Effect of Addition of Mugwort Powder and Carcass Grade on the Storage Stability of Pork Ham (쑥 분말 첨가와 원료육 등급이 돼지고기 햄의 저장성에 미치는 영향)

  • This study was carried out to investigate the effect of addition mugwort podwer and carcass grade on the shelf life of pork ham. Pork ham was prepared by four type such as grade B pork ham ( $B_{o}$ ), grade B pork ham containing mugwort powder ( $B_{+}$), grade E pork ham ( $E_{o}$ ) and grade E pork ham containing mugwort powder ( $E_{+}$). The surface color, pH, residual nitrite, VBN (volatile basic nitrogen), TBARS (2-thiobarbituric acid reactive substances) and total bacterial counts of the samples were determined during storage for 8 weeks at 4$^{\circ}C$. The $L^{*}$ value of $B_{o}$ and $B_{+}$ ham showed higher at the latter period of 8 weeks, that of $E_{o}$ ham was the highest on at the storage of 2nd week and that of $E_{+}$ ham was not different during 8 weeks storage. The $L^{*}$ value of B grade ham was higher than that of E grade ham and the $a^{*}$ value of E grade ham was higher than that of B grade ham. The pH of all ham decreased during storage, but increased from 8 weeks. The residual nitrite of all ham highly decreased until storage for 2 weeks, the addition of mugwort powder was affected in the reduction of residual nitrite of pork ham. The VBN contents were 6.90∼7.90 mg% in the early period of storage, was 14.07∼14.83 mg% on the storage of 8th week. The TBARS of pork ham were increased gradually during storage and pork ham containing mugwort powder showed lower value than pork ham non added mugwort powder during 4th and 6th weeks storage. The total bacterial counts of pork ham were increased gradually during storage and the addition of mugwort powder was not effective.ive.ctive.ive.

Evaluation of Efficacy and Development of Predictive Reduction Models for Escherichia coli and Staphylococcus aureus on Food Contact Surfaces as a Function of Concentration and Contact Time of Chlorine Dioxide (대장균과 황색포도상구균에 대한 이산화염소의 살균소독력 평가 및 살균예측모델 개발)

  • There has been increasing concern regarding misuse of disinfectants and sanitizers such as ethanol, sodium hypochlorite, and hydrogen peroxide for food contact surfaces in the food industry. Examining the efficacy of the concentration of currently used disinfectants and sanitizers is urgently required in the Korean society. This study aimed to develop predictive reduction models for Escherichia coli and Staphylococcus aureus in suspension, as a function of $ClO_2$ (chlorine dioxide) and contact time using response surface methodology. E. coli ATCC 10536 and S. aureus ATCC 6538 (initial inoculum, 8-9 log CFU/mL) in tryptic soy broth were treated with different concentrations of $ClO_2$ (5, 20, and 35 ppm) for different contact times (1, 3, and 5 min) following a central composite design. The polynomial reduction models for $ClO_2$ on E. coli and S. aureus were developed under the clean condition. E. coli reduction by 35 ppm $ClO_2$ for 1, 3, and 5 min was 2.49, 2.70, and 3.65 log CFU/mL, respectively. Also, S. aureus reduction by 35 ppm $ClO_2$ for 1, 3, and 5 min was 4.59, 5.25, and 5.81 log CFU/mL, respectively. The predictive response polynomial models developed were $R=0.43231-0.056492^*X_1-0.097771^*X_2+9.24167E-003^*X_1^*X_2+3.06333E-003^*X_1{^2}$ ($R^2=0.98$) on E. coli and $R=1.10542-0.20896^*X_1-0.046062^*X_2+8.30000E-003^*X_1^*X_2+8.73300E-003^*X_1{^2}$ ($R^2=0.99$) on S. aureus, where R was the bacterial reduction (log CFU/mL), $X_1$ was the concentration and $X_2$ was the contact time. Our predictive reduction models should be validated in developing the optimal concentration and contact time of $ClO_2$ for inhibiting E. coli and S. aureus on food contact surfaces.

  • Dans cet article, nous discutons de certains $probl{\grave{e}}mes$ syntaxiques en ayant recours $\grave{a}$ la $th{\acute{e}}orie$ linguistique de Milner. Nous remettons en question $l'ind{\acute{e}}pendance$ et $l'identit{\acute{e}}$ de la structure syntaxique, la relation entre le plan syntaxique et le plan lexical, le $caract{\grave{e}}re$ de la $g{\acute{e}}om{\acute{e}}trie$ de la syntaxe, etc.. La discussion est non seulement linguistique mais aussi interdisciplinaire et ${\acute{e}}pist{\acute{e}}mologique$, dans la mesure $o{\grave{u}}$ nous examinons la nature de $l'entit{\acute{e}}$ syntaxique et la $m{\acute{e}}thode$ "scientifique" de la syntaxe qui donne $acc{\grave{e}}s$ $\grave{a}$ $l'entit{\acute{e}}$ syntaxique. Selon Milner, il faut distinguer la place du terme lexical avec la position syntaxique qui est $l'entit{\acute{e}}$ syntaxique. La $premi{\grave{e}}re$ n'est pas syntaxique $\grave{a}$ strictement parler, mais elle, observable contrairement $\grave{a}$ la seconde, sert $\grave{a}$ conjecturer la dimension syntaxique, $c'est-\grave{a}-dire$ le $syst{\grave{e}}me$ positionnel. Le dispositif $th{\acute{e}}orique$ dans la $th{\acute{e}}orie$ linguistique de Milner n'est rien d'autre que l'ensemble des propositions qui permet, en absence d'observatoire, de conjecturer le $syst{\grave{e}}me$ positionnel sur la base du $syst{\grave{e}}me$ des places. Dire $l'ind{\acute{e}}pendance$ de la structure syntaxique revient $\grave{a}$ dire qu'il y a une coupure entre le $syst{\grave{e}}me$ positionnel et le $syst{\grave{e}}me$ des places. Autrement dit, sans cette coupure, on ne peut parler de $l'ind{\acute{e}}pendance$ de la structure syntaxique. Ainsi $distingu{\acute{e}}s$, les deux $syst{\grave{e}}mes$ en cause se mettent en relation soit naturels soit non naturels ou par distorsion $d'apr{\grave{e}}s$ Milner. La relation naturelle est une relation lexico-syntaxique $n{\acute{e}}e$ au moment $o{\grave{u}}$ un terme lexical occupe une position syntaxique dont la $cat{\acute{e}}gorie$ est identique $\grave{a}$ celle de son occupant. A la $diff{\acute{e}}rence$ de cette relation d'occupation naturelle $suppos{\acute{e}}e$ chez Milner comme une tendance du langage naturel, la relation d'occupation non naturelle est "paradoxale" dans le sens $o{\grave{u}}$ elle est produite dans la rencontre plus ou moins "anomale" entre l'occupant lexical et $l'occup{\acute{e}}$ syntaxique. Le $degr{\acute{e}}$ de l'anomalie qu'une langue autorise peut ${\hat{e}}tre$ $mesur{\acute{e}}$ empiriquement et doit ${\hat{e}}tre$ $vari{\acute{e}}$ en fonction de la langue $concern{\acute{e}}e$. Le $caract{\grave{e}re$ $g{\acute{e}}om{\acute{e}}trique$ de la syntaxe $am{\grave{e}}ne$ ${\grave{a}}$ remettre en cause, entre autres, $l'empiricit{\acute{e}}$ et la $mat{\acute{e}}rialit{\acute{e}}$ de la $g{\acute{e}}om{\acute{e}}trie$ syntaxique. En ce qui concerne ces sujets, nos $th{\grave{e}}ses$ sont les suivantes : la nature de la $g{\acute{e}}om{\acute{e}}trie$ syntaxique n'est pas a priori mais empirique ; la $g{\acute{e}}om{\acute{e}}trie$ de la syntaxe peut et doit ${\hat{e}}tre$ construite $\grave{a}$ l'aide de la logique "empirique".

  • This study was designed to carry out an observation on the growth inhibitory effect of fermented milk by the the lactic acid bacteria such as Lactobacillus bulgaricus, L. acidophilus and L. cormatus against pathogenic Escherichia coli O157:H7 were studied in vitro. The results of this study were as follows : The BL broth culture of L. bulgaricus, L. acidophilus and L. cormatus gave a similar extent of growth inhibitory effects against the pathogenic E. coli O157:H7 were after incubation time within 18 hours. The inhibitory effects of the fermented milk were observed on the survival time of pathogenic E. coli O167:H7 in the various fermented milk at 37${\circ}$C shaking water bath (70 rpm) were after incubation time between 140 and 200 minutes. These results indicated that major portion of growth inhibitory effects of fermented milk with various lactic acid bacteria against pathogenic E. coli O157:H7 was possible due to the acid, and minor portion to the other antibacterial substances.

  • Dans l'histoire du $th{\acute{e}}{\hat{a}}tre$ $cor{\acute{e}}en$, la position de Chae yoon-il est $tr{\grave{e}}s$ $particuli{\grave{e}}re$. Il a $consacr{\acute{e}}$, dans ses $carri{\grave{e}}res$ de la mise en $sc{\grave{e}}ne$, toute son ${\acute{e}}nergie$ au $th{\acute{e}}{\hat{a}}tre$ sans jamais $fl{\acute{e}}chir$ contre le pouvoir dictatorial. Un critique a dit que son $th{\acute{e}}{\hat{a}}tre$ est semblable au $th{\acute{e}}{\hat{a}}tre$ de la $cruaut{\acute{e}}$. Pourtant, dans la mesure $o{\grave{u}}$ il respecte le texte dramatique, et que son $th{\acute{e}}{\hat{a}}tre$ a des tendances de la politique et qu'il oriente l'engagement du spectateur, il est certain que son $th{\acute{e}}{\hat{a}}tre$ est loin du $th{\acute{e}}{\hat{a}}tre$ de la $cruaut{\acute{e}}$. Ses $proc{\acute{e}}d{\acute{e}}s$ de la mise en $sc{\grave{e}}ne$ sont $tr{\grave{e}}s$ divers et il n'y a pas de $coh{\acute{e}}rences$ au niveau des styles dramatiques. $Malgr{\acute{e}}$ cela, nous pouvons trouver son $originalit{\acute{e}}$ de la mise en $sc{\grave{e}}ne$ dans la rencontre avec Lee hyun-wha. Le metteur en $sc{\grave{e}}ne$ ${\acute{e}}tablit$ son $esth{\acute{e}}tique$ $th{\acute{e}}{\hat{a}}trale$ en montant sur $sc{\grave{e}}ne$ de cinq $pi{\grave{e}}ces$ de Lee hyun-wha. Alors, en effet qu'est-ce que $l^{\prime}esth{\acute{e}}tique$ de la mise en $sc{\grave{e}}ne$ de Chae yoon-il produite par les ${\oe}uvres$ $th{\acute{e}}{\hat{a}}trales$ de Lee hyun-wha? Dans les $pi{\grave{e}}ces$ de Lee hyun-wha, il y a beaucoup de codes symboliques de la violence sexuelle comme le sadisme et le masochisme. L'implusion sexuelle $cach{\acute{e}}e$ dans le subconscient des personnages s'entrecroise avec le $m{\acute{e}}canisme$ du pouvoir politique. Alors, les abus sexuels et les mauvais traitements sur le corps deviennent une sorte de torture. L'expression cruelle des langages $sc{\acute{e}}niques$ n'est autre que la $r{\acute{e}}volte$ contre la $r{\acute{e}}alit{\acute{e}}$ actuelle de la politique. Son $th{\acute{e}}{\hat{a}}tre$ de torture est donc une sorte de $m{\acute{e}}canisme$ de la catharsis pour dissiper le cauchemar et l'inconscient noir. La fantasie sexuelle construite par le monde inconscient de l'auteur dramatique $s^{\prime}{\acute{e}}panouit$ dans le $th{\acute{e}}{\hat{a}}tre$ de Chae yoon-il qui $r{\hat{e}}ve$ toujours l'esprit de la $libert{\acute{e}}$. Une des convictions dramatiques du metteur en $sc{\grave{e}}ne$, c'est que le $th{\acute{e}}{\hat{a}}tre$ tout d'abord doit ${\hat{e}}tre$ choquant. Il dit : "l'art doit ${\hat{e}}tre$ ${\grave{a}}$ la fois ${\acute{e}}mouvant$ et bouleversant. Cependant, dans la mesure $o{\grave{u}}$ le film ou la $t{\acute{e}}l{\acute{e}}vivion$ fait aujourd'hui une vive impression aux spectateurs, la part $donn{\acute{e}}e$ au $th{\acute{e}}{\hat{a}}tre$ est le choc." Pour donner le choc aux spectateurs, le style de la torture est $tr{\grave{e}}s$ utile. $L^{\prime}esth{\acute{e}}tique$ $th{\acute{e}}{\hat{a}}tral$ du metteur en $sc{\grave{e}}ne$ respecte essentiellement l'intention de l'auteur. $N{\acute{e}}anmois$, le respect sur l'original ne se $d{\acute{e}}range$ pas $l^{\prime}interpr{\acute{e}}tation$ de son propre $id{\acute{e}}e$. Dans l'insistance de la torture, l'analyse rituelle sous la base du choc, il projecte le symbole $arch{\acute{e}}typal$ sur $sc{\grave{e}}ne$. Bien $s{\hat{u}}r$, il renforce le $caract{\grave{e}}re$ de la politique dans le $th{\acute{e}}{\hat{a}}tre$ de torture pour inviter des spectateurs de l'engagement. D'ailleurs, il y a l'aspect d'absurde dans le $th{\acute{e}}{\hat{a}}tre$ de torture qui insiste des violences ${\grave{a}}$ travers les langages $sc{\acute{e}}niques$ comme le $m{\acute{e}}tal$ froid, parce que le metteur en $sc{\grave{e}}ne$ $consid{\grave{e}}re$ que $l^{\prime}{\hat{e}}tre$ humain vit dans l'absurde.

The Characteristics of Oxidation and Adsorption Processes for 2-Methylisoborneol(2-MIB) Removing (2-Methylisoborneol(2-MIB)제거를 위한 산화 및 흡착공정의 특성)

  • One of the Musty and earthy smell compounds in raw water is generally attributed to 2-methylisoborneol (2-MIB). It is well known that activated carbon and oxidants such as $O_3$, Cl $O_2$, are effective ways to control 2-MIB. In isotherm equilibrium experiments, 2-MIB in distilled water was much more adsorbed to the activated carbon(A/C) than raw water containing dissolved organic carbon (DOC). The Freundlich constants(k) of distilled water and raw water were 3.36 and 0.049, and 1/n values were 0.80 and 0.42, respectively. The 2-MIB residual rate were Y = $e^{-0}$.55x/~ $e^{-0}$.54x/ with Ozone( $O_3$) dose by 5 minutes contact time at the 241 and 353 ng/L initial concentrations. The 2-MIB residual rate were Y = $e^{-0}$.32x/~ $e^{-0}$.35x/ with Chlorine dioxide(Cl $O_2$) dose by 15 minutes contact time at the 89 and 249 ng/L initial concentrations. 2-MIB was decreased from 1911 ng/L to 569ng/L by post-ozonation(70%removal efficiency) and removal efficiencies of 2-MIB by the following 4 kinds Granular Activated Carbon(GAC) process such as coal base, coconut base, wood base and zeolite+carbon base were 95.8, 89.5, 88.4, and 93.7% respectively.ely.

The identification of /I/ in Spanish and French

  • This presentation explores on the perceptual characteristics of the lateral sound /l/ in CV syllables. At initial position we found that /l/ has well marked formant transitions. Then several questions arise: 1) are these formant structures dependent on the following vowel\ulcorner. 2) Are the formant transitions giving an additional cue for the identification\ulcorner Considering that the French vocalic system presents a greater variety of vowels than Spanish, several experiments were designed to verify to what extent a more extensive range of vocalic timbres contribute to the perception of /l/. Natural emissions of /l/ produced in Argentine Spanish and Canadian French CV syllables were recorded, where V was successively /i, e, a, o, u/ for Spanish and /i, e, $\varepsilon$, a, $\alpha$, o, u, y, \phi$/ for French. For each item, the segment C was maintained and V was replaced by cutting & splicing by each of the remaining vowels without transitions. Results of the identification tests for Spanish show that natural /l/ segments with low Fl and high formants F3, F4 can be clearly identified in the /i, e, u/ vowel contexts without transitions. For French subjects the combination of /l/ with a vowel without transitions reflected correct identifications for its own original vowel context in /e, $\varepsilon$, y, $\phi$/. For both languages, in all these combinations, F1 values remained rather steady along the syllable. In the case of /o, u/ very likely the F2 difference lead to a variety of perceptions of the original /l/. For example in Ilul, French subjects reported some identifications of /l/ as a vowel, mainly /y/. Our observations reinforce the importance of F1 as a relevant cue for /l/, and the incidence of the relative distance between formants frequencies of both components.

  • The relationship between weight reduction and rehydration of dehydrofrozen potato was determined. At initial stage of dehydration sliced potato lost moisture rapidly. After drying for 2 hours weight reduction of sliced potato was 56% for Superior var., and 55% for Irish Cobbler. The empirical drying equations were obtained as follows: ${\frac{M-M_e}{M_o-M_e}}={\exp}(-0.4487\;{\theta}^{1.2328})$ and ${\frac{M-M_e}{M_o-M_e}}={\exp}\;(-0.4951\;{\theta}^{1.1949})$ for Irish Cobbler and Superior, respectively, where $M_o$, $M_e$, and M are dry base moisture content(%) of initial, equilibrium and at time ${\theta}$ in hour, respectively. With the decrease of weight above 50%, the rehydration rate decreased sharply and the color index L value also decreased while a and b increased. Lightness of dehydrofrozen potato decreased slightly and rehydration rate remained constant during storage at $-18^{\circ}C$. The sulfite treatment led to increase of L value and decrease of a and b values.

  • 고상반응법으로 이론 밀도의 약 92%의 소결 밀도를 갖는 입방정계의 새로운 이온전도체 L $a_{2-x}$S $r_{x}$M $o_{2-y}$C $r_{y}$ $O_{9-{\delta}}$(x=0, 0.05, y=0, 0.1)를 제조하였다. 교류 복소임피던스는 3$50^{\circ}C$~90$0^{\circ}C$의 온도범위에서 공기중에서 측정하여, EQUIVCRT 모델링 소프트웨어로 해석하였다. 상 전이온도인 58$0^{\circ}C$ 전.후로 임피던스 스펙트럼에 큰 차이가 있었으며, 전기전도도는 L $a_2$M $o_2$ $O_{9}$ 시편의 경우 7$50^{\circ}C$에서 3$\times$$10^{-2}$ S$cm^{-1}$ /로 우수하였으며, 활성화 에너지는 고온 상 영역에서는 0.89 eV, 저온 상 영역에서는 1.12 eV이었다. 순수한 L $a_2$M $o_2$ $O_{9}$과 비교하여 Cr 치환효과는 크지 않았으나, Sr 치환 시에는 상 전이온도의 감소와 전기전도도의 증가 현상을 보였으며, 전이온도 부근에서의 전기전도도 변화 폭은 작았다.다.

Le bilan synthetique de la typagraphie careenne pendant la dynastie de Chason (조선조 활자주조 및 문헌간행의 종합적 평가)

  • On admet Jusqu'ici que le XVe siecle est une $\acute{e}poque$ phare de l'histoire de l'imprimerie avec l'apparition de la typographie en Orient et en Occident, $c'est-\acute{a}-dire$ en $Cor\acute{e}e$ sur le Rhim. Cependant, $l'\acute{e}poque$ de l'invention typographique en $Cor\acute{e}e$ doit $\hat{e}tre$ $devanc\acute{e}e$ encore d'un ou deux siecle. Outre cette question, il est $\acute{a}$ noter ici que les caracteres mobiles $m\acute{e}talliques$ Kyemi, fondus en 1403, ont $jou\acute{e}$ un $r\hat{o}le$ $tr\acute{e}s$ important dans l'histoire de la typographie mondiale et que les $caract\acute{e}res$ kabin qui leur $succ\acute{e}derent$ en 1434 menerent la typographie $cor\acute{e}enne$ a son $apog\acute{e}e$. Or, les recherches $cor\acute{e}ennes$ se satifait de la primaute de l'invention en Coree des caracteres mobiles metalliques, mais n'adoptent pas une attitude suffisament critique. Aussi, l'auteur a-toil voulu s'interroger sur la veritable valeur de la typographie de la dynastie de Choson tant au point de vue de l'histoire de l'imprimerie mondiale. En premier lieu, on etudie, comme une chronique, les caracteres mobiles metalliques importants tout au long de la dynastie de Choson sans donner une interpretation nouvelle. C'est dans deux derniers, qu'on essaie de developper ses idees sur la typographie en Coree notamment la question technologique qui devrait etre le fond des recherches. Aussi, on y etudie, la technique de la typographie ancienne en Coree interpretee selon une methode scientifique et moderne et, enfin, le bilan synthetique en cherchant les raisons qui freinerent son developpement en Coree malgre la performance de ses debuts. A l'issue de ces recherches, on ne peut s'empecher d'eprouver une certaine insatisfaction a cause de l'ambiguite des explications que l'on trouve dans des documents fondamentaux. Avec ce difficulte on a voulu, au moins, exposer des points discutatables qui devraient etre les recherches a futur.
