In this study, the physicochemical, microbial, and sensory properties of law-fat hamburger patties during storage for 25 days at $7{\pm}1^{\circ}C$ were investigated. The law-fat hamburger patties were manufactured by three different packing methods (control: added with 10% lard regular-fat patty, T1: added with 10% lard and organic vegetable of regular-fat patty, T2: added with 3% olive oil of vegetability low-fat patty, T3: added with 3% lard of low-fat patty). The pH of all treated samples increased as the storage time increased, and then decreased after 15 days of storage. The low-fat hamburger patty added with organic olive oil (T2) showed significantly higher pH (p<0.05) compared with other treatments (T1 and T3). The TBARS values of the all treated samples tended to increase after 5 days of storage, and then significant quality loss was observed after 15 days of storage period for the control (T1). However, the samples of the vegitability low-fat patty added organic olive oil had longer shelf-life than the control. The total bacterial counts were 7 log CFU/g after 15 days and 20 days of storage for the control and treatments, respectively. The results of this study showed that the storage period of the treatments was slightly extended compared with the control. Low-fat hamburger patties showed no differences for overall acceptability between control and other patties.

The objective of this study is to evaluate the microbial safety of raw pork used to produce Korean pork jerky. The raw pork samples harbored large populations of microorganisms. In particular, mesophilic bacteria were found to be most numerous $(3.9{\times}10^2-3.9{\times}10^5cfu/g)$ in the samples. Spore-forming bacteria and coliforms were not detected below detection limit. Yeast and molds were detected at $3.8{\times}10^1-5.1{\times}10^2cfu/g$ in the raw pork. Ten samples of raw pork were analyzed for the presence of pathogenic bacteria. Bacillus cereus was isolated from samples B and J and Staphylococcus aureus was isolated from sample B. The B. cereus isolates from raw pork samples were identified with 99.8% agreement and S. aureus isolate was identified with 97.8% agreement according to the API CHB 50 kit.

Engineering phase of dairy housing systems has close connection with the milk produc- tivity of dairy cattle, the quality of milk, extension of dairy production systems, labor- saving in management of dairy cattle and the like. Moreover, the rate of investment of dairy housing facilities is of relatively high level, However, there has been almost no research effort for the improvement of engineering aspects of dairy housing systems in Korea. The purpose of this study is to find out general engineering problems and to recomm- end the improvement in dairy housing systems in Korea. Field survey by means of questionaire, direct measurements, taking pictures and sketching was conducted to get necessary information for the study. Kyung-ki Do region was firstly chosen for sampling area since it has included more than half of the number of dairy farms of the whole country. The results obtained are summarized as follows: 1. In overall dairy farm layout, the dwellings of workers were ignored in the light of sanitary environment 2. The layout of stalls in a dairy barn belongs mostly to the type of double-row face-out, which is compatible with the emphasis of manure disposal activities. 3. While the width and length of stalls were sufficiently close to the standard dimension, the width of mangers was much less than the standard dimension. 4. The width and depth of manure gutters and the width of working alleys were much. less than the standard dimension. 5. The mooring equipment was mostly in the classes of chain or rope. The watering equipment was not facilitated independantly except the one cese of using watercup. 6. The bucket milkers with one or two bucket milkers with the capacity of two cattles. each were used as milking equipment in most dairy farms. 7. There were only few milk rooms independently spaced from other space, in which the arrangement of milking equipment was much less than the standard condition. 8. The lounging ground area was averaged to be sufficient for the activity of dairy herd. 9. Silos for silage used during winter consisted of mostly bunker silos, trench silos and underground vertical silos. Ordinary vertical silos were considered for the farmers to be inconvenient for the labor saving. 10. From the view point of heat conservation and moisture removal within the dairy barns, windows were not flexible for the easy ventilation and ceiling part was not adequate for temperatur maintenance. 11. Waste treatment and disposal systems were not provided with most dairy farms, therefore the livestock waste pollution problems would be serious in the near future.
A manure management plan is important for all daily operations. This study was conducted to investigate the effect of application level of liquid cattle manure on the soil properties and changes of BOD and COD content in run-off water at the mixtures swards of National Livestock Research Institute RDA Suweon in 1995. The experiment was arranged in a randomized block design with five treatments consisting of no fertilizer chemical fertilizer application of 40, 60 and 80MT/ha as liquid cattle manure. The quantity of run-off for a no fertilizer was the highest of 1,469.4mm but that for a application level of liquid cattle manure of 60MT/ha was the lowest of 1,278.1mm. The change of BOD in run-off for a no fertilizer was the lowest of $19.84m{\ell}/{\;}{\ell}$, but that for a application level of liquid cattle manure of 80MT/ha was the highest of $36.22m{\ell}/{\;}{\ell}$. Change of COD in run-off for a no fertilizer was the lowest of $21.28m{\ell}/{\;}{\ell}$ but that for a application level of liquid cattle manure of 80MT/ha was the highest of $37.51m{\ell}/{\;}{\ell}$. Available phosphorus and total-N content of soil chemical properties was higher at liquid cattle manure than chemical fertilizer.

This experiment was carried out to investigate the effects of the nitrogen rates and cutting heights on the appearance dry weight and death of new bud (branch and tiller) of sorghum-sudangrass hybrid (Sorghum bicolor (L.) Moench). The cultivar used in the present study was Pioneer 988. The experiment was arranged as a split plot design and undertaken in the Experimental Livestock Farm of Agriculture Coll., Seoul Nat'l Univ. in Suweon, 1981 and 1982. The results obtained are summarized as follows: 1. The appearance and death of branch and tiller were not influenced with high nitrogen fertilization. 2. The frequency of the branching was decreased as the low stubble height, and the rate of the tillering was decreased in the high stubble height. 3. The yield of forage mostly depended on the tiller regardless of cutting height, and minor portion of the yield was resulted from the branch. 4. The low cutting height resulted in the increased number of dead bud (p<0.05).
Examination of correlation between blood compositions and economic traits is very important to improve selection accuracy and predict performance ability of Hanwoo, which may be impacted into the determination of feeding management as well as marketing places. This study was aimed to provide possible procedures of Hanwoo improvement as of early individual selection based on the phenotypic correlation between blood compositions and economic traits using 866 of Hanwoo managed at National Livestock Research Institute. Phenotypic correlation between blood compositions and economic traits was estimated for steer and bulls. BUN in steer and albumin and IGF-1 in bull were highly correlated with 24 mo of weight. Average daily gain of 21 to 24 mo was highly correlated with calcium in steer and albumin in bull. Back-fat thickness and marbling score were highly correlated with BUN in steer and bull, and meat yield index was highly correlated with calcium in steer and testosterone in bull. However, BUN, which is highly correlated with meat quality, was negatively correlated with meat yield index in steer and bull.
This study was carried out to investigate the effects of frozen boar semen on reproductive performance in swine artificial insemination (AI). Many factors, which were breeds, time of insemination, sperm concentration per dose, farm and year were investigated to improve reproductive performance efficiency. Boars were raised at Swine Artificial Insemination Center in National Livestock Research Institute, Sunghwan, Chungnam, Korea. This experiment was carried out from 1995 to 2000. There were no differences in swine AI with frozen boar semen using 5$m\ell$ maxi-straw among 3 breeds (Landrace, Yorkshire, Duroc), 2 or 3 times insemination per estrus, and 3 different sperm numbers of 3.0, 4.0, and 5.0$\times$10$^{9}$ per dose of insemination. However, non-return rate and litter size of sows inseminated with frozen boar semen of commercial farms were different according to farm management system and inseminator's skill. Conception rate, farrowing rate and number of pigs born alive per litter by artificial insemination with frozen boar semen (5$m\ell$ maxi-straw) from 1995 to 1999 was 68.3~74.6%, 61.7~67.6% and 8.1~8.7 heads.
More than 20 years after the first report of porcine reproductive and respiratory syndrome virus (PRRSV) in Korea, the disease is still having major impact on domestic pig health and relevant industries. Although ELISA tests are commonly used by veterinarians to guide herd management, data on diagnostic performance of the test in field settings are very limited. The objective of this study was to evaluate two commercially available PRRSV ELISA (IDEXX PRRS X3 ELISA and Bionote PRRSV ELISA 4.0) to detect antibodies against PRRSV on serum samples. To this end, a total of 1,108 sera were recruited from 35 swine farms located in Gyeonggi province and tested at the Gyeonggi Province Veterinary Service Center. All tests were performed according to the manufacturer's instructions, by laboratory technicians who routinely perform PRRS testing on blood samples. Samples were collected from two sources of swine populations with different PRRS prevalence; 60 samples (5.4%) were originated from breeding farms and the remaining 1,048 samples (94.6%) were from farrow-to-finish farms. We applied Bayesian latent class model (LCM) for two-tests in the two-population when the accuracy of the gold standard is not available. The model estimated that Bionote ELISA was a bit more specific but slightly less sensitive. The estimated sensitivity and specificity of the IDEXX ELISA were 99.8% (95% CI 98.1-100%) and 86.4% (95% CI 81.4-96.5%), respectively. Sensitivity, specificity, positive predictive value and negative predictive value for Bionote kit were 98.7% (95% CI 92.8-100%), 89.8% (95% CI 86.2-93.1%), 93.8% (95% CI 91.5-96.0%), and 97.8% (95% CI 87.1-100%), respectively. Based on the Bayesian 95% credible intervals, the sensitivity and specificity of the two ELISAs were not significantly different each other when assuming that two kits were imperfect, indicating that two kits performed equally well in terms of sensitivity and specificity in our filed setting.

The purpose of this study is to investigate the food hygiene and safety awareness of academic and specialized high school students, in order to provide basic materials characterization and demonstrate the need for differentiated food hygiene safety education by type of school in the Chungnam area. This study shows that the academic high school students attach more importance to Food Hygiene and Safety than the specialized high school students, but that the latter think it is easier get information about food safety and are more confident in choosing safe food than the former. Regardless of the type of school, 50.5% and 49.3% of the students believed that the safety of the agricultural and livestock products and processed food distributed for sale in the country is acceptable, respectively. 40.7% and 17.2% of the students answered that school food hygiene safety education is required and strongly required, respectively. Compared to the specialized high school students (average 3.17), the academic high school students (average 2.81) responded that they did not receive sufficient food safety education. Those students who were confident in choosing safe food showed a positive correlation with those who were confident in the hygienic handling of food (r = .662) and with those who have sufficient education on food safety (r = .504). We suggest that different food hygiene safety education is needed by academic and specialized high school students until they have sufficient confidence in the hygienic choosing and handling of food.
