Ensiled and Dry Cassava Leaves, and Sweet Potato Vines as a Protein Source in Diets for Growing Vietnamese Large White×Mong Cai Pigs

  • The aim of the present study was to evaluate the effects of replacing 70% of the protein from fish meal by protein from ensiled or dry cassava leaves and sweet potato vines on the performance and carcass characters of growing F1 (Large White${\times}$Mong Cai) pigs in Central Vietnam. Twenty-five crossbred pigs (Large White${\times}$Mong Cai) with an initial weight of 19.7 kg (SD = 0.84) were allocated randomly to five treatment groups with 5 animals per group (3 males and 2 females). Pigs were kept individually in pens ($2.0{\times}0.8\;m$) and fed one of five diets over 90 days. The control diet was formulated with fish meal (FM) as the protein source while the other four diets were formulated by replacing 70% of fish meal protein by protein from ensiled cassava leaves (ECL), dry cassava leaves (DCL), dry sweet potato vines (DSPV) or ensiled sweet potato vines (ESPV). Animals were fed their diets at 4% of BW. Results showed that final BW, ADG, DMI and feed conversion ratio (FCR) among the experimental treatments were not significantly different (p>0.05). ECL or DCL and ESPV reduced feed cost per unit gain by 8-17.5% compared to the fish meal diet. There were no significant differences in carcass characters among the diets (p>0.05). Lean meat percentages and protein deposition ranged 41.5-45.8% and 40.2-52.9 g/d, respectively. Using ensiled or dry cassava leaves and sweet potato vine can replace at least 70% of the protein from fish meal (or 35% of total diet CP) without significant effects on performance and carcass traits of growing (20-65 kg) pigs. Including cassava leaves and sweet potato vines could improve feed cost and therefore has economic benefits.

오토폼을 이용한 돼지 뒷다리 중량예측 연구 (Prediction of ham weight with the autofom in Korea)

  • The Autofom is a equipment for predicting the amount of pig carcasses meat using the 16 ultrasonic sensors to measure in real time and it was established in Dodram LPC in Gyeonggi Province of Korea for the first time. This study was carried out to validate the reliability of Autofom statistically and to establish guideline for developing a analytic formula through comparing the measurement between Autofom and dissection. The ham parts of sixty-six pig carcasses were measured with Autofom and by two experimental performers. The weight means and standard deviations of ham parts including bone by measurements with Autofom and dissection were $10.69{\pm}0.81kg$ and $10.77{\pm}0.94kg$, respectively a strong positive correlation (P<0.01) was identified, with a coefficient of determination ($R^2$) of 0.82. The weight means and standard deviations of lean ham parts by measurements with Autofom and dissection were $7.41{\pm}0.58kg$ and $7.42{\pm}0.89kg$, respectively a strong positive correlation (P<0.01) was identified, with a coefficient of determination ($R^2$) of 0.72. The root mean square errors of two groups were 0.40 and 0.50, respectively.

Transcriptional Alteration of p53 Related Processes As a Key Factor for Skeletal Muscle Characteristics in Sus scrofa

  • The pig could be a useful model to characterize molecular aspects determining several delicate phenotypes because they have been bred for those characteristics. The Korean native pig (KNP) is a regional breed in Korea that was characterized by relatively high intramuscular fat content and reddish meat color compared to other western breeds such as Yorkshire (YS). YS grew faster and contained more lean muscle than KNP. We compared the KNP to Yorksire to find molecular clues determining muscle characteristics. The comparison of skeletal gene expression profiles between these two breeds showed molecular differences in muscle. We found 82 differentially expressed genes (DEGs) defined by fold change (more than 1.5 fold difference) and statistical significance (within 5% of false discovery rate). Functional analyses of these DEGs indicated up-regulation of most genes involved in cell cycle arrest, down-regulation of most genes involved in cellular differentiation and its inhibition, down-regulation of most genes encoding component of muscular-structural system, and up-regulation of most genes involved in diverse metabolism in KNP. Especially, DEGs in above-mentioned categories included a large number of genes encoding proteins directly or indirectly involved in p53 pathway. Our results indicated a possible role of p53 to determine muscle characteristics between these two breeds.

FACTORS INFLUENCING FEED EFFICIENCY AND BACKFAT THICKNESS IN STATION TESTED BEEF BULLS

  • Records taken on 372 young beef bulls tested at the Ellerslie Bull Test Station, Alberta, Canada from November 1981 to April 1987 were analyzed to quantify the effects of age of dam, on-test age, on-test liveweight and herd of origin of bull on feed efficiency (feed/gain, kg/kg) in the test period (n = 231) and ultrasonic measurement of bakcfat thickness (mm) at the end of the test (n = 372). The reduction in $R^2$ due to each influencing factor (i.e. the variation accounted for by the factor) was used to indicate the importance of the influencing factor. Age of dam and on-test age of bull were not important factors on feed/gain and ultrasonic backfat thickness, as they accounted for less than 0.5% of the variation in feed/gain and ultrasonic backfat thickness, respectively (p > 0.1). On-test liveweight had some influence on feed/gain and ultrasonic backfat thickness, accounting for 3.5% (p < 0.01) and 0.4% (p < 0.05) of the total variation, respectively. The regression coefficients of feed/gain and ultrasonic backfat thickness on on-test liveweight were 0.016 (kg/kg)/kg and .013 mm/kg, respectively, both being significant (p < 0.05), indicating that lighter bulls entering the test were generally more efficient in feed utilization in the test period and had less backfat at the end of the test than heavier entering bulls. Herd of origin of bull accounted for a substantial amount of the total variation (> 16%) in feed/gain and ultrasonic backfat thickness (p = 0.08), indicating that a prolonged aqjustment period was needed to reduce the influence of herd of origin when assessing aggregate genetic merit of beef bulls for growth rate, feed efficiency and lean meat production using a central station performance testing program.

인천지역 남녀 대학생들의 식습관, 건강관련 생활습관, 신체증상 및 체성분에 관한 비교 연구 (A Comparative Study on the Dietary Habits, Life Habits, Physical Symptoms and Body Composition of University Students by Gender Differences in Incheon City)

  • This study was designed to investigate the dietary habits, life habits, physical symptoms, and body composition of male and female students attending college in incheon, based on which to encourage proper dietary habits among and enhance the physical and psychological health of college students. The effects of personal characteristics (such as gender, grade level, residence type, means of transportation), health relative life habits (exercise, smoking and alcohol consumption), dietary habits, physical symptoms and body composition measurement were analyzed by using the questionnaire and Inbody. The subject pool was composed of 96 male and 149 female students. Smoking, drinking, exercise, and fruit intake showed significant differences between the genders (p<0.05), whereas meat intake was not significantly different (p>0.05). Differences on dietary habits and the intake of fruit showed significant differences (p<0.05) between the genders. Especially, more female than male students showed a higher frequency of fruit intake. Physical symptoms such as headache, common cold, dizziness, easy fatigue, poor concentration, indigestion and constipation showed significant differences (p<0.05) between the genders, whereas stomatitis, anorexia and pale face were not significantly different (p>0.05). Differences between the genders on body composition, height, weight, BMI, muscle soft lean mass, body fat mass, skeletal muscle mass and waist-hip ratio were also significantly different (p<0.05). The correlation analysis of college students by gender was negative between intake of milk and physical symptoms (p<0.01), whereas intake of cooked food and physical symptoms showed a positive correlation (p<0.01, p<0.05).

Effects of Betaine on Growth Performance and Carcass Characteristics in Growing Pigs

  • Ninety six growing pigs ($Duroc{\times}Landrace{\times}Jia$) were used to investigate the effects of betaine on growth, nutrient utilization, carcass composition and meat quality at different levels of betaine in the diet. The pigs were randomly assigned by weight to four groups, each of which was replicated three times with eight pigs per replicate. Four groups were fed with diets supplemented with 0, 1,000, 1,500 and 2,000 mg/kg betaine. The pigs were grown from 20 kg live weight to approximately 64 kg. The 1,000 mg/kg and 1,500 mg/kg betaine treated groups increased average daily gain by 13.20% (p<0.01) and 9.28% (p<0.05) and average daily feed intake by 7.30% (p<0.05) and 7.33% (p<0.01) respectively and decreased feed conversion ratio by 7.93% (p<0.01) and 6.55% (p<0.05) respectively compared to the control group. However, these differences were not found in the other betaine treated groups. The 1,000 mg/kg betaine treated group significantly elevated carcass lean proportion by 7.49% (p<0.05) and longissimus muscle area by 19.12% p<0.05) and contents of ether extract and myoglobin in longissimus dorsi. by 34.21% (p<0.01) and 29.56% (p<0.01) respectively, reduced carcass fat proportion and fat depth by 27.21% (p<0.05) and 14.86% (p<0.05) respectively compared to the control group. It is concluded that betaine supplementation in the diets may improve growth performance and carcass characteristics in growing pigs.

Bio-fermentation Technology to Improve Efficiency of Swine Nutrition

  • The United Nations Convention on Biological Diversity defines biotechnology as "Any technological application that uses biological systems, dead organisms, or derivatives thereof, to make or modify products or processes for specific use" Biotechnology has made tremendous contributions to improve production efficiency of agriculture during the last century. This article reviews successful examples of application of bio-fermentation in improving swine nutrition efficiency mainly based on the authors'z own research experience. Production of feed grade supplemental amino acids by bio-fermentation allowed nutritionists to formulate accurate feed for optimal lean growth and reduced nitrogen excretion. Recent issues with high feed grain prices caused potential feed quality problems. Bio-fermentation allowed nutritionists to use exogenous supplemental enzymes such as phytase and NSPases in swine diets, thereby improving nutrient utilization and reducing nutrient excretion to the environment. Yeast metabolites are also produced by bio-fermentation and have been repeatedly shown to improve milk production of sows during early lactation even though actual mechanisms are still to be investigated. Bio-fermentation technology also allowed nutritionists to prepare vegetable protein sources with large protein molecules and anti-nutritional factors suitable for feeding newly weaned piglets, as selected microorganisms significantly reduce specific anti-nutritional factors and size of peptides. Preparations of vegetable protein sources suitable for newly weaned pigs will greatly contribute to swine nutrition by providing efficient alternatives to the use of animal protein sources that are often expensive and somewhat against societal preference. Considering the few examples listed above, biotechnology has closely influenced improvement of production efficiency in the swine industry. As we have limited resources to produce meat to satisfy ever-increasing global demands, extensive adaptation of biotechnology to enhance production efficiency should be continued. However, at the same time, wise and careful application of bio-technology should be considered to ensure production of safe food and to meet the expectations of our society.

Antioxidant and Antimicrobial Efficacy of Sapota Powder in Pork Patties Stored under Different Packaging Conditions

  • The present study was undertaken to assess the efficacy of sapota powder (SP) as natural preservatives and its better utilization in food processing with the incorporation of various levels of SP (2, 4, and 6%) by replacing lean meat. Based on the sensory attributes, pork patties with 4% incorporation of SP was found optimum and selected for further storage studies with control under aerobic and modified atmosphere packaging at refrigeration temperature ($4{\pm}1^{\circ}C$) for 42 days for assessing its antioxidant and antimicrobial efficiency. During entire storage period, indicators of lipid oxidative parameters such as thiobarbituric acid reactive substances (TBARS), free fatty acids (FFA) and peroxide value (PV) followed an increasing trend for control as well as treated products; however, treated product showed a significantly (p<0.05) lower value than control. A significantly lower (p<0.05) microbial count in treated patties than control was noted during entire storage. The sensory attributes are better retained in treated product as compared to control and even on $42^{nd}$ day, overall acceptability of treated patties was found to fall in moderately acceptable category (5.95 in aerobic packets and 5.91 in modified atmosphere packets). Therefore SP has potential to enhance antioxidant and antimicrobial properties of pork patties during storage.

Metabolomic approach to key metabolites characterizing postmortem aged loin muscle of Japanese Black (Wagyu) cattle

  • Objective: Meat quality attributes in postmortem muscle tissues depend on skeletal muscle metabolites. The objective of this study was to determine the key metabolic compounds and pathways that are associated with postmortem aging and beef quality in Japanese Black cattle (JB; a Japanese Wagyu breed with highly marbled beef). Methods: Lean portions of Longissimus thoracis (LT: loin) muscle in 3 JB steers were collected at 0, 1, and 14 days after slaughter. The metabolomic profiles of the samples were analyzed by capillary electrophoresis time-of-flight mass spectrometry, followed by statistical and multivariate analyses with bioinformatics resources. Results: Among the total 171 annotated compounds, the contents of gluconic acid, gluconolactone, spermidine, and the nutritionally vital substances (choline, thiamine, and nicotinamide) were elevated through the course of postmortem aging. The contents of glycolytic compounds increased along with the generation of lactic acid as the beef aging progressed. Moreover, the contents of several dipeptides and 16 amino acids, including glutamate and aromatic and branched-chain amino acids, were elevated over time, suggesting postmortem protein degradation in the muscle. Adenosine triphosphate degradation also progressed, resulting in the generation of inosine, xanthine, and hypoxanthine via the temporal increase in inosine 5'-monophosphate. Cysteine-glutathione disulfide, thiamine, and choline increased over time during the postmortem muscle aging. In the Kyoto encyclopedia of genes and genomes database, a bioinformatics resource, the postmortem metabolomic changes in LT muscle were characterized as pathways mainly related to protein digestion, glycolysis, citric acid cycle, pyruvate metabolism, pentose phosphate metabolism, nicotinamide metabolism, glycerophospholipid metabolism, purine metabolism, and glutathione metabolism. Conclusion: The compounds accumulating in aged beef were shown to be nutritionally vital substances and flavor components, as well as potential useful biomarkers of aging. The present metabolomic data during postmortem aging contribute to further understanding of the beef quality of JB and other breeds.

검정소 검정돈의 품종 및 환경요인의 효과 추정 (Estimation of Breed and Environmental Effects on Economic Traits of Performance-Tested Pigs)

  • 본 연구는 1991년부터 2002년 2월까지 대한양돈협회 공인 제1, 제2 종돈 능력검정소에서 검정이 완료된 Duroc종, Landrace종, Yorkshire종의 3개 품종 25,790두를 대상으로 돼지의 주요 경제 형질인 일당증체량, 등지방두께, 90kg 도달일령, 사료요구율, 정육율 및 선발지수에 영향을 미치는 품종, 성 및 환경요인의 효과를 추정하였다. 본 연구에서 얻어진 결과를 요약하면 다음과 같다. 1) 각 형질의 최소자승 평균은 일당증체량 959.95${\pm}$0.699g, 90kg 도달일령 138.36${\pm}$0.072일, 등지방 두께 1.41${\pm}$0.001cm, 사료요구율 2.33${\pm}$0.001, 정육율 56.71${\pm}$0.018% 및 선발지수 221.65${\pm}$0.113이었다. 2) 모든 형질에서 품종간에 유의한 차이를 보였으며, 일당증체량과 90kg 도달일령은 Duroc종(966.44${\pm}$1.361g, 137.10${\pm}$0.153일)이 가장 우수하고 Yorkshire종(938.79${\pm}$1.026g, 139.96${\pm}$0.116일)이 가장 불량하였다. 등지방 두께는 Landrace종(1.35${\pm}$0.002cm)이 가장 우수하고, Duroc종(1.60${\pm}$0.002cm)이 가장 불량하였다. 사료요구율은 Yorkshire종(2.34${\pm}$0.002)이 가장 우수하고 Landrace종(2.38${\pm}$0.003)이 가장 불량하였다. 정육율은 Landrace종(57.48${\pm}$0.037%)이 가장 우수하고 Duroc종(55.07${\pm}$0.035%)이 가장 불량하였다. 선발지수는 Yorkshire종(219.78${\pm}$0.154)이 가장 우수하고 Duroc종(214.97${\pm}$0.205)이 가장 불량하였다. 3) 각 형질에 대한 성별 최소자승 평균은 암퇘지와 수퇘지에서 각각 일당 증체량이 923.05${\pm}$1.289g, 974.53${\pm}$0.856g, 90kg 도달일령이 139.74${\pm}$0.145일, 137.21${\pm}$0.097일, 등지방 두께가 1.49${\pm}$0.002cm, 1.39${\pm}$0.002cm, 사료요구율이 2.43${\pm}$0.002, 2.28${\pm}$0.002, 정육율은 56.43${\pm}$0.034%, 56.81${\pm}$0.023% 및 선발지수가 211.37${\pm}$0.194, 224.61${\pm}$0.129로 조사된 모든 형질에 있어서 수퇘지가 암퇘지보다 우수하였다. 4) 검정소의 효과는 선발지수를 제외한 조사된 모든 형질에서 유의한 차이를 보였으며, 1검정소와 2검정소의 최소자승 평균은 각각 90kg 도달일령이 138.64${\pm}$0.117일, 138.32${\pm}$0.126일, 등지방 두께가 1.45${\pm}$0.002cm, 1.43${\pm}$0.002cm, 사료요구율이 2.37${\pm}$0.002, 2.34${\pm}$0.002, 정육율이 56.34${\pm}$0.027%, 56.90${\pm}$0.029%로 2검정소가 우수하였고, 일당증체량은 957.48${\pm}$1.039g, 940.09${\pm}$1.120g으로 1검정소가 우수하였다. 5) 본 연구에서 공분산 성분으로 포함된 검정개시체중과 검정종료체중은 일당증체량, 90kg 도달일령, 등지방 두께, 사료요구율 및 선발지수에 유의적으로 영향하였다. 추정된 회귀계수는 검정개시체중에 있어서 각각 1.7944${\pm}$0.21961, -0.3169${\pm}$0.02476, -0.0009${\pm}$0.00039, 0.0007${\pm}$0.00042 및 0.1950${\pm}$0.03304, 검정종료체중에 있어서는 각각 7.9414${\pm}$0.25182, -0.7222${\pm}$0.02839, -0.0038${\pm}$0.00045, -0.0008${\pm}$0.00048 및 1.0279${\pm}$0.03790으로 절대값을 비교하여 볼 때, 검정개시체중보다는 검정종료체중이 조사된 형질에 더욱 크게 영향하였다.
