The purpose of this study was to investigate the inpatients' perception of therapeutic-diets and of explanation about those diets provided by hospitals and satisfaction on therapeutic-diets at hospitals in Busan. The subjects consisted of 155 inpatients at five hospitals, which all had over 400 beds. The research was performed through the interviewing process using questionnaires. Seventy five percent of patients had received an explanation for their therapeutic-diet and 57.4% of respondents were given a manual that explained the reason for the therapeutic-diet. The professionals who explained the therapeutic-diet was 61.7% dietitians and 25.6% doctors. 59.4% of the patients considered the dietitian to be suitable for explaining the diet and 25.6% patients believed the doctor to be suitable for explaining the diet. In terms of the patients' perception of the therapeutic-diet explanation, 74.5% of the patients understood very well, 78.9% of them perceived this explanation as very important, and 67.5% of them were satisfied. On a scale of 5.00 for therapeutic-diet satisfaction, the average scores were 2.95 for meal characteristics and 3.06 for service characteristics. The items that scored low in therapeutic-diet satisfaction were taste, seasoning and appearance of meals, provision of selective menu and consideration of personal preference. In terms of the perception of understanding the therapeutic-diet, patients who were provided a manual and an explanation gave high scores to 'taste', 'variety of diet', 'meeting opportunity with dietitians', and 'prompt dealing with meal complications'. There was a significant (p<0.05) positive correlation between satisfaction for the explanation of the therapeutic-diet and the degree of perceived benefits of the explanation to the nutrition-management and the satisfaction on the therapeutic-diet satisfaction. Therefore, the results of this study suggest that hospitals should increase support for explaining the therapeutic-diet by dietitians and develop menus based on the patients' preference and the taste of the meal.

Purpose: The purpose of this study was to develop the dietary approaches to stop hypertension (DASH) diet education program tailored to Korean adults and to examine the effect of the DASH diet education program on bone mineral density in middle aged women. Methods: The subjects of this study were 26 middle aged women, pre and post menopause, who attend a church located in Kyung-In district. The DASH group I (n=13) was provided with the DASH diet education program only, while the DASH group II (n=13) was provided with DASH diet education program along with calcium supplements (1 g/day). The DASH diet education program included one lecture on DASH diet, one face to face counseling, and five telephone counseling sessions during the 8 weeks period. Results: The knowledge and subjective compliance level of DASH diet increased significantly in both groups, at 4 and 8 weeks after the intervention. The level of objective compliance of DASH diet in both groups increased over the study period, but it was not significant as compared to those of the baseline. Bone mineral density of both groups decreased at 8weeks as compared to the baseline after the intervention. Conclusion: Although 8weeks of DASH diet education program increased the knowledge and compliance of DASH diet, it was not effective to bring the changes in bone mineral density among the middle aged women.
This study was performed to investigate the effect of dietary $\beta$-carotene supplementation on lipid peroxide levels and antioxidant enzyme activities in alcoholic fatty liver rats. Forty five Sprague-Dawley male rats aging 8 weeks were used as experimental animals, which were divided into the control diet (CD) and the ethanol diet (ED) and the ethanol + $0.02\%$$\beta$-carotene diet (EPD) groups and fed the experimental diet respectively for 5 weeks. After the feeding, rats were sacrificed to get blood and liver to analyze lipid and lipid peroxide levels and antioxidant enzyme activities. The mean body weight and food intake of the ethanol diet group was significantly lower than that of the control diet. The liver index (LI) of the ethanol diet group was significantly higher than those of the control diet and the $\beta$-carotene supplementation group. Serum levels of total lipid, triglyceride of the ethanol diet group were significantly higher than those of the control diet and the $\beta$-carotene supplementation group. Total cholesterol levels were not significantly different among all groups. HDL-cholesterol of the ethanol diet group was significantly lower than those of the control diet and the $\beta$-carotene supplementation group. Liver TBARS of the ethanol diet group was significantly higher than those of the control diet and the $\beta$-carotene supplementation group. Liver lipofuscin and conjugated diene levels were not significantly different among all groups. The superoxide dismutase activity of the ethanol diet group was significantly lower than those of the control diet and the $\beta$-carotene supplementation group. Catalase and glutathione peroxidase activities were not significantly different among all groups. Because v-carotene supplementation significantly decrease the serum total lipid, triglyceride, liver TBARS revels and increase the superoxide dismutase activity in alcoholic ratty liver rats, $\beta$-carotene supplementation seems to give beneficial effect for the alcoholics.

The purpose of this study was to investigate effects of osteoporosis on fracture wound healing in the calcium deficient rat. To research the experiment some ten-week old Wistar strain rats with approximately 300 gms weight were selected. Then, the rats were divided into two groups: Normal diet group(rats given a normal diet before and after bone fracture) and Low calcium diet group(rats given a low calcium diet before and after bone fracture). Both groups had been provided with each diet for three weeks. When the rats became thirteen weeks old, the mandibular angle of rats in both groups was artificially fractured for test. The healing of fracture wounds was reviewed by using soft x-ray radiography and /sup 99m/Tc-MDP bone scan and also histopathologic examination. The obtained results were as follows : 1. The radiolucency of the fracture site for the Normal diet group started to decrease from the 14th day since the experiment was made, while the Low calcium diet group began decrease in the radiolucency from the 21st day of the experiment. The radiolucency for the Normal diet group disappeared at the 42nd day, but one for the Low calcium diet group disappeared at the 56th day of the experiment. 2. The highest uptake rate of /sup 99m/Tc-MDP stood at the 14th day of the experiment in the Normal diet group and the Low calcium diet group's maximum rate was recorded at the 21st day of the experiment. These both groups were gradually experiencing decrease in the uptake rate as the experiment time was going on. However, the uptake rate in the Low calcium diet group was lower than one in the Normal diet group. 3. For the Normal diet group, the newly formed trabeculae, which were similar to one of the surroundung bone, were seen at the 42nd day of the experiment. On the other hand, the Low calcium diet group showed at the 56th day of the experiment that the osteoporotic findings looked weak, irregular trabeculae, and also large bone marrow space were observed clearly. As a result of the above experiment, it is said that the healing of the fracture can be completed for both groups, the Normal diet group and the Low calcium diet group. However, the amount of the newly formed bone wound in the Low calcium diet group is rather decreased compared to one in the Normal diet group and at the same time the healing of the fracture is delayed in the Low calcium diet group. Consequently, for the successful healing of fracture in osteoporosis, it is considered that the management of the etiologic factors of osteoporosis must be preceded. The more study of calcium metabolism and functions of osteoblast and osteoclast needs to proceed on.

In this study, the effects of a rice diet and bread diet on plasma triglyceride, insulin and ghrelin levels during low-intensity endurance exercise and recovery were investigated. Ten male students randomly received 2 different treatments: the rice diet and bread diet. On the first day, the participants performed 2 hours of treadmill running with 6% uphill at 50% $VO_{2max}$ after breakfast and then each consumed lunch and dinner. Blood samples were drawn 120 min before exercise and, right before exercise and, 60 min and 120 min after the start of exercise. On the second day, blood samples were drawn prior to breakfast, immediately after breakfast and, 60 min, 120 min, and 180 min after breakfast with no exercise treatment. Plasma triglyceride, ghrelin, glucose, and insulin levels were not significantly different between the two treatment groups on the first day. In addition, there was no difference in the carbohydrate and fat oxidation rate between the two treatments groups. However, plasma triglyceride levels in subjects that received the rice diet were significantly reduced by 14% when compared to subjects that received the bread diet at 180 min after consuming the breakfast diet on the second day. Ghrelin levels were significantly higher for subjects that received the rice diet than subjects that were given the bread diet. However, insulin in participants that consumed the rice diet was significantly lower than those that received the bread diet at 60 min and 120 min after consumption of the breakfast diet on the second day. Glucose levels in the subjects that were given the rice diet were significantly reduced by 10.3% when compared with participants that received the bread diet at 60 min. Therefore, the results of the study showed that a rice diet may be more effective in preventing cardiovascular diseases than a bread diet when combined with exercise.
Intakes and excretions of calcium and phosphorus were determined for 8 female adolescents(aged 16.3$\pm$0.5y; body mass index 20.4$\pm$1.3kg/$m^2$; body fat 33.3$\pm$2.5%; bone mineral density of lumbar spine in L2-L4; 0.96$\pm$0.08g/$\textrm{cm}^2$) when they consumed diets basal and high in calcium for 6 days each. All subjects consumed a basal Ca diet containing 800mg, Korean RDA level of the subjects, and a high Ca diet containing 1200mg, RDA plus 2 SDs of calcium intake. The diets provided 58% of energy intake as carbohydrate, 25% as fat, and 17% as protein. Food, urine, and fecal composites were collected during the last 3 days of each feeding period. Fecal excretion of calcium was significantly greater on the high Ca than on the basal Ca diet. Hence, apparent absorption rate was significantly lowered from 40.9% on the basal Ca diet to 33.1% on the high Ca diet. There was no significant difference in calcium retention between the two diet periods but it tended to be greater on the high Ca diet. However, excretions and retention of phosphorus did not show any significant difference even though intake was significantly increased from 1,253mg on the basal Ca diet to 1,583mg on the high Ca diet. The results indicate that higher calcium intake than the Korean RDA level is recommended for adolescents to meet peak bone mineral accretion and attain a desirable level of calcium retention. This study was designed to observe the effect of two levels of dietary protein intake on the development and growth of rats from fetus to adult. The pregnant rats were fed either 20% casein diet or 7% casein diet. After weaning or two weeks postweaning, some of the pups from malnourished mothers were rehabilitated by feeding 20% casein diet. The results were. 1. On the 14th day of gestation, no differences were found in weight and total body fat or protein between fetuses from dams fed 7% casein diet and those from those from 20% casein diet. 2. The birth weight of the pups from 7% casein diet group were significantly lower than those from 20% casein diet group. 3. After rehabilitation, the total body fat and protein of low protein group were not different from those of control group when they were compared at the same body weights regardless the age of rats or the duration on the low protein diet. 4. The nitrogen retention of low protein group, after rehabilitation, was higher than that of control group when they were compared at the same body weight.
The objectives of this study were to identify dietary patterns of Korean middle school students and to investigate the characteristics of dietary intake of subjects with different dietary pattern. Three-day diet records were obtained from 163 male and 155 female 7th graders in Seoul, Korea. Food items from the diet records were aggregated into 22 food groups before subjected to factor analysis. Four dietary patterns emerged from factor analysis with different factor score. Cluster analysis using factor score classified subjects into three groups named 'Traditional' (n = 42), 'Westernized' (n = 135), and 'Intermediate' (n = 145). Major nutrient intake and dietary quality assessed by NAR (Nutrients Adequacy Ratio), MAR (Mean Adequacy Ratio), DDS (Dietary Diversity Score), and DVS (Dietary Variety Score) of the three groups were compared. Mean energy intakes of three groups were 1783, 1916, 1578 kcal in Traditional, Westernized, and Intermediate diet group respectively. Differences in nutrient intake of the groups were significant in all nutrients except vitamin B$_1$. Percent energy from fat was significantly higher in Westernized and Intermediate diet group, and cholesterol intake of Westernized diet group was higher than 300mg. NARs of most nutrients were higher in Traditional and Westernized than Intermediate diet group except vitamin E. Traditional and Westernized diet groups had the highest MAR of fourteen nutrients. DDS was the highest in Westernized and DVS was the highest in Traditional and Westernized diet group. Traditional diet groups had 22% of energy consumption from breakfast, significantly higher than other diet groups. In conclusion, these results suggest that Korean teenagers with Traditional diet pattern have lower diet in % energy from fat, diversity of food and regularity of meals. Future studies need to focus on the relationship between dietary patterns and health status of Korean teenagers.
The effects of Artemisia princeps var orientalis(mugwort), Circium japonicum var ussuriense(Unggungqui) on serum lipid componets in rats was evaluated. Thirty rats divided into 5 experimental groups were fed with the diet containing 1% cholesterol, 0.25% sodium cholate, 10% coconut oil and 5% lard(control diet), supplemetned with 5% plant powder or its water soluble extract(experimental diet) for 4 weeks. Proximate analysis data and compositions of ash, dietary fiber and fatty acids in plants were presented. The concentrations of the total cholesterol was significantly lower in Ungungqui powder, Ungungqui extract and mugwort powder diet groups than the control. Serum HDL-cholesterol level was significantly higher in Unggunqui powder and Unggunqui extract diet group than the control. The concentration of LDL was significantly lower in Unggungqui power or extract diet group compared to the control. The values of VLDL and chylomicron were comparatively lower in Unggungqui power and mugwort powder diet group than in the other diet groups. The concentration of seum triglyceride and phospholipid was lower in Unggungqui powder diet group than in the control.

Laminariae Thallus has been known to be effective for the treatment of obesity. Te show the effectiveness of Laminariae Thallus in a more scientific way, Laminariae Thallus extract was prepared and evaluated in high fat diet rats by measuring the changes of body weight and lipid metabolism as described briefly below. 200 g of crushed Laminariae Thallus was extracted with methyl alcohol. The extract was evaporated under reduced pressure to give 14.4g. For 10 weeks, control group rat were ingested high fat diet, while the test group rat were fed with a fat diet pius Laminariae Thallus extract. Normal group was fed with normal diet. 150 mg of Laminariae Thallus extract per 1 kg of body weight was added to the diet in a test group rats. Control group rats on a high fat diet gained weight significantly, whereas the test group rats on a high fat diet plus Laminariae Thallus extract gained weight less. Significant increase of liver weight caused in a high fat diet was also inhibited by the Laminariae Thallus extract treatment. Total lipid, triglyceride, phospholipid and total cholesterol levels of serum in the high fat diet rats were remarkably increased, whereas their levels on a high fat diet plus Laminariae Thallus extract were less increased. While serum HDL-cholesterol levels was remarkably decreased in a high fat diet, its level was less decreased in a high fat diet plus Laminariae Thallus extract. Furthermore, we observed that the activities of hepatic acetyl-CoA carboxylase and fatty acid synthetase increased in a high fat diet, while their activities in a high fat diet plus Laminariae Thallus extract were getting back nearly to the normal levels of normal diet rats. These result showed that the obesity caused by a high fat diet was effectively inhibited by a Laminariae Thallus extract. Our results also showed that the abnormal lipid metabolism caused by a high fat diet was effectively cured by adding Laminariae Thallus extract.
