재배 시 brushing 처리에 따른 어린잎 채소 다채의 생육과 수확 후 선도 차이 (Growth and Postharvest Freshness of $Tah$ $Tasai$ Chinese Cabbage ($Brassica$ $campestris$ var. $narinosa$) Baby Leaf Vegetable as Affected by Brushing Treatment during Cultivation)

  • 새싹이나 어린잎과 같이 싹을 길러 이용할 수 있는 채소에 대한 관심이 커지고 있으나, 조직이 연해 수확 후 급격히 품질이 저하되어, 품질을 유지할 수 있도록 수확 전 재배에서부터 개선방법을 강구하고자 하였다. 본 실험에서는 다채의 어린잎 채소를 재배 중에 brushing처리를 주어 생육 및 재배 후 포장하여, 중량감소, 선도와 SPAD 등의 수확 전 요인에 따른 수확 후 변화 요인을 조사하였다. 수확 시 다채의 생육은 무처리구에 비해 물리적 brushing처리구에서 초장이나 생체중은 적었으나, 조직이 치밀한 것으로 나타났다. 재배 중 brushing처리한 어린 다채 잎은 저장 중 생체중량 변화, $O_2$ 소모나 $CO_2$ 축적 정도, 색차 변화가 적은 경향을 보였다. 그러나 SPAD값이나 선도에서는 처리간의 큰 차이를 보이지 않았다. 어린 다채 잎은 재배 중 물리적 brushing처리로 식물 조직이 치밀해지고, 생육은 적어졌으나, 포장 후 저장 특성은 다소 차이가 있었으나, 선도에는 큰 차이를 보이지 않은 것으로 나타났다. 어린잎 채소 다채는 재배 중 brushing처리에 의한 물리적 처리가 수확 후 미치는 영향이 크지 않아, 다른 방법으로 품질을 개선할 수 있는 연구가 필요할 것으로 생각된다.

폐오일을 이용한 아마이드계 아스팔트 박리방지제의 합성 및 특성 분석 (The Synthesis and characterization of of asphalt anti-stripping agents, amides synthesized from waste oils)

  • 폐지방산과 ethylenediamine 또는 N,N'-bis (2-hydroxyethyl)ethylenediamine으로부터 아스팔트 박리방지제를 합성하였다. FT-IR과 NMR을 이용하여 분석한 결과 아마이드결합의 생성 및 박리방지제의 합성이 성공적으로 수행되었음이 확인하였다. 합성된 여러 종류의 박리방지제의 접착특성은 접촉각과 BBS 시험을 통해 비교하였다. 접촉각 측정으로부터 에틸렌다이아민과 동물유지로부터 제조된 시료가 가장 소수성이 컸으며, BBS 시험으로부터 수분저항성도 94%로 가장 우수한 것으로 나타났다. 그러나 에틸렌다이아민과 폐식용유의 반응생성물이 수분처리 전과 후의 절대적인 접착력은 각각 약 3610 및 3227 kPa로 가장 우수하였다. 전반적으로 접착력은 ED의 반응생성물이 HEED의 반응생성물보다 우수하였으며, 폐식용유나 동물유지의 반응생성물들이 순수한 콩기름의 반응생성물들보다 우수하였다.

HVP를 이용한 Maillard 반응에 의한 Meatlike Flavor의 생성 (Formation of Meatlike Flavors by Maillard Reaction Using Hydrolyzed Vegetable Protein (HVP))

  • HVP를 기본 원료로 하여 몇몇 반응 전구물질을 첨가하여 여러 가지 반응 조건에 따라 meatlike flavor를 제조하였다. pH와 온도는 반응액의 갈변화도에 큰 영향을 미쳐, pH와 온도가 높을수륵 갈변화 속도는 빨라졌다. 반응액에 잔존하는 환원당과 유리 아미노산은 반응 1시간까지 급격히 감소하였으나 반응 온도의 영향은 거의 받지 않았다. 각 아미노산의 경우, glutamic acid와cysteine은 반응 시간이 경과함에 따라 감소하나, glycine과 methionine은 거의 변화가 없었다. Maillard 반응을 통해 생성되는 meatlike flavor외 향기 성분은 49종이 통정되었으며, 이중에 3-methyl butanal, 2-methyl tetrahydrothiophen-3-one, 3,4-d imethyl thiophene, 2,4-dimethyl thiagole 둥의 잘 알려진 natural meat flavor 성분들도 포함되어 있었다. $120^{\circ}C$에서 제조된 반응액을 관능 평가한 결과, 반응 1시간대의 반웅액이 5% 유의수준에서 구수한 맛이 가장 강하였고, 이미가 가장 적었다. 이상의 결과에서, 본 반응 system에서는 반웅 1 시간내에 대부분의 Maillard 초기 반응이 일어나고, 그이후, 반응이 진행될수록 구수한 맛을 내는 성분은 줄어들고, 이미를 나타내는 성분이 증가한다고 추정되었다.

다양한 채소 추출물의 농업해충 및 저장물해충에 대한 살충활성 (Insecticidal Activities of Various Vegetable Extracts against Five Agricultural Insect Pests and Four Stored-Product Insect Pests)

  • 46종 채소류의 에탄을 추출물을 대상으로 5종의 주요 농업해충 및 4종의 저장물 해충에 대한 살충효과를 조사한 효과는 채소류의 종류 및 해충의 종류에 따라 커다란 차이를 보였다. 5종의 농업해충에 대한 살충효과는 5,000 ppm의 농도로 처리할 때 연근 및 파래는 복숭아혹진딧물, 옥수수 및 옥수수 잎은 벼멸구, 수박씨 및 파래는 배추좀나방, 연근, 옥수수 및 옥수수 잎은 담배거세미나방, 수박씨, 당근, 해바라기 잎과 꽃, 상추 및 생강은 점박이응애에 대하여 80% 이상치 살충효과를 나타냈다. 2,500 ppm의 농도로 처리할 때는 연근 및 파래는 복숭아혹진딧물, 옥수수는 벼멸구, 수박씨 및 파래는 배추좀나방, 연근 및 옥수수는 담배거세미나방, 수박씨, 해바라기 꽃 및 상추는 점박이응애에 대하여 80% 이상의 살충효과를 나타냈다. 4종의 저장물해충에 대한 살충효과는 50 ppm의 농도로 처리할 때 수박씨 및 호박씨는 쌀바구미, 수박씨, 해바라기씨 및 생강은 화랑곡나방에 대하여 80% 이상의 살충효과를 나타냈다. 팥바구미와 궐련벌레에 대하여는 사용된 채소류의 추출물이 활성을 나타내지 않았다. 이상의 결과로부터 복숭아혹진딧물, 벼멸구, 배추좀나방, 담배거세미나방 및 점박이응애에 높은 방제효과를 보인 상기 채소류 추출물들은 공업해충 방제제로서 사용 가능성이 예상되었으며, 또한 쌀바구미와 화랑곡나방에 강한 살충효과를 보인 추출물은 저장물해풍방제에 이용할 수 있을 것으로 기대되었다.

Effects of Partial Substitution of Lean Meat with Pork Backfat or Canola Oil on Sensory Properties of Korean Traditional Meat Patties (Tteokgalbi)

  • Korean traditional meat patties (Tteokgalbi) were prepared by replacing part of the lean meat content with either pork backfat or canola oil and the effect of substitution on sensory quality of the meat patties was investigated. Compared to the control patties, pork-loin Tteokgalbi with 10% pork backfat or 10% canola oil had significantly higher overall acceptability and higher perceived intensity of meat flavor, sweetness, umami, and oiliness. The pork-loin patties containing 10% fat also had lower perceived firmness, toughness, and chalkiness of than the control Tteokgalbi. The chicken breast Tteokgalbi with 10% canola oil had the lowest perceived firmness and chalkiness (control > pork backfat > canola oil). No significant difference was noted in the overall acceptability of chicken breast patties with 10% pork backfat and those with 10% canola oil. These results indicate that substituting 10% of lean meat of Tteokgalbi with fat improved the sensory acceptability of the product for Korean customers regardless of the lean meat and/or fat source used in the patties. Lean meat patties formulated with a limited amount of vegetable oil such as canola oil can be a healthy option for Korean consumers by providing desirable fatty acid profiles without sacrificing sensory quality of the product.

Asymmetric Reduction of 3-Ketoproline Ethyl Ester by Modified Borohydrides and Various Vegetables

  • Reduction of (${\pm}$)-3-ketoproline ethyl ester (1) by $NaBH_4$ in the presence of $CaCl_2$ and $MgCl_2$ as the chelating agents gave selective products cis-3(R/S)-alcohols, while reduction by $NaBH_4$ alone or chelated with $NiCl_2$ and $AlBr_3$ gave mixtures of cis- and trans-alcohols. The reduction of (${\pm}$)-1 by various vegetables however, gave exclusively the cis-alcohol as the major and trans-alcohol as the minor. On the contrary, reduction of (${\pm}$)-1 by carrot afforded a mixture of cis- and trans-alcohols, in which the trans-alcohol exists as the major product. In addition, we found that this biocatalyst selectively converted S-enantiomer of (${\pm}$)-1 to the cis-alcohol, and R-enantiomer to a mixture of cis- and trans-alcohols with cis-alcohol as the major product. This fact prompted us to use various fresh plant tissues for stereoselective reduction of diverse types of pyrrolidinones, as its stereoselectivity towards racemic mixtures is higher compared to that using chemical reducing agents.

배 골판지 포장상자의 진동특성 (Vibration Characteristics of Corrugated Fiberboard Boxes for Packages of Pears)

  • During handling unitized products, they are subjected to a variety of environmental hazards. Shock and vibration hazards are generally considered the most damaging of the environmental hazards on a product and it may encounter while passing through the distribution environment. A major cause of shock damage to products is drops during manual handling. The increasing use of unitization of pallets has been resulted in a reduction of the shock hazards. This has caused an increasing interest in research focused on vibration caused dam age. Damage to the product by the vibration most often occurs when a product or a product component has a natural frequency that falls within the range of the forcing frequencies of the particular mode of transportation being used. Transportation vibration is also a major cause of fruit and vegetable quality loss due to mechanical damage. This study was conducted to determine the vibration characteristics of the corrugated fiberboard bones for packages of pears, and to investigate the degree of vibration injury of the pears in the boxes during the simulated transportation environment. The vibration tests were performed on an electrohydraulic vibration exciter. The input acceleration to exciter was fixed at 0.25 G for a single container resonance test and 0.5 G for the vertical stacked container over the frequency range from 3 to 100 Hz. Function generator (HP-33120A) was connected by wire to the vibration exciter for controlling the input acceleration at a continuous logarithmic sweep rate of 1.0 octave per min. The peak frequency and acceleration on the single box test were 22.02 Hz, 1.5425 G respectively, and these values on the vertical stacked boxes were observed from the bottom box 19.02, 18.14, 16.62 and 15.40 Hz and 2.2987, 3.7654. 5.6087, and 7.9582 G, respectively. The pear in the bottom box had a slightly higher damage level than the fruit packed in the other stacked boxes. It is desirable that the package and transportation system has to be so designed that 15∼20 Hz frequency will not occur during the transportation environment.

  • Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.

Physicochemical qualities, antioxidant compounds, and activities of six mini paprika cultivars

  • Paprika is a popular vegetable with high visual appeal and desirable flavor, the health benefits of which are increasingly attracting interest. In this study, the physical qualities, antioxidant content, and activities of six mini paprika cultivars were investigated. Both the edible part (flesh) and the by-products were studied. The average total phenolics and total antioxidant activities were higher in the flesh than in the by-products. The total flavonoids of the flesh and the byproducts were 16.41 and 37.80 mg/100 g FW, respectively. "YW glory" and "Raon yellow" flesh had the highest (245.52 mg/100 g FW) and lowest (179.96 mg/100 g FW) total phenolics among the six cultivars, respectively. However, the "RD glory" cultivar showed the highest total phenolic content (232.70 mg/100 g FW) among the by-product samples. The total phenolics in the flesh and by-products were highly correlated to the ABTS radical scavenging activity, with R=0.961 and 0.984, respectively.

Immunomodulatory activity of Salicornia herbacea L. Components

  • Salicornia herbacea is an annual herb growing in salt marshes and on muddy seashores. Salicornia herbacea has been used as a fork medicine as well as a seasoned vegetable. In fork medicine, Salicornia herbacea has been used to treat a variety of diseases such as constipation, obesity, diabetes, asthma, arthritis and cancer. However, the biological mechanisms for these activities have not been characterized, nor the active components. The immunomodulatory activity of Salicornia herbacea components were studied in the present study. The components of Salicornia herbacea were prepared from the whole plant by passage through a fine screen, and then dialyzed against PBS overnight. Immunomodulatory activities of the Salicornia herbacea components were examined on a mouse macrophage cell line, RAW 264.7 cells. The Salicornia herbacea components were shown to stimulate cytokine production, nitric oxide release, and expression of surface molecules in a dose dependent manner. The Salicornia herbacea components also induced further differentiation of slightly adherent RAW 264.7 cell into strongly adherent macrophages. These results indicate that Salicornia herbacea contains immunomodulator(s) that induces activation of macrophages.
