Effect of Lactic Acid Bacteria notated to Kimchi Fermentation on the Quality of Bread (김치숙성 관련 젖산균이 식빵의 품질에 미치는 영향)

  • The effects of lactic acid bacteria from kimchi fermentation, specifically Lactobacillus plantarum(LP) and Leuconostoc mesenteroides (LM) on the quality of the bread product was investigated. The two types of bacteria were cultivated in the sterilized radish juice used for kimchi fermentation. The concentration of bacteria was measured at 3.0$\times$10$^{9}$ ~3.3$\times$10$^{9}$ /mL. The bacteria were added at the ratios of 5% and 10% to a mixture with wheat flour before subsequent dough fermentation. An LM+LP treatment to the mixture was also made at 5% of LP and 5% of LM. The measured pH in the dough with LM+LP was the lowest among all of treatments. The products of 5% LM treatment showed the shortest fermentation time. Loaf production by volume was the highest from the 10% LM treatment. The % of moisture loss of the bread during the shelf-storage was less when treated with lactic acid bacteria than when left untreated. The least moisture loss was observed when the bread was treated with the LM+LP mixture. Hardness of the bread also decreased with the presence of lactic acid bacteria. The order of hardness was: control > 5% LP > LM+LP > 5% LM > 17% LM > 10% LP. Staling degree of the bread when treated with lactic acid bacteria was lower than that of the control. The least staling occurred when treated with LM 10% and LP 10%.

  • Using evanescent field coupling between single ($LP_{01}$) and double ($LP_{01}, LP_{11}$) mode optical fiber, we selected LPII mode beam. With a $LP_{11}$ mode beam from a double mode fiber. we fabricated $LP_{11}$ mode fiber optic resonant ring interferometer, and assured that the guided mode is $LP_{11}$ mode from a radiation beam coming through the prism output coupler. When an external perturbation applied to the signal arm of the $LP_{11}$ fiber optic resonant ring interferometer, we examined the change of radiation mode coming from a prism output coupler and an end of optical fiber. Using two photodiode, LPn mode beam converted to voltage. This two output voltages is applied to X and Y terminal of oscilloscope to display circular motion on oscilloscope.

Effect of Packaging on Quality of Stored Gangjung (포장방법이 강정의 저장 중 품질특성에 미치는 영향)

  • This study was conducted to improve the packaging technology used for Gangjung and the product's quality characteristics during storage. Packaging materials consisting of (1) IP: OPP (oriented polypropylene)/PE (polyethylene) + Paper, (2) LP1: OPP/PE + Paper, (3) LP2: OPP/PE + Can, (4) LP3: OPP/PE + Plastic, (5) BP1: OPP/PE, (6) BP2: OPP/DL/CPP (cast polypropylene), (7) BP3: PET/PE/CPP, and (8) BP4: OPP/PVDC (polyvinylidene chloride)/PE/CPP were used. The major fatty acids including 54.2% linoleic acid, 24.1% oleic acid, 11.2% palmitic acid and 6.0% linoleic acid were assessed. The packages effective in maintaining moisture were in the order of LP2, BP4 > IP > LP3, BP1, BP2 > LP1 > BP3. There were no significant differences in water content and the products in IP, BP3, and BP showed the highest level in the increase in hardness on day 60 of storage. Acid values of IP, LP1, LP2, LP3, BP1, and BP2 were maintained at <2.0 during 40 days of storage. IP, LP1, LP2 and BP1.
