주부(主婦)들의 한과류(韓菓類) 이용(利用)에 관한 실태조사(實態調査) (A Study on the Utilization of Korean Traditional Cookies by Housewives)

  • To investigate the utilization of Korean traditional cookies by housewives, a survey was conducted to 1,037 housewives residing in Seoul, from October 16 to 23, 1986. Results are summarized as follows; The frequency of intake of Korean traditional cookies was very low depending on the age and total income. Housewives didn't prepare Korean traditional cookies at home, but mainly purchased commercial products in the market. Older people preferred Korean traditional cookies than younger people. The Korean traditional cookies which preferred by the housewives were generally Yackwa, Sesame-Gangjung, Soybean-Gangjung, Sanja, Perilla-Yutgangjung, Maejagkwa, Seban-Gangjung, Soybean-Yutgangjung and Black sesame-Gangjung. Improvement of taste in Korean traditional cookies was desired by 44.7% out of respondents. Additionally the respondents agreed that quality of Korean traditional cookies which is on the market have superior quality than western cookies, that the price of Korean traditional cookies is expensive and that Korean traditional cookies have various and abundent kind. The respondents preferred bamboo basket packing as packing materials of Korean traditional cookies. The main reason why Korean traditional cookies isn't wide spread use is the mass production of Korean traditional cookies does not accomplished.

서울지역 주부들의 한과에 대한 인지도 조사 (A Survey on the Korea Traditional Cookies of Housewives in Seoul Area)

  • A self completed survey of 250 housewivies living in the Seoul. The aim of this study was to investigate the perceptions and preferences of 20's, 50s housewives to Korean traditional cookies. The result is as follows. As to the preference of Korean traditional cookies, 86.0% answered they liked it. The frequency rate or eating Korean traditional cookies showed that 2 times a year reached the highest 45.6%. They usually purchase Korean cookies on the market rather than making them by themselves. The study showed that 50s housewives preferred Korean cookies are yakwa(74.3%), maejackwa(35.7%) and kangjung(34.3%) otherwise 20s housewives preferred Korean traditional cookies are yakwa(79.4%), hanging(60.0%) and yeat gangiung(39.4%) This survey study may contribute to the improvement of Korean traditional cookies.

한과류의 이용실태 및 시판 한과류의 품질에 관한 연구 (A Study on the Utilization Status of Korean Traditional Cookies and the Evaluation of their Commercial Products' Quality)

  • The present survey was designed to find out the utilization status of korean traditional cookies and the evaluation degrees of their commercial products' quality subjects. The subjects were housewives randomly selected who lived in Seoul, Deajeon, Youngju city (Kyoung Buk Province area), and Sechon khun (Chung Nam province area). We performed this survey from November 16 to 28, 1987 by questionnaire method. The results obtained can be summarized as follows; 1) In the subjects' home, 25 kinds of Korean traditional cookies were used. All of them Youmilkwa and Kangjeong type were used more frequently than the other types and Jeonkwa, Dasik, and Suksilkwa were used scarcely. 2) Korean traditional cookies which were showed more than 20% of utilization ratio were follows; Yackwa (74.4%), Sanja (26.8%), Taraekwa (22.6%), Seban-kangjeong (21.7%). 3) On New Year's day, Korean traditional cookies were used more frequently than harvest festival day but their utilization ratio of western cookies was follows; New Year's day was 10%, and harvest festival day was 6.2%. 5) On ceremonial day, Youmilkwa and kangjeong type were used more frequently than jeonkwa, Dasik, and Suksilkwa type. 6) All of ceremonial days, korean traditional cookies were used most frequently on the 60th birth day and their utilization ratio was extremely low on the 100th day after birth, 1st birth day, and funeral day. 7) Generally western cookies were used more frequently than Korean traditional cookies on the birth day of children and adults. 8) Convinience (64.8%) was the most favored cause purchasing the commercial products but many subjects (37.0%) wanted to make the Korean traditional cookies at home. 9) All the quality properties of commercial products, taste, package, and storage property were favored but price and hygienic property were poorly evaluated by subjects. The evaluation about taste and package property of commercial products was affected by academic career (p<0.05), and shelf life was affected by age (P<0.01) significantly. And hygienic property was significantly affected by age and academic career respectively. (P<0.01).

한.일 전통과자의 인지도, 호감도 및 소비형태 (The Relationship of Consuming Patterns, Recognition and Preference on Korean and Japanese Traditional Cookies)

  • 본 연구의 목적은 한국전통과자인 한과의 소비촉진전략을 제시하고자 한국인과 일본인에게 한국의 전통과자와 일본의 화과자에 대한 인지도와 호감도를 소비 형태와 인구 통계적 특성에 따라 비교 검증하고자 하였다. 소비자설문조사는 한국전통과자 241부와 화과자 249부가 최종 분석 자료에 사용되었으며 자료 분석을 위해 SPSS 12.0을 사용하여 빈도, t-test, 일원배치분산분석, 회귀분석을 실시하였다. 그 결과 인지도와 호감도는 인구 통계적 특성과 소비 형태에 따라서 유의미한 차이가 있는 것으로 나타났다. 특히 인구 통계적 특성에서 한과는 나이와 교육수준, 화과자는 나이에 따라 인지도의 차이가 있는 것으로 나타났다. 회귀분석 결과 한과와 화과자의 인지도는 호감도에 영향을 미치는 것으로 나타났다.

  • The purpose of this study is to develope a HACCP model for Korean traditional cookies. Prerequisite program and HACCP plan were proposed and analyzed for Yugwa. After analysing hazards of raw material and manufacturing processes, CCP, CL and control methods were presented. Pathogenic microorganisms were detected at the Korean traditional cookies plant. It gave a clue that general sanitation control procedures should be implemented for safe traditional cookie products. Hazard analysis of raw materials and processing of Korean traditional cookies, determination of critical control points and critical limits at the plant lead to present a model of HACCP plan. Implementation of HACCP can be carried out using a HACCP model. Critical control point of Yugwa production were determined as frying process. Biological and chemical hazards were presented for CCP determination.

韓菓의 大量生産을 위한 연구 - 제조공정 및 기기설비류를 중심으로 - (A study on Mass Production of Korean Traditional Cookies - Manufacturing process and Machinery -)

  • The purpose of this study is to investigate the manufacturing process for mass production of korean traditional cookies to be supplied to consumers with cheap price. Selected items for mass production is Yoomilkwa such as Yackwa. Maejackwa which preferred by consumers, and Chasookwa which was presented at royal party in YiDynasity. Standard mixing ratio of food material, manufacturing process, and machinery needed in each manufacturing process were suggested by the items of korean traditional cookies. Manufactured goods which is produced in large quantities by machinery are Yackwa model I, II Maejackwa model I, II, III, and Chasookwa model I, II.

감과피 분말을 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies with Persimmon Peel Powder)

  • Traditionally, the persimmon Gojongsi (Diospyros kaki Thunb) is peeled to make dried persimmons and the skins are thrown away. In this study, the quality characteristics of cookies containing persimmon peel powder were tested for recycling of the persimmon peels. The amounts of persimmon peel powder added to the cookies were about 0, 5, 7, 9 and 11%. The densities of the cookies of the control group and the persimmon peel powder containing experimental group were 1.25 and 1.25~1.37 respectively. The pH was 6.02 for the control group and 5.95~6.01 for the experimental group. Significant differences in the moisture content were observed between groups at 3.34 and 2.16~3.31 for the control and experimental groups, respectively (p<0.05). The spreadabilities and loss rates of the cookies increased with increasing amounts of persimmon peel powder (p<0.05). In contrast, the loss rates and leavening rate of the cookies decreased significantly with decreasing amounts of persimmon peel powder (p<0.05). The lightness of the cookies showed significant decrease (p<0.05), while the redness and yellowness increased with increasing amounts of persimmon peel powder. The hardness (kg) of the control group was 0.847 while that of the experimental group was 0.904~1.110. In the QDA, the results of sensory characteristic analysis showed that the experimental group earned 11% higher scores for color, flavor, taste, and bitterness, 7% higher for appearance and 9% higher for after taste. The consumer acceptance test revealed the experimental group to have a 7% more positive evaluation for color, favor, taste and texture than the control group. On the grounds of the experiment above, the optimal mixture ratio from the sensory test was found to be 7% persimmon peel powder in the cookies.

한과에 대한 주부들의 이용실태 및 기호도 조사 -대구지역을 중심으로- (A Study on the Consumption Patterns and Preferences of Korean Cookies of Housewives in Daegu Province)

  • The purpose of this study is finding a solution to increase the consumption of Korean cookies by investigating and analyzing the actual consumption patterns, suggestions fur improvement and preferences for Korean cookies. The data fer this study was collected from 358 housewives living in Daegu province. Results show that 77.4% of housewives in this locale eat Korean cookies on a special day such as memorial service day of ancestors, festive day or party. The frequency of having Korean cookies were significantly different due to the income (p<.05): the higher the income, the more often people had Korean cookies. They usually purchase Korean cookies on the market rather than making them by themselves. The percentile of housewives who have never made Korean cookies before was up to 51.7% Only the housewives over fifty had some experience making the Korean cookies. The number of people who teamed the method fur making Korean cookies from their family elders increased according to their age. The reasons why they buy Korean cookies on the market are as follows: the most frequent answer (45.5%) was the price. 34.5% of the responder리s did not know how to make them. 32.1% replied that the process is too complex and troublesome. The most frequent requests for the market was expanding the diversity and improving the quality. In response to why they want the Korean cookies to be inherited. 68.8% of respondents answered that it is traditional culture. 4.01% of respondents replied that `ssalyeatgangung' is their favorite Korean cookie. 3.90% of them like 'sanja' the best and 3.91% of the housewives preferred yakwa to other Korean cookies. 생강가루를 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies with Ginger Powder)

  • In this study, when we reflect the preference of consumers who wish to receive their health through natural materials, and whose purpose is to receive good quality and good tasting cookies made from ginger. After 0%, 2%, 4%, 6%, 8% of flour was replaced by ginger powder for making cookies, a comparative analysis of quality characteristics and QDA was completed. Adding ginger powder caused a decrease in the density of the cookie dough, moisture content, loss rate and leavening rate of cookie (p<0.05), but the hardness of the ginger cookie increased. As a result of the description analysis of adding ginger powder, adding ginger powder increases, cookie color, crispiness, acid taste, flavor, and an after taste, but not the sweetness of the cookie. In terms of cookie color, crispiness, taste, flavor and overall acceptability, adding 4% ginger powder received high reviews. Also as a result of measuring DPPH radical elimination, ginger powder shows to have good antioxidant activity. So their anti-cancer activity is better than cookies without ginger powder. Therefore, we expect that we can fulfill the overall acceptability.

한국 전통 한과류에 대한 대학생들의 인지도 및 기호도에 관한 연구 (A Study on the Recognition and Preference of Korean Traditional Cookie among College Students)

  • The purpose of his study was to investigate the perceptions and preferences of college students to Korean traditional cookies. Self administered questionaires were collected from 512 college students in the Seoul, Kyunggi, Chungchung, Kyungsang, Junla and Gangwondo areas. The data were statistically analysed using t-tests, one-way ANOVA and their correlation. The recognition of Korean traditional cookie was generally low with the exception of these items as either a seasonable or festive food. There were significant differences in the mean recognition and preference values for each kind of Korean traditional cookie between the major subject studied, gender and subject grade. (Eds note: how were the mean values different for the 3 specified variables\ulcorner) The preference of some Korean cookies was relatively higher than estimated, (Eds note: how was the original estimate arrived at\ulcorner) such as Yugwa, Gangjeong, Han-gwa, Hobak-yeot, Ddangkong-yeot-gangjeong and Ssal-yeot-gangjeong. However, it is impossible to discriminate low preference, as over 80% of the low preference values had not been completed on the questionnaires.
