대잎 분말을 첨가한 모닝롤의 품질 특성 (A Study on the Quality Characteristics of Morning-Rolls with Bamboo Leaf Powder)

  • The objective of this study was to assess the quality characteristics of morning-rolls containing various levels (0, 4, 8, and 12%) of bamboo leaf powder. The results demonstrated that morning-roll volume decreased with increasing amounts of bamboo leaf powder, and as the bamboo leaf powder content increased, the Hunter's color 'L', 'a' and 'b' values were significantly reduced (p<0.05). For the amylogram characteristics, the addition of bamboo leaf powder to the flour reduced peak viscosity, holding strength, final viscosity, and setback. The results of the sensory evaluation demonstrated that control (0%) and 8% addition of bamboo leaf powder had the best scores in taste, color, flavor, texture, appearance, softness, wetness, residual mouth feel, and overall acceptability. Thus, it appears that by using 8% additions of bamboo leaf powder, the functionality, nutritional composition, taste, color, and flavor of morning-rolls containing bamboo leaf powder can be developed. This result will support the development of better quality bamboo-leaf morning-rolls.

  • 대잎 분말 첨가 설기떡의 관능적 특성과 기계적 특성, 수분 함량과 색도를 측정하였다. 대잎분말의 첨가량은 0%인 대조군을 BP0으로 하였으며, 1% 첨가군을 BP1, 2% 첨가군을 BP2, 3% 첨가군을 BP3, 4% 첨가군을 BP4로 표기하였다. Textureanalyzer 분석 결과를 살펴보면 설기떡에 대잎 분말 첨가량을 증가하면 할수록 견고도가 증가하고, 부착성과 점착성, 씹힘성, 응집성도 첨가량이 증가함에 따라 증가되는 결과가 나타났다. 그러나 탄력성은 다른 처리구와 다르게 유의적으로 차이가 없었다. 수분 함량은 대잎 첨가 설기떡의 경우 37~39%를 유지하였으며, 색도는 대잎 분말의 첨가 수준이 증가될수록 L값은 감소되며 a, b값은 증가 되는 경향이었다. 관능평가 결과는 색과 촉촉한 정도에서 BF3가 가장 높게 평가되었다. 이러한 연구 결과로 BF3의 첨가구가 가장 바람직한 첨가 비율임을 알 수 있었다. 따라서 맛과 기능적인 면에 대한 것도 기대를 걸어보며, 앞으로 후속 연구가 더 많이 나오기를 기대한다.

  • Korean Lawn. Zoysia japonica Steud. is the type of a perennial warm-season turfgrass keeping green leaf color for 5 months from May to September in natural condition in Korea. This Studies were carried out to obtain the effects of N-P-K fertilization, regrowth capacity after mowing and chlorophyll contents on prolongation of the green leaf color period in Zoysia japonica Steud turfgrass areas. The results obtained are summarized as follows ; 1.The effects of nitrogen fertilizer application in Zoysia japonica Steud, turfgrass areas were affected on regrowth ability after mowing green color of leaf canopies and chlorophyll contents, respectively(P<.05) 2.A experimental plots which applied 51 g/m$^2$/10 weeks of N$_3$P$_1$K$_1$fertilizer, there were high significant effects on prolongation of the green leaf color period and the plots of phosphorus and potassium had additive effects. 3.Prolongation of the green leaf color period to the last of October was obviously possible by slow degrees in proportation to increment of the fertilizer. However, it is interpreted that more prolongation of the green period is impossible with N-P-K fertilization and irrigation treatments. unless the intermediate turfgrasses between $C_3$ and $C_4$plants must be found and bred.

Zoysiagrass 수집계통들과 종간교배계통들의 형태적 특성들의 변이 (Variation of the Morphological Characteristics in the Accessions of Zoysia Species and Their Hybrid Lines)

  • Fifty accessions in Zoysia species and forty-one hybrid lines were evaluated in order to detect analyze the genectic variation of Zoysiagrasses and to obtain the basic information for breeding. 1.Plant height ranged from 13 to 34.5cm, leaf length from 7 to 26cm, leaf width from 2 to 7mm, and first leaf height from 1.1 to 8.5cm 2. The correlations among plant height, leaf length and first-leaf height were high, but leaf Width was correlated only With leaf length. 3. Stolon length was varied from 10 to 108cm, number of stolons from 12 to 53, internode length from 2 to 6.1cm and coverage percentage from 10 to 90%. 4.There were correlation among stolen length, number of stolons, internode length and coverage percentage except between stolen and internode length. 5.M1J and MC2 showed the highest level in stolen length, number of stolons and coverage percentage. Therefore they will be the best breeding materials for the purpose of fast covering. 6.According to the analysis on October 26, 1995, yellow color-change rate of leaves ranged from 5 to 85%, red color-change from 0 to 75% and sum of yellow and red change from 20 to 95%. Speciallty M2M1 and FL-41 kept green color untill early December, indicating that they had the late dormancy. 7. Visual assessment of stolon length and number of stolons, showed similar tendency With actually measured data. 8. Shoot density was very high in M2M1 and S2, and showed negative correlation with leaf width. 9. It is known in Korea that the darker green color of lawngrass is, the better it looks. There were 11 lines with dark green color leaves such as J 85-10, Meyer in Z. japonira, one asacession in Z. matrella and M2M1, M2S8, JM2, 55C2 in hybrid lines.

Morphological Characterization of Fagopyrum esculentum Germplasm for Rutin and Quercetin Contents

  • Buckwheat is well-known crop for containing a high contents of flavonoids that are effective in vascular disease. The current study was performed to estimate the influence of morphological characterization of Fagopyrum esculentum (ES) germplasm for seed's two major flavonoids contents: rutin and quercetin. We found that the red stem color, pale green leaf color, arrowhead leaf shape, white flower color, pale brown seed coat color, and egg-shaped seed were significantly associated with 77%, 56.7%, 83.7%, 98.7%, 70.8% and 74.5% germplasm, respectively. Overall, the rutin contents of ES germplasm ranged from 0.30 to 47.86 mg/100g dry weight (DW) and the quercetin contents ranged from 0 to 1.22 mg/100g DW. The rutin contents of germplasm possessing red stem color, pale green leaf color, arrowhead leaves, white flower color, pale brown seed coat color and egg-shaped seed ranged from 7.22 to 47.86 mg/100g DW. However, the quercetin contents of germplasm with red stem color and pale brown seed coat color ranged from 0 to 1.15 mg/100g DW, with pale green leaves ranged from 0 to 0.96 mg/100g, with arrowhead leaves and white flower ranged from 0 to 1.22 mg/100g and with egg-shaped seed ranged from 0.32 to 1.22 mg/100g DW. In PCA analysis, the first three principal components (PCs) showed Eigen value more than 1 and accounted for 51.70% of variation. For both higher contents of rutin and quercetin, the morphological evaluation in ES shows a tendency of red stem color, arrowhead leaves, pale green leaf color, white flower color, pale brown seed coat color and egg-shaped seed. From this information, we can assume the rutin and quercetin contents by the morphological characteristics of the germplasm. And It could be useful in improving the rutin and quercetin contents and selecting proper resources for cultivation in existing buckwheat cultivars.

논 잡초(雜草) 가막사리(Bidens tripartita L.) 생태종(生態種)의 분화(分化)에 관(關)한 연구(硏究) (Studies on Differentiation of a Paddy Weed, Bur Beggarticks(Bidens tripartita L.))

  • 가막사리 50개 수집종을 대상으로 여러 가지 형태적(形態的), 생리적(生理的)특성의 변이를 조사하고, 초형(草形), 열엽편수(裂葉片數), 수과(瘦果)길이, 개화소요일수(開花所要日數)를 기준(基準)으로 Ward의 최소분산법(最小分散法)으로 군집분석(群集分析)을 한 결과는 다음과 같다. 가막사리 수집종은 초형, 경장, 개화소요일수, 엽장폭비, 열엽편수, 엽록소함량, 엽색, 경색, 수과색, 수과길이, 수과장폭비 에서 다양한 변이를 보였으며, 수집종에 따라 약간의 변이가 있으나 대부분 상당한 휴면성과 광발아성이 있었다. 초형은 직립형(I)에서 삼각형(V)까지 다양했는데, 마름모형(III)이 가장 많았고, 경장과는 5% 수준에서 부(負)의 상관관계가 있는 것으로 나타났다. 열엽편수는 3개인 것이 가장 많았고 그 다음은 5개의 순으로 나타났는데 열엽(裂葉)되지 않는 수집종도 있었다. 수과길이 및 엽록소함량과는 5% 수준에서 엽장폭비와는 1% 수준에서 부(負)의 상관관계가 있었다. 개화소요일수는 94-141 일 범위였다. 수과길이와는 1% 수준에서, 엽장폭비와는 5% 수준에서 정(正)의 상관관계, 그리고 수과색과는 1% 수준에서 부(負)의 상관관계를 보였다. 수과길이는 6.5-14.0mm의 범위로, 평균 10.0mm, 표준편차 1.7로 9.0-12.0mm 사이가 60%를 차지했다. 수과장폭비, 경장, 개화소요일수와는 1% 수준에서, 엽장폭비와는 5% 수준에서 정(正)의 상관관계를, 그리고 엽색, 경색, 수과색, 열엽편수와는 5% 수준에서 부(負)의 상관관계를 보였다. Ward의 최소분산법을 이용한 군집분석 결과 거리 0.06에서 식물학적으로 특성이 각기 다른 6개 군으로 분류할 수 있었다.

제조과정에 따른 자소엽의 화학적 성분 및 자소숙수의 기호적 특성 (The Chemical Components of Perilla Leaf(frutescens Britton var. acuta Kudo) by the Making Process and Sensory Evaluation of Jasosuksu)

  • The purpose of this study was to analyze the chemical components of Perilla leaf(frutescens Britton var. scuta Kudo) according to the making process, and to examine Hunter's color value and sensory evaluation of Jasosuksu by extraction time. Perilla leaves were prepared in three types; fresh leaf, dried leaf in the shade and roasted leaf after being dried in the shade in order to make Jasosuksu. The results of the research were as follows: Free sugars(sucrose, glucose, fructose) and organic acids(citric acid, tartaric acid, malic acid, succinic acid) were present in the fresh leaf, dried leaf and roasted leaf. $15{\sim}16$ kinds of amino acid including aspartic acid were determined in the fresh leaf, dried leaf and roasted leaf, and the major free amino acids were serine, aspartic acid, and glutamic acid. The major total amino acids of tile fresh leaf, dried leaf and roasted leaf were glutamic acid, histinine, and glycine. The major fatty acids of Perilla leaves were palmitic acid, linolenic acid, and linolenic acid. The content ratio of linolenic acid in fresh leaves was the highest, but that of palmitic acid was lower than that of dried leaves and roasted leaves. L value, a value, and b value of Perilla leaf were the highest in the roasted leaves followed by the order of dried leaves and fresh leaves. L value and b value of Jasosuksu extracted from roasted leaves were higher than Jasosuksu extracted from dried leaves. The preference of color, flavor, sweetness of Jasosuksu extracted from dried leaves was the highest when extraction time was 10 min. at $70^{\circ}C$, but that of Jasosuksu extracted from roasted leaves was the highest when extraction time was 15 min. at $70^{\circ}C$. The preference of color, flavor, taste of Jasosuksu extracted from roasted leaves was higher than that of Jasosuksu extracted from dried leaves.

생쪽잎분말의 염색성 및 저장성 (I) - 동결건조방법 - (Dyeing Properties and Storage Stability of Leaf Powder Prepared from Dyer's Knotweed (I) - by Freeze Drying method -)

  • The objective of this study is to investigate the efficacy of leaf powder colorants as substitutes for traditional fresh juice extract dyeing. Three kinds of leaf powder colorants were prepared by freeze drying method with or without deep freezing as pre-treatment: one powder colorant from fresh leaf juice with deep freezing; two kinds of powder colorant from fresh leaves with and without deep freezing. Their dyeing properties and storage stabilities were studied and compared with the traditional fresh juice extract dyeing. The presence of indigo in the powder colorants was confirmed by UV/Visible absorption spectra. They showed absorption peak at 602nm which was same with indigo absorption peak. Dyeing was done at low temperature around 6$^{\circ}C$. All three powder colorants produced B colors on silk fabrics, showing similar color to the one dyed traditionally with fresh juice extract. The powder colorants from leaves gave higher color strength than the powder from leaf juice. The powder colorant prepared from leaves with deep freezing was the most stable for long term storage as its color and color strength were not changed after 360 days. So, this was used for further dyeing to study the effects of concentration and repeat dyeing on color strength and colorfastness. Fastnesses to dry cleaning and rubbing were fairly good above 4 rating. Further study is needed to improve light fastness. It was concluded that the leaf powder colorant with deep freezing could be used as a substitute for traditional juice extract dyeing at all seasons.

잎무늬종 문수조릿대와 무늬털대사초의 광도차에 따른 생육 및 엽색변화 (Effect of Different Shading on the Growth and Leaf Color of Variegated Arundinaria munsuensis and Carex ciliato-marginata for. variegata.)

  • 자생 잎무늬종 식물인 문수조릿대와 무늬털대사초에 있어서 광도차에 따른 생육과 생리적 변화 그리고 엽색의 변화를 알아보고 이들의 관상가치 증진에 알맞은 광도를 구명하고자 40%, 70%, 85% 차광구조건과 0%인 노지조건에서 4개월동안 실시한 실험결괴는 다음과 같다. 무늬종 문수조릿대(Arundinaria munsuensis)는 광도가 낮아질수록 초장과 잎의 크기가 증가되었고 차광 85% 조건에서 광합성효율이 높은 것으로 미루어 보아, 음지조건에서도 생육이 잘됨을 알 수 있었다. 그러나 40% 차광구($1500{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$)에서 가장 아름다운 엽색이 발현되었으며 생육이 양호하여 관상가치가 높았다. 무늬털대사초(Carex ciliato-marginata for. variegata)는 40% 차광조건에서 생육이 가장 좋았으며 차광수준이 높아질수록 생리활성변화는 높았다. 그러나 무차광 상태와 85% 차광조건에서는 관상가치가 저하되었고, 노랑색의 잎무늬를 가진 무늬털대사초는 40% 차광에서 녹색과 연노랑(RHS 146B, strong greenish yellow)색의 무늬 발현이 가장 좋았다.

피노믹스 시스템을 위한 식물 잎의 질병 검출 및 분류 (Detection and Classification of Leaf Diseases for Phenomics System)

  • 본 논문에서는 스마트팜 시스템에서 재배 중인 식물 잎의 질병을 검출하고, 질병 유형을 분류하는 방법을 제안한다. 영상으로부터식물 잎의 컬러 정보와 질병 유형의 형태 정보를 다층 퍼셉트론(MLP) 모델을 이용하여 학습한다. 1단계에서는 입력된 영상의 컬러분포를 분석하여 질병 존재 여부를 판단한다. 1단계의 질병 존재 가능성이 높은 영상에 대하여 2단계에서는 Mean shift clustering을 이용하여 작은 영역으로 분할하고, 각 분할된 영역 단위로 컬러 정보를 추출하여 제안한 Color Network에 의하여 질병 여부를 판별한다. 컬러 분할된 영역이 Color Network에 의하여 질병으로 판별되면, 3단계에서는 그 영역의 형태 정보를 추출하여 제안한 Shape Network를 이용하여 질병의 유형을 분류한다. 사과나무 잎과 서양 양상추(Iceberg)에서 발생하는 두 가지 대분류 유형의 질병에 대하여, 제안한 기법은 작은 영역 단위로는 92.3%의 잎 질병 검출률을 보였으며, 보통 2개 이상의 질병 영역이 존재하는 한 장의 영상 단위로는 99.3% 이상의 검출률을 보였다. 본 논문에서 제안한 방법은 스마트팜 환경에서 잎 식물의 질병 여부를 조기에 발견할 수 있으며, 대상 식물에 따른 추가 학습 없이 다양한 식물과 질병 유형으로 확대 적용이 가능하다.
