벼의 수분함량이 쌀가루 특성에 미치는 영향 (Effect of Moisture Content of Paddy on Properties of Rice Flour)

  • 수분함량(12.6, 18.4, 24.4%)이 다른 벼를 각각 도정하여 pin mill로 분쇄한 건식쌀가루와 물에 침지후 roll mill로 분쇄한 습식쌀가루의 특성을 비교하였다. 벼수분 24%에서 건식제조된 쌀가루에서는 지방과 회분함량이 다른 건식쌀가루에 비하여 낮았다. 벼의 수분함량이 많을수록 건식쌀가루는 미세하게 분쇄되었고 전분입자가 떨어져나간 흔적이 쉽게 관찰되었다. 또한 백색도와 수분흡수지수가 높았고, 수분용해도지수는 낮았다. 벼수분이 많을수록 amylogram에서의 setback값은 낮았다. 건식제분된 쌀가루들은 gel consistency와 gel strength에서 차이가 없었으나 습식제분된 쌀가루에서보다 덜 consistent하였고, gel strength는 낮았다. 호화후 $7{\sim}14$일 저장하였을 때 노화gel을 재호화시키는 데 필요한 enthalphy는 벼수분이 많은 건식쌀가루일수록 높았고, 습식쌀가루의 경우는 건식쌀가루보다 낮았다.

뽕잎분말을 첨가한 옐로우 레이어 케이크의 품질특성 (Effects of Mulberry Leaves Powders on the Quality Characteristics of Yellow Layer Cakes)

  • 본 연구는 뽕잎분말을 케이크의 제조에 기능성 소재로 이용하고자 실시되었으며, 이를 위하여 밀가루의 4, 8, 12, 16, 20%를 뽕잎분말로 대체하여 yellow layer cake를 제조하였다. 케이크의 품질은 반죽의 점도와 비중, 케이크의 baking 특성 및 저장기간중의 텍스쳐 변화를 측정하여 평가하였다. 뽕잎분말의 첨가량이 증가할수록 반죽의 점도와 케이크의 비체적은 증가하였다. 케이크의 대칭지수는 뽕잎분말의 양이 증가함에 따라서 감소하였으나, 총부피지수나 균일성 지수는 변화가 없었다. 저장기간 중의 경도변화는 뽕잎분말의 첨가량이 증가할수록 경도증가율이 낮았으며, 대조구보다 덜 단단한 것으로 나타났다. 관능검사결과 뽕잎분말을 첨가한 케이크의 부드러움성은 차이가 없었으며 촉촉한 정도는 뽕잎분말을 첨가한 케이크가 더 크게 나타났다.

가자 분말 첨가량에 따른 식빵의 품질 변화 (Effects of the Amounts of Terminalia chebula Retz Powder on the Quality of White Pan Breads)

  • This study was carried out to investigate the quality of white pan breads as affected by various amounts of Terminalia chebula Retz (TC) powder, in which the breads were prepared with 0, 2, 4, and 6% TC powder. The samples and a control bread were compared in terms of bread quality characteristics, including pH, baking loss rate, loaf volume index, moisture content, TBARS values, texture, color, and sensory qualities in order to determine the optimal amount of TC powder in the formulation. The pH levels of the bread samples containing TC powder ranged from 5.30 to 5.44, while the control bread had a pH of 5.68. The loaf volume index values of the samples prepared with 2~6% TC powder were lower than that of the control. After 7 days storage, the moisture content of the control bread had decreased by 14.4%, while the moisture contents of the breads with added TC powder had decreased by approximately 8~10%. The breads with TC powder had lower TBARS values as compared to the control bread. For texture characteristics, hardness increased with the addition of TC powder, and was especially increased in the sample containing 6% TC powder. Cohesiveness and springiness, however, decreased with the addition of TC powder. For color, lightness of the bread crust and crumb decreased with the addition of TC powder, whereas redness and yellowness increased. In terms of sensory quality, the bread containing 2% TC powder was preferred over the control bread, as estimated by appearance, crust color, taste, and overall quality, while the 6% TC bread had the lowest preference scores. These results suggest that the addition of 2% TC powder to white pan bread had optimal effects for improving shelf-life and enhancing bread quality.

Milk Fat Substitution by Microparticulated Protein in Reduced-fat Cheese Emulsion: The Effects on Stability, Microstructure, Rheological and Sensory Properties

  • Fat reduction in the formulation of cheese emulsion causes problems in its flowability and functional characteristics during spray-dried cheese powder production. In order to eliminate these problems, the potential of using microparticulated whey protein (MWP) in cheese emulsions was examined in this study. Reduced-fat white-brined cheese emulsions (RF) with different dry-matters (DM) (15%, 20%, and 25% excluding emulsifying salt) were produced using various MWP concentrations (0%-20% based on cheese DM of emulsion). Their key characteristics were compared to full-fat cheese emulsion (FF). MWP addition had no influence on prevention of the phase separation observed in the instable group (RF 15). The most notable effect of using MWP was a reduction in apparent viscosity of RF which significantly increased by fat reduction. Moreover, increasing the amount of MWP led to a decrease in the values of consistency index and an increase in the values of flow behavior index. On the other hand, using high amounts of MWP made the emulsion more liquid-like compared to full-fat counterpart. MWP utilization also resulted in similar lightness and yellowness parameters in RF as their full-fat counterparts. MWP in RF increased glossiness and flowability scores, while decreased mouth coating scores in sensory analyses. Fat reduction caused a more compact network, while a porous structure similar to FF was observed with MWP addition to RF. In conclusion, MWP showed a good potential for formulation of reduced-fat cheese emulsions with rheological and sensorial characteristics suitable to be used as the feeding liquid in the spray drying process.

Automatic Visual Feature Extraction And Measurement of Mushroom (Lentinus Edodes L.)

  • In a case of mushroom (Lentinus Edodes L.) , visual features are crucial for grading and the quantitative evaluation of the growth state. The extracted quantitative visual features can be used as a performance index for the drying process control or used for the automatic sorting and grading task. First, primary external features of the front and back sides of mushroom were analyzed. And computer vision based algorithm were developed for the extraction and measurement of those features. An automatic thresholding algorithm , which is the combined type of the window extension and maximum depth finding was developed. Freeman's chain coding was modified by gradually expanding the mask size from 3X3 to 9X9 to preserve the boundary connectivity. According to the side of mushroom determined from the automatic recognition algorithm size thickness, overall shape, and skin texture such as pattern, color (lightness) ,membrane state, and crack were quantified and measured. A portion of t e stalk was also identified and automatically removed , while reconstructing a new boundary using the Overhauser curve formulation . Algorithms applied and developed were coded using MS_C language Ver, 6.0, PC VISION Plus library functions, and VGA graphic function as a menu driven way.

Preparation of High Molecular Weight Poly(methyl methacrylate) with High Yield by Room Temperature Suspension Polymerization of Methyl Methacrylate

  • To obtain high molecular weight (HMW) poly(methyl methacrylate) (PMMA) with high conversion, methyl methacrylate (MMA) was polymerized in suspension using a room temperature initiator, 2,2'-azobis(2,4-dimethylvaleronitrile) (ADMVN), and the effects of polymerization conditions on the polymerization behavior of MMA and the molecular parameters of PMMA were investigated. On the whole, the experimental results well corresponded to the theoretically predicted tendencies. These effects could be explained by a kinetic order of ADMVN concentration calculated by an initial rate method and an activation energy difference of polymerization obtained from the Arrhenius plot. Suspension polymerization at 25℃ by adopting ADMVN proved to be successful in obtaining PMMA of HMW (number-average degree of polymerization (P/sub n/): 30,900-36,100) and of high yield (ultimate conversion of MMA into PMMA: 83-93 %) with diminishing heat generated during polymerization. The P/sub n/ and lightness were higher and polydispersity index was lower with PMMA polymerized at lower temperatures.

Room Temperature Polymerization of N-vinylcarbazole in Tetrahydrofuran

  • N-Vinylcarbazole (VCZ) was solution-polymerized in tetrahydrofuran (THF) at 25, 35, and $45^{\circ}C$ using a room temperature initiator, 2,2'-azobis(2,4-dimethylvaleronitrile) (ADMVN); the effects of amount of solvent, polymerization temperature, and initiator concentration were investigated. On the whole, the experimental results corresponded to predicted ones. Room polymerization temperature using ADMVN proved to be successful in obtaining poly(N-vinylcarbazole) (PVCZ) of high molecular weight with small temperature rise during polymerization, nevertheless of free radical polymerization by azoinitiator. The polymerization rate of VCZ in THF was proportional to the 0.47 power of ADMVN concentration. The molecular weight was higher and the molecular weight distribution was narrower with PVCZ polymerized at lower temperatures. For PVCZ prepared in THF at $25^{\circ}C$ using ADMVN concentration of 0.00005 mol/mol of VCZ, weight-average molecular weight of 221,000 was obtained, with polydispersity index of 2.05, and degree of lightness converged to about 99%.

건조양파착즙박과 건조양파를 이용한 압출스낵의 물리적 특성 (Physical Properties of Extruded Snack Made of Dried Onion and Onion Pomace)

  • In order to use onion pomace produced from concentration processing of onion juice, dried onion pamace and dried onion were mixed with corn grits at levels of 10, 20, and 30% and extruded in a twin-screw extruder. The physical properties of the extruded onion snack were investigated. The expansion ratio of the extruded onion pomace snack and onion snack and onion snack decreased with onion content. The water absorption index decreased with the onion content. The lightness and the redness of the onion snack decreased and increased as the incorporation level of onion increased, respectively. Native corn grits showed crystalline peaks at 15.2$^{\circ}$, 17.3$^{\circ}$, 17.9$^{\circ}$ and 23.3$^{\circ}$. However, the onion snack did not show the crystalline peaks as native corn grits and showed small peaks at 12.9$^{\circ}$ and 19.8$^{\circ}$. The onion snack showed lower gelatinization temperature and enthalpy than raw corn grits regardless of the onion contents. The rupture strength of the onion pomace snack and onion snack increased with the onion concentration.

양파 조미김의 제조와 저장 특성 (Manufacture and Storage Characteristics of Onion Seasoned Laver)

  • Seasoned laver is the highest consumed item among processed laver foods. However, it easily undergoes quality deterioration during processing and storage by lipid oxidation. The purpose of this study was to develop onion seasoned laver with strengthened functional properties through evaluation of storage characteristics. Proximate composition, color index, acid value, thiobarbituric acid (TBA) production, and sensory evaluation of seasoned laver with 0, 15 and 30% onion powder were analyzed during storage periods of 0, 12 and 24 weeks. The lightness, redness, and yellowness of 30% onion seasoned laver significantly increased according to storage period. The acid value and TBA production significantly increased in control laver without onion powder, with no significant difference in 30% onion seasoned laver according to storage period. Sensory preference of onion seasoned laver was better than that of control laver in terms of taste, texture, and overall acceptability. To sum up these results, seasoned laver with 30% onion powder showed superior color degree, acid value, TBA production and sensory preference in proportion to added amount.

오디가루를 첨가한 소맥분의 유변학적 특성 (Studies on Rheological Properties of Weak Flour Containing Mulberry Powder)

  • This study was conducted to investigate the rheological properties of mulberry powder on the weak flour using color, Rapid Visco Amalyzer(RVA), farinogram, alveogram. The lightness(L value) and yellowness(b value) decreased and the redness(a value) increased with increment of mulberry powder content. On the RVA data, the weak flour with 1% of mulberry powder showed the highest initial pasting temperature and peak viscosity, while the addition of mulberry powder reduced final viscosity. On the farinogram data, the consistency of the flour containing mulberry powder was decreased with increments of mulberry powder. This meant that mulberry powder could weaken the batter. Water absorption of the samples with mulberry powder was decreased more than the control. The development time of flour with mulberry powder was also decreased more than control, but the differences were not significant. The stability of the flour with adding mulberry powder was decreased. The Pmax value of the flour was decreased significantly by adding mulberry powder. Extensibility and swelling index were both increased, but there were no significant differences.
