C$. We designed various pre-doping method for LIC structure and analyzing the doping mechanism issues. Finally, we suggest new pre-doping method to improve the capacitance and electrochemical stability for LIC.

It is important to determine sowing date as it decisively affects the quality as well as quantity of waxy corn. In the central northern area of Korea, optimum sowing date of waxy corn is May and requires about 20-26 reproductive growth days from silking date to harvest. We determined adaptable sowing date of waxy corn varieties using growing degree days (GDDs), especially in the central northern area. Earlier sowing required many more emergence days owing to the low temperature. All waxy corn varieties required about 16~22 emergence days when sown in April. Otherwise, less than 15 emergence days were needed for sowing from May to August. Sowing dates to maximize ear yield of waxy corns were different depending on the eco-types of corn varieties as well as GDDs during the growth period. Early maturity type Mibaek2' showed the highest ear yield at the May $15^{th}$ sowing date. Middle maturity 'Iimichal' and late maturity 'Chalok4' showed the highest ear yield at the May $25^{th}$ and June $5^{th}$ sowing dates, respectively. GDDs of 26 days after silking was an index to determine the highest yield sowing date of 'Mibaek2'. The total GDDs from sowing to harvest and to silking were other indexes to determine the highest yield sowing date of 'Ilmichal' and 'Chalok4', respectively. Generally, it required about $2,400^{\circ}C$ GDDs from sowing date to maturity and at least 65 days of silking date from sowing to obtain about 1,200kg of ear yield of waxy corn in the central northern area of the Korean peninsula. The results of the study will be helpful for corn farmhouses to determine optimum sowing date of waxy corn in the central northern area of Korea.
Traffic causes more and more stress and injury to grasses on golf course green in Korea due to the increased playing. This study compared the effect of fertilizer component (Nitrate, Phosphate, Potassium) on turfgrass growth and quality golf course green under traffic stress during early winter. Experiment was conducted by using different fertilizer components for 2 months(Oct. 1 to Nov. 30, 2005). Turfgrass leaf color, leaf texture, density and traffic tolerance were evaluated visually, and the root length(cm) and tiller density(tiller/$cm^2$) were measured. Creeping bentgrass(Agrostis palustris cv. 'Seaside II') fromthe nursery of Incheon Grand Golf Club was used. Results of this study are as followings: 1). Turfgrass color was the best in A6(20-15-10) and A5(15-15-10) treatments in the N study. Leaf texture was not different among treatments. Turf quality and traffic tolerance were the highest In A5 and A6. Root length was the longest(15.8cm) in A6 (20-15-10). Root length increased with nitrogen levels. 2). Turf color of A9(5-7.5-5) and A10(15-22.5-15) was darkest in the comparison of P study. Leaf texture was the best in A4(10-15-10) and A9. Turf quality was the best in A10. A7(10-0-10). 3). In general, to recover turfgrass damage on the putting greens during low temperature period, fertilizer amount need to be increased; and nitrogen is better than phosphate and potassium for that purpose.
This experiment was conducted to establish the optimum conditions for high $CO_2$ gas treatment in combination with a proper gas-permeable packaging film to maintain the quality of fig fruit (Ficus carica L). Among the fig fruits with different high $CO_2$ treatments, the quality change was most effectively controlled during storage in the 70%-$CO_2$-treated fig fruit. Harvested fig fruit was packaged using microperforated oriented polypropylene (MP) film to maintain the optimum gas concentrations in the headspace of packaging for the modified-atmosphere system. MP film had an oxygen transmission rate of about $10,295cm^3/m^2$/day/atm at $25^{\circ}C$. The weight loss, firmness, soluble-solid content (SSC), acidity (pH), skin color (Hunter L, a, b), and decay ratio of the fig fruits were monitored during storage at 5 and $25^{\circ}C$. The results of this study showed that the OPP film, OPP film + 70% $CO_2$, and MP film+70% $CO_2$ were highly effective in reducing the loss rate, firmness and decay occurrence rate of fig fruits that were packaged with them during storage. In the case of using treatments with packages of OPP film and OPP film+70% $CO_2$, however, adverse effects like package bursting or physiological injury of the fig may occur due to the gas pressure or long exposure to $CO_2$. Therefore, the results indicated that MP film containing 70% $CO_2$ can be used as an effective treatment to extend the freshness of fig fruits for storage at a proper low temperature.
Some substances and freezing tolerance in the mulberry (Morus species) branch have been studied on the basis of varietal differences and harvesting times along with harvesting methods in autumn. The results obtained are summarized as follows; 1. The highest freezing tolerance was shown in the varieties of Yongcheon-chou, Jasan, Kang-weon No. 3 and Ichihei, the medium in Roso. Kairyonezumigaeshi, Yanagida and Kokuso No. 28, and the lowest in Ichinose, Mokuso, Kokuso No. 21 and Suweousang No. 3. 2. There was a signifiant negative correlation (r= -0.59*) between death atop percentage in the field and the temperature required to kill 50% of the mulberry buds (T$_{50}$) with the harvesting times and methods in autumn. Cold hardening occurred in the early through the end of September with the peak at the mid-september. During this period, leaf harvest decreased freezing tolerance with remarkable decrease due to picking all the leaves and leaving several leaves at the base of branch. Greater cold hardening was induced by leaving several leaves after topping. 3. Negative correlations were observed between freezing tolerance and the contents of soluble (r =-0.70*) and crude (r= -0.70*) protein. However, positive correlations were shown between freezing tolerance and total carbohydrate contents per crude (r=0.31*) and per soluble (r=0.71*) protein . There were also positive correlations between freezing tolerance and total sugar (r=0.67*) and RNA content (r=0.99**). No relationships of dry matter. fat. total carbohydrate and DNA contents were observed to the freezing tolerance. 4. Such sugars as raffinose. lactose, sucrose, glucose, fructose. arabinose. xylose. ribose (assumed) and rhamnose were detected in winter mulberry branch. Major sugars such as sucrose, glucose, and fructose were supposed to have higher relationship to the freezing tolerance than the other sugars. 5. Late harvesting increased RNA content except in the case of total leaf picking at mid-September. Leaf picking decreased RNA content. Some amount of RNA was, however, maintained by leaving several leaves after topping Leaving upper-middle leaves of a branch showed high RNA content. Leaving young leaves at the top and the overmatured leaves at the base showed low content. A positive correlation (r=0.51*) was noted between RNA content and freezing tolerance in the different harvesting methods.s.
The present study was carried out with a view to understand the distribution and ecology of Clihton retropictus (Martens, 1879), a class II endangered wildlife designated and protected by the Ministry of Environment, Republic of Korea, and to suggest the effective conservation and management measures for this species and its habit. First, the distribution of Clihton retropictus was investigated nationwide, and environmental factors such as salinity and substratum were analyzed in consideration of the ecological characteristics of this species. In addition, the individual size, density, and movement of Clihton retropictus per each district surveyed were analyzed. Due to its nature of inhabiting in the brackish water zone, the analysis showed that the salinity of this species was 0.7 ~ 16.6‰ at low tide and 1.0 ~ 17.3% at high tide. It was learned from the analysis of substratum that its composition in each river under investigation was slightly different, but most of substratum had a higher composition ratio than gravel (pebble, 16 ~ 64 mm). On the other hand, the size of each individual was checked by measuring the length of its diameter, and there was almost no change in the individual when the inhabited range of Clihton retropictus was short. However, there was tendency that the longer the habitat range, the bigger the individual size. From surveying the population density by season, it was made clear that, during the summer (July to August) and fall (September to October), the density was relatively higher while the number of individuals decreased significantly during winter (November to December) when the water temperature was lowered. In an effort to effectively establish conservation and management measures, the moving distance was measured, and it became known that, during the surveys in summer and fall when the individuals were active, the individuals moved in more distances than during the winter survey. The results of this study are expected to be utilized as basic data for establishing effective management plans such as creation of habitats for Clihton retropictus, its migration projects and selection of migration destinations which get unavoidable due to development projects.
