Chinese-style pork jerky with different levels (3, 6 and 9%) of glycerol or sorbitol were prepared. Moisture content, water activity ($a_w$) and shear value decreased with the addition of glycerol or sorbitol. During storage at $28^{\circ}C$ thiobarbituric acid (TBA) value of all samples declined with the addition of glycerol or sorbitol during storage time. After storage at room temperature ($28^{\circ}C$) for 180 days, the volatile basic nitrogen (VBN) of all treated products were less than the control group. In addition, the mold and yeast growth were inhibited slightly with the addition of glycerol or sorbitol. The absorption isotherm of pork jerky with different levels of glycerol at $25^{\circ}C$ had an aw above 0.75, and moisture contents at 6 and 9% which were higher than the control group. The moisture content was less than the control group with the addition of sorbitol. The chewiness desirability score of pork jerky with 6% glycerol was higher than the other treatments. However, no differences in hardness desirability score due to treatments were detected by sensory panelists.
This study was carried out to provide the basic informations for the water quality management in Boryung fresh water reservoir watershed. Four agricultural reservoirs were selected and the water qualify of the reservoirs were investigated from November 1998 to December 2000, periodically. Including storage rate, temporal variation of water quality constituents such as water temperature, pH, EC, total nitrogen, total phosphorus were analysed. The result showed that pH ranged $6.7{\sim}10.4$, EC $56.1{\sim}1079{\mu}S/cm$, COD $0.75{\sim}8.0mg/L$, respectively. And, total-N concentration affected by the livestock wastes and agricultural activity ranged from 0.21 to 4.66mg/L and which was almost over the agricultural water quality standard(1.0mg/L). Total-P ranged from 0.001 to 0.080mg/L as lower than the agricultural water quality standard(0.1mg/L).

The increase in the rearing intensity of pigs has caused deterioration in the pig house's internal environment such as temperature, humidity, ammonia gas, and so on. Traditionally, the widely used method to control the internal environment was through the manipulation of the ventilation system. However, the conventional ventilation system had a limitation to control the internal environment, prevent livestock disease, save energy, and reduce odor emission. To overcome this problem, the air-recirculated ventilation system was suggested. This system has a semi-closed loop ventilation type. For designing this system, it was essential to evaluate the ventilation rates considering the pressure loss of ducts. Therefore, in this study, pressure loss calculation and experiment were conducted for the quantitative ventilation design of a semi-closed loop system. The results of the experiment showed that the inlet through which external air flows should always be opened. In addition, it was also found that for the optimum design of the semi-closed loop ventilation system, it was appropriate to install a damper or a backflow prevention device rather than a ventilation fan.
Processed meals, such as a ground meat and hamburger patty, are required to ensure that no pathogens remain in the final products. However, there was no rapid method available to verify that the recommended end-point cooking temperature(EPT) was reached. Thus, the objective of this study was to rapidly determine EPT of ground pork hams using sodium dodecyl sulfate-polyacrylamide gel electrophoresis(SOS-PAGE), based on the disappearance of sarcoplasmic proteins after cooking. Fresh pork hams were added two levels of salt(0, 2%) and fat(15, 25%) combinations, and stored in refrigerator overnight, and cooked to internal cooking temperatures of $64^{\circ}C$ to $74^{\circ}C$ with $2^{\circ}C$ increments. Cooked pork hams were measured cooking loss(CL, %), protein solubility(PS) and SOS-PAGE. CL(%) was reduced with the addition of 2% salt, as compared to the control, regardless of fat contents. It was also increased with increasing eooking temperature. Protein solubility was affected by the cooking temperature, resulting in reduced PS up to $64^{\circ}C$(P < 0.05), but remained constant higher than $68^{\circ}C$. In SOS-PAGE analysis, protein bands with the molecular weights of 36 and 66 kDa were affected by the addition of salt and fat combinations. regardless of treatments. These protein fractions were decreased gradually with increased cooking temperatures up to $68^{\circ}C$${\sim}$$70^{\circ}C$ and might be good indicators for the determination of EPT in ground pork hams.
This experiment was conducted to determine the safety and feasibility of using compost-promoting-bacteria. Compost-promoting-bacteria was isolated from livestock compost containing sawdust. The isolated bacteria was identified as Bacillus subtilis LYH201 by the method of the composition of the fatty acid with MIDI system and Bergey's manual. This Bacillus subtilis LYH201 had the following characteristics : Gram-positive, straight rod ($0.5{\sim}0.7{\mu}m$ width, $2.5{\sim}3.0{\mu}m$ length), facultatively aerobic and product of xylanase, CMCase, catalase, oxidase, protease and $0.5{\sim}0.7{\mu}m$-amylase. Growth of Bacillus subtilis LYH201 at saccharose as carbon source(0.5%) was faster than other carbon source. Activity of cellulase. $0.5{\sim}0.7{\mu}m$-amylase and protease from Bacillus subtilis LYH201 after 24 hours at $50^{\circ}C$ by agar diffusion method was higher than that of low temperature. Optimum growth condition of Bacillus subtilis LYH201 was $50^{\circ}C$ and pH 6.

The agriculture and fishery share in the Korean GDP is continuously decreasing after 1960s. Furthermore the proportion of these industries in the GDP has diminished as low as 10 percent in recent years. However, the stockbreeding sector in these industries are considerably expanded. More than 50 percent of the whole farmhouses are involved in the livestock farming, and the stock farming portion is steadily increased in its size and scope. Thus, the mechanization and the automization of stockbreeding equipments are greatly required to reduce down production cost, as well as to win the competitiveness in the global market. From this aspect, developed in this paper is a stockbreeding management system (SMS) for dairy cattle, which can be used in small and medium sized dairy farms. First, the basic schema of the stockbreeding management system are addressed in view of stockbreeding management for individual dairy cattle. Electronic identification (EI) systems and sensory devices have changed stockbreeding management strategy from group stock control into individual stock control manner. The SMS receives stock body measurement data through the sensory devices such as weight, temperature, and milk conductivity meters. A common database then integrates those measuring data together so that the SMS can determine the appropriate solution on each stock's breeding such as feeding and milking. Thus, each stock can be supervised by a sophisticated SMS that provides the best solution to the stockbreeding throughout the stock's whole life-cycle. Secondly. six major submodules of the SMS, based on the EI and sensory devices, are proposed. They are individual stock management, disease management, health management, feeding management, milking management, and a propagation management submodule. Finally, a prototype system for the SMS is demonstrated. The system is developed using Delphi 2 client-server system run under the Windows 95 environment.
1. Objectives: According to Sasang Constitutional Medicine, human beings are classified into four constitutions. Furthermore, medication and food should be taken differently based on the constitution because Sasang Constitutional Medicine is a field where all living things are perceived from a relative viewpoint instead of a standardized one. If so, what about the animals and its meat? This paper aims to identify the characteristics of the mics consumed, sonsially targeting pork and chicken as they are some of the most frequently enjoyed ones with the perception of the animals by the Sasang Constitutional Medicine. 2. Methods: We examine the differences between pigs and chickens through the behavior and nature of them such as morphology, sound, body temperature, taste etc and support the observed differences with medical application. 3. Results: From the Sasang Constitutional Medicine's perceptive, pig is considered as Soeumche while chicken is belongs to Soyangche. Thus, pork is recommended for the SY type while chicken is preferable for the SE type. 4. Conclusions: In this paper, we are trying to suggest several categories for the evaluation of the constitution in animal, especially for pig and chicken. We hope that this is one of the framework for the understanding the animal with Sasang Constitutional Medicine's viewpoint. And also, it may useful to apply the basis what we have outlined in this paper for improving the method of raising livestock as well as the research of laboratory animals.
As the earth's average temperature rises, crop and livestock productions are at risk. Chickens are sensitive to heat stress, and increased temperatures may have adverse effects on their production performance and animal welfare. Reliable stress measurements are crucial for heat stress adaptation. Therefore, various measurement methods and biomarkers are used to evaluate poultry stress levels. Heat shock proteins (HSPs) are heat sensitive biological markers that are highly expressed under stress, thereby acting as a cellular thermometer. HSPs also have chaperone activity, which protects cells from heat stress. This review details the role of HSP70 as a molecular chaperone and biomarker for heat stress, which is important for breeding climate-adaptable, thermo-tolerant poultry.

In Korea, attention is being paid to the use of renewable energy in the livestock industry, and Ground Source Heat Pump (GSHP), which is advantageous for temperature control, is considered as one of the ways to reduce the use of fossil fuels. But GSHP is expensive to install, which proper capacity calculation is required. GSHP capacity is related to its maximum energy load. Energy loads are affected by climate characteristics and time, so dynamic analysis is required. In this study, the optimal capacity of GSHP was calculated by calculating the heating and cooling load of pig farms using BES (Building Energy Simulation) and economic analysis was performed. After designing the inside of the pig house using TRNSYS, one of the commercial programs of the BES technique, the energy load was calculated based on meteorological data. Through the calculated energy load, three heating devices and GSHP used in pig farms were analyzed for economic feasibility. As a result, GSHP's total cost of ownership was the cheapest, but the installation cost was the highest. In order to reduce the initial cost of GSHP, the capacity of GSHP was divided, and a scenario was created in which some of it was used as an auxiliary heating device, and economic analysis was conducted. In this study, a method to calculate the proper capacity of GSHP through dynamic energy analysis was proposed, and it can be used as data necessary to expand the spread of GSHP.

This experiment was conducted to establish the technology for artificial hay preparation in Korea. Using far-infrared heater, a device that can control temperature, airflow, and far-infrared radiation was produced and conducted on the fourth harvested alfalfa. The drying conditions were carried out by selecting a total of four conditions. For each condition, the radiation rate was set to around 40% (33-42%), and the temperature was set at 58~65℃, and the speed of the airflow was fixed at 60m/s. The overall drying time was set to 30 min in the single and 60 min (30-30 min) and 90 min (30-30-30 min) in the complex condition, and the radiation rate and temperature were changed by time period. In the case of drying condition 1, the final dry matter (DM) content was 46.26%, which did not reach a DM suitable for hay. However, all of the alfalfa corresponding to the remaining drying conditions 2 to 7 showed a DM content of 80% or more, resulting in optimal alfalfa hay production. In power consumption according to the drying conditions, the second drying condition showed the lowest at 4.7 KW, and the remaining drying conditions were as high as 6.5 to 7.1 KW. The crude protein content was found to be high at an average of 25.91% and it showed the highest content in the 5th drying condition (26.93%) and the lowest value in the 6th drying condition (25.16%). The digestibility showed a high value with an average of 84.90%, and there was no significant difference among treatments (p>0.05). Considering the above results, it was judged that drying condition 2 was the most advantageous.
