The baking properties of gluten-free rice bread with different percentages of corn starch and waxy corn starch were investigated. The specific gravity and color (L, a, b) of the dough as well as the appearance, color (L, a, b) and texture of the rice bread were analyzed. Replacement of rice flour with 1, 2.5, 5, 7.5 and 10% corn starch did not have a significant effect on the specific gravity and color of the dough. The volume and specific volume of the rice bread showed an increasing trend as the amount of added corn starch increased. The chewiness, gumminess and hardness of the rice bread showed a decreasing trend as the amount of added corn starch increased. Replacement of rice flour with 1, 5 and 10% waxy corn starch did not have a significant effect on the specific gravity and color of the dough. The color of the rice bread showed an increasing trend as the amount of added waxy corn starch increased. These results suggest that replacement of rice flour with 7.5% corn starch or 1% waxy corn starch is effective for gluten-free rice bread.
This study was conducted to investigate the effective ratio of Sulgidduk to glutinous corn flour. We measured the moisture content, color differences, and texture of Sulgidduk with glutinous corn flour and conducted a sensory test. There was a significant difference between the moisture content of the glutinous corn Sulgidduk batches with added glutinous corn flour and the control group. As the proportion of glutinous corn flour increased, the lightness(L) significantly decreased, whereas the redness(a) and yellowness(b) significantly increased. When the amount of glutinous corn flour increased, there was a significant increase in the hardness and adhesiveness, but a significant decrease in the cohesiveness. The results of the sensory evaluation showed that roughness increased significantly when the amount of glutinous corn flour was increased. The moisture and softness decreased significantly as the glutinous corn flour concentration increased. These results indicated that adding $5{\sim}10%$ corn flour to the glutinous corn Sulgidduk produced the best quality.

This experiment was carried out to compare chemical composition of corn-cowpea intercropping and corn monocropping plants at different harvesting time and obtained the following results. 1. In both cropping systems, the contents of crude fat and nitrogen free extract (NFE) were significantly increased (P<0.01), while that of crude protein, crude fiber and crude ash were decreased (P<0.01) with each harvesting time. 2. The acid detergent fiber (ADF) and crude fiber contents were decreased same patterns in growing period, however, according to maturing of corn ears the difference between ADF and crude fiber contents reduced. 3. At mature stage, crude protein yields per 10a in corn monocropping and corn-cowpea intercropping system were 127.6kg and 152.lkg, respectively. The difference of crude protein content between corn-cowpea intercropping and corn monocropping system was 19.2%. 4. TDN yields of each cropping system, at mature stage, obtained similar results and TDN yields per 10a of corn monocropping and corn-cowpea intercropping system were 1006.lkg and 990.1, respectively. 5. Conseqently, corncowpea intercropping system could be increased protein yield without decreasing of dry matter yield in comparison with corn monocropping system.
The production of sweet (su) and super sweet corns (sh2) has been economically feasible in Korea in recent years. Major factors limiting super sweet corn production are low germination and low seedling vigor. Since seed quality is closely related to seed maturity, the optimum harvest time for the seed production of sweet and super sweet corns was studied and the quality of seeds with varying maturities was investigated in 2001 and 2002 cropping seasons. The parents of the sweet corn seeds were Hybrid Early Sunglow and 'Golden Cross Bantam 70' and those of super sweet corn were Xtrasweet 82 and 'Fortune'. Seeds were harvested at 21, 28, 35, 42, 49, and 56 days after silking (DAS). As the seeds developed, seed weight of sweet corn increased and the seed moisture content decreased faster than that of super sweet corn. Germination rates of sweet corn seeds harvested 21 and 28 DAS at $25^{\circ}C$ and emergence rates in the cold soil test were significantly lower than those of seeds harvested after 42 DAS in both years. Although the germination rates of super sweet corn seeds with varying maturities showed similar patterns as sweet corn seeds at $25^{\circ}C$, the emergence rate of super sweet corn seeds in cold soil test continuously increased with seed maturity. This suggests that seed quality of super sweet corn should be tested in a cold soil test to estimate field emergence. As the seeds developed, leakage of total sugars and electrolytes from the both sweet and super sweet corn seeds decreased up to 42 or 49 DAS. The $\alpha-amylase$ activities of both sweet and super sweet corn seeds increased with seed maturity from 21 to 35 or 49 DAS depending on genotype and year. The optimum harvest time for the seed production of sweet corn was 42 DAS and 49 DAS for super sweet corn considering emergence rate and plumule dry weight in the cold soil test, leakage of sugars and electrolytes from the seeds, and $\alpha-amylase$ activity.
The production of 8-ketotrichothecenes, deoxynivalenol (DON), nivalenol (NIV), and their monoacetyl derivatives was studied in rice and corn cultures using 8 isolates of Fusarium graminearum which were obtained from corn and barley samples. Higher concentrations of trichothecenes were produced on rice than corn, and production of the toxins on rice was enhanced by growing the fungi at $25^{\circ}C$. The isolates were used for evaluation of toxin production and pathogenicity after artificial inoculation to 5 corn and 3 barley cultivars. The kinds and the relative amounts of trichothecenes produced in cultures were consistent with those in infected kernels of corn and barley with some exceptions. As for DON chemotypes, the ratios of 15-acetyl-DON to 3-acetyl-DON were varied among the pathogen-cultivar interactions. The corn and barley cultivars showed the significant differences of resistance to the Fusarium isolates in disease severity and seedling blight, and resistance ranking to the different isolates was varied. However, significant correlations were observed between the total concentrations of trichothecenes in infected kernels of corn and barley and pathogenicities of the Fusarium isolates to the hosts.

This study was conducted with two ruminally cannulated Holstein steers to examine the effect of micronized and steam flaked corn on ruminal fermentation characteristics. The in situ dry matter degradability after 48 h incubation was the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corn treatments. The steam flacked corn (3.3 mm thickness) was degraded lower (P<0.05) than the 2.9 and 3.1 mm thickness of steam flacked corn. Effective dry matter degradability and the rate of constant were the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corns as well. The in vitro dry matter degradability after 48 h incubation was tended to higher (P=0.088) at micronized corn (2.5 mm thickness) than steam flaked corns, whereas there is no significantly difference between steam flaked corn treatments. Total volatile fatty acid concentration was higher at steam flaked corn (2.9 mm thickness) than micronized corn (2.5 mm thickness) and steam flaked corn (3.1 and 3.3 mm thickness). The acetate : propionate ratio was the highest (P=0.008) at steam flaked corn (2.9 mm thickness) and the lowest (P=0.008) at micronized corn (2.5 mm thickness). Total gas and methane production after 48h ruminal incubation was the highest (P=0.001) at micronized corn (2.5 mm thickness) compared with steam flaked corns. According to these results, the thickness of steam flaked corn as resulted corn processing is believed to do not affect methane production. However, further study is needed to better understand the present results to verify the correlation between corn processing method and their thickness on methane production using the same thickness corns by difference processing methods.

In this study, we analyzed the amino acid contents of corn to provide basic data for promoting the use of proteins in livestock. The present study was done to examine the amino acid contents of the corn 'Gwangpyungok' grown in a natural field at the National Institute of Animal Science, Cheonan province, Korea, in 2016. Gwangpyungok, which is Korean corn cultivar, was used as the sample to provide basic data for promoting the use of proteins in livestock by analyzing the amino acid contents of each part of corn as a breed that is adaptable to the environment of Korea. The asparagine acid content was the highest in the leaf blade among the parts of corn, and the glutamic acid content was the highest in the corn ear, stem, leaf sheath, corn bract and inflorescence. The essential amino acids in the corn ear, leaf blade and inflorescence revealed that their contents were in the following order: leucine > phenylalanine > valine > threonine > lysine > isoleucine, and in the inflorescences and stem, leaf sheath and corn bract, their contents were in following order: leucine > valine > phenylalanine > threonine > lysine > isoleucine. Therefore, further research on the nutritional aspects of forage must be performed because livestock growth is influenced by the nutritive value of the various parts of forage.

A field experiment was conducted at the forage experimental plots, Seoul National University, Suweon h m 1995 to 1996 to determine the effect of legume residues as a N source and N fertilizer on corn (Zea mays L.) silage yield, N uptake, and availability of inorganic N in the soil. Corn was grown following (i) red clover (Trifolium pratense L.), (ii) crimson clover (Trifolium incarnatum L.), (iii) alfalfa (Medicago sativa L.) and (iv) winter fallow. The plots were split into two rates of fertilizer N (0 and 90kg Nlha) in a split-plot experimental plan. Compared with fallow treatment, legumes depleted soil water in the surface 15cm at corn planting by 17 to 26%. As a result, corn emergence was markedly delayed with legume residues by 8 to 11 days. Corn silage DM yield was significantly reduced in the presence of legume residues by 2.0 to 3.4 and 1.5 to 2.5 tonlha compared with winter fallow treatment at 0 and 90kg fertilizer Nlha, respectively, but no significant difference in the corn DM yield was found between legume residue treatments. There was an overall tendency for increased corn yields with 90kg fertilizer Nlha compared to Okg fertilizer Nlha, although not all yield increases were significantly greater. This study was conducted to manufacture new value-added corn dog using potato, milk powder and egg as nutritious and surplus agricultural and livestock products. A typical corn dog was manufactured with corn dog powder, potato, milk powder and egg as the same method of conventional corn dog. Corn dogs were divided into four groups; control group A [conventional corn dog], group B [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 1: 1: 2)], group C [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 2: 1: 2)], group D [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 1: 2: 2)], Viscosity of corn dog batter, pH of corn dog, rheology and sensory evaluation were measured. There were no significant differences for viscosity and pH between original corn dog and manufactured corn dog (p>0.05). However, hardness and brittleness of manufactured corn dog D were superior to the other groups (p<0.05). Also, manufactured corn dog D was superior to the other groups by the results of sensory evaluation. Therefore, these results suggest that it may be possible to manufacture new value-added corn dog which can help to stimulate the consumption of nutritious and surplus agriculture and livestock products.

Corn is basal forage for livestock species in Republic of Korea but it lacks protein and needs nitrogenous fertilizer. This study was designed with main objective to achieve optimum growth, yield & nutritive value of forage for livestock through implementing corn-soybean intercropping strategy at 17 different places under Korean condition. Two treatments; corn as monocrop (control treatment) and corn-soybean intercrop were compared under Randomized Block Design from $28^{th}$ May to $8^{th}$ October, 2015. Each treatment had three replicates in each block, whereas seventeen different places were considered as blocks. Data were analyzed through SAS-9.1.3 software. Difference between two treatment means was tested through T-test. Findings depicted that intercropping pattern could not influence (P>0.05) corn plant & ear height, corn lodged stalk No. and corn stalks number. However, corn-soybean intercropping enhanced (P<0.05) forage productivity in terms of total fresh yield ($16.4{\pm}0.7^b$ vs. $19.9{\pm}0.7^atons\;ha^{-1}$), total dry matter yield ($5.38{\pm}0.25^b$ vs. $6.41{\pm}0.31^atons\;ha^{-1}$) and total digestible nutrients yield ($3.94{\pm}0.17^b$ vs. $4.59{\pm}0.21^atons\;ha^{-1}$). Dry matter percentage in corn stalks and corn ears was not different (P>0.05) between two treatments. It was concluded that corn-soybean intercropping strategy was promising technique in enhancing forage productivity though positive symbiotic relation between two crops.
