Quality Properties of Seasoned-Dried Pacific Saury Treated with Liquid Smoke during Storage -3. Changes in Fatty Acid and Taste Compounds of Seasoned-Dried Pacific Saury Treated with Liquid Smoke During Storage-

  • As a series of studies on improving quality of seasoned-dried Pacific saury, fatty acid compositions and taste compounds of the seasoned-dried saury treated with liquid smoke (T2 product) were examined during storage, comparing with control (C, seasoning only). In the both samples, the major fatty acids were 22:6n-3, 16:0, 22: In-11I, 20: In-11, 18: In-9, 14:0, 20:5 n-3 and 16:1n-7. The contents of saturated fatty acids in C and T2 increased with increasing storage period, while those of polyunsaturated fatty acids decreased. After drying, the contents of 7 non-volatile organic acids contents detected in this study decreased, and the others of non-volatile organic acids, except for malic and citric acids, in both C and T2 decreased with storage period. The contents of nucleotides and their related compounds in both C and T2 decreased with increasing storage period. The content of total free amino acids in raw sample was 556.96 mg/100g and increased up to 895.77 mg/l00 g and 958.40 mg/100g in C and T2, respectively, after drying, and total contents of free amino acids in both C and T2 somewhat decreased after 60 days of storage.

  • The semi-volatile fraction of cigarette mainstream smoke contains the most important aroma and taste that enhance smoke flavor. The components in mainstream smoke were analysed for commercially available cigarettes. To compare the semi-volatile components delivered from mainstream smoke of domestic cigarette with imported cigarette, we analyzed three types of filter cigarettes such as cellulose acetate mono filter, carbon dual filter and slim filter cigarette. Mainstream smoke was collected with a combination of Cambridge filter pad and liquid trap containing a small amount of acetone cooled by dry ice-methanol. We have identified 43 components from mainstream smoke by GC and GC/MS and found that benzene, toluene, 4-hydroxy-4-methyl-2-pentanone, 5-methyl-2-furaldehyde, acetic acids nicotine and triacetin were the main peaks in mainstream smoke. Also we have compared the relative amounts of semi-volatile compounds delivered from the domestic and imported cigarettes with three different filters. From the results of this study, the relative amounts of limonene, acetic acid, 5-methyl-Lfuraldehyde delivered from the imported cigarettes were generally higher than those of the domestic one's.

  • Among dark fleshed fishes, especially, Pacific saury has not well been used for processing because of its properties of weak tissue and high lipid content. If a simple and modified technique such as liquid smoking method for Pacific saury processing is applied successfully, it could give a lot of advantages on the field of fishery processing. In the aspects of effective utilization of dark fleshed fishes, therefore, we have attempted to process seasoned-dried Pacific saury with commercial liquid smoke. (omitted)

  • Acrylamide has been found in many foods. Acrylamide in foodstuffs were analyzed by a GC/MS after bromination of acrylamide or by a LC/MS for underivatized acylamide. Time consuming and laborious clean up procedures is applied for the purification of the extract, in these methods. In this study, a simple and fast method without clean up step for the analysis of acrylamide in mainstream cigarette smoke was developed by using liquid chromatography-tandem mass spectrometry (LC/MS/MS) and the effects of tobacco leaf constituents on acrylamide content was observed. The analysis of acrylamide in mainstream cigarette smoke started to collect TPM (total particulate matter) from smoking and to extract by 0.1 % acetic acid solution and then to detect by liquid chromatography tandem mass spectrometry using electrospray in the positive mode. The recovery of acrylamide in 2R4F reference cigarette was 98 % and the reproducibility was 2.5 % and the limit of detection was 1.6 ng/mL. Reducing sugars and amino acids are considered to be main precursors of acrylamide in foodstuffs. Cut tobacco contain substantial amounts of reducing sugars and amino acid which may be explained the occurrence of acrylamide in mainstream cigarette smoke. The effects of reducing sugars and total nitrogen studied in an experiment with a various tobacco types. This result indicated that reducing sugars are not limiting factor for acrylamide formation, but the level of acrylamide in cigarette smoke was significantly correlated with the total nitrogen contents.

  • In order to identify of volatile flavor compounds and polycyclic aromatic hydrocarbons (PAHs) in commercial liquid smokes, this study was conducted to analyze volatile flavor compounds by solvent extraction and/or Purge & Trap method/GC/MSD. A total of 156 volatile flavor compounds were detected in 6 commercial liquid smokes, and these compounds were composed mainly of 12 aldehydes, 60 ketones, 7 alcohols, 14 acids, 20 esters, 24 aromatic compounds, 7 furans and 12 miscellaneous compounds. Ketones $(806.6-7,573.9\mu g/mL)$ and aromatic compounds $(282.6-7,896.3 \mu g/mL)$ were more abundant than others. The PAHs known as carcinogen have not been detected in this study. The acids $(422.9-4,903.1\mu g/mL)$ was identified in relatively high concentration compared to other groups. Phenol and its derivatives among aromatic compounds were in relatively high concentration. Especially, the phenol and its derivatives including o-cresol, guaiacol, 4-ethylguaiacol and syringol were in higher concentration.

  • This study has focused on using fuel injections as variables for measuring performance and reducing exhaust gas in turbo-charger diesel engine. In experiments, we changed nozzle hole diameter, diameter of an injection pipe, and injection timing as variable. The results show that torque. fuel consumption and smoke are reduced as nozzle hole diameter decreases, while NOx increases. When the diameter of injector is reduced, torque, fuel consumption and smoke are deteriorated, but NOx is decreased. In addition, when the time for injection is advanced. torque, fuel consumption and smoke are improved, but the density of NOx is increased.

Effect of ultrasonication, light and liquid smoke treatment on germination of lettuce seeds

  • Seed priming leading to improved emergences, germination speed and uniformity under unfavorable conditions without loss of longevity are the best level of techniques. We studied the possibility to obtain primed seed with reduced mean germination time (MGT) and uniformity but with simple, fast and effective methods. The experiments were carried out at $15^{\circ}C$ for 16 hours with priming treatment. To compare the effects of each treatment, we used 200mM $CaCl_2$ priming or hydro priming or no imbibition after ultrasonication or red light treatment. The light treatment was performed by irradiating 2000 lux of red light for 15, 30, 60, and 120 minutes. Addition, in order to investigate the effect of the priming solution, treated at 200mM $CaCl_2$ for 8 hours. Ultrasonication treatment was performed for 5, 10, and 20 minutes at exposures of 13.0, 17.3, and 21.6 kHz during priming. For liquid smoke (LS) treatment, seed soaked in 0%, 0.5%, 1.0%, 5.0% and 10.0% of diluted water and 200mM $CaCl_2$ solution. After each treatment, the seeds were dried to moisture content ranged 5-8% at $25^{\circ}C$ for 24 hours. The effect of seed treatment was evaluated with germination percentage (GP), MGT, germination index(GI), germination rate(GR), Germination Uniformity(GU) and heath seed percentage(HS). For several factors tested, we found that the desired germination improvement could be obtained by treating the seed with ultrasonication at 17.3 kHz for 5 minutes in water or red light exposure at 2000 lux for 120 min in water that resulted very similar to those used to 200mM $CaCl_2$ priming for 16 hrs. However, LS treatment showed no improvement in all diluted solution. Therefore, the methods applied ultrasonication and red light treatment showed high potential for fast and easy treatment avoiding pollution of salt solution waste.

  • High quality seed of proso millet that has high germination percentage, germination speed, and uniformity demanded to increases rates of mechanization in cereal crop cultivation. In order to improve germination characteristics, proso millet seeds were treated with red light, ultrasonication and liquid smoke (LS) solution that generated from hickory wood. All treatments were performed in seed priming solution with 100mM $NH_4NO_3$ at $15^{\circ}C$ for 24hrs under aeration condition. Seeds were exposed under light intensity of 2000 lux for 15m, 30m, 60m, and 120m in priming solution. Ultrasonic treatment was performed at 60%, 80%, and 100% intensity of 21.6 KHz for 5m, 10m, and 20m in priming solution. For LS treatment seed were soaked in 0%, 0.5%, 1.0%, 5.0% and 10.0% of diluted solution with $dH_2O$ or 100mM $NH_4NO_3$ solution. The effect of seed treatment was evaluated with germination percentage (GP), mean germination time (MGT), germination index (GI), germination rate (GR), Germination uniformity (GU) and heath seed percentage (HS). Our results demonstrate that red light (15min) or ultrasonication (21.6kHz, 5min) treatment improved MGT, GI, GR, and GU comparing to untreated control. Importantly, we show that LS treatments have significant effect on the health seedling and germination characteristics. Proso millet seeds that treated with 5% LS solution for 24hrs improves HS up to 97% that similar results obtained in 100mM $NH_4NO_3$ priming for 24hrs. The combined treatment with LS solution and 100mM $NH_4NO_3$ priming were not effective in all treatments. Our results demonstrate that treating seeds with LS or 100mM $NH_4NO_3$ priming or ultrasonication improves germination characteristics. The methods described here will help advance research using this species by increasing the germination performance at which successive seed pellet process.

Study on the Development and Functional Characteristics of Salted Egg with Liquid Smoke

  • In this study, the duck eggs were salted with none or 2.5% and 5.0% (v/v) of liquid smoke (LS), respectively. As a control, samples salted without LS were used. The 2-thiobarbituric acid (TBA) values, 1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging ability, and reducing power of the three groups were tested at 0, 7, 14, and 21 and 28 days to determine the effects of LS on the antioxidant activity of treated eggs. In addition, gas chromatography-mass spectrometry (GC-MS) and electronic nose (E-Nose) were used to analyze the volatile flavor components of fresh duck eggs, LS, control, and salted duck eggs enriched with 2.5% (v/v) LS after 28 days of salting. The TBA value considerably increased with an increase in salting period, and the treated egg's TBA value significantly associated with LS concentration. The TBA value decreased as the LS concentration increased. The amount of LS present was highly associated with their capacity to scavenge DPPH radicals. The reducing power of the samples was substantially correlated with the LS concentration, and the reducing power increased with increasing LS concentration. The GC-MS data revealed that phenols and ketones were the predominant chemicals present in the LS, and they were also found in the eggs added to the LS even though they were absent in the fresh eggs and control. The flavor of the control group and treated eggs with LS differed significantly, according to the principal component analysis and radar map of the E-nose. The texture study results revealed that the LS significantly impacted the hardness, cohesiveness, and chewiness of eggs.
