Activities of Enzymes Involved in Fatty Acid Metabolism in the Colon Epithelium of Piglets Fed with Different Fiber Contents Diets

  • The present study was conducted to evaluate the influence of dietary fiber on the activities of malic enzyme and citrate lyase involved in fatty acid metabolism in the colon epithelium of pigs. Thirty-six weaned 5 weeks old crossbred (Yorkshire${\times}$Swedish Landrace) piglets originating from twelve litters were randomly assigned to either a low fiber diet containing 10% non-starch polysaccharides (NSP), a control diet containing 14.7% NSP or a high fiber diet containing 20% NSP. The activity of malic enzyme in the colonic epithelium of pigs significantly (p<0.05) increased with age during the suckling-weaning transition. There was a tendency (p<0.10) of decreased malic enzyme activity in the colonic epithelium of pigs fed on the high fiber diet. At week 6, a lowered (p<0.01) activity of malic enzyme in pigs fed on the low fiber diet compared with that in pigs fed on the high fiber and the control diets. Nevertheless, there were no significant differences in the activity of citrate lyase observed either between pigs with different ages or between pigs fed with various diets. The current data suggest that piglets during the suckling-weaning transition have a limited capacity to synthesize fatty acids from carbohydrate derivatives in the coloncytes. In addition, lipogenesis in coloncytes was enhanced with age during the suckling-weaning transition. A tendency (p<0.10) to an increased capacity to utilize acetyl-CoA in coloncytes of pigs has been observed for the high fiber diet. Moreover, the present work indicated that dietary fiber resulted in a lowered rate of lipogenesis and a reduced activity of malic enzyme.

  • Effects of dietary cellulose and protein levels on nutrient utilization in chickens were investigated. Four experimental diets containing 5% (low cellulose) or 20% (high cellulose) cellulose in combination with 10% (low protein) or 20% (high protein) protein of 70 g/day were alternatively forced-fed to eight colostomized White Leghorn cockerels once a day to make $4{\times}4$ Latin-square design. The digestibilities of DM and energy decreased with the increase in cellulose level, but not affected by dietary protein level. Ether extract digestibility was higher in the high cellulose diets than in the low cellulose protein level. Ether extract digestibility was higher in the high cellulose diets than in the low cellulose diets. The digestibility of nitrogen free extract had the same trend with the digestibility of DM and energy. The digestibility of acid detergent fiber was not so much different among the diets, but the NDF digestibility was lower in the high cellulose diets than in the low cellulose diets, due to the low hemicellulose digestibility. The true digestibility of protein was influenced by both of the dietary protein and cellulose levels, and their interaction was found. The dietary protein level affected the biological value of protein but the dietary cellulose level did not, and consequently the biological value of protein in the low protein diets was lower than in the high protein diets.

Relationships of Muscle Fiber Characteristics to Dietary Energy Density, Slaughter Weight, and Muscle Quality Traits in Finishing Pigs

  • The present study was conducted to investigate the relationships of muscle fiber characteristics to dietary energy density [3.0(Low-E) vs. 3.2 (Med-E) Mcal DE/kg)] and slaughter weight [SW; 110, 125, and 138 kg] in finishing pigs (gilt vs. barrow) using a $2{\times}3{\times}2$ factorial treatment design. Forty-one longissimus dorsi muscle (LM) samples were analyzed histochemically, with growth performance and physicochemical data for the 41 animals and their LM out of 192 animals and 72 LM used in a previous study retrospectively included. The ADG was less (P<0.01) in the Low-E than in the Med-E group (0.93 vs. 0.73 kg) whereas lightness ($L^*$) and redness ($a^*$) of LM were greater in the Low-E group SW did not influence these variables. The diameter and perimeter of the type I (slow-oxidative), type IIA (fast oxido-glycolytic) and type IIB (fast glycolytic) fibers increased with increasing SW whereas densities of the fibers decreased. However, the number and area percentages of the fiber types were not influenced by SW or dietary energy density. The percentage and per-$mm^2$ density of type IIB fibers were negatively correlated with SW (r = -0.33 and -0.57, with P<0.05 and <0.01, respectively), whereas type I fiber number percentage was positively correlated with SW (r = 0.31; P<0.05). Marbling score was negatively correlated (P<0.05) with type I (r = -0.36) and type IIB (r = -0.39) fiber densities. The $a^*$ was correlated (P<0.01) with both type I and type IIB fiber number percentages in the opposite way (r = 0.42 and -0.47, respectively). However, $L^*$ (lightness), drip loss and $pH_{24h}$ were not correlated with the fiber number percentage or density of any fiber type. Collectively, results indicate that muscle fibers grow by hypertrophy during the late finishing period, but that fiber characteristics other than the size are not significantly influenced by dietary energy density or SW.

  • Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.

  • 소비자들은 건강에 관한 관심이 계속 증가할 것이며 이에 저열량 식품에 대한 요구에 부응하는 소재의 개발이 필요하다. 저열량 식품소재의 개발에 있어 열량을 낮춘 소재의 기능성과 최종제품의 품질을 잘 유지할 수 있는 관능성이 중요하다. 이에 난소화성 전분과 난소화성 말토덱스트린은 이러한 필요를 충족시킬 수 있는 소재이며 일반 식이섬유보다 다양한 제품에 품질을 자유롭게 조절할 수 있는 장점이 있다. 난소화성 전분은 입자가 작고 색이 하얗고 특별한 냄새와 맛이 없기에 제빵, 파스타, 시리얼, 스낵 제품 등에 식이섬유 함량을 높이거나 제품의 품질을 향상하는데 저열량 소재로 사용되고 있고 난소화성 말토덱스트린은 식후혈당 상승억제, 혈중 중성지방 개선, 배변 활동 원활하게 하는 기능성 원료이기에 음료, 건강보조식품, 일반 식품에서 저열량 소재로 많이 활용되고 있으며 앞으로도 다양한 저열량 식품에 소재로 활용될 것이다.

고식이섬유 및 고탄수화물 섭취와 대사질환과의 연관성 (High fiber and high carbohydrate intake and its association with the metabolic disease using the data of KNHANES 2013 ~ 2017)

  • 본 연구는 2013 ~ 2017년 국민건강영양조사의 검진조사에 참여한 만 20세 이상 성인을 대상으로 고식이섬유 섭취 및 고탄수화물 섭취와 대사질환 간의 연관성을 확인하였다. 한국 성인의 평균 식이섬유 섭취량은 24.1 g/일이었으며, 탄수화물 섭취 수준이 증가할수록 식이섬유 섭취량도 증가하는 경향을 보였다. 고식이섬유 섭취와 대사증후군과의 연관성을 확인하기 위해 식이섬유 섭취량을 5분위수로 분류하였을 때, 충분섭취량 이상의 고식이섬유 섭취는 대사증후군 위험 감소와 연관이 있었다. 또한, 식이섬유 섭취가 탄수화물 섭취와 밀접한 관련이 있다는 점을 반영하여 고탄수화물 섭취와 대사질환과의 연관성을 식이섬유 섭취수준에 따라 확인하고자 하였다. 이에 식이섬유 충분섭취량을 기준으로 하여 성별로 저식이섬유 섭취 그룹과 고식이섬유 섭취 그룹으로 분류한 후, 탄수화물 에너지 섭취비율과 대사질환과의 연관성을 분석한 결과 식이섬유 섭취수준에 따라 고탄수화물 섭취와 대사질환과의 연관성이 다름을 확인하였다. 저식이섬유 섭취 그룹에서는 남자의 경우 탄수화물 섭취가 삼분위군 일 때 일분위군에 비해 대사증후군과 죽상경화성 이상지질혈증의 교차비가 유의적으로 증가하고, 여자의 경우 탄수화물 섭취가 이분위군일 때 일분위군에 비해 고콜레스테롤혈증의 교차비가 유의적으로 증가하였다. 그리고 고식이섬유 섭취 그룹에서는 남자의 경우 탄수화물 섭취비율이 증가할수록 고중성 지방혈증의 위험도가 증가하는 경향을 보였다. 본 연구의 결과는 한국 성인의 고식이섬유 섭취가 대사증후군의 낮은 위험도와 관련이 있다는 근거를 제시하였으며, 특히 남자의 경우 고탄수화물 섭취와 대사지표와의 연관성을 살펴볼 때 식이섬유 섭취 수준을 살펴보는 것이 필요함을 제시했다는데 의의가 있다. 따라서, 향후 우리나라 사람들을 대상으로 전향적인 연구를 실시하여 식이섬유, 탄수화물 섭취와 대사질환과의 인과관계를 검증할 필요가 있으며, 이를 통해 탄수화물의 질적 섭취에 대한 실질적인 섭취 지침을 마련할 필요가 있다.

쌀의 식이섬유함량이 정상인의 혈당에 미치는 영향에 관한 연구 (The Effect of Dietary Fiber Content of Rice on the Postprandial Serum Glucose Response in Normal Subject)

  • 건강한 지원자를 대상으로 전기압력밥솥으로 조리한 수원464 백미와 일반쌀 백미를 섭취시켜 혈당과 인슐린의 반응을 비교하여 다음과 같은 결과를 얻었다. 1. 식후 60분 후에서 수원464 백미섭취군의 혈당이 일반쌀 백미섭취군에 비해 유의성 있게 더 감소하였다 (p<0.01). 2. 실험 당질에 대한 혈당반응면적 (Area Under the Curve : AUC)은 수원464 백미군이 일반쌀 백미군에 비해 유의성 있게 낮았다 (p<0.05). 3. 혈청 인슐린치는 혈당반응과 유사한 패턴을 보였으며 식후 120분에서 수원464 백미군의 인슐린치가 일반쌀 백미군의 인슐린치보다 유의성 있게 더 낮았다 (p<0.05). 4. 일반쌀 백미의 혈당지수 (glycemic Index : GI)를 100%로 하였을 때 수원464 백미의 혈당지수는 64.5%로 매우 낮게 나타났다. 5. 수원464 백미의 혈당지수는 문헌상으로 조사된 일반쌀 현미의 혈당지수인 90%에 비해서도 현저하게 낮았다. 이상의 임상시험을 통하여 일반쌀에 비하여 식이섬유 함량이 높은 수원464는 혈당지수가 매우 낮은 것으로 밝혀졌으며 수원464백미는 문헌상으로 조사된 일반쌀 현미의 혈당지수 보다도 낮음을 확인하였다.

기능성 쌀가루 혼합분의 제빵 적성 (Studies on Bread-Making Quality of Bread Mixed with Wheat Flour and Several Functional Rice Flour)

  • This study investigated the feasibility of the bread making process with the mixture of the functional rice flour. The bread was manufactured with 20, 30 or 40% functional rice flour with increasing and wheat flour. Gelatinization characteristics of the rice starch was examined by differential scanning calorimetry(DSC). Coated with soluble dietary fiber rice showed the highest gelatinization enthalphy among functional rices and other functional rices were similar to normal rice. in the viscosity point of view. generally the viscosity related to the addition ratio. The most viscose case was 30% Sangwhang rice but in fermented with monascus ruber rice case, viscosity was low even with 40% case because of the transformation of the starch granules. In sensory evaluation, the highest sensory scores for the uniformity of pore size and flavor were obtained when sangwhang rice flour content was 20%. The textual study was mainly focused on the hardness, cohesiveness, adhesiveness, springiness, chewiness. Textural characteristics of functional rice bread crumb bakedwith 20% coated with soluble dietary fiber rice, 20% sangwhang was low in hardness, chewiness and gumminess. Therefore, Sangwhang rice flour 20%, Monascous ruber 20% and Coated soluble dietary fiber rice 20% were considered to be the most suitable addition ratio for the rice breads.

Effects of Rice Bran Fiber on Quality of Low-fat Tteokgalbi

  • This study evaluated the effects of dietary fiber extracted from rice bran (rice bran fiber) on the quality of low-fat tteokgalbi. The controls were formulated with 20% added fat. Test samples of tteokgalbi were produced with 5 different formulations containing 1, 2, 3, 4, and 5% rice bran fiber as a fat replacer, in addition to 10% fat. The control had the highest fat content, energy value, cooking loss, reduction in diameter, reduction in thickness, CIE $L^*$-value (lighness), and color of sensory properties. The tteokgalbi containing rice bran fiber had higher moisture, protein, ash, and carbohydrate contents than the controls. Tteokgalbi with 3% rice bran fiber had the lowest cooking loss, reduction in diameter, and reduction in thickness. Meat products containing 2 and 3% rice bran fiber had a higher overall acceptability similar to the high fat control.

Effect of Protein and Fiber Levels on Ethanol-Induced Brain Damage in Rats

  • The purpose of this study was to investigate the effect of protein and dietary fiber levels on the activities of ehanol metabilizing enzymes of the brain in acute and chronic ethanol-treated rats. Male Sprague-Dwley rats were fed on diets containing two levels of protein(7%, 20%)) with two levels of fiber(5%, 105) for 5 weeks. Rats were orally administered 40% (v/v) ethanol(5g/body weight) 90 min before decapitation in the acute ethanol-treated groups and 25% (v/v) ethanol (5g/kg body weight) once a day for 5 weeks in the chronic ethnol-treated groups. Cytosilic alcohol dehydrogenase (ADH) activities were higher than those of mitochondrial ADH. The ADH activities were increased by 20% protein and %% fiber levels in the diet in two fractions , but were decreased by chronic ethanol treatment. Mitochondrial aldehyde dehydrogenase (ALDH) activities did not change by ethanol treatment but were increased by the 20% protein level. However, cytosilic ALDH activities were decreased by chronic ethanol treatment at the 5% fiber level and did not change with protein levels. Both ALDH activities were higher in the 10% fiber groups than the 5% fiber groups. Cytochrome P-450 contents were significantly increased in the chronic ethanol-treated groups but xanthine oxidase (XO) activities did not change. P-450 contents and XO activities were significantly decreased in both the low protein and fiber groups.
