새조개 생육과 자숙육 및 자숙액즙의 식품성분 비교 -1. 일반성분 및 지질조성의 비교- (Comparision of Food Components in the Raw, Cooked Meat and Cooked Meat Extracts of Cockle Shell 1. Proximate compositions and lipid components)

  • 여수지방에서 많이 생산될 뿐아니라 새로운 양식품종으로 대량생산이 가능한 새조개의 식품학적인 품질을 구명하기 위하여 새조개의 생육과 자숙육, 그리고 자숙액즙의 일반성분, 지질조성 및 지방산조성 등의 차이를 분석하여 비교, 검토하였다. 자숙육의 수분이 생육보다 다소 적었고 조단백질 및 조회분은 수분과는 반대로 생육보다 약간 증가하였으며 조지방은 약간 감소하였고 glycogen은 차이가 없었다. 휘발성염기질소량은 생육의 경우 $1.8mg\%$로 양호하였으며 자숙시 $3.7mg\%$로 약간 증가하였다. 생육과 자숙육 및 자숙액즙의 총지질조송은 각각 비극성지질이 $25.4\%,\;22.4\%$$48.7\%$, 극성지질이 $74.6\%,\;77.6\%$$51.3\%$로 대부분 극성지질로 구성되어 있었다. 비극성지질의 성분은 triglyceride 및 free fatty acid, 극성지질은 phosphatidyl choline과 phosphatidyl ethanolamine이 주성분이었다. 총지질과 비극성지질 및 극성지질을 구성하고 있는 지방산조성은 생육, 자숙육, 자숙액즙 모두가 20:5(n-3), 22:6(n-3), 16:0 및 18:0 등이 주성분을 이루고 있었고 20:5(n-3)와 22:6(n-3)을 주체로 하는 polyene산의 비율이 훨씬 높았다. 자숙육은 생육에 비해 polyene산 경우 20:5(n-3)이 증가하는 반면 22:6(n-3)은 감소하는 경향이고 포화산의 경우 16:0는 증가하나 18:0는 감소하는 경향을 보였다. 자숙액즙에는 20:5(n-3)과 22:6(n-3)을 주체로 하는 polyene산의 비율이 생육이나 자숙육에 비해 낮았으나 16:0을 주체로 하는 포화산의 비율이 높았다.

발아의 경과에 따른 참깨 종실내 주요성분의 변화 (Changes of Major Componets During Germination of Sesame (Sesamum indicum L.) Seeds)

  • These studies were undertaken to investigate changes of major components occuring during germination of sesame (Sesamum indicum L.) seeds, Changes of total lipid and protein contents, and fatty acid composition were determined. Also, the correponding values of various components in cotyledons, hypocotyls and roots were measured according to germination stage. The results were summarized as follows; During germination, total lipid and protein contents decreased. In particular, protein contents rapidly decreased to the 3 days after gemination(DAG), and then total lipid contents rapidly decreased. In changes of total lipid and protein of cotyledons, hypocotyles and roots detected at the 10, 15 and 20 DAG, some variations were determined. The contents of lipid and protein in hypocotyls rapidly decreased, but since than no changes were observed. In contract, in roots similar changes patterns were observed, while since 15 DAG a rapidly increase was wxamined. In fatty acid composition of total lipid ,saturatedmfatty acids such as palmitic acid increased during the germination. On the other hand, unsaturated fatty acid such as olic acid and linoleic acid decreased during the same periods. In changes of fatty acid composition of total lipid of cotyledons, hypocotlys and roots, saturated fatty acids such as palmitic acid and stearic acid increased during the germination. However, linoleic acid decreased during the same germination suggesting that this may be due to the rapid degradation. However, linoleic acid decreased during the same periods. According to SDS-PAGE analysis, there was no detectible polypeptide bands on the gel before seed germination suggesting that this may be due to the rapid degradation of the storage peotein in the mature seed by hydrolytic enzymes during the stag. As germination continued polypeptide bands, one with 40KD, two with 32∼34Kd and one with 24KD, were detected on the gel.

잣지질 성분의 분획정량 및 각 획분의 지방산 조성 (Lipid Contents and Fatty Acid Composition of Three Lipid Classes in Korean Pinenut)

  • 잣(Pinus koraiensis S & Z)에서 얻은 총지질 성분을 silicic acid column chromatography에 의해 중성지질, 당지질, 인지질로 분획 정량하고, 다시 이 분획된 성분을 thin layer chromatography 로써 재분리시켜 구성성분들을 분별하고 scanner에서 정량하였으며, 각 획분별 지방산 조성을 gas chromatography로써 분석한 결과는 다음과 같다. 1) 잣지질의 구성은 중성지질이 총지질의 $95.9{\sim}96.7%$, 당지질이 $2.5{\sim}3.2%$, 인지질이 $0.8{\sim}0.9%$였으며, 중성지질에서는 triglyceride(80.8%), diglyceride(6.3%), free fatty acid(5.2%), sterol(4.6%) ,sterol ester 및 hydrocarbon 등이 분별 정량되었으며, 이 중 triglyceride가 주된 물질이었다. 당지질에서는 monogalactosyl diglyceride 및 esterified sterylglycoside(23.5%), cerebroside 및 steryl glycoside(7.8%), digalactosyl diglyceride(2.3%) 등이 분별정량되였고, 인지질의 획분에서는 phosphatidyl cho-line(40.2%), phosphatidyl ethanolamine(19.4%), phosphatidyl inositol(7.3%), lysophosphatidyl choline(5.8%), phosphatidyl serine(2.6%) 등이 분별 정량되었다. 2) 각 분획된 지질의 지방산 조성은 중성지질의 경우 linoleic acid(48.7%), oleic acid(28.8%), arachidic acid(14.4%), palmitic acid(5.7%), stearicacid(1.84%), linolenic acid(0.7%), myristic acid(0.1% 이하), lauric acid(0.1% 이하) 등이 분리 정량되었으며, 당지질과 인지질에서도 linoleic acid, oleic acid등이 주성분으로 이루어져 있었다. 그러나 인지질의 경우 palmitic acid(17.7%)와 stearic acid(6.0%)의 함량이 다른 지질획분에 비해 다소 많았다.

복합운동프로그램이 중년여성의 신체구성 및 혈중지질의 변화에 미치는 영향 (The Effect of an Integrated Kinetic Program on the Change of Body Composition and Blood Lipid Components in Middle-aged Women)

  • Purpose: This study examined the effect of an integrated kinetic program on the body composition of middle-aged and their associated blood lipid components. Methods: The subjects included 50 middle-aged women who resided at J city. Upon their agreements, the subjects were divided into either an experimental group or the control group. There were 25 subjects in each. The integrated kinetic program was conducted during the 6 weeks, and the experimental group was underwent its associated program 5 times a week. There were 3 subjects from each group that were excluded. The extensions were measured with the extensometer, the weights were taken with the body ingredient analysis instrument, and the blood lipid consistency with the blood autoanalyzer. Results: Pre- and Post- the integrated kinetic program, there were statistically significant differences between the body fat mass and the BMI in the experimental group. However, this difference was not significantly different in the control group. Further, there were no statistically significant differences between the two groups of all items in blood lipid components. But the experimental group showed the decrement from TC and TG items after accomplishing the program. Conclusion: The results of this study showed that this kinetic program helps the prevention and functional control of bodily functional decrement to middle-aged women. It is considered that follow-up studies on practically integrated kinetic programs are needed so that they include exercise accomplishments of proper period and good quality nutrition intake. This is in order to maintain muscular quantity and prevent muscle function decrement for the healthy middle-aged women, preparing in aging and menopause.

Effects of Polyacetylene Compounds from Panax Ginseng C.A. Meyer on $CCl_4$-Induced Lipid Peroxidation in Mouse Liver

  • The inhibitory effect of three polyacetylene compounds, panaxydol, panaxynol and panaxytriol isolated from Panax ginseng C.A. Meyer on $CCl_4$induced lipid peroxidation in vivo and in vitro hepatic microsomal lipid peroxidation induced by ADP-$Fe^{3+}$, NADPH and NADPH-cytochrome P-450 reductase were investigated. Their effects on lowering the lipid peroxide levels both in serum and liver and lowering the serum enzyme (GOT, GPT, LDH) activities without the $CCl_4$-induction were also determined. Male ICR mice were pretreated i.p. with polyacetylene compounds or DL-${\alpha}$-tocopherol before administration of $CCl_4$ i.p. and 20 hr after the administration of $CCl_4,$ serum and liver were analyzed. Hepatic microsome was isolated and used for the in vitro NADPH-dependent lipid peroxidation system. Except for panaxynol, treatment with polyacetylenes to control mice did not reduce the levels of lipid peroxides and serum enzyme activities. Panaxynol itself inhibited lipid peroxidation in the liver of normal mice. Polyacetylene compounds protected from the $CCl_4$-induced hepatic lipid peroxidation and lowered serum lipid peroxide levels. Polyacetylenes also inhibited the in virto hepatic microsomal lipid peroxidation in a dose-dependent manner. The results suggest that panaxydol, panaxynol and panaxytriol seem to be the antioxidant components which contribute the anti-aging activities of Panax ginseng C.A. Meyer.

A Comprehensive Understanding of Model Lipid Membranes: Concepts to Applications

  • The cell membrane, also known as the biological membrane, surrounds every living cell. The main components of cell membranes are lipids and therefore called as lipid membranes. These membranes are mainly made up of a two-dimensional lipid bilayer along with integral and peripheral proteins. The complex nature of lipid membranes makes it difficult to study and hence artificial lipid membranes are prepared which mimic the original lipid membranes. These artificial lipid membranes are prepared from phospholipid vesicles (liposomes). The liposomes are formed when self-forming phospholipid bilayer comes in contact with water. Liposomes can be unilamellar or multilamellar vesicles which comprises of phospholipids that can be produced naturally or synthetically. The phospholipids are non-toxic, biodegradable and are readily produced on a large scale. These liposomes are mostly used in the drug delivery systems. This paper offers comprehensive literature with insights on developing basic understanding of lipid membranes from its structure, organization, and phase behavior to its potential use in biomedical applications. The progress in the field of artificial membrane models considering methods of preparation of liposomes for mimicking lipid membranes, interactions between the lipid membranes, and characterizing techniques such as UV-visible, FTIR, Calorimetry and X-ray diffraction are explained in a concise manner.

3종의 해산 무척추동물의 지방산 조성 (Fatty Acid Compositions of Three Species of Marine Invertebrates)

  • The lipid components of the gonad of sea urchin Hemicentrotus pulcherrimus, ark shell Scapharca bro-ughtonii and "Gaebul" (Korea name, a worm) Urechis unicinctus were investigated. The total lipid (TL) contents of the sea urchin, the ark shell and the "Gaebul" were 6.10, 0.67 and 0.79%, respectively. The percentages of phospholipid (PL) in TL were higher in the "Gaebul"(72.4%) and ark shell(64.9%) compared to the sea urchin (41.7%). The major lipid classes of PL were phosphatidylcholine and phosphatidylethanolamine, and the former was rich in the sea urchin (56.2%) and the latter in the "Gaebul"(34.4%). In the class of non-polar lipid (NL), the major lipid classes were different from species ; the sea urchin was rich in triglyceride(TG, 89.0%), the ark shell rich in TG (69.2%) and cholesterol (ST 26.8%) and the "Gaebul"rich in ST (70.7%). The prominent fatty acids of the sea urchin were 16 : 0, 14 : 0, 20 : 5n-3, 20 : 4n-6 and 20 : 4n-6 and 20 : 2NMID(non-methylene interupted dien). The percentage of 20 : 4n-6 was the highest of the investigated invertebrates, accounting for 19.8% in PL, but 22 : 6n-3 was not detected in the sea urchin. In case of the ark shell, the prominent fatty acids were 16 : 0, 18 : 0, 20 : 5n-3, 22 : 6n-3 and 22 : 2NMID, especially 22 : 6n-3(9.58%) was richer compared to that of the "Gaebul". The prominent fatty acids of the "Gaebul"were 20 : 5n-3, 16 : 0, 18 : 0 20 : 1n-9, 16 : 1n-7 and 14 : 0. The percentage of 20 : 5n-3 (22.0%) was highest in the PL of the "Gaebul"among the three invertebrates. These differences in the lipid components of all the sample is considered to be due to the different food habits and environmental condition of the invertebrates.

  • The lipid classes constituents; hydrocarbons, wax esters, sterol esters, triacylglycerols, free fatty acids, 1,3-diacylglycerols, 1,2-diacylglycerols, free sterols, 2-monoacylglycerols, 1-monoacylglycerols, phosphatidylethanolamines, phosphatidylcholines, lysophosphatidylethanolamines and phosphatidylinositols of Nicotiana tabacum L. seeds oil were investigated by thin layer and gas chromatography. Palmitic, oleic and linoleic acids were the major components in all lipid classes studied.

Diethylnitrosamine에 의한 계배 간 조직 손상 및 지질 성분의 변화 (Diethylnitrosamine Induced Tissue Damage and Change of Lipid Components in the Chick Embryo Liver)

  • Diethylnitrosamine (DEN) is known as a potential hepatic carcinogen by single administration. This study was designed to measure the effects of DEN-induced cell damage on the triglyceride and cholesterol concentration in the liver, excluding dietary effects. Fertilized chicken eggs, 10 days before hatching, were randomly divided into three groups (n=20) and each egg was injected 10 ${mu}ell$ of corn oil (vehicle control), 5 $\mu\textrm{g}$ of DEN/10 ${mu}ell$ of DEN/10 ${mu}ell$ into yolk via air sac. After 48 hr and 96 hr incubation, the damage of the chick-embryo liver cell was investigated by electron microscopy and by measuring the concentration of lipid components (total cholesterol, free cholesterol, phospholipid and triglyceride). For eggs administered 10 $\mu\textrm{g}$ of DEN and incuvated 96 hr, in hepatocyte, the nucleus membrane was roughed, the size of nucleolus was apparently increased and euchromatin was accumulated. Mitochondria were condensed and cristae, located mitochondiral inner membrane, were obscured. Additionally, the leaves of triglyceride and cholesterol classes were significantly increased depend on the amount treated with 10 $\mu\textrm{g}$ DEN at 96 hr, but phospholipids component of cell membrane, were decreased with significance. As a conclusion, carcinogen induced hepatic lesion was correlated with the changes in lipid component of liver.

홍삼 분획물이 감마선을 비사한 생쥐 간에서 항산화물질과 지질과산화에 미치는 방사선 보호효과 (Radioprotective Effect of Ginseng Components on Antioxidant Enzymes, Glutathione and Lipid Peroxidation of Liver in ${\gamma}$-Irradiated Mice)

  • In the present study, to determine whether the antioxidative components of Korean red ginseng protect against radiation damage and the possible relationship among the radioprotective effects and antioxidant actions, the effects of total saponin (200 mg/kg, ip) and lipophilic fraction (200 mg/kg, oral) preferment of mice on the survival ratio, major antioxidant enzymes (SOD, catalase and glutathione peroxidase) activities, glutathione levels and lipid peroxidation in the liver were exiled for 2 weeks after whole ${\gamma}$-body ${\gamma}$-irradiation (6.5 Gy). The 30-day survival ratio increased from 10% to 57% and 40% for mice treated with total saponin and lipophilic fraction, respectively. On day 14 after ${\gamma}$-irradiation, the ginseng total saponin pretreatment produced a slight increase of antioxidant enzymes activities and significantly Increased reduced glutathione (GSH) contents (p<0.05) in the liver compared with non-treated group. Pretreatment with ginseng total saponin significantly deceased GSSG/total GSH ratio (p<0.05) without change of GSSG in the liver and inhibited the radiation-induced incense in the hepatic malondialdehyde levels. (p<0.05) In these results, GSH plays an important role in the liver in several detoxifications and the reduction of lipid peroxides. Thus, it appears that total saponin of red ginseng exerts its radioprotective effect by accelerating the production of endogenous antioxidants, such as glutathione from radiation induced damages and thereby oxygen free radicals.
