땅두릅과 땅두릅잎의 영양성분에 관한 연구 (A Study of the Nutritional Composition of Aralia continentalis Kitagawa and Aralia continentalis Kitagawa Leaf)

  • 본 연구에서는 생식용으로 많이 이용되는 땅두릅이 적정 출하시기가 끝나면 기온상승으로 인하여 생식용으로 부적합한 제품이 다량 발생하고, 땅두릅 잎 또한 가축의 사료로 쓰이거나 그대로 버려지고 있어 가공적성에 맞는 상품개발이 필요한 상황이어서 이용가치를 높이는 방안으로 땅두릅과 땅두릅잎에 대한 기초자료를 마련하고자 영양 및 기능성 성분을 조사하고자 하였다. 땅두릅과 땅두릅잎의 일반성분 및 무기성분, 비타민 모두에서 비교적 높은 결과를 나타내었는데, 일반성분에 있어서 땅두릅은 수분이 94.50%로 나타났으며 탄수화물이 2.20%, 조섬유가 0.90%로 나타났고 조단백질은 1.60%, 조지방은 0.20%, 회분은 0.70% 이었다. 또한 땅두릅잎은 수분이 85.70%, 탄수화물이 7.00%이었고 조섬유가 1.50%, 조단백질이 4.30%, 조지방이 0.30%, 회분이 1.20%로 나타났다. 특히 무기성분은 K가 땅두릅에 264.00 mg%과 땅두릅잎에 172.00 mg%으로 가장 많이 함유되어 있었으며 다음으로 Ca, P, Na, Mg순으로 나타났다. 비타민은 베타카로틴이 가장 많았고 다음으로 비타민 C의 함유량도 많음을 알 수 있었다. 조사포닌 함량은 땅두릅이 63.7 mg/g, 땅두릅잎은 63.5 mg/g으로 비교적 많은 조사포닌을 함유하고 있었다. 항산화활성능은 페놀성 화합물이 각각 58.25, $79.32{\mu}g/mg$이었고 총 플라보노이드는 각각 11.25, $15.36{\mu}g/mg$로 나타났으며 전자공여능은 32.23, $28.06{\mu}g/mg$으로 우수한 소거능을 가짐을 확인하였다. 또한 식이섬유 함유량은 땅두릅의 경우 총 식이섬유 함량이 2.13%, 땅두릅잎은 총 식이섬유가 5.98%로 비교적 높은 식이섬유가 존재함을 확인하였다. 총 클로로필 함량도 땅두릅이 92.58 mg%와 땅두릅잎이 147.25 mg%로 높게 함유되어 있는 것이 확인되었다.

신선초(Agngelica Keiskei Koidz)의 일반성분, 유리당, 아미노산, 식이 섬유 및 사포닌 조성 (Proximate, Free Sugar, Amino Acid, Dietary Fiber and Saponin Composition of Agngelica Keiskei Koidz)

  • 신선초를 다양한 가공식품으로 개발하여 그 활용방안을 모색하기 위한 기초자료를 얻기 위하여 신선초의 부위별 일반성분, 유리당, 유리아미노산, 구성아미노산 및 식이 섬유 등을 분석하여 다음과 같은 결과를 얻었다. 신선초의 가식부를 평균함량으로 보면 수분이 88.43%, 회분은 1.96%, 조지방은 0.16%, 조지방은 2.95%, 조섬유는 1.26%, 총 비타민C는 67mg%로 나타났으나 수분과 조섬유를 제외하고는 줄기보다 잎에서 더 높은 함량을 보였다. 유리당 함량은 잎이 줄기보다 1.68배정도 높았으며 유리당의 종류와 함량을 보면 포도당이 평균함량으로 688mg, 과당이 703mg로 대부분 이였으며 서당은 미량 검출되었다. 잎에는 총 유리아미노산이 54.39%로 줄기의 28.07%보다 1.9배 이상 많은 함량을 보였다. 잎과 줄기의 총 구성 아미노산은 각각 1737.41mg%, 319.71mg%로 잎 이 줄기의 5.4배 높게 나타났다. 수용성 식이 섬유(SDF) 함량을 살펴보면, 신선물 기준으로 줄기가 1.00%로 잎의 0.99%보다 0.01% 높게 나타났으며, 불용성 식이 섬유(IDF) 함량 역시 잎의 3.07%보다 줄기가 3.52%로 0.45% 더 높게 나타났다. 신선초의 saponin의 함량은 잎이 535.51mg%로 줄기의 463.09mg%보다 높게 나타났다.

유과 제조 시 뽕잎 분말 첨가가 품질에 미치는 영향 (Effect of Mulberry Leaf(Morus alba Linne) Powder Addition on Quality of Yukwa)

  • The principal objective of this study was to evaluate the quality of Yukwa prepared with mulberry leaf (Morus alba Linne) powder. The moisture, crude protein, crude lipid, crude ash, dietary fiber, and rutin contents of used mulberry leaf powder were 6.65%, 19.50%, 3.26%, 18.24, 38.91 and 0.54%, respectively. The tested concentrations of mulberry leaf powder were 0, 3, 5, and 7%. The Yukwa were stored at $45^{\circ}C$ for 40 days. Yukwa dough prepared with mulberry leaf powder had a lower pH compared to the control group. As more mulberry leaf powder was added, the spread ratio, moisture content, and volume increased. As more mulberry leaf powder was added, L-value decreased while a and b values increased with increasing mulberry leaf powder content. The hardness of Yukwa made with 7% mulberry leaf powder was the highest among the samples. In the sensory tests, Yukwa with 5% mulberry leaf powder received the highest scores. The acid value and peroxide values were lower in Yukwa prepared with mulberry leaf powder than control. Yukwa prepared with mulberry leaf powder strongly inhibited oxidation of lipids. The thiobarbituric values were lower in Yukwa prepared with 5% mulberry leaf powder than in Yukwa prepared with 3% and 7% mulberry leaf powders and control Yukwa. These results suggest that mulberry leaf powder can be applied to Yukwa to achieve high quality and functionality.

뽕잎을 첨가한 엿제품의 혈당강하 효과에 관한 연구 (The Effects of Rice Candy with Mulberry Leaf on Lowering of Blood Glucose)

  • In this study, rice candy was produced with mulberry leaf and its effect on the lowering blood glucose level was assessed. The results were as follows: The recovery rate of mulberry leaf powder was 32.7%. The contents of crude protein, lipid, ash and crude fiber of mulberry leaf were 19.54%, 4.82%, 12.80%, and 11.27%, respectively. The sensory evaluation revealed that the rice candy added with 1% mulberry leaf powder showed slightly hi인or palatability score than that of 2%, but we decided that 2% addition of mulberry leaf powder would be preferred over 1% if considering both the physiological function and the sensory acceptability. The blood glucose level after ingesting the rice candy with mulberry leaf lowered by 31%, more than that of control.

  • To study antimicrobial activities of Impatiens balsamina, its leaf and stem was extracted by methanol and water. The extracts were tested their microbial inhibition activities against several microorganisms, staphylococcus aureus KCTC 1928, Escherichia coli KCTC 1116, Klebsiella pneumoniae KCTC 2690, Trichophyton mentagrophytes KCTC 6316. The methanol extract and water extract of the leaf and stem didn't show the inhibition effect on E. coli but showed the inhibition effect against the ohter 3 species of the microorganisms tested. The extract of leaf showed higher inhibition than the extract of stem. And the methanol extract showed higher inhibition than the water extract.

NUTRITIVE VALUE OF SILAGES PREPARED FROM FIBER AND LIQUID RESIDUES AFTER THE SEPARATION OF LEAF NUTRIENT CONCENTRATE FROM ITALIAN RYEGRASS IN GOATS

  • Italian ryegrass (Lolium multiflorum Lam.) was fractionated into leaf nutrient concentrate, fiber and deproteinised juice (DPJ). The fresh and fermented DPJs were concentrated and referred to as fresh deproteinised juice concentrate (FDPJC) and fermented deprotenised juice concentrate (FMTD DPJC). The FDPJC and FMTD DPJC were separately mixed with dried fiber and ensiled. Wilted crop silage and fresh fiber silage were also prepared from the same material crop. The nutritive value of these four silages were compared using four goats by $4{\times}4$ Latin square design. Green crop fractionation resulted lesser amount of crude protein and ash, and higher amount of neurtal detergent fiber, acid detergent fiber, cellulose and hemicellulose in fresh fiber. The pH of fresh fiber silage was lower than that of the other silages. Addition of FDPJC or FMTD DPJC to the dried fiber at ensiling did not improve the silage qualities; but all the silages were satisfactorily preserved. Goats fed these silages showed similar ruminal pH and total volatile fatty acid concentrations. But addition of FMTD DPJC was effective on increasing ruminal acetic acid concentration reducing propionic acid concentration. Ruminal n- and iso- butyric acid concentrations were proportional to that of propionic acid. High ammonia content of the silage containing FMTD DPJC was reflected to the ruminal ammonia concentration, urinary nitrogen excretion and serum urea level of goats. Inclusion of FDPJC or FMTD DPJC added 15 to 25% dry matter to the fiber silages with a little reduction in the digestibilities of most components of the silages.

  • To study the wood quality factors of Populus nigra $\times$ maxmowiczii known a rapidly growing species, the variations of green moisture contents, bulk density, wood fibre dimensions, microfibril angles, and number of leaf knot in stem wood were investigated. The heartwood contained a higher moisture content than the corresponding sapwood. Bulk density in radial patterns variations decrease outward from the pith, then increase toward the bark. The wood-fiber length and diameters had somewhat smaller values than on Populus alba $\times$ glandulosa or Populus euramericana. The microfibril angles decreased rapidly toward the outside, and their mean values were about 16 degree. The grain angles run nearly parallel to the cell axies. Number of leaf knot showed a fluctural change above ground level to a point near the base of the crown and then increased rapidly to the top of tree and average number of leaf knot varied exclusively from tree to tree.

비파 부위별 분말의 영양성분 비교 (A Comparison of Nutritional Components of Loquat (Eriobotrya japonicaLindl.) Powder in Different Aerial Components)

  • This study compares the major nutritional components of the leaf, flesh, and seed of dry loquat (Eriobotrya japonicaLindl.). Among proximate compositions, the crude fat, crude ash, and dietary fiber of the leaf exceeded those of the seed and flesh, whereas the carbohydrate content of the leaf was lower than that of the seed and flesh. The main component of free sugars in the leaf, flesh, and seed was fructose. Total amino acids of the leaf, flesh, and seed were 552.43, 63.00, and 260.29 mg%, respectively. Although the amino acid composition of the leaf, flesh, and seed varied, glutamic acid and ${\gamma}$-aminobutyric acid were the major amino acids in the leaf, flesh, and seed. Major fatty acids of total lipid were oleic acid and stearic acid in the leaf and seed, and the major acid was linoleic acid in the flesh. Major organic acids were oxalic acid in the leaf, maleic acid in the flesh, and citric acid in the seed. Vitamin C content was higher in the seed than in the leaf and flesh.

복분자 딸기의 이화학적 특성 (Physicochemical Characteristics of Rubus coreanus Miquel)

  • 복분자딸기 열매의 미숙과와 완숙과 그리고 잎을 사용하여 수분, 조단백질, 조지방, 조섬 유, 식이섬유, 조회분과 pH, 가용성고형분, 산도, 색도 등의 이화학적 특성을 조사하였다. 주요 유리당은 glucose와 fructose로서 미숙과보다 완숙과에서 증가하였으며, 미숙과에는 sucrose가 나타나지 않았으나 완숙과와 잎에서는 sucrose가 합유되었다. 유기산 조성은 미 숙과, 완숙과 및 잎 모두 citric acid, succinic acid, fumaric acid로 이루어져 있었고, 특히 미숙과에서 citric acid함량이 1.21 g%로 높은 값을 나타내었다. 복분자딸기 열매의 미숙과 와 완숙과에서는 16종의 아미노산이 분리되었고 잎은 여기에 methionine을 포함하여 16종의 아미노산이 분리되었다. 미숙과 및 완숙과, 잎 모두 glutamic acid의 함량이 다른 성분에 비하여 높은 411, 246.59 및 898.42 mg%를 나타내었다. 무기질은 미숙과 및 완숙과, 잎 모두 potassium의 함량이 가장 높은 값을 나타내었으며, 총무기질 함량은 잎이 완숙과나 미숙과보다 높은 값을 나타내었다.

Preparation of highly hydrophobic PVDF hollow fiber composite membrane with lotus leaf-like surface and its desalination properties

  • Lotus leaf has a special dual micro and nano surface structure which gives its highly hydrophobic surface characteristics and so-called self cleaning effect. In order to endow PVDF hollow fiber membrane with this special structure and improve the hydrophobicity of membrane surface, PVDF hollow fiber composite membranes was obtained through the immersion coating of poly(vinylidene fluoride-co-hexafluoropropylene) (PVDF-HFP) dilute solution on the outside surface of PVDF support membrane. The prepared PVDF composite membranes were used in the vacuum membrane distillation (VMD) for the desalination. The effects of PVDF-HFP dilute solution concentration in the dope solution and coating time on VMD separation performance was studied. Membranes were characterized by SEM, WCA measurement, porosity, and liquid entry pressure of water. VMD test was carried out using $35g{\cdot}L^{-1}$ NaCl aqueous solution as the feed solution at feed temperature of $30^{\circ}C$ and the permeate pressure of 31.3 kPa. The vapour flux reached a maximum when PVDF-HFP concentration in the dilute solution was 5 wt% and the coating time was kept in the range of 10-60 s. This was attributed to the well configuration of micro-nano rods which was similar with the dual micro-nano structure on the lotus leaf. Compared with the original PVDF membrane, the salt rejection can be well maintained which was greater than 99.99 % meanwhile permeation water conductivity was kept at a low value of $7-9{\mu}S{\cdot}cm^{-1}$ during the continuous testing for 360 h.
