This is a study on the improvement of the chemical treatment method of the livestock carcass treatment newly introduced in the livestock infectious disease prevention method in order to improve the problems of the existing burial-centered carcass treatment method when a livestock infectious disease occurs. It was conducted to establish detailed treatment standards for the chemical treatment method of pig carcasses based on the results of proof of the absence of infectious diseases in pigs. After inoculating pig carcasses with 10 pathogens (6 viruses [FMDV, ASFV, CSFV, PCV2, PRRSV, PEDV] and 4 bacteria [Lawsonia intracellularis, Clostridium perfringens type C, E. coli, Salmonella Typhimurium]) It was treated at 90℃ for 5 hours in a potassium hydroxide (KOH) liquid solution corresponding to 15% of the body weight. This method liquefies all cadaveric components and inactivates all inoculated pathogens. Based on these results, it was possible to prove that chemical treatment of pig carcasses is effective in killing pathogens and is a safe method without the risk of disease transmission. Although there are problems to be solved in the processing and operation of the chemical treatment products of livestock carcasses, the chemical treatment method of livestock carcasses can be suggested as an alternative to the current domestic burial-centered livestock carcass treatment method, preventing environmental pollution, and contributing to public health.
Additive and dominance genetic variances were estimated for purebred Landrace selected with line breeding from 1989 to 1995 at Miyazaki Livestock Experiment Station, Kawaminami Branch. Ten body measurements, two reproductive traits and fifteen carcass traits were analyzed with single-trait mixed model analysis. The estimates of narrow-sense heritabilities by additive model were in the range of 0.07 to 0.46 for body measurements, 0.05 to 0.14 for reproductive traits, and 0.05 to 0.68 for carcass traits. The additive model tended to slightly overestimate the narrow-sense heritabilities as compared to the additive and dominance model. The proportion of the dominance variance to total genetic variance ranged from 0.11 to 0.91 for body measurements, 0.00 to 0.65 for reproductive traits, and 0.00 to 0.86 for carcass traits. Large differences among traits were found in the ratio of dominance to total genetic variance. These results suggested that dominance effect would affect the expression of all ten body measurements, one reproductive trait, and nine carcass traits. It is justified to consider the dominance effects in genetic evaluation of the selected lines for those traits.
In the event of an outbreak of a livestock epidemic, it has been considered that the existing burial-centered carcass disposal method should be improved ecofriendly for prevention of leachate and odors from burial basically in regard of pathogen inactivation. Therefore, the aim of this study is whether it was possible to treat the carcass of cattle and chickens using the chemical carcass treatment method. After inoculating cattle carcass with 10 pathogens (foot and mouth disease virus, bovine viral diarrhea virus, Mycobacterium bovis, Mycobacterium avium subsp. Paratuberculosis, Brucella abortus, Bacillus anthracis, Clostridium chauvoei, Clostridium perfringens, Escherichia coli, and Salmonella Typhimurium) and chicken carcasses with low pathogenic avian influenza virus, Clostridium perfringens type C, E. coli and Salmonella Typhimurium, these were treated at 90℃ for 5 hours in a potassium hydroxide liquid solution corresponding to 15% of the body weight. This method liquefies all cadaveric components and inactivates all inoculated pathogens by PCR and culture. Based on these results, it was possible to prove that chemical treatment of cattle and chicken carcasses is effective in killing pathogens and is a safe method without the risk of disease transmission. To investigate the effects of feeding restricted on growth, carcass characteristics and plasma profiles in an attempt for optimum responses, a total of 108 cross-bred finishing barrows [(Landrace${\times}$Yorkshire)${\times}$Duroc]weighing an average of $46.88{\pm}0.52kg$ were assigned in a randomized complete block (RCB) design to one of four treatments with three replicates and nine pigs per pen. Feeding regimens were, 1) ad libitum from 50 kg to market weight (Ad 3/3), 2) restricted feeding from 90 kg to market weight (Ad 2/3), 3) restricted feeding from 70 kg to market weight (Ad 1/3), and 4) restricted feeding from 50 kg to market weight (Ad 0/3). During the experimental period, average daily feed intake (ADFI) was decreased from 2.53 kg (AD 3/3) to 2.09 kg (AD 0/3) with increasing restricted feeding duration of (p<0.05). Average daily gain (ADG) of AD 3/3 (0.79 kg) was significantly higher (p<0.05) than those of AD 1/3 (0.74 kg) or AD 0/3 (0.72 kg). Feed efficiency was not influenced by restriction regimens. Blood IGF-I concentrations were increased from 74.14 to 134.25 (167.36-115.66) ng/ml as body weight increased. Blood leptin concentrations were affected by feed intake level and coincided with blood IGF-I concentrations. Most of carcass characteristics were not significantly affected by restricted feeding, however cooking losses in AD 1/3 and Ad 0/3 treatment diet were higher than those in Ad 3/3 and Ad 2/3. In addition, there was a trend that backfat thickness was lowered in proportional to decreasing feed intake (p>0.05). In conclusion, restricted feeding improved feed efficiency after 50 kg body weight without deteriorating the pork quality of barrows.

A total of 6,804 records for Duroc breed were collected from three farms registered at the Korean Animal Improvement Association (KAIA) from 1998 to 2004 of which both records from two ultrasound modes (A and B) were analyzed to estimate the variance components of carcass traits. Three carcass traits backfat thickness (bf), loin eye muscle area (lma) and lean meat percentage (lmp) were measured. These traits were analyzed separately as bf1, lma1 and lmp1 for ultrasound mode A and bf2, lma2 and lmp2 for ultrasound mode B with multiple trait animal model by using MTDFREML (Boldman et al., 1993). All the traits revealed medium heritability values. Estimated heritabilities for bf1, bf2, lma1, lma2, lmp1 and lmp2 were 0.45, 0.39, 0.32, 0.25, 0.28 and 0.39, respectively. Estimated genetic correlations for traits bf1 and bf2, lma1 and lma2, lmp1 and lmp2 were positive but low. Specifically, genetic correlations between bf1 and bf2 was 0.30 while the estimates for lean traits between lma1 and lma2 and between lmp1 and lmp2 were 0.15 and 0.18, respectively. Conversely, high negative genetic correlations existed between bf1 and the lean traits lma2, lmp2. Likewise, the estimated genetic correlations between lma1 and lma2 and lmp1 and lmp2 were low.
Ultrasound measures of back fat thickness (UBF), eye muscle area (UEMA) and marbling score (UMS) and carcass measures of carcass weight (CW), backfat thickness (BF), eye muscle area (EMA) and marbling score (MS) were available on 26,129 Hanwoo steers. Statistically significant differences by regions of the farms location and birth years-seasons for the steers taken ultrasound measures and their carcass measures (p<0.01) were found. Steers in Gyeonggi province showed the highest values in ultrasound measures and carcass traits except in BF compared to steers in the other provinces. Comparing between ultrasound and carcass measures, UBF was thicker in general than BF in all regions except in Daejeon city. UEMA was higher than EMA in all regions except in Gyeonggior in Jeju provinces. Especially, the difference in Jeonnam province between UEMA and EMA was $7cm^2$ while the differences between UMS and MS ranged from 0.9 to 2.26 depending on the regions of steers located. Steers born in spring showed greater ultrasound or carcass values than those born in autumn. However, carcass measures of steers born in autumn were greater than those born in spring, 2009 except MS. The pearson and residual correlations were 0.63 and 0.65 between UBF and BF, 0.31 and 0.32 between UEMA and EMA and 0.56 and 0.56 between UMS and MS, respectively.

In recent years, foot-and-mouth disease has occurred in all parts of the world. The animals with the disease are buried in the ground; therefore, their concentration could affect ground or groundwater. Moreover, the complete degradation of carcasses is not a certainty, and their disposal is important to prevent humans, livestock, and the environment from being affected with the disease. The treatment of Corynebacterium glutamicum is a feasible method to reduce the risk of carcass decomposition affecting humans or the environment. Therefore, this study aimed to investigate the effect of C. glutamicum on the soil environment with a carcass. The composition of amino acids in the soil treated with C. glutamicum was generally higher than those in the untreated soil. Moreover, the plant root in the soil samples treated with C. glutamicum had 84.0% amino acids relative to the standard value and was similar to that of the control. The results of this study suggest the possibility to reduce the toxicity of a grave land containing animals with this disease.
This study was conducted to determine the optimum substitution level of dried leftover food (DLF) in formula feed for Hanwoo (Korean Native Cattle) steers. A total of forty growing steers were assigned to 5 treatments based on substitution level of DLF (at 0, 25, 50, 75 and 100% level of formula feed). The experiment was carried out with growing steers from 6 months of age to 24 months of age. Average daily gain (ADG) was not affected by DLF substitution level up to 75% of formula feed. However ADG decreased at 100% substitution level. Daily feed intakes were similar among treatments but the amount of feed per 1 kg gain increased with increasing substitution level of DLF. Dressing percentage was around 62% in all treatments without any significant differences. Proportion of quality beef higher than grade 1 was the greatest from animals fed 25% substitution level of DLF. Economic efficiency for Hanwoo steer operator was the highest with 50% substitution level of DLF.
The present study was carried out to determine the effects of feeding levels of barley grain in diets of Hanwoo on the growth performance and carcass characteristics of Hanwoo. Twenty Hanwoo bull calves (initial mean body wt. 99kg) were randomly divided to examine the effects of 5 feeding levels of barley grains(addition levels: 0, 0 and 40% for FII40; 0, 0 and 60% for FII60; 0, 20 and 40% for F2040; and 0, 20 and 60% for F2060 during the growing, early fattening and late fattening periods, respectively) on growth performance and meat quality. Body weight was not affected by the feeding level of barley grains through the whole experimental period, although the body weight of Hanwoo bulls fed FII40 diet at 24 months old of age tended to be lower(591.5kg) than that of other animals(606.2~614.6kg). However, body weight gain in the bulls of the FII60 diet was slightly increased(P<.19). The feeding levels of barley grains did not influence on fasting body weight, carcass weight, carcass rate, lean meat, retailed cut, KPH fat and bone yield. The lean meat yield(89.82%) and fat yield(20.28%) tended to increase in Hanwoo bulls fed the F2060 compared with other treatments. Feeding of the diets of FII40 resulted in the higher marbling scores as 3.75, respectively than other diets.
Many burial sites were constructed in a short time to prevent the rapid spread of foot and mouth disease in infected livestock carcasses in Korea. More than 4,700 carcass burial sites were constructed in 2011. Approximately seven million poultry and 3.5 million livestock, including cattle and swine, were buried on farmland. Some burial sites were suspected of leachate leakage and were excavated and carcasses redisposed in a bioaugmentation process. This study performed interviews in order to understand the economic issues related to carcass burial and redisposal. The internal data from local government and the assumption data from online sites were analyzed to evaluate the costs; the focus was on burial site construction. The results showed that the local government paid $4.7 and $10.9 per carcass for traditional burial and redisposal. The comparable costs shown online were $4.5. This study found that the standard operating procedures should be carried out to reduce environmental impact and avoid additional costs. We estimated that the cost could be reduced by the advance preparations of materials against the emergency situations such as catastrophe of epidemics. In addition, the innovative technology for the stabilization of carcasses should be established through a future study.
