Comparison of Storability of Radish Sprouts According to Simulated Distribution Temperature Conditions (모의 유통 온도조건에 따른 MA 저장중 무순의 저장성 비교)

  • The temperature fluctuations was investigated in cold distribution chain of radish sprout, typical of commercial practice. Although the temperature of distribution chain was maintained below 5$^{\circ}C$ in precooling and packaging steps, and 10$^{\circ}C$ in transporting, temperature of loading step increased up to 18$^{\circ}C$ at market. Based on this investigation, the simulated cold distribution conditions were consisted of precooling and packaging step; 5$^{\circ}C$ for 12 hours and transporting and loading steps; 5$^{\circ}C$, 10$^{\circ}C$, 20$^{\circ}C$ and $^{\circ}C$ for 6 hours, and storage and market steps; 5$^{\circ}C$ and 10$^{\circ}C$ for 17 days. The radish sprouts were cultivated at 25$^{\circ}C$ and dark condition for S days and placed in light condition for greening. They were packaged by 25 ${\mu}m$ ceramic film after precooling for 6 hours in 5$^{\circ}C$. The fresh weight loss and visual quality of radish sprout decreased with the increase of the temperature in transporting and loading steps. The carbon dioxide content of packages increased, but the oxygen content decreased rapidly in 1day after storage, as the temperature of transporting and loading steps increased. The ethylene content in packages increased fastest in higher temperature of transporting and loading steps treatment, and showed highest in 5$^{\circ}C$-30$^{\circ}C$-10$^{\circ}C$ treatment (temperature of precooling and packaging steps for 12 hours - temperature of transporting and loading steps for 6 hours - temperature of storage step for 14 days) followed by 5$^{\circ}C$-20$^{\circ}C$-10$^{\circ}C$ treatment. The high temperature of transporting and loading steps resulted in deterioration qualities and atmosphere conditions in packages of sprout. These results suggested that the temperature fluctuation in distribution should influence the shelf-life of radish sprouts, even thought the periods of fluctuation was just 6 hours.

  • We investigated the effect of postharvest treatments of calcium chloride, lysophosphatidyl ethanolamine (LPE) or 1-methylcyclopropene (1-MCP) on fruit quality during simulated marketing in Asian pear (Pyrus pyrifolia Nakai). 'Whangkeumbae' pear fruits were immersed in 0.25, 0.5 or 1.0% $CaCl_2$ solution with or without ultrasound (40kHz) at $25^{\circ}C$ for 3min followed by storage at $1^{\circ}C$ for 30 days simulated as abroad exportation. After simulated marketing at $25^{\circ}C$ and 80% relative humidity (RH) up for 10 days, quality parameters were evaluated. Results indicated that the ultrasound and $CaCl_2$ treatment had a synergic effect on keeping the green skin color which showed lower $a^*$ value. The combination treatment of ultrasound and 0.5% and 1.0% $CaCl_2$ significantly reduced internal browning disorders, although severe skin blemish disorder (20-23%) occurred in 1.0% $CaCl_2$ treatment. 'Wonhwang' pears were immersed in 1,000ppm LPE for 3 minutes or were fumigated in 1,000 ppb 1-MCP for 12 hours, respectively. The results of the fruit quality survey during the 21 days of distribution period are as follows. The 1-MCP treatment was maintained at a constant flesh firmness of 33N or higher during the distribution period. The LPE treated fruits had a lower physiological disorder index than the untreated group, but showed a relatively higher value than the 1-MCP treated group. In the case of 1-MCP treatment, the fruit respiration rate was significantly lower than of untreated control ($6.0mL{\cdot}kg^{-1}{\cdot}hr^{-1}$) during the simulaed marketing period. Consequently, it was expected that the postharvest treatments of 0.5% calcium chloride in pararell with ultrasound and 1-MCP fumigation can help to maintain Asian pear quality during distribution period.

Quality properties of fermented mugworts and the rapid pattern analysis of their volatile flavor components via surface acoustic wave (SAW) based electronic nose sensor in the GC system (발효 인진쑥과 약쑥의 이화학적 품질특성 및 GC와 SAW센서기반 electronic nose에 의한 향기패턴의 신속분석)

  • The changes in quality properties and nutritional components for two mugworts, namely, Artemisia capillaris Thumberg Artemisiae asiaticae Nakai fermented by Bacillus strains were characterized followed by rapid pattern analysis of volatile flavor compounds through the SAW-based electronic nose sensor in the GC system. After fermentation, the pH has remarkably decreased from 6.0~6.4 to 4.6~5.1 and there has been a slight change in the total soluble solids. The L (lightness) and b (yellowness) values in the Hunter's color system significantly decreased, whilst the a (redness) value increased via fermentation. The HPLC analysis demonstrated that the total amino acids increased in quantity and the essential amino acids were higher in the A. asiaticae Nakai than in the A. capillaris Thumberg, specially with high contents of glutamic and aspartic acid. After fermentation, the monounsaturated fatty acid increased in the A. asiaticae Nakai and the polyunsaturated fatty acids increased in the A. capillaris Thumberg. While the total polyphenol contents have not been affected by fermentation, the total sugar contents have dramatically decreased. Scopoletin, which is one of the most important index components in mugworts, was highly abundant in the A. capillaris Thumberg; however, it was not detected in the A. asiaticae Nakai. Small pieces of plant tissue in the surface microstructure were found in the fermented mugworts through the use of the scanning electron microscope (SEM). Volatile flavor compounds via electronic nose showed that the intensity of several peaks has increased and additional seven flavor peaks have been produced after fermentation. The VaporPrintTM images demonstrated a notable difference in flavors between the A. asiaticae Nakai and A. capillaris Thumberg, and the fermentation enabled the mugworts to produce subtle differences in flavor.

Atomic Absorption Spectrophotometric Analysis of Copper In the Soil s of Orchards (원자흡광법(原字吸光法)에 의(依)한 과수원(果樹園) 토양중(土壤中)의 동함량(銅含量) 분석(分析)에 관(關)한 연구(硏究))

  • This study was conducted to detect copper which is considered in the soils of orchards, since copper fungicide has been applied to fruit trees. Soil samples taken from the fields of the chief producing districts of apple (Chungju, Yesan, Daegu), pear (Yangju, Bucheon, Seonghwan) and citrus (Seogypo in Jeju island) were analysed by an atomic absorption spectrophotometer. The results obtained were summarized as follows ; 1. In orchards of apple, the amount of copper of soils from Yesan, Chungju and Daegu were ranged 2.6-171.3ppm, 2.2-136.1ppm and 14.3-134.6ppm, respectively. Very little copper was detected from the soils in the field which has been cultivated for less than 20 years. About 100ppm and 130-170ppm of copper were detected in the field which has been cultivated for 30 years and for 50-60 years, respectively. Most of the copper was detected in the surface layer of soils (0-10cm), while very low content of copper was detected in the deeper layer of soils (10-20cm). 2. In orchards of pear, 20-30ppm of copper was detected from the surface of soils in the field which has been cultivated for more than 30 years and the highest level of copper, 36.8ppm, was detected from Yangju area. The amount of copper of soils from Yangju, Seonghwan and Bucheon were ranged 3.6-36.8ppm, 9.7-19.4ppm and 3.6-24.7ppm, respectively. 3. In orchards of citrus of Jeju island, only trace amount and 23-38ppm of copper were detected in the fields cultivated for 15 years and 20-30 years, respectively. The highest level of copper, 57ppm, was detected from the surface layer of soils in the field which has been cultivated for 35 years, but in most of the soil samples tested, only the natural background level of copper, about 20ppm, was detected. 4. The levels of copper residue in all the soil samples tested were lower than the tolerance level (125ppm of copper which is extracted in 0.1N-HCl solution), except those of copperr residue, 130-170ppm, that were detected from the orchards of apple which have been under cultivation for 50-60 years. Hence no problem for the farming could be speculated with the present concentration of copper analysed.

Effect of Cooking Methods with Various Heating Apparatus on the Quality Characteristics of Pork (가열기구에 따른 조리방법이 돼지고기의 품질특성에 미치는 영향)

  • Pork belly(PB) and pork shoulder(PS) parts were tested to find out chemical and physical characteristics and sensory evaluation with various cooking methods such as pan heating, boiling, grilling, steaming, charcoal heating, pan heating and double-layer pan filled with phase change material (PCM) cooking. The moisture contents of steamed PB and PS had higher results of 60.2% and 67.2% than other treatments. The highest results of crude fat contents in PB treatments was charcoal roasting as 33.2% (p<0.05) while grilling resulted the highest at 16.0% in the PS (p<0.05). In the crude protein contents, boiling treatment resulted the lowest at 15.4% while steaming was the highest at 18.9% in PB. Also, crude protein content of grilling treatment was 25.2%, a result significantly higher than in other cooking methods in PS. Heating loss, which has a close relationship with water holding capacity, showed the highest result in the charcoal treatment at 40.18% and 39.68% each in the both of PS and PS. In the result of shear force, the lowest result was oven treatment at $2.76kg/cm^2$ in PB (p<0.05) and double-layer pan heating at $3.67kg/cm^2$ in PS (p<0.05). L value in the color test of boiling treatment showed the highest result of 65.16 and 59.72 in the PB and PS respectively (p<0.05), however it scored the lowest of 2.32 in b value in PB (p<0.05). In the 9 point-scale sensory evaluation, grilling treatment showed the highest result of 7.56 in the overall palatability of PB (p<0.05). However, PS in the pan heating which scored 7.22 was the best result while having the lowest score of 5.88 in the boiling treatment (p<0.05).

Characteristics of Mung Bean Powders After Various Hydrolysis Protocols (녹두분말의 가수분해 조건에 따른 특성 비교)

  • To efficiently use Korean mung beans, the functional characteristics of mung bean powder(A), unhydrolyzed mung bean flour(B), and mung bean flour hydrolyzed under optimum conditions(C), were compared. The contents of protein, fat, carbohydrate, ash, and water, did not vary greatly with different treatment methods. The color values of (B) and (C) were similar, while the L value of (A) was higher than those of the other samples. Thereducing sugar content of (C) was highest at 292.63 mg%, while the total phenol contents of (A) and (C) were similar at 38.63 mg% and 38.38 mg%, respectively. The molecular weight of (A) was under 17 kDa by SDS-PAGE, and was lower than the molecular weights of the other samples (B, C), which generally ranged from 17 kDa to 72 kDa. The free sugar content of (C) was highest at 1,125.16 mg%, while (A) and (B) yielded values of 86.36 mg% and 54.20 mg%, respectively. Total free amino acid contents were in the order(C)(B)(A), and were 22,116.35 mg%, 2,731.29 mg%, and 578.54 mg%, respectively. The amino acid content of (C) was 8,231.42 mg% and was higher than those of (A) or(B). The DPPH free radical scavenging abilities of (A) and (C) were high, at 62.1% and 57.63%, respectively, while (B) showed a lower value at 19.26%. Fibrinolytic activity was highest(24.01%) in (C), and was 20.69% in (A) and 18.06% in (B). The above results indicate that mung bean flour hydrolyzed under optimal conditions (C) had the highest functional and quality characteristics, in comparisonh with unhydrolyzed flour (B) and mung bean powder (A). Diverse applications of hydrolyzed mung bean flour are anticipated.

Effects of Diffused Light Materials on Marketable Yield and Quality of Sunlight Dried Red Pepper (Capsicum annuum L.) in Plastic Film House (비닐하우스 이용 태양초 생산시 산광 재료가 상품 수량과 품질에 미치는 영향)

  • This study was carried out to investigate the effects of diffused light materials on marketable yield and quality of sunlight dried red pepper in plastic film house. The after ripening methods were composed of 3 treatments; using electric bulk dryer (Bulk), sealing house (House), and PE sealing. The diffused light materials were control, tent, shading 35% (Shading net), white polypropylene (PP (white)), and black polypropylene (PP (Black)). The marketable yield was high in order of Bulk as 300 g, House as 275 g, and PE sealing as 112 g. The redness of PE sealing was the highest as 17.85 and that of Bulk was the lowest as 10.65. There was significant difference in redness among the treatments. The moisture content of red pepper was the most rapidly reduced in control, and was the most slowly reduced in Shading net treatment. The marketable yield index was the higher in PP (white) as 114% than control. The redness had a significant difference in PP (Black) and tent compared to the other treatments. The capsaicin content showed the highest as $160mg{\cdot}100g^{-1}$ in PP (white) treatment. Conclusively, the most effective method for sunlight drying red pepper was House with PP (White) treatment. It delayed drying for 2 days but increased marketable yield at 114% than control when sunlight dried red pepper in plastic house. Our results also provided an optimized method for improvement of drying red pepper with sunlight, and will be useful for further drying red pepper research.

Evaluations on Deodorization Effect and Anti-oral Microbial Activity of Essential Oil from Pinus koraiensis (잣나무 정유의 소취효과 및 구강균에 대한 항균활성 평가)

  • Essential oils of various plants have been known for potential biological effects such as antibacterial, antifungal, spasmolytic, antiplasmodial activities and insect-repellent property. Recently, the essential oils have attracted considerable interest in oral disease therapy. This essential oil has been known as being effective on easing sick house syndrome, giving forest aroma therapy effect and acting as repellent against pest. The essential oil of Pinus koraiensi, a native plant from Hongcheon-gun, Gangwon-do, was obtained by hydrodistillation. In light of its medicinal importance, in this study its composition, antibacterial activity and the reducing effect of offensive odor have been analyzed. The composition of essential oil was determined by GC and GC-MS. We have identified 14 compounds, of which 1R-${\alpha}$-pinene (19.38 %), 3-carene (10.21 %), camphene (9.82 %), limonene (9.00 %), bicyclo[2,2,1] heptan-2-ol (8.76 %) and ${\beta}$-phellandrene (7.98 %) were the main components. Essential oils from P. koraiensis, Chamaecyparis obtusa, Abies holophylla and Pinus densiflora were compared in terms of alleviating effect of malodors caused from formaldehyde, ammonia, trimethylamine and methylmercaptan. P. koraiensis essential oil was found to decrease the amounts of ammonia and trimethylamine by 75.17 % and 77.36 %, respectively. Antibacterial activity against Streptococcus mutans and Streptococcus sobrinus, which were known as oral cavity inducer, was investigated using the paper disc agar diffusion method. The inhibition zone was observed against S. mutans (5.97 mm) and S. sobrinus (1.40 mm), respectively. P. koraiensis essential oil shown effective deodorization and inhibitory activity against oral cavity in this study might be potential material in oral sanitary industry.

Physiological and Proteome Responses of Korean F1 maize (Zea mays L.) Hybrids to Water-deficit Stress during Tassel Initiation (옥수수 영양생장기 한발 스트레스에 의한 광합성의 생리적 반응 및 프로테옴 변화 분석)

  • Severe droughts in spring have occurred frequently in Korea in recent years, exerting a critical impact on corn yield. Therefore, it is necessary to find physiological and/or molecular indicators of the response to drought stress in maize plants. In this study, we investigated the effects of water-deficit stress on two Korean elite F1 maize hybrids, Ilmichal and Gwangpyeongok, by withholding water for 10 days at tassel initiation. The water deficit drastically reduced the relative leaf water content, leaf number, leaf area, and stem length, leading to dry matter reduction. Moreover, it reduced the SPAD values and stomatal conductance of leaves in drought-stressed plants of both hybrids. Importantly, the number of leaves and SPAD value were non-destructive and easy to investigate in response to water-deficit stress, suggesting that they may be useful indicators for screening drought-tolerant genetic resources. We detected more than 100 spots that were differentially accumulated under drought stress. Of these spots, a total of 21 protein spots (≥1.5-fold) from drought-exposed maize leaves were successfully analyzed by MALDI-TOF-TOF mass spectrometry. Functional annotation using Gene Ontology analysis revealed that most of the identified proteins were involved in carbohydrate metabolism, stress response fatty acid catabolism, photosynthesis, energy metabolism, and transport. The protein expression levels were increased in both Ilmichal and Gwangpyeongok, except for triosephosphate isomerase, fructose-bisphosphate aldolase, and an uncharacterized protein. The lactoylglutathione lyase delta (3,5)-delta (2,4)-dienoyl-CoA isomerase was overexpressed in Gwangpyeongok only. The results obtained from this study suggest that the drought-specific genes may be useful as molecular markers for screening drought-tolerant maize genotypes.

Effect of Silicate Mineral Filtered Water and Silicate Mineral Additive on Growth Performance and Pork Quality (규산염 광물질로 정수된 급이수 및 사료내 규산엽광물질 첨가제의 급여가 돼지의 성장능력 및 돈육의 품질에 미치는 영향)

  • This experiment was conducted to investigate the effect of filtered water with silicate minerals on growth performance and pork quality. A total of 64 pigs were allotted at 37.95 kg body weight to 4 treatments in a randomized complete block(RCB) design. Each treatment had 4 replicates and treatments were I) Con(basaI diet). 2) Si-I(consumed silicate mineral filtered water and silicate mineral additive during 4 weeks before market weight), 3) Si-Il( consumed silicate mineral filtered water and silicate mineral additive during 8 weeks before market weight) and 4) Si-I1I(consumed silicate mineral filtered water and silicate mineral additive during 12 weeks before market weight). Silicate complex was added at 0.8% to basal diet. All pigs were allowed to feed and water ad libitum for 12 weeks. During last 4 weeks, average daily gain(ADG) in Si-Il and Si-III group was higher than that in Si-I group(P < 0.05). However overall experimental period, there were no significant differences in growth performance among all treatments. Acceptability of cooked pork at 7th day after slaughter in Si-lII group was higher than that in Con group(P < 0.05). The value of pH of fresh pork at 6 hours after slaughter was lower in Si-I1I group than that in Con group(P < 0.05). TBA values of fresh pork at 14th day after slaughter were lower in Si-II and Si-III groups than Con group(P < 0.05). These results demonstrated that pork quality could be improved when pigs consumed both silicate mineral and silicate mineral filtered water. However, growth performance was not improved by the consumption of silicate mineral filtered water and silicate mineral.
